In this study, we investigated the quality characteristics of Korean soybean paste, Doenjang, fermented for 6 weeks at room temperature with the addition of 0, 10, 20 and 30% garlic. Samples were analyzed in one-week intervals. The lightness decreased in all samples as the fermentation period and garlic concentration increased. Yellow index decreased in weeks 5~6 compared with weeks 0-1, for which the values were lower for the garlic-added Doenjang than the control. The pH increased, greatly reducung the acidity in week 1 compared with week 0. Significant differences in the pH and acidity were not observed among the sample groups. Amino type nitrogen contents increased continuously up to weeks 5, displaying no significant differences among the sample groups at weeks 5 and 6. In addition, reduction in the sugar content increased depending on the fermentation period. It increased in all sample groups by about 2.5 times after 6 weeks compared with the initial levels. Isoflavone content was also reduced generally depending on the fermentation period. In the early fermentation periods, the aglycone contents were the higher than the glycosides, while the glycoside contents increased over the fermentation period. The presence of Bacillus was not significantly different among the garlic added groups, but yeast was lower in the Doenjang with high garlic content.
Chitosan, second largest biomass after cellulose on earth, has potential for use as functional food package due to its antibacterial activity. However, due to high melting temperature of chitosan, chitosan films have been made by casting method. Because gelatin has relatively low molting temperature depending upon amount of plasticizer added, it was added to chitosan to produce commercially feasible film. The objective of the current study was to determine optimum blend ratio and amount of chitosan/gelatin blend solutions against antibacterial activities for extruder resin. Gram-positive bacteria (Bacillus cereus ATCC 14579 and Listeria monocytogenes ATCC 15313) and -negative bacteria (Escherichia coli ATCC 25922 and Salmonella enteritidis IFO 3313) were used. Paper (8 mm) diffusion and optical density methods were used to evaluate effect of different blending ratio solutions on the inhibition of bacterial growth. Measured clear none size ranged from 8 mm to 18.07 mm in paper diffusion test. For B. cereus, E. coli, and S. enteritidis, addition of $50\;{\mu}L$ blend solution (chitosan/gelatin = 2/8: 0.3 mg) resulted in clear zone on paper disc. In L. monocytogenes, inhibition effect was observed with 0.6 mg chitosan (chitosan/gelatin=4/6). Minimum inhibitory concentration (MIC) values of B. cerues, L. monocytogenes, E. coli, and S. enteritidis with addition of chitosan were 0.1461, 0.2419, 0.0980, and 0.0490 mg/mL, respectively, These results indicate possibility of producing commercially feasible film with addition of optimum chitosan/gelatin amount.
A beterotrophic Pseudomonas putida B2 was used to treat of hydrogen sulfide containing gas. The experimental approach involved operating two indentical bench-scale biofilters with media consisting of a mixture of peatmoss, perlite and granular activated carbon(GAC). One column was seeded with Pseudomonas putida B2 and the other was left unseeded. The biofilter was operated for 16 days under EBRT for 20-40 sec, at a temperature of 25-30$^{\circ}C$ and a hydrogen sulfide concentration of 40-190 ppm. The biofilter inocculated with P.putida B2 exhibited high hydrogen sulfide removal efficiency, average of 95%, at a gydrogen sulfide concentration of 40-190 ppm (flow rate 3.6 L/min). However, at a shock loading of 190 ppm the biofiter showed a removal efficiency of 78.9% and the control only showed a removal efficiency of 31.6%. The critical load of this biofilter was 14.83 g/㎥hr, and the critical load of the control column was 4.93 g/㎥hr. These results suggest that P. putida B2 has the potential to be used as a $H_2S$ removal agent in a biofilter.

The development of information and communication technology has been carried out actively in the field of agriculture to generate valuable information from large amounts of data and apply big data technology to utilize it. Crops and their varieties are determined by the influence of the natural environment such as temperature, precipitation, and sunshine hours. This paper derives the climatic factors affecting the production of crops using the garlic growth process and daily meteorological variables. A prediction model was also developed for the production of garlic per unit area. A big data analysis technique considering the growth stage of garlic was used. In the exploratory data analysis process, various agricultural production data, such as the production volume, wholesale market load, and growth data were provided from the National Statistical Office, the Rural Development Administration, and Korea Rural Economic Institute. Various meteorological data, such as AWS, ASOS, and special status data, were collected and utilized from the Korea Meteorological Agency. The correlation analysis process was designed by comparing the prediction power of the models and fitness of models derived from the variable selection, candidate model derivation, model diagnosis, and scenario prediction. Numerous weather factor variables were selected as descriptive variables by factor analysis to reduce the dimensions. Using this method, it was possible to effectively control the multicollinearity and low degree of freedom that can occur in regression analysis and improve the fitness and predictive power of regression analysis.

