A Survey on the Children한s Notion in Kimchi(II) - Children한s Opinions for Kimchi and Their Actual Consuming Behavior - (어린이의 김치의식에 관한 실태조사(II) - 김치섭취에 대한 의식 및 섭취실태 -)

  • A survey on the children's thought for kimchi intake and practical amount of kimchi consumption were conduction in April of 1995 to get basic information needed for the development of special kimchi for the children. And the effects of nutritional guidance on consumming kimchi was also investigated. Total of 1100 students in 2nd, 4th, and 6th grade from public and private elementary school participated in this survey. The eighty three percent of student think they should eat kimchi mainly because kimchi is good for the health(48.0%) and kimchi is our traditional food(31.8%). However, only 26.5% of children consume more than 5 pieces($4{\times}5cm$) of kimchi per mela and 64.5% consume less than 1~2 pieces. This shows that children's opinion(p<0.001), preference(p<0.001) and actual consumption(p<0.001) for kimchi was found to be very significant. Thus the nutritional guidance is important as much as the development of children's kimchi. Children wanted kimchi which is sweet, mild hot and not too strong in flavor. Ingredients children wanted in kimchi were pear, apple, tangerine, carrot and onion. Children's most favorite foods cooked with kimchi were stir fried kimchi rice and kimchi stew. But children did not like kimchi hamberger, pizza topped with kimchi and rice cooked with bean sprout and kimchi.

The Measurement of Folacin Content in Korean Foods -Part 3. Folate Distribution in Various Foods- (한국 상용 식품의 엽산 분석에 관한 연구 -제 3 보-)

  • In continuation of the previous $studies^{2{\sim}3)}$, the folate activity levels in 226 Korean food items were determined by a modified microbiological assay with Lactobacillus casei. There was a large variation in folate activity between the different food groups as well as between each individual food. There was also a wide variation in the biologic availability of folate in foods and the different forms of the folate with different foods in varying amounts. Data showed that almost always, foods cooked and/or processed were lower in folate activity than fresh or raw food and the amount of the loss varied greatly in each food. In calculating dietary intake, total rather than free folate activity levels should he used. In addition, loss of folate activity during cooking and processing of foods should be considered as a major concern for appraising diets and food supplies. Among all assayed food items, including Part $I^{2)}}$ and $I^{3)}$, yeast 2800. ug total per 100g the highest folate level. Soybean, spinach, Shepherd's purse and liter of beef and pork had over 100 ug total per 100 g folate activity. Folate ranging over 50 ug total per 100 g was found in all dried legumes, nuts and seeds assayed, Garland Chrysanthemum, leek, mugwort, wafer cress, asparagus, e99 folk and beef kidney. Wheat, sweet Potatoes,dried fungus, green onion, hotrod pepper, lettuce, radish and some fermented soybeen products had considerably higher folate content ranging around 40 ug total per 100 g. Substantial amounts of folate were not found in many food groups, and among specific groups, in part in starch, sweets, fruits, meat, fish, milk, and cooked and processed foods. Soused fish, oils and fats, beverages, liquor and seasonings, other than fermented soybean products, had almost no folate.

Studies on the Taste Sensitivity and Eating Habits of Koreans (한국인(韓國人)의 맛에 대한 감도(感度)와 식습관(食習慣)에 대한 연구(硏究))

  • In order to provide basic data for food processors and to improve eating habits and healthy diets, four primary tastes and hot taste threshold of Koreans, physio-chemical properties of foods and food preference were investigated. The results of this study were as follows; 1. The recognition threshold concentration of four primary tastes was 0.016 % of salt, 0.245${\sim}$0.249 % of sweet, 0.004${\sim}$0.008 % of sour and 0.008${\sim}$0.012 % of bitter. Threshold concentration of hot taste was 170,000${\sim}$600,000 Scoville Heat Unit(S.H.U.) 2. The most acceptable tastes were 0.3 % saltiness in 0.375 % broth(at $60^{\circ}C$), 6 % sweetness in 2 % instant coffee(at $60^{\circ}C$) and 19.3 sugar-acid ratio(16.8 brix/0.8736 % citric acid) in 100 % valencia orange juice(at $20^{\circ}C$). 3. The salt concentrations of soup were 1.127 % in average. S. H. U. (scale of hot taste) of soybean sprout soup and spinach bean paste soup ranged between 12,500 and 47,500 equivalent to oleoresin capsicum content of 1.990${\sim}$5.911 (mg %). 4. 'Jigae' (Korean style stew) was the most favorable food and it was revealed that the father influences the formation of his children's eating habits.

