A Study on the Optimum Ratio of Starch and Dilution Factors of Yuza Extract in Preparation of Yuza Pyun (유자차 부산물을 이용한 유자 과편의 최적화 연구)

  • This study was performed to develop a standardized recipe for yuza pyun made of citron juice that is by-product of citron tea, to increase the utilization of citron. The effects of mungbean starch(15%, 18%) and dilution ratio of yuza extract(100%, 75%, 50%) on the quality characteristics were evaluated. The quality characteristics of the samples were estimated in terms of sweetness, color difference, texture profile analysis and sensory evaluation. Sweetness of the 18% mungbean groups were higher than 15% groups(p<0.001). The values of Hunter color system indicated that higher content of yuza extract tended to increase yellowness significantly(p<0.001). Texture profiles of hardness, adhesiveness, springiness, cohesiveness, gumminess of yuza pyun showed no significant differences among samples. For sensory evaluation, color and sourness were decreased as yuza extract was diluted, whereas elasticity and sweetness were increased. Yuza pyun containing 18% of mungbean starch with 50% diluted extract was the most preferred in overall acceptability. According to multiple regression analysis, color, sweetness, elasticity and sourness(in order) were important control factors in overall acceptability.

A Study on the Quality Characteristics of Sulgiduk added with Persimmon Leaves Powder (감잎가루를 첨가한 설기떡의 품질 특성에 관한 연구)

  • Sulgiduk is a typical Korean rice cake made by steaming rice powder with syrup and salt added. This study has measured moisture content, water activity, color, texture, and sensory evaluation of sulgiduk when persimmon leaves Powder was added. The material use\ulcorner was sulgiduk to which the 0% (C), l% (S$_1$), 2% (S$_2$), 3% (S$_3$), and 4% (S$_4$) of persimmon leaves powder were added. The moisture content of the raw rice powder for making sulgiduk was 32.40%, and that of the rice powder with syrup added was 37.97%-37.46%. The moisture content of the produced sulgiduk was 38.98%-37.93%, and the water activity was 0.97. In chromatic characteristics. the product had L value: of 73.86-59.16, a value of -2.86~-1.79 and b value: of 19.25-23.13. The texture charicteristics such as hardness, fracturability, gumminess, cohesiveness, chewiness and elasticity were not affected significantly by the persimmon leaves powder. In sensory evaluation. color, flavor, astringency, bitterness and overall quality were adversely affected with statistical significance(p<001) by the addition of persimmon leaves. The juiciness and softness were also decreased as the persimmon leaves powder increased. In conclusion, it is recommended to add 1-2% of persimmon leaves powder to sulgiduk.

Quality Characteristics of Sulgidduk with Different Amount of Dried Steaming Chestnut Powder (찐밤 분말 첨가량을 달리한 설기떡의 품질특성)

  • This study was conducted to investigate the effective ratio of Sulgidduk to steaming chesnut powder. I measured the sensory and mechanical characteristics, moisture content and color values of Sulgidduk added by different amount 4 of types of steaming chestnut powder; 0% (Control-0 group), 1% (CP-1 group), 2% (CP-2 group), 3% (CP-3 group), 4% (CP-4 group). Moisture content of Sulgidduk with steaming chestnut powder ranged from 38.53% to 46.05%. The L-value and b-value of the color decreased with an increase in steaming chestnut powder; however, a-value of the color decreased with an increase in steaming chestnut powder. As a result of analysis the texture of Sulgidduk steaming chestnut powder, it's hardness, springiness was increased. According to the sensory evaluation, CP3 had the highest values in texture and overall acceptability. Based on the result, it's considered that the most desirable ratio is steaming chestnut powder CP3. The results of the study supported the benefits of steaming chestnut powder supplementation in Sulgidduk in the aspects of taste and functionality. The degree of further increase in Sulgidduk with steaming chestnut powder without causing an adverse quality effect, remain for future study.

