This study was carried out to investigate the microbiological and chemical properties of natural water during storage. The water samples were taken at the time of purchase and the opened bottles and unopened bottles stored at the temperature of 4$^{\circ}C$, 18$^{\circ}C$, and 3$0^{\circ}C$. The bacterial content normally rose to 2.06$\times$102 CFU/$m\ell$ for the unopened bottles and 2.91$\times$102 CFU/$m\ell$ for the opened bottles after 2 weeks of storage, and 1.21$\times$102 CFU/$m\ell$ and 2.64$\times$102, respectively, after 24 weeks of storage. The number of viable cells of bacteria peaked more rapidly at the storage temperature of 3$0^{\circ}C$ than 18$^{\circ}C$. But the total samples were found to be negative for coliforms test during the study period. The average range of pH value was from 7.39 to 7.76. The results showed that the nitrates and chlorides satisfied the Korea Drinking Water Quality Standards during the storage period of 24 weeks. However, the undesirable changes of the taste and odor were detected within 2 weeks and 3 weeks, respectively.

This study examined how chicken breed affects consumer behavior. The breeds evaluated were a Korean native chicken (KNC) and a commercial broiler (CB). Consumer behavior was measured by evaluating sensory attributes (taste, odor, and texture) and purchase behaviors [satisfaction, purchase intention, and willingness to pay (WTP)]. The sensory evaluation was conducted using healthy Korean consumers (n=100). The chicken was cooked in baeksuk (Korean traditional chicken soup), which is a seasonal summer health food in Korea. The participants evaluated sensory attributes and purchase behaviors between blinded samples of baeksuk (CB) and unblinded samples of baeksuk (KNC). The sensory evaluation involved chicken breasts and legs. The participants considered KNC as having a more umami taste, a chewier and juicer texture, and a less metallic odor than CB. Moreover, when participants were given KNC breed information, they expressed higher satisfaction, purchase intention, and WTP. The results of this study contribute to consumer behavior literature by revealing the effects of breed information on consumer sensory perceptions and purchase behaviors. Furthermore, the findings provide evidence that branding KNC is one way to increase its demand and low market share while contributing to sustainable consumption.
Dissolved air flotation (DAF) is an effective solid/liquid separation process for low density floc particles such as algal, color-alum and clay-alum flocs produced from low turbidity water. The removal of taste and odor-causing organics (2-mthylisoboneol and geosmin) originating from algae in drinking water is a local and worldwide concern. Although DAF has been effectively applied for the removal of suspended solid, its application for the treatment of dissolved organic carbon is very limited. In this study, a new hybrid system consisting of adsorption and DAF processes was introduced for the simultaneous removal of algae and taste and odor-causing organics. Powdered activated carbon (PAC) was used as an adsorbent. In this proposed system, the major concern of eliminating the spent PAC from the system was also addressed. It was found that zeta potential of algae and PAC was increased with coagulant dosage, and the removal efficiency in DAF was also enhanced up to 90~95% under the given experimental conditions. Based on this study, the hybrid process was found to be a promising technology for the simultaneous removal of algae and dissolved organic pollutants.
This study evaluated the quality and sensory characteristics of sulgidduk added with yam powder (5~20%) during 4 days storage. The moisture content of samples initially decreased as the yam powder content increased, but subsequently increased during storage. The pH values also increased during storage, although there was no significant difference. L values decreased and both a and b values increased as yam powder content increased. The decreased L values during storage were not significantly different from control group. The hardness of samples decreased with increasing yam powder content, while hardness of control group markedly increased during storage. Cohesiveness increased as yam powder content increased, and tended to decrease during the storage. Springiness also initially increased as yam powder content increased. No change was apparent during storage in control group or samples added with up to 10% yam powder, while springiness was decreased insignificantly in samples with over 10% yam powder. Lightness, yam odor and savory taste of sulgidduk tended to increase as yam powder content increased, while chewiness decreased. The savory odor was the highest in sulgidduk added with 10% yam powder. Sulgidduk added with 10% yam powder was the most preferred in appearance, taste, texture and overall preference.
In order to evaluate the performance of a powdered activated carbon (PAC) contactor, two water treatment plants (WTP) were selected as target sites. The result of tracer tests showed that the plug flow portion of a bisymmetry-type contactor (H WTP) was more than 70%. A maze-type contactor (C WTP) also had more than 70% of plug flow portion after intra-basin baffles were installed. According to the operating data of the target WTPs, there was no clear evidence that the addition of PAC contributed to the removal of organics. However, the results of jar tests, conducted with the raw water taken from the H WTP, proved that PAC could remove dissolved organic carbon (DOC) to some extent when the proper velocity gradient was maintained. It was estimated that the production rate, defined as the ratio of the operating flowrate to the design flowrate, of the C and H WTPs was only 27 and 50%, respectively. Because of these lower production rates, the mixing intensity in the contactor was much less than the designed value and, finally, the performance of the PAC contactor was much lower than what was expected.
