Effects of Dietary Fiber and Stevioside Mixture on Quality Attributes of Sausage and the Blood Properties of Rats

  • This study was conducted to examine the physiochemical characteristics (PC) of a sausage with added dietary fiber and stevioside mixture, as well as the blood properties (BP) of rats with feeding of the sausage. There were no significant differences between the control and the treatments in the PC; in case of treatments, as additive contents of dietary fiber (1-3%) and stevioside (0.05-1.5%), redness ($a^*$) gradually increased, but yellowness ($b^*$) rapidly decreased (p<0.05). The pH level and water holding capacity (WHC) also tended to decrease. Thiobarbituric acid reactive substances (TBARS) were of little change. However, the texture of sensory evaluation and the adhesiveness of texture analysis had significantly low values (p<0.05). BP, such as blood sugar, high density lipoprotein (HDL) cholesterol, low density lipoprotein (LDL) cholesterol and triglyceride (TG), did not increase and total cholesterol (TC) actually decreased (p>0.05). However, body weights of rats increased with treatments. Overall, it is suggested that adding dietary fiber and stevioside mixture to sausages can moderately improve the redness, and also reduce the levels of sugar, cholesterol and neutral lipids in the blood without noticeably affecting the WHC, oxidant stability, appearance, and taste.

  • Tin oxide thin films have been prepared on display glass from mixtures of dibutyl tin diacetate as a tin source, oxygen as an oxidant by Plasma Enhanced Chemical Vapor Deposition (PECVD) method. The relationships between the properties of tin oxide thin films and various reaction parameters such as the deposition temperature, deposition time and the oxygen gas flow rate were studied. As the deposition temperature increased, the texture plane of $SnO_2$ changed from (200) plane to denser (211) and (110) planes. Lower deposition temperature and thinner thickness of deposited film led to decreasing grain size, surface roughness and electrical resistivity of the formed thin films at $325{\sim}425^{\circ}C$. The properties of fabricated $SnO_2$ films are highly changed with variations of substrate temperature and deposition time.

이주속압연된 무산소동 판재의 두께방향으로의 변형, 조직 및 기계적 특성 (Strain, Microstructure and Mechanical Properties Through Thickness of Oxygen Free Copper Sheet Processed by Differential Speed Rolling)

  • The strain, microstructure and mechanical properties through thickness of an oxygen free copper(OFC) processed by differential speed rolling(DSR) were investigated in detail. The OFC sample with thickness of 1 mm was rolled to 35% reduction at ambient temperature without lubrication changing the differential speed ratio from 1.0:1 to 2.2:1. The shear strain introduced by the conventional rolling showed positive values at positions of upper roll side and negative values at positions of lower roll side. However, it showed zero or positive values at all positions for the samples rolled by the DSR. The effects of strain distribution through thickness of the coper sheets on microstructure, texture and mechanical properties are discussed in the present study.

  • In this study, a developed Mg-5Bi-2Al-0.4Mn (BAM520, wt%) alloy was successfully extruded at an extremely high speed of 70 m/min. Microstructural evolution during extrusion and the microstructural characteristics and tensile properties of the very-high-speed extruded BAM520 alloy were then investigated. The homogenized BAM520 billet contained only thermally stable Mg3Bi2 phase particles without any Mg17Al12 phase with a low melting temperature. Therefore, the BAM520 alloy exhibited excellent extrudability. The very-high-speed extruded BAM520 alloy had a completely recrystallized grain structure and a typical basal fiber texture. Despite the extremely high extrusion speed of 70 m/min, the extruded BAM520 alloy had a high ultimate tensile strength of 280 MPa due to combined strengthening effects of a small grain size, numerous fine Mg3Bi2 particles, and strong basal texture.

명태, 폐계가슴살 및 기계발골계육을 활용한 수리미의 품질 특성 (Quality Characteristics of Surimi Manufactured by Alaska Pollack, Barren Hen Breast Meat and Mechanically Deboned Chicken Meat)

  • 수리미 원료육의 특성을 분석하기 위하여 폐계가슴살(T1), 기계발골계육인 S사 MDCM(T2) 및 J사 MDCM(T3)을 활용하여 pH 11.0의 알칼리 조절법으로 수리미를 제조한 후 품질 특성을 비교한 결과 명태연육을 활용한 수리미인 대조구는 다른 처리구들에 비해 백색도, 응집성, 관능평가의 기호도가 높은 장점을 나타낸 반면 검성, 씹힘성 및 겔 특성이 낮은 단점을 나타내었다. T1은 다른 처리구들에 비해 명도, 표면경도, 변형값, 젤리강도 및 관능평가의 향이 높은 장점을 나타낸 반면 조직감 및 접기실험 결과가 낮게 나타났다. T2는 다른 처리구들에 비해 조직감, 전단가 및 겔 특성이 높은 반면 변형값, 관능평가의 기호도가 낮고, 황색도가 높은 단점을 나타내었다. 또한 T3의 경우 다른 처리구들에 비해 응집성이 가장 높았으며, 적색도가 높고, 명도 및 백색도 낮은 단점을 나타내었다. 결론적으로 원료육의 차이에 따른 수리미의 품질 특성을 비교한 결과 폐계가슴살을 활용한 T1에서 높은 단백질 함량과 낮은 지방 함량을 보여 수리미 원료로서의 활용도가 높을 것으로 판단된다. 또한 수리미 주요 겔 특성인 변형값과 응집성을 중심으로 볼 때 명태연육을 대체할 수 있는 수리미 원료육으로 T1과 T3가 뛰어난 것으로 나타났다. 그러나 T1과는 달리 MDCM(T2 및 T3)은 적색도가 높고 백색도가 낮아 수리미 제조시 외관적 제품 특성에 부정적인 영향을 미칠 뿐만 아니라 기호도에서 낮은 점수를 획득하여 이에 대한 추가 연구가 필요할 것이라 판단된다.