Analysis on Perceptual Relationship in the Slope Scene of Highway (고속도로변 사면경관의 인지적 관계분석)

  • The perceptual characteristic on the slope scenery around highway is very similar as the general perceptual characteristic in the landscape. This process determines by the relationship between the scenery observers and the characteristics of its place. It is very important to have a analysis on highway slope scenery in our particular culture in Korea since our country's highways are done by cutting mountains : therefore, we have a lot of slopes around highways. The physical characteristics on the highway scenery determines how we should build scenery around highway to a satisfactory level. The results drawn from this research work are as follow: 1) The satisfaction for slope scene had been affected by sex, native and experience of travel. I thought that the slope scene having peculiar form will offer the highest satisfaction. 2) Psychological factor, reflected satisfaction of slope scene, 몽 a grip of three factors as the factor of evaluation, texture, formation, and presumption formula is : Satisfaction=1.04(Evauluation factor)+0.83(Texture factor)+0.15(Formation factor)+4.28)R2=0.69). 3) Vine among the vegetation componeents of slope scene highly correlated with the evaluation factor and grass, shrub correlated with the texture factor. 4) Rock among the structual components of slope scene highly correlated with the formation factor, and stockade, lattice correlated with the evalution factor. 5) Gradient among the properties which determined slope form, highly correlated with the formation factor.

The Sensory Evaluation of Bread with Added $\alpha$-Azuki bean Powder for Manufacturing Small Red Bean Bread by Balanced Incomplete Block Design ($\alpha$-팥 분말 첨가 식빵 제조를 위한 균형된 불완비 블록법에 의한 관능 평가)

  • This study was prepared to optimize $\alpha$-azuki bean powder content by sensory evaluation method when manufacturing bread with added $\alpha$-azuki bean powder. These sensory characteristics were designed to investigate sensory evaluation about appearance, color, texture, taste and overall acceptability of small red bean bread by balanced incomplete block design. According to evaluated mean of adjusted treatments, appearance was represented high value in bread with added 3% and 6% $\alpha$-azuki bean powder than bread without $\alpha$-azuki bean powder. Bread without $\alpha$-azuki bean powder was revealed maximum sensory score value of color among whole treatments and vread with added 6% $\alpha$-azuki bean powder was revealed second highest sensory value. As $\alpha$-azuki bean powder content increased, sensory score of texture, taste and overall acceptability increased. and bread added 12% $\alpha$-azuki bean powder revealed maximum sensory score. On the results of this research about sensory characteristics for manufacturing bread with added $\alpha$-azuki bean powder, bread with added $\alpha$-azuki bean powder was considered optimum when12% $\alpha$-azuki bean powder was added wheat flour because of highest score of texture, taste and overall acceptability in spite of lower score of appearance and color.

Mechanical and Sensory Characteristics of Jeungpyun Prepared with Different Fermentation Time (발효시간에 따른 증편의 기계적 및 관능적 특성)

  • Jeungpyun was prepared with varying degrees of fermentation, and their effects on its quality characteristics were examined. In height and volume of jeungpyun, the samples treated with a first fermentation time of 240 minutes, and second and third fermentation times of 60 and 30 minutes, respectively (Sample E) had the best fermentation quality. A texture profile analysis, Hunter's color and sensory evaluation of these jeungpyun were carried out during the 4 days of storage. In the texture profile analysis, the hardness was observed to reduce in proportion to decreases in the fermentation time. The lightness value of Sample E showed one of the highest among the samples, but decreased as the storage time was prolonged. The results of the sensory evaluation showed that Jeungpyun of Sample E had higher swell, softness and moisture scores.

Chemical Composition of Smilax china Leaves and Quality Characteristics of Rice Cakes Prepared with Its Water Extract

