단체급식소 및 가정에서 식용유의 사용실태와 산패도에 관한 조사 연구 (A Study on Rancidity of Edible Soybean Oil by Cooking Frequency in Mass Meal Services and Homes)

  • Customary usage of oil at homes and rancidity of edible soybean oil by cooking frequency at homes and mass meal services were investigated. 80% of house wives bought the cooking oil by 1.8ι unit container and 70% of them read either the manufactured date or explanatory note for use. 85% of house wives kept oil in the storage case under sink or in the pantry chest, and 80% of oils were used once or twice and 20% used three times for cooking. Acid value(AV), iodine value(IV), peroxide value(POV), carbonyl value(CoV) and thiobarbituric acid value(TBAV) of fresh soybean oil were lower than standard level. In the rancidity by cooking frequency, the acid value, peroxide value, carbonyl value and thiobarbituric acid value increased significantly when oil was used once and iodine value decreased significantly when used once and twice at both mass meal services and homes. The level of the acid value, iodine value, carbonyl value and thiobarbituric acid value of oil used at mass meal services did not show significant difference from those of oil used at homes. But, the peroxide value of oil used thrice at mass meal services was significantly higher than those of homes.

Evaluation of Inhibitory Effects of Thiobarbituric Acid Derivatives Targeting HCV NS5B Polymerase

  • A series of thiobarbituric acid derivatives were constructed and evaluated for inhibitory activity on hepatitis C virus NS5B polymerase. In biochemical assays using purified viral polymerase and RNA template, the $IC_{50}$ value was improved to 0.41 ${\mu}M$ from the original compound's 1.7 ${\mu}M$ value. In HCV sub genomic replicon assay, the $EC_{50}$ value was improved to 3.7 ${\mu}M$ from the original compound's 12.3 ${\mu}M$ value. $CC_{50}$ was higher than 77 ${\mu}M$ for all compounds tested, suggesting that they are useful candidates for anti-HCV therapy.

화학발광분석기를 이용한 동결건조 난황분말의 산패도 측정법 (A Method for Measuring Lipid Peroxidation of Freeze-dried Egg Yolk by Using Chemiluminescence Analyzer)

  • 본 연구는 TBARS 및 PV 등의 식품중의 지질산패도 측정법을 대체할 수 있는 간단한 측정법을 개발하고자 시행되었다. 이를 위해 선행 연구에서 식용유지의 산패도 측정법 대체가능성을 나타낸 화학발광도 측정법을 고체시료 중에서 축산식품인 동결건조 난황분말에 적용하여 기존의 산패도 측정법과의 상관관계를 조사하여 대체 가능성을 확인하였다. 암소의 $25^{\circ}C$에서 저장기간(0, 12, 24, 48, 72, 144시간) 별로 시료를 채취해 TBARS와 PV 및 화학발광도를 측정하여 비교하였다. 저장시간에 따른 화학발광도 측정 결과는 특히 과산화물가 측정치와 유의적으로 높은 상관관계를 나타내었으며($r^2=0.987$), 상대적으로 높지는 않지만($r^2=0.874$) TBA가와도 유의적으로 상관관계가 있다고 조사되었다. 또한 실제 표준시료를 이용한 분석 결과에서도 유의적으로 높은 상관관계($r^2=0.9214$, 0.9599)를 나타내었다. 따라서 화학발광도를 이용한 지질 산패도 측정법은 여러 식품 등의 지질 산패도 측정에 있어서 POV를 대체할 수 있을 것으로 기대가 되며, 경우에 따라서는 TBARS에 대해서도 대체가 가능할 것으로 기대된다.

닭고기의 지방산패도에 미치는 이눌로프리바이오틱스 급여효과 (Effect of dietary inuloprebuotics on thiobarbituric acid reactive substances of chicken meat)

  • The author previously reported that the addition of inuloprebiotics to broiler diets produces growth performance that is superior to antibiotic supplementation. The present study furthered this work by evaluating the quality with thiobarbituric acid reactive substances (TBARS) of the meat from chickens fed inuloprebiotics produced using Korean Jerusalem artichoke. Male Ross 308 broilers (n=240) were randomly allotted to a 35 day regimen of dietary control (no supplementation), dietary antibiotics supplementation (8 mg avilamycin/kg diet), or dietary inuloprebiotic supplementation (450 mg inuloprebiotics/kg diet). The pH, water holding capacity, L*value (lightness), and b*value (yellowness) of the chicken meat weres ignificantly higher in the inuloprebiotic group. The TBARS value of chicken meat stored at low temperature tended to increase according to the length of storage, and was significantly lower in the inuloprebiotics group. The sensory scores of the cooked chicken meat were significantly higher in the inuloprebiotics group. The results indicate that the addition of inuloprebiotics as anantimicrobial agent to broiler diets can greatly improve the quality and self-life with reducing TBARS of chicken meat.

