The Quality of Yakju be brewed from many kind of Nuruk (누룩에 따른 약주의 품질 평가)

  • In each nuruk using today, effect of pH on glucoamylase activity and viable cell count of yeast and bacteria was measured. Common components during fermentation, alcohol, acetaldehyde and acetone, amino acid composition, and total sugars and mineral content were determined in yakju(korean wine) brewed from different ingredients and by different methods. Results are summarized as follows ; 1. The lower the pH, the lower the glucoamylase activity in JK, BK, JK-S BK-S and JN. But the higher the glucoamylase activity ratio in Koji and KN. 2. Yeast and bacteria cell count could not determined in nuruk inoculated of seed. In JK, BK and JN, yeast cell count was 50${\times}$104∼80${\times}$104, bacteria cell count was 5${\times}$106∼24${\times}$106. 3. In yakju during fermentation, pH was higher in RU, total acidity content was higher in ST-N, ST-K, RU and ST-RUPO and alcohol content was lower in RUPO and ST-RUPO. 4. Ethanol and acetaldehyde content were highest in dukyunju. Trace amount of acetone was determined only in ST-K, RUPO and ST-RUPO . n-Propyl alcohol content was higher in ST-K, ST-RUPO and ST-N, iso-butyl alcohol content was higher in L-RUPO, Dukyunju and Songyupju and iso-amyl alcohol content was higher in Songyupju, RU, L-RUPO and Dukyunju. 5. In amino acids composition of each yakju, Pro, Ala and Val content was higher than other amino acids. Total amino acids content was the highest in Dukyunju and second highest in ST-N, NH3 was higher in ST-N, Dukyunju, RUPO than other samples. 6. Total sugars content was the highest in ST-N and second highest in RU. 7. P, K and Mg content were higher in Dukyunju and ST-N than in other samples. In Dukyunju, Ca and P ratio was 0.075 because of low Ca content and high P content.

Analysis of Soil Total Nitrogen and Inorganic Nitrogen Content for Evaluating Nitrogen Dynamics

  • Various methods for assessing soil total nitrogen (TN) and inorganic N content have been developed to manage nutrient and to understand N cycle in soil. This paper address the technical procedures in arable soil samples to conduct soil sampling, sample preparation, and measuring total N and inorganic N. Among various methods for measuring soil total nitrogen contents, Kjeldahl distillation and Indophenol blue method have widely used due to reliability and economic advances. Also, two methods can analyze more samples at the same time compared with other nitrogen measuring methods. For evaluating inorganic N content, mainly in forms of nitrate-N ($NO_3{^-}-N$) and ammonium-N ($NH_4{^+}-N$), extraction with a single reagent such as 2M KCl has been employed, followed by Kjeldahl distillation or indophenol blue methods.

Interactive Effects of Nitrogen and Potassium Fertilization on Oxalate Content in Napiergrass (Pennisetum purpureum)

  • Ingestion of forage containing a large quantity of soluble oxalate can result in calcium deficiency and even death of livestock. Fertilization is one of the most practical and effective ways to improve yield and nutritional quality of forage. An experiment was conducted to determine the effects of nitrogen (N) fertilization (150, 300 and 600 kg/ha) across varying levels (150, 300 and 600 kg/ha) of potassium (K) on oxalate accumulation in napiergrass (Pennisetum purpureum). Application of N at 300 kg/ha produced higher dry matter yield than at 150 or 600 kg/ha, while K fertilization had no effect on yield. In general, N fertilization did not affect the soluble and total oxalate contents, but slightly affected the insoluble oxalate content. Soluble oxalate content showed an increasing trend and insoluble oxalate content showed a decreasing trend with increasing K level, but total oxalate content remained relatively constant. There were significant interactions between N and K fertilization for the content of soluble and insoluble oxalate fractions. The greatest increase in soluble oxalate content with N level at 300 kg/ha was found at the high level (600 kg/ha) of K application. The greatest increase in insoluble oxalate content with N level at 600 kg/ha was found at the low level (150 kg/ha) of K application. These results indicated the possibility of controlling the content of soluble and insoluble oxalate fractions in forage by fertilization.

Relationship Among Growth Characteristics , Quality, and Chemical Components in Flue-cured Tobacco (황색종 담배에서 생육형질, 품질 및 화학성분과의 관계)