This study investigates the difference of sanghwabyung by adding different ratios of wheat germ. Aw, color value SEM and the sensory characteristics were analyzed and compared by SAS package. Aw of sanghwabyung was decreased with the increment of the additional content of wheat germ. L of sanghwabyung showed the lower values, a increased and b decreased, as the content of wheat germ increased. In the test of sensory characteristics, sanghwabyung with 7% wheat germ had the highest score in crust color, crumb color and wheat germ flavor. In the test of consumers' preference, sanghwabyung with 5% wheat germ had the highest score in odor, taste, and overall acceptability.
It is already known that olfactory susceptibility differ with races and sex. Moreover, with aging both detection and identification about olfactory information were impaired. For researches about evaluation of the odor with aging, although the subject used, from infants to elderly, was various, the kinds of odor used were restricted to simple alcohol and acetic acid. Also, the evaluation methods were mainly used olfactory test. From over respects , this research was done as follows. Subjects were 19 to 72 years (n=50) whose sense-of-smell functions are normal. They were taken as stability and closed eye state. The odor stimuli were used 100% natural odor of six kinds of Basil, Lavender, Lemon, Jasmine, Ylangylang oil and Skatole , during 60 seconds using olfactometer. ECG, GSR and subjective evaluation were measured, and examined their relevance. Twenty and 40 ages group evaluated Lemon and 60 ages group did Lavender affirmatively. Correlation was seen among RRI, HR, GSR and subjective evaluation for 40 ages group, and it turns out that it is the group which a mature olfactory function most. These results are fully applied not only to development of the classified cosmetics for the age group but to development of the artificial smell and taste.
Volatile flavor compounds in hydrolyzed blue mussel(HBM) produced by OptimaseTM APL-440, with untreated blue mussel(UBM) were compared. A total of 100 volatile compounds were detected in both HBM and YBM , consisting mainly of 25 aldehydes, 16 ketones, 17 alcohols, 8 nitrogen-containing compounds, 11 aromatic compounds, 8 terpenes, and 15 miscellaneous compounds. Levels of aromiatic compounds decreased after hydrolysis, whereas levels of 7 nitrogen-containing compounds increased. The compounds , 3-methylbutanal, (z)-4-heptenal, and (E,Z)-2-, 6-nonadienal , had the highest odor values in both samples. Total free amino acids in HBM were 21.89%(w/w) and increased by 3,4 times higher than UBM. glutamic acid and aspartic acid, having sour tastes, were the major taste-active compounds in HBM.
Alkaline treatment during preparation of anchovy extracts was studied for its changes in some of the physicochemical and sensory qualities. The dried anchovy was blended in 0-0.5N NaOH solutions and then incubated at $60^{\circ}C$ for 6 hours. After extraction the suspensions were neutralized and centrifuged. The results showed that the yields of solids and protein were increased by 3-5 fold of those of water extract as alkaline concentration and treatment time increased. The intrinsic viscosity showed little changes for the extracts prepared with 0-0.2N NaOH solution while the extracts prepared with over 0.3N NaOH resulted a initial small decrease followed by a rapid increase to the maximum point. The changes in color expressed as Hunter 'L', 'a' and 'b' values showed that the L value increased rapidly until 3 hours of treatment followed by a decrease, and 'a' and 'b' values were increased a little. The intensities of odor and taste were markedly increased by 2-3 fold for all of the descriptions investigated where clam-like odor and taste and sea complex odor were particularly significant.
The study was conducted to investigate the characteristics of peach vinegar by parallel-complex fermentations. The vinegars prepared by using Changbnag-Chosang and Yumung peach cultivars added with 7, 10, and 13% sugaring concentrations were examined. The rate of increase in alcohol degree and titratable acidity, and that of decrease in soluble solids showed higher at Yumyung peach than at Changbang-chosang. Alcohol and acetic acid fermentation by paralle-complex fermentation were performed better in Yumyung peach than Changbang -chosang. but the fermentation of Yumyung showed active alcohol fermentation in the early stage, and active acetic acetic acid fermentation in the late stage. Quality of the vinegar prepared with Yumyung peach was better than that of Changbang-chosang, which were evaluated by acetic acid contents , peach taste and odor in the vinegar, and overall taste. The fermentation was accelerated with an increase in sugaring , concentrating but overall taste was best in 10 % sugaring.