Lard와 Corn oil이 Ethanol로 처리한 Mouse의 혈청 총 Cholesterol함량 및 간 Thiobarbituric acid치에 미치는 영향 (Effect of Lard and Corn oil on Serum total Cholesterol Content and Liver Thiobarbituric acid Value in Mice treated with Ethanol)

  • The study carried out to clarify the effects of lard and corn oil on serum total cholesterol content and liver thiobarbituric acid (TBA) value in ethanol (Et-OH) fed mice. Results obtained from the present study were a follows: 1. serum total cholesterol content was considerably increased by 25% Et-OH administration in mice. In case of 25% Et-OH plus Lard group and Lard group both group were also increased significantly to compare with normal value of mice but 25% Et-OH plus lard group was shown very higher value rather than that of Lard group and Lard group was found similar tendency to compare with the 25% Et-OH plus saline group except to after the 1 day. 2. serum total cholestrol content of 25% Et-OH plus Corn oil group and corn oil group were also increased significantly to compare with normal value, but the 25% Et-Oh plus Corn oil group slightly higher level than that of Corn oil group except to after the 3 days. 3. Lard group was also very similar tendency to compare with the corn oil group except to the 3 days. 4. liver TBA value was increased by 25% Et-OH fed mice. 25% Et-OH plus Lard group and Lard group were also increased significantly to compare with liver TBA value in normal mice, but 25% Et-OH plus Lard group was found higher value rather than that of lard group and 25% Et-OH group (Control). Lard group was similar to that of Control group except to after the 1 day. And 25% Et-OH plus Corn oil group was considerably increased rather than that of Control group, and liver TBA value of the above group was similar to that of 25% Et-OH plus Lard group except to after the 3 days. Corn oil group was shown lower value than that of lard group, but it was no significant.

어유에 대한 효모와 항산화효과 (Screening for Antioxidative Activities of Yeasts on Fish Oil)

  • 효모의 항산화작용을 알아보기 위하여 IFO 효모, 간장에서 분리한 효모, 막걸리에서 분리한 효모 및 당밀에서 분리한 효모를 각각 $1{\times}10^6/ml$로 증식시켜 어유에 접종하여 $30^{\circ}C$에서 배양하면서 POV, TBA-V의 변화를 조사하여 그 항산화력을 검토하였다. 항산화활성은 Saccharomyces rouxii와 Torulopsis etchellsii가 가장 높았고, 막걸리에서 분리한 효모 중에서는 Pichia ohmerii가 가장 높았다. 그리고 당밀에서 분리한 효모중에서는 Candida versatilis가 항산화작용이 높았다.

오존수 처리가 냉장 쇠고기의 화학적 품질에 미치는 영향 (Effect of Treatment with Ozonated Water on Shelf Life of Refrigerated Meat)

  • 쇠고기를 오존수(0.2 ppm)로 0, 5, 10, 30, 60분간 침수 처리하여 $5^{\circ}C$에서 24일 동안 저장하면서 3일 간격으로 쇠고기의 품질 측정 지표라 할 수 있는 휘발성 염기태질소(volatile basic nitrogen, VBN), 지방산패도(thiobarbituric acid reactive substances, TBARS), 산가(acid value, AV), pH 를 측정하여 오존수 처리가 냉장 저장중의 쇠고기의 품질에 미치는 영향을 평가하였다. 휘발성 염기태질소와 pH 변화를 측정한 결과 오존수 비처리구는 9일째 부패로 인정되는 수치가 측정된 반면 오존수(0.2 ppm)로 60분간 처리한 쇠고기에서는 15일까지 안전한 수치가 측정되었다. 지방산패도와 산가 또한 모두 오존수 처리한 쇠고기가 비처리구 쇠고기보다 낮은 측정치를 나타내었다. 본 실험의 내용을 종합한 결과 저 농도 오존수가 냉장 쇠고기 화학적 특성에 영향을 끼치며 저장성 향상에 효과적이라고 판단된다.

