Quality of Low Fat Chicken Nuggets: Effect of Sodium Chloride Replacement and Added Chickpea (Cicer arietinum L.) Hull Flour

  • While attempting to develop low salt, low fat and high fibre chicken nuggets, the effect of partial (40%) common salt substitution and incorporation of chickpea hull flour (CHF) at three different levels viz., 5, 7.5 and 10% (Treatments) in pre-standardized low fat chicken nuggets (Control) were observed. Common salt replacement with salt substitute blend led to a significant decrease in pH, emulsion stability, moisture, ash, hardness, cohesiveness, gumminess and chewiness values while incorporation of CHF in low salt, low fat products resulted in decreased emulsion stability, cooking yield, moisture, protein, ash, color values, however dietary fibre and textural properties were increased (p<0.01). Lipid profile revealed a decrease in total cholesterol and glycolipid contents with the incorporation of CHF (p<0.01). All the sensory attributes except appearance and flavor, remained unaffected with salt replacement, while addition of CHF resulted in lower sensory scores (p<0.01). Among low salt, low fat chicken nuggets with CHF, incorporation CHF at 5% level was found optimum having sensory ratings close to very good. Thus most acceptable low salt, low fat and high fibre chicken nuggets could be developed by a salt replacement blend and addition of 5% CHF.

Effects of Starter Cultures on Physicochemical Properties of Fermented Sausages

  • Fermented sausages prepared by inoculation with different starter cultures were analyzed for their physicochemical characteristics. Three types of fermented sausages were processed separately, without starter culture (control), with a commercial culture mix, and culture mix plus Lactobacillus plantarum (LP). On proximate analysis, two inoculated sausages showed an increase in moisture and fat contents (p<0.05). The inoculated sausages showed lower hardness and gumminess values (p<0.05) than control. The combination of starter culture with LP displayed the lowest chewiness and cohesiveness values and showed a more intensive red color (p<0.05). Two inoculated batches showed significantly lower pH values and water activity than control, in accordance with the increase in lactic acid bacteria (p<0.05). The inoculated sausages reduced the extent of lipid oxidation (p<0.05) and induced an increase in lauric acid, linoleic acid, eicosadienoic acid, and arachidonic acid, as well as they had a higher polyunsaturated fatty acid content and ratio of n-6 and n-3 fatty acids (p<0.05). The addition of LP to the starter culture in a suitable combination resulted in a positive effect on the physicochemical and microbiological attributes of fermented sausages.

  • This study was designed to make a proposal of a classifying model of Korean fashion brands as the first step in a long-term research plan developing a globalization roadmap for Korean fashion industry. On the basis of ownership advantages of a brand which included firm level attributes and brand level characteristics, fashion brands were classified into eight types. The proposed model was expected to provide an efficient and meaningful framework in developing global strategies both for academic and practical purposes. The model proposed four major categories of fashion brands including manufacturer brands, designer brands, retailer brands, and non-brands. Manufacturer brands were further classified into three groups of conglomerate fashion brands, fashion brands, and sports-specialized brands. Non-brands included small/very small-sized manufacturer non-brands, small/very small-sized non-brands, and OEM/ODM exporters. The classifying dimensions, brand type characteristics, and the globalization approach were discussed. Methods to test the reliability and validity of classifying were also discussed in the text.

Investigation of the Emotional Characteristics of White for Designing White Based Products (백색 제품 디자인을 위한 감성적 특성 연구)

