품종별 한국산 감자 슬라이스의 냉장 중 이화학적 품질의 변화 (Changes in Physicochemical Attributes of Potato Slices with Different Cultivars during Cold Storage)

  • Three potato cultivars were prepared as slices and stored for 4 weeks at $5^{\circ}C$. Changes in Vitamin C content and other quality factors, such as color, pH, soluble solid and protein content were determined. Vitamin C content and L value decreased in three potato cultivars. Initial Vitamin C contents of three potato cultivars varied from 49.27 mg% in Sumi to 56.40 mg% in Namjak. Changes in L value showed that the tendency of browning in Daejima was slower than Sumi and Namjak. Changes in pH were small. Soluble solids and protein content increased and varied by cultivar. From the correlation analysis, correlation between browning degree and Vitamin C content was low in three potato cultivars.

Novel flexible reflective color media with electronic inks

  • A novel architecture and proprietary electronic inks were developed to provide disruptive digital-media solutions based on an electrokinetic technology platform. The flexible reflective electronic media (eMedia) was fabricated by imprinting three-dimensional microscale structures with a roll-to-roll manufacturing platform. The HP technologies enable the required attributes for eMedia, such as low power, transparency, print-quality color, continuous levels of gray, and lowcost scalability. Pixelation was also demonstrated by integrating with the prototype oxide thin-film transistor backplane, and the system architecture was further developed by stacking primary-colorant layers for color reflective-display application. The innovations described in this paper are currently being developed further for the eSkins, eSignage, and ePaper applications.

신세대 주부의 의생활 양식 유형에 따른 아동복 상표 포지셔닝에 관한 연구 (A Study on Children's Wear Brand Positioning according to the Fashion Life Style of Missy Woman)

  • The purposes of this study were to identify the brand positioning of children's wear according to fashion life style and to construct brand positioning maps by using multidimensional scaling (MDS). A total of 222 responses were collected from married women aged 25 to 35 through questionnaire. Cluster analysis on fashion life style factors identified three groups: Fashion Indifference group (34%), Fashion & Individuality Oriented group (27%) and Rationality Oriented group (37%). ANOVA revealed significant differences among the three groups on the six fashion life style factors. MDS analysis showed that three segmented groups evaluated nine children's wear brand for seven attributes(color, design, price, utility, quality, brand name, fashion).

돼지 뒷다리 주요 근육과 등심근육으로 제조된 햄의 품질 특성 (Quality Attributes of Cooked Pork Hams Manufactured with Major Hind Leg Muscles and Longissimus dorsi)

  • 돼지 뒷다리 부위 주요 근육 4개와 등심 근육으로 제조 된 햄의 이화학적 특성과 관능적 특성을 비교한 결과, 햄 제조에 사용된 원료육의 pH는 Longissimus 근육과 다른 4개의 뒷다리 부위 근육들 간에 차이가 없었으나 햄 제품의 pH에서는 Longissimus 근육 햄에 비해 Rectus femoris 근육 햄이 유의적으로 높은 pH를 나타내었으며(p<0.05), Longissimus 근육 햄의 pH 값이 가장 낮았다(p<0.05). 일반성분을 비교한 결과, 단백질 함량에서만 Longissimus 햄이 Rectus femoris, Semimembranosus, Gluteus medius 근육으로 제조된 햄보다 유의적으로 높았다(p<0.05). 제품색 특성 중 Hunter L 값은 Longissimus dorsi 근육이 가장 높았으며, Rectus femoris, Gluteus medius 근육이 가장 낮은 수치를 나타내었다(p<0.05). Hunter a값은 Rectus femoris, Biceps femoris, Gluteus medius 근육으로 제조된 햄들이 비슷한 수준을 나타내었으며, Longissimus 근육 햄에서 가장 낮았다(p<0.05). 조직감을 조사한 결과, 경도, 탄력성, 응집성, 검성, 씹힘성 모두 근육에 따른 차이가 발견되지않았다(p>0.05). 근육 햄들의 관능적 특성을 조사한 결과, 육안적 색도, 맛, 조직감은 근육간 차이가 없었으며(p>0.05), 풍미는 Semimembranosus 근육으로 제조된 햄이 가장 높은 점수를 받았고, Gluteus medius 근육으로 제조된 햄이 가장 낮았다(p<0.05).

