Quality Characteristics and Antioxidant Activities of White Bread Added with Mistletoe (Viscum album var.) Powder (겨우살이 분말 첨가 식빵의 품질특성 및 항산화 활성)

  • This study was carried out to investigate the quality characteristics and antioxidant activities of bread containing mistletoe (Viscum album var.) powder (at ratios of 0, 3, 5, 7, and 10% of total flour quantity). As mistletoe powder (MP) content increased, the pH levels of dough and bread and lightness decreased, whereas total titratable acidity increased. The fermentation power of the dough expansion by fermentation decreased with an increase in MP content added. Although bread weight decreased, there were no significant differences in baking loss as MP content increased. Volume and specific volume significantly decreased as MP content increased. Moisture content was highest at a substitution level of 10% and increased with increasing MP content. Lightness of crumbs significantly decreased with increasing MP content, whereas redness and yellowness showed the reverse effect. As MP content increased, changes in hardness, gumminess, and brittleness were all significant. In the sensory evaluation, color, flavor, softness, and overall acceptability were highest at MP 3% and were lowest at MP 10%. Total polyphenol contents and DPPH radical scavenging activity of bread significantly increased with increasing MP content. In conclusion, addition of MP 3% showed the best performance in terms of the nutritional and functional aspects of the bread.

Effect of Reducing Agents on Bifidobacterium Fermentation of Saccharified Rice Solution (환원제 첨가가 쌀당화액의 Bifidobacterium발효에 미치는 영향)

  • This study was intended to develop a new rice product by the fermentation of saccharified rice solution using Bifidobacterium and to select an appropriate reducing agent to provide the anaerobic condition for the growth of Bifidobacterium during fermentation. The enhancement of the growth of Bifidobacterium in saccharified rice solution was achieved by the treatment of reducing agents such as ascorbic acid and cysteine. The physical and chemical properties of the fermented product were evaluated, and the effect of the reducing agents were compared between ascorbic acid and cysteine. The fermented product with the addition of ascorbic acid shows the lower pH and the higher titratable acidity comparing the product with the addition of cysteine. This indicated that ascorbic acid was more appropriate reducing agent than cysteine for the fermentation of the saccharified rice solution. The number of viable Bifidobacterium in the fermented product with the addition of ascorbic acid(2.2$\times$108~3.4$\times$108CFU/ml) was greater than that with the addition of cysteine (8$\times$107~2.8$\times$108CFU/ml). Ascorbic acid supplement also contributed better sensory properties, such as flavor, taste and overall acceptibility than cysteine supplement did.

Isolation, Identification, and Characterization of a Bacteriocin-Producing Enterococcus sp. from Kimchi and Its Application to Kimchi Fermentation

  • A bacteriocin-producing lactic acid bacterium, which strongly inhibited the Lactobacillus plantarum recognized as an important acid spoilage microorganism in kimchi fermentation, was isolated from kimchi. From morphological, physiological, sugar fermentation, biochemical tests, and l6S rDNA sequencing results, the isolate was identified as an Enterococcus sp. and designated as Enterococcus sp. K25. The bacteriocin produced by Enterococcus sp. K25 inhibited several Gram-positive bacteria, including Lb. plantarum, whereas it did not inhibit Gram-negative bacteria and yeasts. Optimal temperature and pH for the bacteriocin production were $25^\circ{C}$ and 5.5, respectively. Enterococcus sp. K25 was applied to kimchi manufacturing alone and together with other preservatives (i.e., chitosan and fumaric acid). In addition, growth of lactic acid bacteria, pH, and titratable acidity (TA) were measured during aging at $5^\circ{C}$ and $10^\circ{C}$. Inoculation of Enterococcus sp. K25 together with fumaric acid showed the most synergistic effect on extension of kimchi shelf-life. Compared to control (no addition), the treatment prolonged the kimchi shelf-life up to 6 days, whereupon the eight-point TA value recognized as the edible limit was reached.