  • In this study we investigated emotional characteristics of various whites which have slightly different nuances to suggest guidelines that help designers to select appropriate colors when designing white based products. The study involved three different procedures. In experiment 1, we selected 20 emotional words through a survey (N=30) among 60 words, which we picked from literature review that was thought to be appropriate to evaluate product colors. In experiment 2, we evaluated the emotional characteristics of 13 basic colors from the I.R.I Hue & Tone 120 system (N=30) using previously selected emotional words, to find relative emotional positions of white in comparison to other colors. Based on the ratings, factor analysis was conducted and consequently four factors were extracted: flamboyant, elegant, clear, and soft. Accordingly, the emotional characteristics of the 13 colors were profiled and compared with those of white. Finally, in experiment 3, we conducted an evaluation of emotional characteristics on 25 whites with different nuances facilitating the four factors obtained in experiment 2. The color stimuli used in experiments were measured in terms of CIE 1976 $L^*a^*b^*$, and regression analysis was performed in order to predict the emotional characteristics through the L, a, and b values of a color, as long as that is perceived as a white. Throughout three empirical studies, we observed three overruling tendencies : First, there are four important factors when evaluating product color - flamboyant, elegance, clearness and softness; second, white is dominantly the most elegant in comparison to other colors; third, the emotional factors of the study were affected by some combinations of attributes of colors rather than by all three-hue, saturation and brightness. In addition, the equations derived from the regression analysis in experiment 3, it is expected that designers may predict the emotional distinction between nuances of white.

Effects of High Molecular Weight Water-Soluble Chitosan On Storage Characteristics and Quality Attributes of Sponge Cake (수용성 키토산 첨가에 따른 스폰지 케이크의 저장 중 품질 특성)

  • The purpose of this study was to investigate the influence of the additive chitosan on the storage characteristics and quality attributes of sponge cake. In addition to a control sample with no chitosan, sponge cake was prepared with the addition of various concentrations of chitosan (1,000, 2,000 and 3,000 ppm), and stored for 5 days at three temperatures ($5^{\circ}C$, $15^{\circ}C$ and $25^{\circ}C$). The control sample demonstrated considerable hardness compared to other samples containing chitosan regardless of storage temperature and period. The degree of retrogradation of the samples containing chitosan was higher than that of the control samples, with values under 30% regardless of the concentration of chitosan or storage condition. The total color variance(E) of the control sample and the samples with chitosan did not show a significant difference. The overall acceptability of the samples containing 1,000 ppm chitosan was similar to the control sample.

Changing Process of the Glass Beads from Osan Sucheong Site in Gyeonggi-do, Korea (오산 수청동 유적 부장 유리구슬의 전개양상)

  • In this study, glass beads from Osan Sucheong were classified according to color into 10 groups. Among these groups, reddish brown, bluish green, and purplish blue were identified as the main colors of glass beads based on their large quantities in Osan Sucheong. The glass beads of these main colors were then classified according to their chemical compositions and and looked at the changing process. Based on the results, reddish brown and bluish green glass beads can both be divided into five types, and purplish blue glass beads can be divided into four types. Furthermore, according to continuity of type, it was identified as the main attributes that the reddish brown beads belong to two types, whereas the bluish green and purplish blue each belong to one type. Based on a review of primary attributes, beads of these three colors were identified as soda glass and high-alumina glass. The results indicate that these beads came from a single, consistent route of origin into the region. However, it is possible that glass beads came through various routes into Osan Sucheong in the $4^{th}$ century, because many types of chemical compositions have been detected for beads from this time.

Analysis of Interior Design Elements in Food and Beverage Applying the Psychological Process of Purchasing(AIDMA) Model (구매심리과정(AIDMA)모델을 적용한 식음공간의 실내디자인요소 분석)

  • The purpose of this study is to provide fundamental data that can improve added value of commercial space strategically using the identification of relationship between the process of consumers' purchasing psychology (AIDMA : Attention, Interest, Desire, Memory, Action) and elements of interior design. For this purpose, case study and survey were carried out on food and beverage spaces, where they were doing business for more than two years, were selected from the ones appeared in the interior journal "A." Based on the study, basic details including a ground plan, design summary and representative image were identified through preliminary research, and a researcher visited the target spaces and carried out a research and analysis on interior design elements. Three spaces among targets of the case study were selected to identify the relation between design elements and AIDMA items which consumers feel, and the survey was conducted on the customers of the selected food and beverage spaces. Results of the case study on the 18 food and beverage spaces showed that features of the each of AIDMA items in material and color elements were most well expressed. As a result of survey conducted on visitors of each food and beverage space, features of each item were expressed in overall design elements. In particular, space elements and color elements in "Space 1," space elements and lighting elements in "Space 2" and space elements, furniture & objet elements in "Space 3" were most well expressed in each space. There were slight differences depending on individual characteristics such as design concept, location and business operation of target food and beverage spaces but attributes of AIDMA items were remarkably recognized in common in the space elements.