  • The subjects of ttis study were middle-aged women in their 40s$\sim$50s and older women aged 60 and over who were living in Seoul and Kyonggi-do, Korea. Through studying the participants' responses to the questions regarding the attributes of image preference in terms of the levels of satisfaction and importance, the target consumers' demand has been studied. And, they are applied to a QFD Matrix, to find out the relationship between the attributes of product quality and the guidelines of clothing design. For this study, clothing image preference is categorized as three types: fashionable and urbane image, elegant and formal image, comfortable and active image. It has also been found that middle-aged and older women think the clothing that projects fashionable and urbane image needs more improvement that those for other images. To review demands for the clothing image preference attribute of formal suits for middle-aged and older women, the priority of these attributes through QFD Matrix that shows the relationship between the attributes and dress elements emphasized by designers has been examined. In reflecting clothing image preference by consumers for their formal two-piece suits, the most important design elements related to material in order of importance were material type, style, thickness and texture, and those related to color were the number of colors used and coloring type.

패션내의류 시장의 포지셔닝 전략에 관한 연구 (A Study on the Positioning Strategy of the Fashion Underwear Market)

  • This study is to develope positioning strategy of fashion underwear market through the perceptual map which can analyze the psychological positioning of the existing fashion underwear brand. A positive study has been made on 176 women in their teens and twenties who live in the Seoul area through questionaire. The collected data was analyzed with Multidimensional Scaling Method, Conjoint Analysis and Cluster Analysis and so on. The results of analyzing the competitive relationships for attributes and the ideal points are as follows: The consumers groups are divided into three market segments on the basis of the ideal points about fashion underwear attributes. $\ulcorner$calvin Klein$\lrcorner$ evaluated excellent in design and color, brand and function attributes, and also appealed well to the segment market 2. $\ulcorner$calvin Klein$\lrcorner$ has good positioning at the fashion underwear market, and as well as the possibility of growth. $\ulcorner$Body Guard$\lrcorner$ appealed well in segment market 1 which highly valued the material and price attributes and $\ulcorner$Body Guard$\lrcorner$ competes with $\ulcorner$Benetton Undercolor$\lrcorner$ in this market. $\ulcorner$Hunt Innerwear$\lrcorner$ has possibilitiy to be appealed in segment market 3. Finally, it is necessary for each fashion underwear company to analyze and develope the segment market 3. Each company has to develope the brand that can appeal in the segment market 3 in which function was highly valued, and has better to make strategies that develope more functional products like sports underwear, bodysuit and bodywear and so on.

어린 보릿잎을 첨가한 키위잼 재료 혼합비율의 최적화 (Optimization of the Ingredient Mixing Ratio for Preparation of Kiwifruit (Actinidia deliciosa) Jam Prepared with added Barley Sproutling Powder)

  • This study was performed to find the optimum ratio of ingredients for the manufacture of kiwifruit jam. The experiment was designed according to the D-optimal design of RSM (response surface methodology), which included 18 experimental points with 4 replicates for three independent variables (sugar $35{\sim}60%$, pectin $0.1{\sim}1.0.%$, kiwifruit paste $0.37{\sim}0.90%$). The compositional and functional properties of the prepared products were measured, and these values were applied to mathematical models. A canonical form and trace plot showed the influence of each variable on the quality attributes of the final product mixture. By use of the F-test, viscosity, color values (L, a, b), and sensory characteristics (color) were expressed by a linear model, while the L color value and select sensory characteristics (smell, taste, overall acceptance) were also expressed by a quadratic model. The optimum formulations by the numerical and graphical methods, were similar, and with the numerical method it presented as: sugar, pectin, and barley sproutling powder at 49.7%, 0.5%, and 0.6%, respectively. The above results demonstrate the feasibility of preparing kiwifruit jam added with barley sproutling powder, and therefore, the commercialization of a kiwifruit jam marketed as a functional food is deemed possible.