Effects of heat treatment on storage of packaged Tofu (포장두부의 저장성에 미치는 열처리 효과)

  • The effect of heat treatments (boiling or microwave heating) on packaged Tofu was investigated by microbial and physicochemical changes during its storage in order to improve the shelf-life. The shelf-life of the packaged Tofu prepared by acetic acid was found better than that prepared by calcium chloride. As the spoilage of Tofu developed, titratable acidity, amino and ammonia nitrogen contents, and optical density of packaged Tofu suspension were increased. Heat treatment of fresh Tofu in package was effective in lowering the bacterial counts, and extending shelf-life, but there was no significant difference between heating methods. Packaged Tofu prepared from acetic acid and pretreated by heating for 3 minutes kept the shelf-life of 4 days at $30^{\circ}C$, but that without heat treatment spoiled at one day.

Changes in Qaulity Characteristics of Makgeolli during Storage Time (일부 시판 생막걸리 제품의 저장기간에 따른 품질 특성 변화)

  • This study was conducted to investigate the physicochemical and sensory changes of 6 kinds of commercial Makgeolli (A, B, C, D, E, and F) during storage at $4{\pm}1^{\circ}C$ for 30 days. The initial pH was 3.50~4.23, but it increased to 3.65~4.37 by the end of the storage period (p<0.05) There were no significant differences in titratable acidity between the beginning and end of the storage period. The reducing sugar content of A and B increased, whereas C, D, E, and F decreased with increasing storage time. A decrease in lightness (L values) was observed in all samples with increasing storage time (p<0.05). The alcohol content increased from beginning values of 5.90~6.10% to ending values of 6.30~7.35% at the end of storage, of which sample B exhibited the highest value. A sensory evaluation test revealed that the overall acceptability of samples A, B, D, and E were still within acceptable limits, but samples C and F showed undesirable changes during 30 days of storage at $4^{\circ}C$.

A Study of the Physicochemical, Functional, and Sensory Properties of Farm Produced and Commercially Produced Grape Juice in the Korean Market

  • Fruit juices such as grape juice are associated with healthy products by consumers because of the many health benefits they provide. Farm produced (FPGJ) and commercially produced grape juice (CPGJ) in South Korea were compared and studied through the evaluation of their physicochemical, functional, and sensory properties. The results of this study show that FPGJ's physicochemical properties are more varied than CPGJ. The pH, titratable acidity, and total soluble solids of FPGJ were higher than CPGJ. FPGJ had a higher mean value for total phenolics ($2,558.20{\pm}50.06\;mg/L$ GAE), total flavonoid ($3,236.80{\pm}56.11\;mg/L$), total anthocyanin ($559.88{\pm}3.51\;mg/L$), and radical scavenging activity (86.48%) than CPGJ, although the differences were significant only with regard to total flavonoid and total anthocyanin. This study also demonstrates that CPGJ is preferred in terms of sensory evaluation. These properties may be used as a basis for the optimization of processing to produce a higher quality grape juice.

오미자(Schizandra chinensis)추출물이 김치 숙성에 미치는 영향

  • Shizandra chinensis(SC) and Pinus regida(PR) showed antimicrobial activity against 3 strains(B-5, D-1, A-1) of lactic acid bacteria(LAB) isolated from kimchi among eight kinds of plant extracts such as Shizandra chinensis, Phellodendron amurense, ornus officinalis, Pinus regida, Allium tuberosum, Machilus thunbergii, Cyperus rotundus and Schizonepeta tenuifloia. The growth of LAB was inhibited apparently in modified MRS broth containing 1% Schizandra chinensis at $35^{\circ}C$. Pinus regida showed weaker inhibitory effect on the growth of isolated LAB than Shizandra chinensis. pH of SC added kimchi did not change greatly compare with control during 25 days of fermentation. Degree of titratable acidity change and ratio of reducing sugar utilization in control were more higher than in SC added kimchi during fermentation. Growth of total bacteria and lactic acid bacteria was inhibited about 1 to 2 $log_10$ cycle by addition of SC extracts during kimchi fermentation for 10 days at $10^{\circ}C$. Fermentation of kimchi was delaved about 5 to 7 days by addition of 1 or 2% of SC. extract, but sensory quality (falvor, taste and overall acceptability) of SC added kimchi was lower than that of control (p>0.05).