발아조건 및 휴면타파 처리에 따른 수단그라스(Sorghum sudanense(Piper.) Stapf) 품종별 발아검정

  • 녹비작물은 천연비료로서 화학비료 사용량을 감소시키고 이산화탄소를 흡수해 농업분야에서 온실가스 저감을 위해 사용하고 있다. 녹비작물을 이용하여 지속가능한 친환경 농업의 필요성이 증대되고 있는 실정이다. 화본과 녹비작물은 두과 녹비작물에 비해 탄소 물질의 함량과 biomass가 상대적으로 높아 토양 내 유기물증진을 위한 재배에 적합하다. 이에 화본과 녹비작물 중 하나인 수단그라스의 발아 및 휴면특성 검정을 진행하여 발아 적정조건을 찾아 유기종자 생산기술 개발을 위한 자료로 활용하고자 한다. 본 연구에서는 수단그라스 4품종(GW104G, Cadan99B, TE-Evergreen, Sweet home)을 공시품종으로 사용하였다. 표준발아검사에 따라 각 품종별 종자를 100립씩 3반복 치상하여 10일간 발아검정 진행 후 발아율, 발아세, 평균발아일수, 발아속도를 조사하였다. 첫 번째 실험은 침종시간 및 치상온도별 실험으로 시간별(무처리/5/10/15/20/25hr)로 침종한 후, 생장상(10/20/30/40℃)에 보관하여 정상아 개수를 파악하였다. 두 번째 실험은 휴면타파 실험으로 1~5일 동안 종자를 예냉(무처리/5/10/15℃)과 고온(50℃) 처리한 후, 첫 번째 실험 결과에 따라 발아 최적 조건(침종 20hr, 치상온도 20℃)에서 발아시킨 후 정상아 개수를 파악하였다. 수단그라스 4품종의 치상온도별 발아율은 20℃에서 평균 92±6.9%로 가장 높았으며, TE-evergreen의 경우 치상온도 10℃에서 10시간, 20℃에서 20시간, 30와 40℃에서 15시간 침종한 값이 유의적으로 높은 발아율을 보였다. 수단그라스 4품종의 평균발아일수(MGT)는 침종 20시간과 치상온도 30℃일 때 평균 1.21±1.14일로 가장 빨랐으며 발아속도(GR)는 침종 20시간과 치상온도 20℃의 조건일 때 89.9±5.92로 가장 빨랐다. 수단그라스 4품종의 휴면타파 온도별 발아율은 10℃에서 평균 92±9.3%로 가장 높았다. TE-evergreen의 경우 휴면타파 온도 5, 10, 15℃에서 4~5일 동안 처리한 값이 무처리와 50℃처리에 비해 유의적으로 높은 발아율을 보였다. 수단그라스 발아검사 결과, 20시간 침종 후 20~40℃에서 2~3일간 발아시킬 경우 90%이상의 발아율을 보이므로 파종을 위한 종자 전처리를 할 경우 이와 같은 조건에서 진행하는 것이 바람직 할 것으로 사료된다.

Use of mothers' home meal replacement and diet quality of their young children (유아 어머니의 유아식사에서 가정간편식 이용 빈도에 따른 유아 자녀의 식사의 질 평가)

  • Purpose: This study investigated the association between the mothers' use of home meal replacement (HMR) in their children's meals and the diet quality of their young children. Methods: Three hundred and thirty-seven mothers with five-year-old kindergartners in Sejong city participated in the survey from June to July 2020. The questionnaire consisted of the status of HMR use in children's meals and questions for assessing the nutrition quotient for preschoolers (NQ-P). The subjects were classified into three groups according to the frequency of HMR use in children's meals: using HMR more than three times a week (high-frequency group; [HG], n = 65), one-two times a week (moderate-frequency group; [MG], n = 145), and less than once a week (low-frequency group; [LG], n = 130). Results: The mothers' mean age was 38.3 years. The average monthly cost of purchasing HMRs was highest at 200,000-300,000 won in HG, 50,000-100,000 won in MG, and less than 50,000 won in LG (p < 0.001). The consumption frequency of processed meats, fast foods, processed beverages, and sweet & fatty snacks was significantly higher in the HG group than the other groups. The mean NQ-P score was 60.5 in HG, 63.0 in MG, and 64.5 in LG, showing a significant difference (p < 0.01). In the sub-score according to the three areas, there were no significant differences in balance and environment among the three groups. In the moderation area, however, the score was 44.1 in HG, 51.3 in MG, and 57.5 in LG Group, showing a significant difference (p < 0.001). Conclusion: The increase in HMR use was related to the decreased diet quality in the overall and moderation areas of children's diet. These results support the importance of nutrition education for mothers, which aims to reduce their children's access and exposure to processed foods, such as HMR.