Effects of different packaging methods for maintaining the shelf life and postharvest quality of iceberg lettuce (Lactuca sativa L.) were studied after harvesting in summer season. Lettuce heads were packaged in plastic crate with or without different films such as (A) Individual lettuce head sealed packaging with linear low density polyethylene (LLDPE) film; (B) Packaging lettuce head in plastic crate and wrapped with LLDPE film; (C): Individual lettuce head sealed packaging with perforated high density polyethylene (HDPE) film; (D) Packaging lettuce head in plastic crate and wrapped with perforated HDPE; and (E) Packaging lettuce head in plastic crate without any film (control), and stored at $2^{\circ}C$ for 35 days. Several quality parameters such as fresh weight loss, SPAD (soil & plant analyzer development) meter value, respiration rate, moisture content and appearance of lettuce were investigated. The lettuce wrapped with individually-sealed LLDPE film showed the lowest weight loss and the highest SPAD value rendering the best appearance index among the treataments throughout the three-week storage period at $2^{\circ}C$. Extending the freshness of iceberg lettuce during low temperature storage will definitely increase the salability potential in the domestic market even during summer season.

The present study was designed to evaluate how environmental factors in a dry-summer subtropical climate in Terceira-Azores (situated in the North Atlantic Ocean: $38^{\circ}43^{\prime}N27^{\circ}12^{\prime}W$) can affect dairy cow (Holstein) fertility, as well as seasonal influence on in vitro oocytes maturation and embryos development. Impact of heat shock (HS) effects on in vitro oocyte's maturation and further embryo development after in vitro fertilization (IVF) was also evaluated. For such purpose the result of the first artificial insemination (AI) performed 60 to 90 days after calving of 6,300 cows were recorded for one year. In parallel, climatic data was obtained at different elevation points (n = 5) from 0 to 1,000 m and grazing points from 0 to 500 m, in Terceira island, and the temperature humidity index (THI) was calculated. For in vitro experiments, oocytes (n = 706) were collected weekly during all year, for meiotic maturation and IVF. Further, to evaluate HS effect, 891 oocytes were collected in the cold moths (December, January, February and March) and divided in three groups treated to HS for 24 h during in vitro maturation at: C (Control = $38.5^{\circ}C$), HS1 ($39.5^{\circ}C$) and HS2 ($40.5^{\circ}C$). Oocytes from each group were used for meiotic assessment and IVF. Cleavage, morula and blastocyst development were evaluated respectively on day 2, 6, and 9 after IVF. A negative correlation between cow's conception rate (CR) and THI in grazing points (-91.3%; p<0.001) was observed. Mean THI in warmer months (June, July, August and September) was $71.7{\pm}0.7$ and the CR ($40.2{\pm}1.5%$) while in cold months THI was $62.8{\pm}0.2$ and CR was $63.8{\pm}0.4%$. A similar impact was obtained with in vitro results in which nuclear maturation rate (NMR) ranged from 78.4% (${\pm}8.0$) to 44.3% (${\pm}8.1$), while embryos development ranged from 53.8% (${\pm}5.8$) to 36.3% (${\pm}3.3$) in cold and warmer months respectively. In vitro HS results showed a significant decline (p<0.05) on NMR of oocytes for every $1^{\circ}C$ rising temperature ($78.4{\pm}8.0$, $21.7{\pm}3.1$ and $8.9{\pm}2.2$, respectively for C, HS1, and HS2). Similar results were observed in cleavage rate and embryo development, showing a clear correlation (96.9 p<0.05) between NMR and embryo development with respect to temperatures. Results clearly demonstrated that, up to a THI of 70.6, a decrease in the CR occurs in first AI after calving; this impairment was confirmed with in vitro results.

Effect of packaging and storage methods for enhancing the shelf life and improving the postharvest quality of lettuce (Lactuca sativa L.) was studied during high temperature period. Lettuces were packed using four packaging and storage types: (A) plastic box container (control); (B) plastic box container covered with high density polyethylene (HDPE) film; (C) plastic box container with lettuce wrapped in linear low-density polyethylene (LLD-PE) film; and (D) plastic box container with lettuce with its stem. The quality parameters, such as fresh weight loss, SPAD value, and appearance of lettuce were investigated. The lettuce wrapped with LLD-PE film inside the plastic box container showed the lowest weight loss, highest SPAD value and best appearance compared to those exposed to the other packaging and storage methods during the three-week storage at $2^{\circ}C$. The results indicate that the marketability of lettuce can be optimized if proper packaging and storing is adopted. Prolonging the freshness even on low temperature storage will increase the potential of its sale ability in the domestic market even during summer season.