클로렐라의 동조배양법에 의한 세포분열의 생리학적 연구 2 (Physiological studies on cell division by the technique of synchronous culture of chlorella (II))

  • The effect of glucose and 2-thiobarbituric acid on the biosynthesis of cell constituents such as protein, carbohydrate, DNA, RNA, phospholipid and PCA-soluble phosphate compounds in Chlorella duing the life cycle was measured, and the changes in the content of these main cellular components of the algal cell were analyzed in connection with the nuclear and cytoplasmic divison. In the normal autotrophic synchronous culture the contents of protein, RNA, and DNA in the cell showed a chracteristic changes according to the progress of cell development, increasing more or less throughout all the life cycle. The synthesis of protein is more prominent in the division period nad that of DNA is more active in the ripening period, while the synthesis of RNA is more rapid in the growing and ripening periods than other developmental stages. The period of division cycle was little affected by glucose in the medium, although the synchrony of the growth and cellular division was disturbed and the n value increased. The cotents of protein, carbohydrate, RNA nad DNA of the cell were increased by the glucose treatment throughout all the life cycle. On the other hand, both of cellular growth and division were retarded severely and the n value was decreased by the 2-thiobarbituric acid treatment throughout all the life cycle. The synthesis of protein, carbohydrate, DNA, RNA and phospholipid of the cell was also retarded by 2-thiobarbituric acid. In the autotrophic, mixotrophic and 2-thiobarbituric acid-treated cultures, each having different mode cytoplasmic division, a common general schema occurring in the cell during the life cycle may be drawn as follows. The ratio of RNA to protein attains maximum value in the $L_1$-cell stage prior to the nuclear division and thereafter decreases during the periods of ripening and division. The ratio of PCA-soluble phosphate compounds to protein increased from the begining of the culture to $L_4$-cell stage successively and thereafter decreased gradually during the division period, while the ratio of protein to DNA kept almost constant up to the division period and thereafter increased during the division period. Therefore, it is presumed that the increase in the ratio of RNA to protein is to be an inducer of nuclear division and that the cytoplasmic division is induced by the increase in the ratio of protein to DNA.

로즈마리 추출분말을 첨가한 돈육 떡갈비의 품질 및 저장특성 (Quality and Storage Characteristics of Pork Teokgalbi with Added Rosemary (Rosemarinus officinalis) Extract Powder)

  • This study was carried out to investigate the effects of adding rosemary extract powder (REP) to pork teokgalbi on its quality and storage characteristics. Five types of teokgalbi were tested, viz. with no REP added (normal, N), with 0.05% ascorbic acid added (control, C) and with 0.05% (R1), 0.1% (R2) and 0.2% (R3) of REP added. The proximate composition, calorific value, water holding capacity and cooking loss were not significantly different among the different types of pork teokgalbi. The L and a values of the teokgalbi containing REP were significantly lower than those of the N and C groups. As regards the textural characteristics, the addition of 0.2% REP increased the springiness value. In the sensory evaluation, the teokgalbi with the addition of 0.1% REP had higher scores in flavor and total acceptability. The 2-thiobarbituric acid (TBA) value, total microbial count and volatile basic nitrogen content of the teokgalbi containing 0.2% REP were lower than those of the N group. In conclusion, R3 was significantly more effective in delaying lipid peroxidation than the other treatment groups. Therefore, rosemary extract could be used as a natural antioxidant in meat products.

매생이 추출물의 생리 활성과 항산화 활성에 관한 연구 (A Study on Physiological Activity and Antioxidative Activity of Maesangi(Capsosiphon fulvescens) Extract)

  • Physiological activity and antioxidative activity of Maesangi(Capsosiphon fulvescens) extracts with distilled water or 95% ethanol were investigated. For the evaluation of physiological and antioxidative activities, some evaluation assay methods such as measurement of Hunter color value, chlorophyll a/b value, total phenolics, reducing power and thiobarbituric acid(TBA) value of soybean oil were used. Proximate composition and mineral contents of Masaengi were orders of crude protein>crude fiber>moisture>crude ash>crude lipid, and K>Ca>Mg>Na>P>Fe>Zn, respectively. In ethanol extract, the content of total phenolic compounds in Maesangi was determined to half times of that in Dasima(Laminaria). The reducing power of Maesangi-ehtanol extract was about 5 % of vitamin C and was lower than that of Dasima-ethanol extract. The TBA value of Maesangi-ethanol extract on soybean oil oxidation was about 47 % and 68.4 % to control in three and eight days oxidation, respectively. But TBA value difference was not observed significantly with the dosage below 5mL of ethanol extract.