Coffee consumption behaviors, dietary habits, and dietary nutrient intakes according to coffee intake amount among university students (일부 대학생의 커피섭취량에 따른 커피섭취행동, 식습관 및 식사 영양소 섭취)

  • Purpose: This study was conducted to examine coffee consumption behaviors, dietary habits, and nutrient intakes by coffee intake amount among university students. Methods: Questionnaires were distributed to 300 university students randomly selected in Gongju. Dietary survey was administered during two weekdays by the food record method. Results: Subjects were divided into three groups: NCG (non-coffee group), LCG (low coffee group, 1~2 cups/d), and HCG (high coffee group, 3 cups/d) by coffee intake amount and subjects' distribution. Coffee intake frequency was significantly greater in the HCG compared to the LCG (p < 0.001). The HCG was more likely to intake dripped coffee with or without milk and/or sugar than the LCG (p < 0.05). More than 80% of coffee drinkers chose their favorite coffee or accompanying snacks regardless of energy content. More than 75% of coffee takers did not eat accompanying snacks instead of meals, and the HCG ate them more frequently than LCG (p < 0.05). Breakfast skipping rate was high while vegetable and fruit intakes were very low in most subjects. Subjects who drank carbonated drinks, sweet beverages, or alcohol were significantly greater in number in the LCG and HCG than in the NCG (p < 0.01). Energy intakes from coffee were $0.88{\pm}5.62kcal/d$ and $7.07{\pm}16.93kcal/d$ for the LCG and HCG. For total subjects, daily mean dietary energy intake was low at less than 72% of estimated energy requirement. Levels of vitamin C and calcium were lower than the estimated average requirements while that of vitamin D was low (24~34% of adequate intake). There was no difference in nutrient intakes by coffee intake amount, except protein, vitamin A, and niacin. Conclusion: Coffee intake amount did not affect dietary nutrient intakes. Dietary habits were poor,and most nutrient intakes were lower than recommend levels. High intakes of coffee seemed to be related with high consumption of sweet beverages and alcohol. Therefore, it is necessary to improve nutritional intakes and encourage proper water intake habits, including coffee intake, for improved nutritional status of subjects.

Potassium intake of Korean adults: Based on 2007~2010 Korea National Health and Nutrition Examination Survey (한국 성인의 칼륨 섭취 현황 : 2007~2010년 국민건강영양조사 자료 이용)

  • Purpose: The purpose of this study was to evaluate the dietary potassium intake, Na/K intake molar ratio, consumption of 18 food groups, and foods contributing to potassium intake of Korean adults as well as the relationships among quartile of potassium intake level and blood pressure, blood biochemical index. Methods: This study was conducted using the Korea National Health and Nutrition Examination Survey, 2007~2010. The total number of subjects was 20,291. All analyses were conducted using a survey weighting to account for the complex survey design. Results: Overall average intakes of potassium were 2,934.7, 3,070.6, 3,078.1, and 3,232.0 mg/day, and they significantly increased by year in Korean adults. The average dietary potassium intake was close to adequate intake (AI), whereas that of women was considerably lower than the AI. The Na/K intake molar ratio in males (2.89~3.23) was higher than in females (2.62~2.95). The major food groups contributing to potassium intake were vegetables, cereals, and fruits/meats. The two major foods contributing to potassium intake were polished rice and cabbage kimchi. The rankings of food source were as follows; polished rice > cabbage kimchi > potato > oriental melon > sweet potato > seaweed > radish > apple > black soybean. In 50~64 year old females, systolic blood pressure (SBP) significantly decreased (p < 0.01) and HDL-cholesterol significantly increased (p < 0.05) as potassium intake increased. Triglyceride (TG) was significantly higher in the other quartile of potassium intake level than in the first quartile (p < 0.05). Conclusion: In conclusion, our study suggests the need for an appropriate set of dietary reference intakes according to caloric intake by sex and age groups and for development of eating patterns to increase potassium intake and decrease sodium intake.