  • This study was conducted to relate among growth characteristics, quality, and chemical components for flue-cored tobacco. The results are summarized as follows : 1. Starch content in harvested green leaf was correlated negatively with leaf length, leaf width, leaf area, and leaf weight of harvested green leaf, respectively, while positively with total sugar content in cured leaf, and the ratio of leaf length to leaf width of harvested green leaf. 2. Organic matter and total nitrogen contents in the soil were correlated positively with nicotine content in cured leaf, respectively, and total nitrogen in the soil negatively with total sugar content in cured leaf. 3, Amount of fertilizer, application date of MH, priod of harvesting, and yield were correlated positively with nicotine content in cured leaf, respectively , while negatively with total sugar content. Application amount of MH was correlated positively with total sugar content, but negatively with nicotine content in cured leaf. Also amount of compost was correlated negatively with nicotine content in cured leaf. 4. The ratio of total sugar to nicotine (TS/N) per plant was correlated positively with price (Won/kg) and specific leaf area, but negatively with leaf length. leaf width, leaf area, harvested leaves, and leaf weight in cured leaves, respectively. Yield was correlated negatively with TS/N per plant. 5. TS/N of the best quality tobacco per plant was 12.0. Those of the best quality tobacco in each stalk position were 42.1 for first~third leaf, 28.4 for 4th~6th leaf , 23.7 for 7th~9th leaf, 7.7 for l0th~12th leaf , and 7.8 for over 13th leaf from bottom, respectively. 6, When TS/N was 12.0, optimum values of growth characteristics per plant were 100.5 $\pm$ 10.3g for leaf dry weight, 755.1$\pm$53.2cm for leaf length, 294.4$\pm$25.1cm for leaf width, 8, 892$\pm$111cm2 for leaf area, 16.0$\pm$0.6 leaves for harvested leaves, and 7.32$\pm$0.44mg/cm2 for specific leaf area, respectively. 7. When TS/N was 12.0, optimum values of chemical components per plant were 1.92$\pm$0.28% for nicotine content, and 20.4$\pm$ 1.4 % for total sugar content, and that of yield was 238.3$\pm$ 9.8kg/10a.

Fatty Acid Composition of 72 Species of Korean Fish

  • Fatty acid compositions of seventy-two species of Korean fish muscle, 59 species of sea water fish and 13 species of fresh water fish, were studied. Polyunsaturated fatty acid (PUFA) was the richest fatty acid group in all fish samples, accounting for $38.0\pm10.3\%$ of total fatty acids. Monounsaturated fatty acids $(MUFA,\;31.4\pm9.67\%)$ and saturated fatty acids $(SFA, 30.5\pm3.81\%)$ showed a similar level. There was a positive correlation between the total lipid content and MUFA (r=0.7788, p<0.001) and a negative correlation between the total lipid content and PUFA (r= -0.7786, p<0.001) while there was no correlation between the total lipid content and SFA. The proportion of n-3 PUFA and n-6 PUFA was $29.7\pm8.73\%$ and $6,48\pm3.70\%$, respectively, in all fish samples. The n-3 PUFA was rich in sea water fish while n-6 PUFA was rich in fresh water fish. The migratory fish contained the highest level of the n-3 PUFA $(1.82\pm1.01g/100g\;muscle)$, followed by the fresh water fish $(1.09\pm1.04g/100g\;muscle)$, the reef fish $(0.90\pm0.60g/100g\;muscle)$ and the demersal fish $(0.77\pm0.38g/100g\;muscle)$. There was a positive correlation between the total lipid and n-3 PUFA content, $y=0.2083\times+0.05 (r=0.9352,\;p<0.0010)$.

The Effect of Moisture Control on Fermentation Characteristics of Barley and Rye Silages (수분 조절이 보리와 호밀 silage의 발효특성에 미치는 영향)

  • This study examined the effect of moisture level at ensiling on fermentation characteristics of barley and rye silage. The moisture levels, 60 (low; LM), 70(medium; MM) and 80% (high; HM), were controled by adding water or pre-wilting. Barley silage had higher pH and latate:acetate ratio in LM than the other treatments, but those of rye in MM were higher. The concentrations of lactate, total FA and acetate in HM were higher than the other treatments, but propionate concentration in LM was higher than HM. Total N concentrations of barley and rye were highest in MM and LM, respectively. The $NH_3-N$ concentration and total N:$NH_3-N$ ratio of barley were higher in HM than those in LM and MM. With increasing moisture content, buffering capacity of barley and rye silages increased, whereas decreased by increase of pH. There was a negative correlation between moisture content vs. pH of barley and rye silages. However, moisture content vs. the concentrations of total VFA and $NH_3-N$ and the ratio of total N:$NH_3-N$ had a positive correlation. Tn conclusion, the ideal moisture content of barley and rye for silage was 70-80%, but silage quality could be rapidly decreased by pre-wilting to 60% moisture content.

