Data of 369 commercial pigs produced from YorkshrexLancrace (YL F1) sows crossed with either Duroc (D), Berkshire (B) or BerkshirexDuroc(BD F1) as a terminal sire were used for the comparison of carcass garde and real retail cut yield. The crosses were performed between May, 2004 and May, 2006 at three interrlated farms belonging to the Gyeongam pork brand. The average carcass weight, carcass backfat thickness, carcass rate, AB grade ratio, lean meat yield were 84.78±0.33kg, 20.72±0.237mm, 76.25±0.208%, 85.7% and 44.30±0.158%, respectively. The average weights of real retail cut were 10.32±0.062kg belly, 4.17±0.025kg boston butt, 3.88±0.022kg rib, 8.40±0.040kg picnic, 15.15±0.081kg ham, 6.44±0.043kg loin and 0.94±0.006kg tender loin. In comparisons of carcass traits among cross types, carcass weights and backfat thicknesses of YL(♀)×B(♂), YL(♀)×BD(♂) and YL(♀)×D(♂) were 85.73±0.516kg, 82.69±0.788kg and 84.79±0.603kg, respectively and 22.09±0.356mm, 20.33±0.543mm and 19.58±0.415mm, respectively. The YL(♀)×B(♂) cross showed the highest carcass weight and backfat thickness. The ratio of AB grade were 0.83±0.030% in YL(♀)×B(♂), 0.97±0.046% in YL(♀)×BD(♂) and 0.83±0.035% in YL(♀)×D(♂), and the YL(♀)×BD(♂) was higher than other two crosses. Weights of belly were 10.28±0.092kg in YL(♀)×B(♂), 10.59±0.133kg in YL(♀)×BD(♂) and 10.25±0.107kg in YL(♀)×D(♂). Consequently, the YL(♀)×BD(♂) cross showed the highest yield. In conclusion, there was no difference in carcass yield of commercial pigs derived from BD (F1) terminal sires with those from D terminal sires. However, weight of belly and AB grade ratio from BD (F1) terminal sires are higher than two others. Therefore, BD (F1) sire could be utilized as terminal one and contribute better profit for the pig industry.

An experiment was conducted to examine the effects of sex and market weight on performance, carcass characteristics and pork quality. A total of 224 crossbred pigs (initially 26.64 kg BW) were allotted in a $2{\times}4$ factorial arrangement in a randomized complete block (RCB) design. The variables were sex (gilts and barrows) and different market weights (100, 110, 120 and 130 kg). Average daily gain (ADG) and average daily feed intake (ADFI) were significantly higher (p<0.01) in barrows than gilts, ADFI and feed conversion ratio (FCR) increased as body weight increased (p<0.05). Gender differences were observed in carcass characteristics. Backfat thickness and drip loss were greater in barrows (p<0.01), while loin eye area (p<0.01), flavor score (p<0.05) and lean content (p<0.001) were higher in gilts. Carcass grade and water holding capacity were the highest in 110 kg market weight pigs. The 100 kg arket weight pigs showed lower juiciness, tenderness, shear forces and total palatability than the other market weights (p<0.01). Hunter values (L*, a* and b*) were increased as market weight increased (p<0.05). Hunter a* value was greater in gilts (p<0.01) but L* value and b* value were not affected by sex of pigs. Net profit [(carcass weight${\times}$price by carcass grade)-(total feed cost+cost of purchased pig)] was higher in gilts than barrows (p<0.01), and was higher (p<0.05) in the pigs marketed at 110 and 120 kg market weight compared with 100 kg market weight. These results demonstrated that gilts showed higher carcass characteristics, pork quality, feed cost per kg body weight gain and net profit compared with barrows. Moreover, 110 or 120 kg body weight would be the recommended market weight based on pork quality and net profit for swine producers.

Dead animals amended with agricultural rersidues are utilized ai a compost to promote soil fertility and reduce environmental pollution by traditional methods of livestock mortalities. The full-scale bin composting swine mortality in roofed system with three amendments was very successful in reaching sufficient temperature above 55$^{\circ}C$ long enough for pathogen kill. The average temperature of tile compost material in dead swine amended with corn stover increased rapidly to 64$^{\circ}C$ on the 2nd day after primary composting and dropped to near ambient temperature on the 140th day of composting. The composting temperature of corn stover and wheat straw is more efficient for swine carcass composting than that of sawdust.