Quality Characteristics of kimchi with added Backryeoncho (Opuntia ficus-indica var. saboten) Extract and Its Acceptability by Middle School Students (백련초 추출물 첨가 김치의 품질특성 및 중학교 급식에서의 수응도 평가)

  • This research studied the effects of Backryeoncho (Opuntia ficus-indica var. saboten) extract as an additive in kimchi in various amounts (0%, 0.4%, 0.8%, 1.2%), and its acceptance by middle school students in the Jeonju area. The treated kimchi had a higher pH than the untreated kimchi without extract, and the titratable acidity of the kimchi decreased with the addition of the Backryeoncho extract. The degree of salinity decreased in kimchi with the added Backryeoncho extract in a dose-dependent manner. The cutting force and compression force were higher in kimchi where the extract was added during the fermentation period resulting in improved texture of the kimchi. The addition of the extract slowed growth of total bacteria (1.83~2.12 log CFU/mL) and lactic acid bacteria (1.4 log CFU/mL) as compared with the control sample. In the sensory evaluation of overall taste, kimchi with 0.8% extract added demonstrated higher evaluation in overall categories. The acceptability of Backryeoncho extract as an additive in kimchi among middle school students was higher than in the control sample, with an optimum additive of 0.4% extract, based on the lowest volume of leftovers.

Fermentation Properties of Amylase Activity and Added Rice Yogurt of Enterococcus faecium KHM-11 Isolated from Korean Human Milk (한국인 모유로부터 분리한 Enterococcus faecium KHM-11의 Amylase 활성과 쌀 첨가 요구르트의 특성)

  • This studies were carried out to assess fermentation properties of amylase activity and added rice yogurt of Enterococcus faecium KHM-11 isolated from Korean human milk. The amylase activity of Enterococcus faecium KHM-11 was above 23 units. Characterization of carbohydrate fermentation of Enterococcus faecium KHM-11 has D-ribose, D-lactose, L-arabinose and starch. Titratable acidity and viable count of lactic acid bacteria of 4% rice yogurt was higher compared to the 0%. Therefore we were discussed Enterococcus faecium KHM-11 is suitable microorganism for fermented milk added rice powder. Hydrolysates of sugars of fermented milk with 4% rice powder cultured Enterococcus faecium KHM-11 were analyzed by TLC and HPLC. Hydrolysates of lactose and galactose were revealed and hydrolysates of glucose was not revealed in results of TLC and HPLC.

Quality Characteristics of Mealworm Seasoning Paste prepared by Chungukjang Recipe (청국장 제조 방법에 따른 갈색거저리 조미페이스트 개발 및 품질특성)

  • In this study, two kinds of mealworm seasoning pastes (naturally fermented or inoculation of Bacillus subtilis) were prepared by applying fermentation method of chungkukjang. The samples were labeled into soybean control (SC; no fermentation), mealworm control (MC; no fermentation), mealworm natural fermentation (MR) and mealworm inoculated fermentation of Bacillus (MB). Water content, color, pH, titratable acidity, salinity, amino acid nitrogen, reducing sugar and preference test were examined on the pastes. Moisture contents were 46.9 with soybean control (MC) and 54.5~73.3 with mealworm pastes. The L-value was not significantly different between the samples. In the case of the a-value and the b-value, SC showed the highest value whereas mealworm pastes showed lower values than SC. pH and salinity were higher in mealworm pastes. Amino nitrogen and reducing sugar showed the highest values of MR 326,67 and 63.33 mg%, respectively. In the preference test, the appearance and flavor were the highest values with SC, but texture, taste and overall acceptability were with MR, Therefore, soybean fermentation method with Bacillus species could be applied to use protein of mealworm and possibly edible insects as well.