Effects of Purple-fleshed Sweet Potato (Ipomoera batatas Cultivar Ayamurasaki) Powder Addition on Color and Texture Properties and Sensory Characteristics of Cooked Pork Sausages during Storage

  • This study was conducted to evaluate the effects of adding purple-fleshed sweet potato (PFP) powder on the texture properties and sensory characteristics of cooked pork sausage. Sodium nitrite alone and sodium nitrite in combination with PFP were added to five different treatments sausages (CON (control) = 0.01% sodium nitrite, SP25 = 0.005% sodium nitrite and 0.25% purple-fleshed sweet potato powder combination, SP50 = 0.005% sodium nitrite and 0.5% purple-fleshed sweet potato powder combination, PP25 = 0.25% purple-fleshed sweet potato powder, PP50 = 0.5% purple-fleshed sweet potato powder). The sausages were cooked to $74^{\circ}C$, stored at $4^{\circ}C$ for 6 wks, and used for chemical analysis, textural properties, and a sensory evaluation on 0, 2, 4 and 6 wks of storage, respectively. Similar CIE $a^*$ and $b^*$ values were determined in sausages from CON, SP25 and SP50 at the end of storage, and they were higher in CIE $a^*$ but lower in CIE $b^*$ than that of the PP25 and PP50 sausages. Significant differences were observed for brittleness and hardness when PFP was added to the sausages but were not confirmed after 4 wks of storage. The objective color score was influenced by adding PFP; however, the effect was not dose dependent. In overall acceptability, panelists favored the CON, SP25, SP50, and PP50 sausages but did not prefer PP25 sausages at the end of storage. Therefore, adding PFP to cooked pork sausages improved color and texture properties and sensory characteristics, but further study is needed to determine the proper ratio of sodium nitrite and PFP.

직류 마그네트론 스퍼터링으로 형성한 Co-Pt 합금박막의 수직자화기구에 대한 연구 (A Study on the Perpendicular Magnetic Anisotropy of Co-Pt Alloy Thin Films Deposited by DC Magnetron Sputtening)

  • $Co_{1-x}Pt_{x}(X\;=\;0.53,\;0.75)$ 합금박막을 직류 마그네트론 스퍼터링 방법으로 증착하여 Ar 압력 및 증착온도 등의 증착조건에 따른 자기적 성질과 미세구조를 관찰하였다. 스퍼터링법으로 증착한 Co-Pt 합금박막은 모두 강한(111) 우선방위를 나타내었으며, 증착온도가 증가하거나 Ar 압력이 감소할수록 (111) 우선 방위는 커지는 것으로 나타났다. As-deposited 시편의 경우 수평자화를 나타내었고 (111) 우선방위와의 연관성은 나타나지 않았다. 증착한 합금박막을 열처리하여 미세구조 및 자기적 성질을 관찰한 결과 X = 0.53 조성의 시편은 열처리온도가 증가함에 따라 보자력과 각형비가 크게 증가함을 관찰하였고 X = 0.75 조성의 시편에서는 별다른 변화를 관찰하 지 못하였다. 미세구조를 XRD와 TEM을 이용하여 관찰한 결과 X = 0.53 조성의 시편에서는 CoPt 규칙상, X = 0.75 조성의 시편은 $CoPt_{3}$ 규칙상이 형성됨을 알 수 있었고 <001> 방향으로 Co 원자층과 Pt 원자층이 교대적층 되어 있는 CoPt 규칙상이 형성되었을 때 자기적 성질이 크게 변화하였다.