색채 감성의 위계 구조에 대한 탐구 (A Study on the Hierarchical Structure of Color Sensibility)

  • 감성에 대한 기존 연구들은 감성 요인들을 추출하는 데에 치중하여 왔으며, 감성의 내적 구조에 큰 관심을 보이지 않았다. 본 연구는 감성에 감각적 측면과 정서적 측면이 있으며, 이들이 대상의 속성을 묘사하는 객관형용사와 경험자의 심리를 묘사는 주관형용사에 각각 상응한다고 보았다. 국어학적 분류와 경험적 평정을 통해 최종 선별된 43 개의 객관형용사 군과 21 개의 주관형용사 군에 대해 요인분석을 하여, 감각적 측면(객관형용사)의 다섯 요인과 정서적 측면(주관형용사)의 세 요인을 추출하였다. 두 측면의 요인점수들에 대한 다중회귀분석을 통해, 감각적 측면과 정서적 측면 간의 위계 구조를 도출하였다. 그 결과 감성의 정서적 측면은 여러 감각적 요인의 결합으로 파악될 수 있었다. 본 연구의 제한점과 의의를 논의하였다.

Complementary Color Scheme Which Appeared in Women's Fashion Collections of New York, Milan, Paris, and London

  • The main objective of this research was to understand the characteristics of complementary color scheme through the analysis of contemporary women's fashion color coordination as they appear in the 'Collections'. Data collection of 115 was done through review of 'pr$\hat{e}$t-$\grave{a}$-porter Collections' of four cities; Milan, London, New York, Paris. Statistical analysis of frequency and also qualitative interpretation of characteristics of complementary color harmony characteristics which appeared in four collections were completed. The main findings were as followed; (1) Only 115 complementary color schemes out of 4968 two color combinations appeared. Compared the comparative ratios of appearance frequency between the two color combination and the complementary color harmony, London showed the highest, and followed by New York, and Milan and Paris. (2)The combined color type of 'red+green' was the most frequently appeared, and followed by 'violet+yellow' and 'orange+blue'. For the type of tone harmony, the contrast tone showed the most, and followed by the similarity and identity. According to the type of complementary color combination, the type of tone harmony used differently. Some differences showed in the types of color harmony and tone harmony between collections. (3) The complementary color scheme which shown in four collections harmonized two opposite colors mainly through the strong tone contrast and this could cause tension along with interest in the image. The complementary colors intensified and brought out the attributes each other. More details, high contrast of two complementary colors of yellow and violet created a vibrant look especially when used at higher saturation. Sometimes, however, some tone variations of two hues neutralized the strong effect and sometimes enhanced each other. When they used in similarity tones or identity tones in light colors, the tension was reduced and became softened but still presented nice harmony. In the type of 'red+green' color harmony, the various color combinations were demonstrated, mostly through tone manipulation of green color. The similarity tone harmony, which used the most, could effect a better sense of harmony and present more sophisticated looks. When used in contrast tone harmony, some changes in its own color which have only one color of two the excessive intensity led a good harmony. The 'orange+blue' color harmony was shown the least and used three tone harmony almost the same ratio. In this color harmony, blue amplified its energy and brilliance of orange and seemed to work better when one color was at a lower intensity than the other. In harmony with a similarity and an identity tone, this color harmony produces a stable and calm image. (4) The complementary scheme appeared more frequently in the S/S collections than in A/W collections and showed some differences in the types of color harmony and tone harmony between seasons, however, no big differences between collections.

시판 상면발효맥주의 관능 및 이화학 특성 분석 (Physicochemical and sensory characteristics of commercial top-fermented beers)

  • 시판되는 상면발효맥주 12종에 대하여 5개의 외관, 9개의 향, 6개의 향미, 4개의 입안감촉에 대한 묘사용어를 개발하였으며, 묘사분석을 실시하였다. 실제 상면발효 맥주의 주요 특성으로 알려진 다양한 과일향미, 쓴맛과 관련 향미 용어가 개발되어 향후 상면발효맥주의 관능검사에 주요 평가 용어로 활용이 가능하리라 여겨진다. 또한 가용성 고형분, 총산도, pH, 환원당, 쓴맛 정도(B.U.), 탁도, 색도, 아미노산 함량, 총페놀함량과 DPPH 라디칼 소거능의 12가지 이화학특성을 분석하였다. 관능특성 항목과 맥주의 중요 지표인 이화학 특성간의 상관분석을 통해 B.U., 총폴리페놀 함량, 총산도, 황색도, 가용성 고형분이 에일맥주의 주요 관능특성인 시트러스향, 파인애플향, 쓴맛과 높은 상관관계를 보임을 확인할 수 있었다. 향후 이러한 이화학적 분석 항목은 제품 개발 시 관능특성 분석과 더불어 주요 품질지표 항목으로 활용이 가능하리라 여겨진다.