  • The chemical composition of Smilax china leaves and the quality characteristics of seolgitteok (rice cake) prepared with a water extract of these leaves were evaluated. Sucrose, glucose, maltose, and fructose were found as free sugars in the leaves, while the main fatty acids were stearic and palmitic acids. Glutamic acid and potassium were found at the highest levels among the analyzed amino acids and minerals in the leaves, respectively. On a fresh weight basis, the content of total phenolics and condensed tannin was 1.26 and 0.74%, respectively. As the amount of S. china leaf extract increased, the lightness of seolgitteok significantly decreased (p<0.001) in the rice cake, while redness and yellowness of the cake increased. Texture evaluation showed that springiness, strength, and cohesiveness were higher in rice cakes prepared with 2% S. china leaf extract compared to rice cakes made with 1% extract. At the beginning of the storage period ($20^{\circ}C$), there were no significant differences in viable aerobic cell and mold counts among rice cakes, but after four days in storage, a significant reduction in microorganisms was observed in rice cakes prepared with increasing amounts of leaf extract. On sensory evaluation, rice cakes made with 1% water extract from S. china leaves scored the highest on flavor, taste, texture, and overall acceptability.

Quality Characteristics of Jeolpyeon by Different Ratios of Green Laver Powder (파래가루를 첨가한 절편의 품질특성)

  • This study was conducted to aerermine the sensory evaluation and the texture characteristics after making Jeolpyeon added to Laver powder(0~8%) in according to concentration which has nutritive value and medical effect of Jeolpyeon traditional dduk. As the result of the values of Hunter color system, the L-values of the laver powder Jeolpyeon significantly decreased, and the a-values also significantly increased(p<0.05). The b-values Jeolpyeon added with laver powder higher than the control group. As the amoung of laver powder added has increased, the b-values has dropped showing a green color. In case of texture analysis hardness, cohesiveness and gumminess of laver powder Jeolpyeon increased(p<0.05). Also, the results of the sensory evaluateion showed that the 4% laver powder Jeolpyeon had the highest scores.

Classification of Plants into Families based on Leaf Texture

  • Plants are important for humanity. They intervene in several areas of human life: medicine, nutrition, cosmetics, decoration, etc. The large number of varieties of these plants requires an efficient solution to identify them for proper use. The ease of recognition of these plants undoubtedly depends on the classification of these species into family; however, finding the relevant characteristics to achieve better automatic classification is still a huge challenge for researchers in the field. In this paper, we have developed a new automatic plant classification technique based on artificial neural networks. Our model uses leaf texture characteristics as parameters for plant family identification. The results of our model gave a perfect classification of three plant families of the Ivorian flora, with a determination coefficient (R2) of 0.99; an error rate (RMSE) of 1.348e-14, a sensitivity of 84.85%, a specificity of 100%, a precision of 100% and an accuracy (Accuracy) of 100%. The same technique was applied on Flavia: the international basis of plants and showed a perfect identification regression (R2) of 0.98, an error rate (RMSE) of 1.136e-14, a sensitivity of 84.85%, a specificity of 100%, a precision of 100% and a trueness (Accuracy) of 100%. These results show that our technique is efficient and can guide the botanist to establish a model for many plants to avoid identification problems.

Quality Characteristics of Surimi Manufactured by Alaska Pollack, Barren Hen Breast Meat and Mechanically Deboned Chicken Meat (명태, 폐계가슴살 및 기계발골계육을 활용한 수리미의 품질 특성)

  • This study was carried out to compare the physico-chemical and sensory characteristics of surimi manufactured by four different materials. We prepared surimi from alaska pollack, as the control, by washing method. The different treatments of surimi were manufactured by pH 11.0 adjustments with barren hen breast meat(T1), commercial mechanically deboned chicken meat(MDCM)-S. Co. (T2)and MDCM- J. Co.(T3). Whiteness, cohesiveness and overall acceptability were significantly higher but gumminess, chewiness and gel characteristics were significantly lower in control than other surimi samples(P<0.05). Lightness, brittleness, deformation, jelly strength and flavor were higher but texture properties and folding test of T1 were lower than those of other treatments(P<0.05). Texture properties, shear force and gel characteristics were higher, while deformation and acceptability of T2 were lower than those of other treatments(P<0.05). On the other hand, cohesiveness was higher, and lightness and whiteness were lower in T3 than those of other treatments(P<0.05). Correlation coefficients(>0.9) among texture properties and gel characteristics was positive, while negative among surface surimi colors(P<0.05). The content of crude protein, cohesiveness and gel characteristics indicated that the acceptable surimi can be made is replaced barren hen breast meat and MDCM.
