Effect of Cryoprotectants on the Quality Characteristics of Chicken Breast Surimi Manufactured by pH Adjustment during Freezing Storage (pH 조절법으로 제조한 닭가슴살 수리미의 저장 중 품질특성에 미치는 냉동변성방지제 첨가 효과)

  • This study was conducted to determine the effect of pH adjustment and the addition of cryoprotectants on the quality characteristics of chicken breast surimi. We prepared surimi from Alaska pollack, as a the control, by two time washing times and the addition of cryoprotectants. Different preparations of surimi were manufactured by adjusting to pH 11.0 and the addition of different addition cryoprotectants during frozen storage (T1 : 5% sorbitol and 0.3% polyphosphate, T2: 4% sugar, 5% sorbitol and 0.3% polyphosphate, and T3: 2% salt, 4% sugar, 5% sorbitol and 0.3% polyphosphate). The moisture content was significantly lower in the control and T3 samples. The crude protein content was increased with storage times. The crude protein was higher in the control. The water-holding capacity, myofibrillar protein and shear force were significantly higher in T3 than other surimi samples. All gel characteristics were significantly higher in the control and T3 than other surimi samples. pH 11.0 adjusted chicken breast surimi had greater lightness than the control, and T3 samples had the highest lightness and whiteness. Sensory evaluations were significantly higher in the control and T3 than the other samples. The gel, and physical characteristics and sensory evaluation of T3 were similar to the control. T3 samples had superior color and pH than the control Alaska pollack surimi.

Effects of seeding dates on dry matter yield and feed values of whole-crop barley cultivated in a paddy field

  • This study was carried out to investigate the effects of seeding dates on the yield and feed value of whole-crop barley cultivated in paddy soil. The field experiment was conceived as a randomized block design performed in triplicate with seeding dates of Oct. 19 (T1 as treatment 1), Oct. 26 (T2 as treatment 2), Nov. 2 (T3 as treatment 3), Nov. 9 (T4 as treatment 4), and Nov. 16 (T5 as treatment 5) as treatments. The barley grown in all treatments was harvested on May 21 of the following year. Plant length, fresh yield, dry matter yield, and total digestible nutrient (TDN) yield were higher (p < 0.05) in barley with early seeding dates, whereas crude protein and ether extract were higher (p < 0.05) with late seeding dates. Crude fiber and neutral detergent fiber were highest in the T3 treatment and lowest in the T1 treatment. There was no significant difference between acid detergent fiber and TDN among the different seeding dates. Total mineral contents were higher in the order T1 > T2 > T3 > T4 > T5 (p < 0.05), whereas the total amino acid content increased significantly (p < 0.05) with a delay in seeding date. Free sugar contents (fructose, glucose, and sucrose) were higher with early seeding dates (p < 0.05). Collectively, the results obtained in this study indicate that it is favorable to seed soon after harvesting rice to increase dry matter and TDN yields and mineral and free sugar contents of whole-crop barley in the midlands of Korea.

Effect of Substitution of Chicken Breast for Alaska Pollack on Physico-chemical Characteristics and Quality in Surimi-like Materials Contained Different Cryoprotectants

  • Surimi-like samples were divided into four groups (C, surimi-like material made from Alaska Pollack with all cryoprotectant ingredients; T1, surimi-like material made from chicken breast with sugar and a sorbitol-free cryoprotectant; T2, surimi-like material made from chicken breast with a sugar-free cryoprotectant; T3, surimi-like material made from chicken breast with all cryoprotectant ingredients). Water and protein content were lower in Alaska Pollack surimi-like material (C) than those in chicken breast surimi-like material. Centrifuge loss and cooking loss were higher in C than those in chicken breast surimi-like material. Lipid oxidation (thiobarbituric acid reactive substances) was lower in T3 than others during storage. In a sensory evaluation, overall acceptability was significantly higher in C than those in other samples during storage. As a result, we found that the raw material composition (Alaska Pollack or chicken breast) had a large influence on the physico-chemical characteristics and quality of surimi-like materials, whereas cryoprotectant composition may have less influence on the physico-chemical characteristics and quality of surimi-like materials.