A total of 360 Berkshire(hog) weighing 25kg were fed experimental diets containing either dehulled soybean meal(DSBM) or non-dehulled soybean meal(NDSBM) as a major protein source until they reach 80kg. The pigs were then fed the finisher diets either high(3,265 kcal/kg) or low(2,940 kcal/kg) in ME to evaluate the effects of dietary energy level for finisher phase on the growth performances, carcass and meat quality parameter. In growth performance, daily weight gain(kg/day) was higher(P<0.05) in T1 than in other groups. Feed conversion(feed/gain) was lower(P<0.05) in other groups. In carcass parameter, carcass percentage was higher(P<0.05) in T2 than in T1 and T4. Backfat thickness was lower(P<0.05) in T2 than in T1 and T3. The ratio of up B grade in carcass grade tender to be higher in T2 than in other groups. In meat quality, chemical composition was similar between groups. WHC was slighter higher in T1 than in other groups. Shear force was tender to be higher in T1 than in other groups. Hunter L and a in meat color were tender to be higher in T2 than in other groups. Hunter L in backfat color was thender to be higher in T1 than in other groups. The results indicate that growth performance and carcass parameter of Berkshire were improved by the dehulled soybean meal as comparison with non-dehulled soybean meal during growing and finishing periods.
The slaughter weight (wt) is a most important economic factor in swine roduction. The present study was undertaken to determine if it is feasible to increase the slaughter wt of finishing pigs to 130kg without significantly affecting the growth efficiency and carcass quality. One hundred and sixty gilts and 160 barrows born from lean-type Yorkshire×Landrace (YL)-dam and Duroc (D)-sire lines, which are most widely used for terminal breeding for pork production in Gyeongsangnam-do, were randomly allocated into 16 pens under a 2 (sex)×2 (slaughter wt; 110 vs. 130kg) factorial arrangement of treatments. The animals were fed ad libitum a diet containing 3,200kcal DE/kg and 15.5% crude protein. After slaughter at the predetermined wt, yields of trimmed primal cuts and physicochemical characteristics of the longissimus dorsi muscle (LD) were measured or analyzed. Average daily gain was greater (P<0.01) in barrows than in gilts (0.86 vs. 0.79kg), but it was not different between the 110- and 130-kg slaughter wt groups (P>0.05). Backfat thickness was greater in the 130- vs. 110-kg group in both sexes (gilts: 21.6 vs. 17.6 mm, barrows: 25.1 vs. 20.8 mm). The yield percentage of belly was greater in barrows than in gilts (21.2 vs. 20.5%) and also in the 130-kg vs. 110-kg group (21.4 vs. 20.2%). Major physicochemical characteristics of LD including the color, percentage of 48-h drip loss, 24-h pH and percentages of crude protein and fat were not influenced by slaughter wt. Marginal profit of the 130-kg vs. 110-kg market pig was approximately 20,000 won/head, which resulted primarily from the heavy carcass weight of the former exceeding the upper limit of the A- or B-grade. However, if it had not been for the carcass weight limit of the current grading system, a 130-kg market pig would have had a potential marginal profit greater than 20,000 won. Results suggest that slaughter wt of lean-line finishing pigs can be increased to 130kg without significantly compromising the growth efficiency and carcass quality and accordingly, the upper weight limit of the ‘good-grade’ carcass needs to be increased or abolished to accommodate the larger market pigs.
Many burial sites were constructed in a short time to prevent the rapid spread of foot and mouth disease in infected livestock carcasses in Korea. More than 4,700 carcass burial sites were constructed in 2011. Approximately seven million poultry and 3.5 million livestock, including cattle and swine, were buried on farmland. Some burial sites were suspected of leachate leakage and were excavated and carcasses redisposed in a bioaugmentation process. This study performed interviews in order to understand the economic issues related to carcass burial and redisposal. The internal data from local government and the assumption data from online sites were analyzed to evaluate the costs; the focus was on burial site construction. The results showed that the local government paid $4.7 and $10.9 per carcass for traditional burial and redisposal. The comparable costs shown online were $4.5. This study found that the standard operating procedures should be carried out to reduce environmental impact and avoid additional costs. We estimated that the cost could be reduced by the advance preparations of materials against the emergency situations such as catastrophe of epidemics. In addition, the innovative technology for the stabilization of carcasses should be established through a future study.
This study was performed to investigate the carcass composition and pork quality of Duroc breeding lines in Korea. A total of 200 Duroc pigs were used, and those were originated from four different great-grandparent (GGP) breeding stock farms (L1: N farm, L2: W farm, L3: S farm, L4: R farm). The carcasses of pigs from these farms were collected, and meat quality traits were evaluated. L1 and L2 had smaller carcass weights and thin backfat, whereas L3 and L4 had heavy carcass weights and thick backfat. L3 and L4 had higher contents of fat and protein than L1 and L2. For the meat quality characteristics, L1, L2, and L4 had higher pH values than L3. In addition, L4 had higher water holding capacity than the other lines. L4 had the highest sensory evaluation scores with regard to both juiciness and flavor. Consequently, the study results indicate that pork quality information from domestic Duroc breeding stock lines could be used to effectively improve pork quality in Korea.