Fatty acid composition of goose meat depending on genotype and sex

  • Objective: The aim of this study was to compare male and female geese of two contrasting genotypes in terms of fatty acid composition, indexes related to human health, lipid metabolism and oxidative stability of the meat. Methods: The experiment was carried out on total of 120 geese of two different genotypes; the native breed Czech goose (CG) and commercial hybrid Novohradska goose (NG). One-d-old goslings were divided into 4 groups according to genotype and sex, and 8 birds from each group were slaughtered at 8 weeks of age. Results: The effects of the interactions between genotype and sex were observed on growth performance and carcass traits. Final body weight (p<0.001), daily weight gain (p<0.001), daily feed intake (p<0.001), slaughter weight (p<0.001), and cold carcass weight (p<0.001) were highest in NG males and lowest in CG females. The meat fatty acid composition results showed effects of both genotype and sex on the total n-6 and the total polyunsaturated fatty acid (PUFA) content, as well as the PUFA n-6/PUFA n-3 ratio. Regarding genotype, the total n-6, the total PUFA content and the PUFA n-6/PUFA n-3 ratio were higher in CG, and higher values were found in females. In terms of the lipid metabolism, ${\Delta}^5-{\Delta}^6$ desaturase (p = 0.006) was higher in males. The meat oxidative stability results revealed an interaction between genotype, sex and storage time (p<0.001). The highest (13.85 mg/kg) malondialdehyde content was measured in the meat of CG females after 5 days of storage and was presumably related to a higher PUFA content. Conclusion: NG had a relatively higher growth rate and meat oxidative stability, whereas the advantage of CG meat is its favourable fatty acid profile characterized by a higher PUFA content.

Phytochemical constituent, percentage yield and phenolic content estimation of different solvent system of Carica papaya leaves

  • Carica papaya is an important medicinal plant used in the management of different disease conditions. Phytochemical screening was carried out using different chemical test, Percentage yield and total phenolic content was evaluated using Folin Ciocalteu method in different solvent system; methanol, ethanol, ethyl acetate, n-butanol and n-hexane respectively. The phytochemical screening of the studies showed the presence of flavonoids, saponins, tannins, terpenoids, glycosides, steroids, carbonhydrate, anthraquinone and alkaloids. The percentage yield of crude extract and total polyphenol content was high in methanol, ethanol and ethyl acetate when compared with n-butanol and n-hexane. The studies show that Carica papaya leave extracts is a potent source of secondary metabolites. The use of the plant in the management of diseases is justified.

Microcystin Production by Microcystis sp. under N or P Limitation

  • The production of microcystins from Microcystis aeruginosa was investigated in a P-limited continuous culture and a batch culture. The microcystin content of M aeruginosa was higher at a lower $\mu$, whereas the microcystin (MC)-producing rate was linearly proportional to $\mu$. The ratios of the MC-producing rate to the C-fixation rate were higher at a lower $\mu$. Consequently, increases in the microcystin content per dry weight along with the production of the more toxic form, MC-LR, were both observed under more P-limited conditions. The microcystin content of M. aeruginosa exhibited a high correlation with the total N content regardless of N-fixed or P-fixed culture. The microcystin concentration was investigated from spring to autumn in 1999 in the Daechung Reservoir, Korea. The dominant species in the algal blooming season was Microcystis. When the microcystin concentration exceeded about 100 ng $1^{-1}$ the ratio of particulate to dissolved total nitrogen (TN) or total phosphorus (TP) interestingly converged at a value of 0.6. The microcystin concentration was lower than 50 ng $1^{-1}$ at a particulate N:P ratio below 8, whereas the microcystin concentration varied quite substantially from 50 ng $1^{-1}$ to 250 ng $1^{-1}$ at a particulate N:P ratio> 8.

Distribution Characteristic and Assessment of Soil Organic Matter, Nitrogen and Phosphorus in Soils of New born River Mouth Wetlands

  • This paper investigates preliminarily spatial distribution soil organic matter (SOM), nitrogen (N) and phosphorus (P) and its environmental influence in wetland soil of different vegetation landscape in the Yellow River Mouth. The result shows the SOM and total nitrogen (TN), efficient N, efficient P in top layer soils of different vegetation district have significantly different content, The SOM is shown as Calamagrostis epigeios wetlands > Phragmites cmmunis wetlands > Tamarix chinensi wetlands above tidal > Suaeda salsa wetlands in high tidal > Tamarix chinensi wetlands in high tidal > tidal flats, the arrange of the TN and efficient N content is the same except that the content in Suaeda salsa wetlands in high tidal is heavier than Tamarix chinensi wetlands in high tidal. In different vegetation landscape wetland types the vertical change of soil nutrients are obvious except for p, gradually decrease from the upper to the lower. This case reflects the function of the vegetation on the wetland development of soil and proves the wetland soil has the characteristic of new born and bad degree of development. SOM, TN, efficient N and efficient P content in wetland soils have significantly positive correlation, but TP have no correlation with them but efficient p. The contents of TN in wetland soils range from 58~1480 mg/kg, total average content 408 mg/kg, average content of above 30 cm is 625 mg/kg. The range of TP content in the soil is 372~1042 mg/kg, total average is 569 mg/kg, average content of above 20 cm is 611 mg/kg. According the P it occurs mainly as calcium phosphates, and the validity is lower, therefore, N and P in the new born wetlands cannot produce serious impact on the environments at present.