The Study on the Factors which are Related to Bone Mineral Density of Female (여성 골밀도와 관련 요인에 대한 연구 - 전라북도 거주 건강검진대상자를 중심으로 -)

  • This study was conducted to investigate the factors which are related to Bone Mineral Density(BMD) of female for prevention of osteoporosis. We measured the BMD of lumbar spine(L2-L4) and femoral neck in 4802 female, using dual energy X-ray absorptionmetry(DEXA; DPX-alpha. Lunar, U.S.A.). and then analysed the 9 factors-age group, body mass index(BMI), amount of smoking, drinking, exercise, sleep, and fast blood sugar-which are related to BMD of female. The following results were obtained : 1. In age group, T-score was the highest at 36-42(六七) years group in lumbar spine(L2-L4) and at 15-21(三七) years group in femoral neck. and then it was decreased rapidly after 43-49(七七) years group in both lumbar spine(L2-L4) and femoral neck. Therefore we concluded that T-score of female in lumbar spine(L2-L4) and femoral neck change according to age group in $\ll$Hwangjaenaekyong Somun; 黃帝內經 素問$\gg$. 2. In BMI, T-score of lumbar spine(L2-L4) and femoral neck were increased according to BMI increase. 3. In amount of drinking and smoking, T-score was highest in heavy groups(women who have drunk soju more than 4 bottles for a week) in both lumbar spine(L2-L4) and femoral neck. But there t was no significant difference in comparison according to age group. 4. In exercise, T-score was higher in exercising group than non exercising group. And it appeared that women who have taken proper exercise had higher T-score than women who have taken exercise daily. 5. T-score was higher in women who ordinarily sleep well in both lumbar spine(L2-L4) and femoral neck than sleep badly. And there was significant difference in 43-56 years group. 6. T-score was low in the group that exceed 110mg/dl in fast blood sugar. Conclusions : The age group in $\ll$Hwangjaenaekyong Somun; 黃帝內經 素問$\gg$ is related to BMD of women. And risk factors-BMI, exercise, sleep, fast blood sugar, thyroid disease-are related to BMD of women. Therefore we expect that this study will help for prevention of osteoporosis of women, and further study will be achieved.

Changes in Metabolites and Embryo Growth during Seeds Priming in Tobacco

  • Some metabolites and embryo growth of primed tobacco (Nicotiana tabacum L. cv. ‘KFI09’) seeds were observed during priming. The seeds were primed at 15 and $25^{\circ}C$ for 1, 2, 3, 5, 10 and 15 days in a -0.8 MPa polyethylene glycol 6000 (PEG) solution. The time to 50% seed germination (T$_{50}$) was greatly reduced when the seeds were primed at $25^{\circ}C$ when compared with 15$^{\circ}C$. The $\alpha$-amylase activity and sugars and amino acid contents in the seeds primed at $25^{\circ}C$ greatly increased, while $\alpha$-amylase activity was similar, and sugar and amino acid contents increased slightly in the seeds primed at 15$^{\circ}C$. When the seeds were primed at $25^{\circ}C$, growth of the embryo which was enclosed by endosperm was detected, while the endosperm became thinner as the priming duration was extended.d.

Anti-diabetic activity of Thespesia lampas Dalz & Gibs on alloxan induced rats

  • Anti-diabetic effect was observed with Thespesia lampas Dalz & Gibs (Family: Malvaceae) when given as a root extract in normal as well as alloxan induced diabetic rats. The effects, however, were more pronounced in diabetic animals in which administration of plant extract for 15 days after alloxan induced diabetes, significantly reduced blood glucose levels. After alloxan induced diabetes it was observed that both standard drug (glibenclamide) and aqueous extract of Thespesia lampas were significantly superior to control in reducing blood sugar on long term treatment (15 days). The aqueous extract of T. lampas (300 and 600 mg/kg) reduced the blood glucose levels from $349.2{\pm}7.2$ to $120.7{\pm}4.6$ and $346.3{\pm}3.4$ to $101.8{\pm}6.3$, respectively. The data suggested that T. lampas could be of beneficial in diabetes mellitus in controlling blood sugar. The present investigation established pharmacological evidence to support the folklore claim as an anti-diabetic.

Optimization for Hot water Extraction Condition of Liriope spicata Tuber Using Response Surface Methodology (반응표면분석법에 의한 맥문동 열수추출 조건의 최적화)

  • Optimal conditions for hot water extraction of Liriope spicata tuber were investigated with changes in solvent ratio(2∼6 fold) and heating time(1∼5 hr) by response surface methodology. The content of extractable solids increased with an increased in solvent ratio, and the highest content showed at heating time of 3 hr. The content of total steroid saponin increased with a decrease in solvent ratio, and increased with an increase in heating time at increasing the solvent ratio. The content of non-reducing sugar containing oligosaccharides at a lower solvent ratio didn’t show changes depending on heating time, while that at a higher ration decreased with an increase in heating time. Optimal extraction conditions using hot water as the limited conditions of 15∼18% extractable solids, 1.5∼2.0% total steroid saponin, 6∼8% reducing sugar, 6∼7% non-reducing sugar and 13∼15 brix were 3 hrs of heating time and 4 fold of solvent ratio.