텍스처 분석 기반 칼라 텍스처 이미지 워터마킹 알고리즘 (Color-Texture Image Watermarking Algorithm Based on Texture Analysis)

  • 텍스처 이미지가 다양한 산업 애플리케이션 분야에 널리 사용됨에 따라, 이러한 이미지들의 저작권 보호는 중요한 이슈가 되어왔다. 이러한 이유로, 본 논문은 이미지에 내재한 텍스처 특성을 이용한 칼라 텍스처 이미지 워터마킹 알고리즘을 제안한다. 제안한 알고리즘은 퍼지 클러스터링을 위한 입력으로써 그레이 레벨 동시발생 행렬의 에너지와 동질성 특징을 사용하여 워터마크를 삽입하기 위한 적당한 블록들을 선택한다. 워터마크를 삽입하기 위해 먼저 선택된 블록들에 이산 웨이블릿 변환을 수행하고, 이산 웨이블릿 변환의 서버밴드들의 하나를 선택한다. 그런후에 이 워터마크를 중간 대역의 이산 코사인 변환 계수에 삽입한다. 또한, 본 논문은 워터마크 삽입 후 비인지성과 다양한 형태의 워커마킹 공격에 대해 강인성이 뛰어난 이득 계수들과 이산 웨이블릿 변환의 서버밴드들의 효과를 탐색한다. 모의실험 결과, 제안한 알고리즘은 이득 계수가 42이고 HH 밴드에 워터마크를 삽입하였을 때 높은 PSNR 값 (47.66 dB to 48.04 dB) 및 낮은 M-SVD 값 (8.84 to 15.6)을 얻었다. 또한 제안한 알고리즘은 노이즈 첨가, 필터링, 잘라내기 및 JPEG 압축과 같은 다양한 이미지 처리 공격에서도 높은 상관 값 (0.7193 to 1)을 보였다.

신규 채소작물용 번행초의 토성 및 염도에 대한 생육 반응 (Growth responses of New Zealand Spinach [Tetragonia tetragonoides (Pall.) Kuntze] to different soil texture and salinity)

  • This research was conducted to investigate potential use of New Zealand spinach (Tetragonia tetragonoides) as a new vegetable crop which will be cultivating in salt-affected soils including reclaimed land. Traditionally New Zealand spinach has been studied to explore functional compound or salt removing potential. To cultivate the crop species in the salt-affected soil widely, it is essential to obtain salt and soil texture responses under the controlled environment. Fifty nine New Zealand spinach ecotypes native to Korean peninsula first collected over seashore areas, and primitive habitat soil environment was evaluated by analyzing soil chemical properties from 32 locations. Different textures of sandy, silt loam, and sandy loam soils were prepared from nearby sources of sea shore, upland and paddy soils, respectively. Target salinity levels of 16.0 dS/m, 27.5 dS/m, 39.9 dS/m, and 52.4 dS/m in electrical conductivity (ECw) were achieved by diluting of 25, 50, 75, 100% (v/v) sea water to tap water (control, 0.6 dS/m), respectively. Various measurements responding to soil texture and irrigation salinity included plant height, root length, fresh weight (FW), dry weight (DW), leaf parameters (leaf number, leaf length, leaf width), lateral branching, and inorganic ion content. was found to adapt to diverse habitats ranging various soil chemical properties including soil pH, organic matter, exchangeable bases, EC, and cation exchange capacity (CEC) in Korea. Responding to soil texture, New Zealand spinach grew better in silt loam and sandy loam soil than in sandy soil. Higher yield (FW and DW) seemed to be associated with branch number (r=0.99 and 0.99, respectively), followed by plant height (r=0.94 and 0.97, respectively) and leaf number (r=0.89 and 0.84, respectively). Plant height, FW, and DW of the New Zealand spinach accessions were decreased with increasing irrigation salinity, while root length was not significantly different compared to control. Based on previous report, more narrow spectrum of salinity range (up to 16 dS/m) needs to be further studied in order to obtain more accurate salinity responses of the plant. As expected, leaf Na content was increased significantly with increasing salinity, while K and Ca contents decreased. Growth responses to soil texture and irrigation salinity implied the potential use of New Zealand spinach as a leafy vegetable in salt-affected soil constructed with silt loam or sandy loam soils.

화강암의 풍화산물에 대한 기계적 풍화지수의 특성에 관한 연구 (A Study on the Indexes and Properties of Mechanical Weathering to Granite Distributed in Korea)

  • 풍화작용은 여러 영역에 의해 지배를 받고 있으며 지형형성작용 중 가장 기본이 된다. 우리나라와 같이 화강암류로 구성된 지역에서는 다른 암석류로 구성된 지역보다 풍화작용이 활발히 진행되어 풍화산물이 많이 존재한다. 본 연구에서는 화강암 풍화산물이 형성된 영역과 기계적 풍화지수 및 특성을 살펴보았다. 그 결과 토화학적 풍화작용은 clayey gruss에서, 지화학적 풍화는 gruss에서, 쪼개짐작용은 풍화암석에서 강하게 작용하고 있었다. 기계적 풍화지수는 일반적으로 clayey gruss 계통은 5내외이고 gruss는 10내외 정도이었다. 그리고 입자붕괴는 풍화작용과 열수작용에 의해 형성되었으며, 세립질로 구성된 식토계통은 주로 열수영역을 많이 받았고 조립질로 구성된 사토계통은 풍화작용을 강하게 받았다.