The effect of a chronic inflammation (cell-mediated immune response) on energy metabolism and growth performance was assessed in weanling piglets. Twenty four barrows of 4 wk of age were assigned to one of two immunization treatments : Control group [CON: immunized with Incomplete Freund's Adjuvant (lFA)] or Immunization group [IMMU: immunized with Complete Freund's Adjuvant (CFA)]. On d0, piglets were weaned and subcutaneously immunized at the medial side of the femur with 2 ml of IFA or CFA, respectively. Energy and nitrogen balances were measured per group during 13-d balance period, and total $(HP_{tot})$, activity-related ($(HP_{act})$) and non-activity-related $(HP_{cor})$ heat production were determined every 9-min by indirect calorimetry. Ig total titers to Mycobacterium butyricum, which is present in CFA, were higher (p<0.01) in IMMU than in CON on d13 (2.5 vs 1.8) and d20 (2.9 vs 1.8) after immunization. There were no differences (p>0.10) between treatments in rectal temperature, performance, feed intake, and availability and partitioning of energy during the balance period. Average daily feed intake was numerically higher in IMMU than in CON (0.34 vs 0.32 kg/d), but there was no difference (p>0.10) in metabolizability of the dietary energy between treatments. $HP_{act}/HP_{tot}$ was 16.24 and 16.89%, and retained energy was 251 and 268 $268\;kJ{\cdot}kg^{0.75}{\cdot}d^{-1}$ for CON and IMMU, respectively. Numerically, maintenance requirement of IMMU was even lower than that of CON $(419\;vs\;427\;kJ{\cdot}kg^{0.75}{\cdot}d^{-1})$. The present study suggests that a chronic inflammation has no effect on energy metabolism and growth performance, in spite of the difference in systemic antibody responses. The reason was considered to be due to locally induced immune response, resulting from the possible encapsulation at the site of injection, and/or to a low systemic immune stress which is within a functionally acceptable physiological range for the piglets.
Growth and anthocyanins of lettuce (Lactuca sativa L., 'Mid-season') grown under LED lamps with blue light in the range of 430-470 nm or with red light in the range of 630-670 nm were analyzed in this study. Cool-white fluorescent light was used a s the control. P hotosynthetic photon flux, p hotoperiod, air temperature, relative humidity, and $CO_2$ concentration in a closed plant production system were $201{\pm}2\;{\mu}mol{\cdot}m^{-2}{\cdot}s^{-1}$, 16/8 hours (day/night), $22/18^{\circ}C$, 70%, and $400{\mu}mol{\cdot}mol^{-1}$, respectively. At 21 days after light quality treatment, growth characteristics and anthocyanins content of lettuce as affected by the peak wavelength of blue or red LED were significantly different. Among peak wavelengths treated in this stusy, R1 treatment (peak wavelength 634 nm) and R6 treatment (peak wavelength 659 nm) were effective for increasing leaf width, leaf area, shoot fresh weight, and photosynthetic rate of lettuce. B5 treatment (peak wavelength 450 nm) and B4 treatment (peak wavelength 446 nm) increased the anthocyanins concentration and chlorophyll content in lettuce leaves, respectively. Anthocyanins in lettuce leaves increased linearly with decreasing hue value of leaf color and with increasing SPAD value of lettuce leaves. From these results, it was concluded that the red LED with peak wavelengths of 634 nm and 659 nm and the blue LED with peak wavelengths of 450 nm can be used as potential light spectra for increasing the yield and anthocyanins accumulation of leafy vegetable.
The purpose of this study was to find out effects of several chemicals treatment for cocoon sericin. and there was several results of use to control the solubility of cocoon sericin in water. The results obtained was summarized as follows ; The chemicals which showed the strongest accelerating power on the solubility of cocoon sericin in water was sodium peroxide ($Na_2O_2$), the second was sodium carbonate ($Na_2CO_3$), the third was sodium sulfite ($Na_2SO_3$), the weakest was ammonia water ($NH_4OH$) in order among noticed silk-reeling accelerators. The chemicals which showed the inhibiting power on the solubility of cocoon sericin in water was tannic acid ($C_{14}H_{10}O_9$), the second was stannic acid ($Sn(OH)_4$), the third was formic acid (HCOOH) and the weakest was methyl alcohol ($CH_3OH$) in order among noticed silk-reeling inhibitors. Particulary stannic acid and formic acid showed accelerating power on the solubility of cocoon sericin at high temperature over 100 degrees of celsius thermometer in water Methyl alcohol did not show the inhibiting power on the solubility of cocoon sericin in low concentration.