Study on the Rheological Properties of Saccharide Solutions (당용액(糖溶液)의 유동학적(流動學的) 성질(性質)에 관(關)한 연구(硏究))

  • The rheological properties of seven mixed sugar solutions of glucose, fructose, maltose, sucrose, and two kinds of honey, the chestnut and the acacia, were discussed. The fluidity of the above samples were studied by using the applied pressure horizontal viscometer with which glycerine was confirmed to be a Newtonian flow at $25^{\circ}C$. Time required to pass the constant volume of the sample fluids through the capillary was measured at various pressure differences, ${\Delta}p$, and the ${\Delta}p$ vs ${\Delta}p{\cdot}t$ in the Poiseuille equation was plotted. Shear rate against shearing stress, on the other hand, was plotted for the sample fluids and it was found that all the sample fluids have shown a Newtonian behavior. It was interesting to note that the shear viscosity increased as the concentration of sugar solutions increased, and as the concentration of sucrose became higher than that of maltose, although the total concentration of sugar solution is constant.

Effects of Phase Feeding and Sugar Beet Pulp on Growth Performance, Nutrient Digestibility, Blood Urea Nitrogen, Nutrient Excretion and Carcass Characteristics in Finishing Pigs

  • This experiment was conducted to investigate effects of phase feeding and sugar beet pulp (SBP) on growth performance, nutrient digestibility, nitrogen excretion, blood urea nitrogen (BUN) concentration and carcass characteristics in finishing pigs. A total of 128 pigs were allotted at 53.9 kg BW to 8 replicates in a 2$\times$2 factorial arrangement in a randomized complete block (RCB) design. The first factor was phase feeding (2 or 3 phase feeding) and SBP (SBP: 0% or 10%) was the second factor. Ten percent SBP supplement groups showed lower average daily feed intake (ADFI) than 0% SBP supplement groups (p<0.05). However, there were no significant difference in average daily gain (ADG) and feed:gain ratio among treatments during overall experimental period. Nutrient digestibility was not affected by phase feeding or SBP supplementation. Urinary nitrogen excretion in 10% SBP supplement group was lower than that in 0% SBP supplement group (p<0.05) and total nitrogen excretion was lower in SBP supplement group than in the group without SBP. Urinary and total nitrogen were numerically decreased in three phase feeding compared to two phase feeding. The BUN concentration in three phase feeding groups was lower than two phase feeding groups at 47 and 63 day (p<0.05). Consequently, results of this experiment demonstrated that three phase feeding was more acceptable than two phase feeding for finishing pigs. And sugar beet pulp could be supplemented in finishing pig diet for decreasing urinary nitrogen excretion without retardation in growth performance of pigs.

Variation of Free Sugar and free Amino Acid Contents of Apples During the Ripening Period (사과의 성숙 중 유리당과 유리아미노산 함량 변화)

  • A variation of free sugar and free amino acid contents of apples during the ripening period was determined by HPLC and amino acid analyzer. The research results are as followes: Fructose, glucose and sucrose were present in the apples. The contents of fructose was the highest, followed by the order of sucrose and glucose. The contents of total sugar in Red fuji was relatively higher than that of Fuji. During the ripening period, the contents of fructose increased conspicuously for the harvesting season and then it decreased gradually. The contents of glucose increased gradually for the harvesting season and then it somewhat decreased. The contents of sucrose increased continually, while, the contents of total free sugar reached the maximum for the harvesting season and then it decreased gradually. A variation in the contents of free amino acid and composition during the ripening period didn't make a significant difference. The major free amino acid of the apples was in the order of aspartic acid, serine, threonine, glutamic acid, histidine, arginine, and alanine. During the ripening period, aspartic acid, threonin, serine, alanine, histidine, and arginine increased gradually. Especially, alanine, histidine, and arginine increased remarkably after the the harvesting season. Glutamic acid, valine, isoleucine, and leucine didn't show much change. The contents of total amino acid increased little by little as the apples ripened, dranstically increased during the harvesting season and slowly increased or slightly decreased after the harvesting seasom.