Quality Characteristics of Curd Yogurt with Rubus coreanum Miquel Juice (복분자(Rubus coreanum Miquel) 즙을 첨가한 호상 요구르트의 품질 특성)

  • In this study, we investigated the quality characteristics of curd yogurt with different content of Rubus coreanus Miquel juice. Yogurt was fermented with three kinds of lactic acid bacteria(Streptococcus thermophilus, Lactobacillus acidophilus, Lactobacillus casei). The changes of quality characteristics were investigated during fermentation and an acceptance test was performed after fermentation. The pH was decreased on the whole, and titratable acidity was gradually increased during fermentation. The number of viable cells was increased in case of yogurt with 1% to 4% Rubus coreanus Miquel juice, while it was inhibited in the sample with 6% and 7%. There was similar content in composition of protein, lactose, FFA, TS and NFS of curd yogurt after fermentation. Color value of curd yogurt with Rubus coreanus Miquel juice was higher in L(brightness), a(redness) and b(yellowness), compared with the control. Sensory attributes of color, odor, taste, after taste and overall acceptability of the curd yogurt with 3% Rubus coreanus Miquel juice showed highest preference among samples.

Price Response Function With and Without Choice Set Information in Denim Jeans Market (고려상품군의 유.무에 따른 가격반응함수의 비교연구)

  • The primary purpose of this study is to suggest a new methodology for calibration of a continuous price response function and to compare the differences in the price response function with and without choice set information. Through the new methodology, the two-staged conjoint analysis, the continuous price response function far jeans market was calibrated. Three steps were required to complete the two-staged conjoint analysis. Step one provided respondents with both a written and a visual description of two different randomly selected styles and colors of denim jeans. In step two respondents were asked to choose the combination of attributes they intended to purchase. Based upon the literature review, these four attributes included: brand, style, price, and color. Respondents were required to assess their purchase intentions for 32 combinations by marking Yes if she/he would purchase a given combination and No if she/he would not purchase a given combination. This allowed for identification of each respondents choice set. Instructions in step three required respondents to rate each combination marked Yes on a scale of 1-100, with one as least likely to be purchased and 100 as most likely to be purchased. This value served as the dependent variable for estimating the parameters in the model. Furthermore, the empirical study shows that there is a difference in price response function with and without choice set information. Therefore, when one calibrates a price response function far a given brand, we can recommend to include choice set information in his/her research.

Carcass Characteristics and Qualitative Attributes of Pork from Immunocastrated Animals

  • An investigation was carried out to assess the carcass characteristics and meat quality aspects of immunocastrated male pigs of medium genetic potential for lean meat deposition in carcass (53 to 55%). When the crossbred Large White x Landrace pigs (n = 45) were 70 days old, they were distributed in a totally randomized design in three treatments (castrated males, females and immunocastrated males) with three replicates of five animals. The pigs were slaughtered when they were 140 days old. Carcass temperature and pH were recorded twice, at 45 min and 24 h after slaughter. The carcasses were evaluated for hot and cold carcass yield, commercial cuts yield, length and depth, back fat thickness, loin eye area and lean meat percentage. The Longissimus dorsi muscle was extracted for analysis of color ($L^*$, $a^*$, $b^*$), exudate loss, cooking loss and centesimal and sensorial analysis of the meat. There were no significant differences for the evaluated parameters between castrated males, immunocastrated males and females, except for backfat thickness between the 7th and 8th thoracic vertebra and the point P2 (lower for immunocastrated males) and carcass temperature at 45 min post slaughter (higher in immunocastrated males), however, this did not interfer with the rate of pH decrease post mortem and the meat quality. The results from this research did not indicate a benefit of immunocastration on carcass characteristics of pigs of medium genetic potential for lean meat deposition in carcass, when compared to surgical castration.