Background: In South Korea, African swine fever virus (ASFV) has spread among wild boars through Gangwon-do to Dangyang-gun, Chungcheongbuk-do on the southern border of Gangwon-do. To prevent the spread of ASFV to African swine fever (ASF)-free areas, it is necessary to identify areas with a high probability of finding ASFV-infected carcasses and to reduce the density of wild boars in those areas. In this study, we described the propagation trend of ASFV among wild boars, constructed the habitat suitability maps for ASFV-infected carcasses, and suggested areas with a high probability of finding ASFV-infected carcasses and an important route of ASFV transmission. Results: Despite the active quarantine policies in Korea to prevent the spread of ASFV through wild boars, there was no significant difference in the monthly average of number of ASFV-infected carcasses observed between 2020 and 2021. The ASFV-infected carcasses were found more in winter and spring (January to April). Since the first ASF outbreak in wild boars on October 2, 2019, the maximum width of ASFV-infected carcass distribution area was 222.7 km for about 26 months till November 20, 2021. The habitat suitability map, based on GPS coordinates of ASFV-infected wild boar carcasses, shows that highly detectable areas of ASFV-infected carcasses were sporadically dispersed in western and southwestern parts of Gangwon-do, and ranged from north to south of the province along the Baekdudaegan Mountains, whereas poorly detectable areas ranged along the north to the south in the middle parts of the province. Conclusions: Our suitability model, based on the GPS coordinates of ASFV-infected carcasses, identifies potential habitats where ASFV-infected carcasses are likely to be found and ponential routes where ASFV is likely to spread. Among ASF-free areas, the areas with high suitability predicted in this study should be given priority as survey areas to find ASFV-infected carcasses and hunting areas to reduce wild boar populations.
This study was conducted to investigate the effects of fermented king oyster mushroom by-products diet (FMBD) on the growth performance, blood characteristics, and carcass traits of fattening pigs and its economics. The fermented diet mainly contained 40.0% king oyster mushroom (Pleurotus eryngii) by-products, 20.0% corn, 28.0% soybean meal, 0.1% supplemental probiotics and 0.08% cellulase. The mixed ingredients were fermented for 1 d at $37^{\circ}C$ followed by 9 d at room temperature, after which they were dried at $45^{\circ}C$ for 3 d. Pigs (n=96) were divided into eight heads per pen, four diet treatments and three replications. The basal diet (C) was substituted with 20% (T1), 50% (T2) and 80% (T3) FMBD. The concentration of crude protein (CP) was significantly higher (p<0.05) at the end of the fermentation period. The average daily gain (ADG) and feed efficiency were significantly lower (p<0.05) in T3 than C. Additionally, carcass grade was significantly better (p<0.05) in all treatments than C and the ratio of high carcass grade was higher. Although substitution of FMBD decreased growth performance, it improved carcass grade and decreased the feed cost of fattening pigs. Therefore, it was expected that the increase in the utilization ratio of FMBD will reduce the cost of animal production.
The foot and mouth disease and AI were highly contagious. The virus can be transmitted in a number of ways, including close-contact animal to animal spread, long-distance aerosol spread and fomites, or inanimate objects, typically fodder and motor vehicles. A lot of burial sites were constructed in a short time for preventing the rapid spread of the virus. The carcass burial sites have a risk potential because the sites were constructed without any appropriate and systematic management. It resulted from lacking of time, equipments and man power. The carcass burial sites more than 4,700 constructed in 2011. Approximately 7 million poultry and 3.5 million livestock including head of cattle and swine were buried in farm land. It is time to be concerned if the secondary pollutions occur from the burial sites. The environmental impacts should be analyzed for managing the burial sites effectively and minimizing damages and risks to the environment and human health. This study was to analyze environmental impacts of the process of carcass burial construction using a life cycle assessment methodology. All input data of raw materials and energy usage were collected and the inventory was constructed. The results showed that 1 ton of carcass burial of the environmental impacts were $0.51yr^{-1}$ for ADP, 0.09 kg of 1,4DCB-eq for FAETP, 31.17 kg of $CO_2-eq$ for GWP, 0.04 kg of $C_2H_4-eq$ for POCP, 0.06 kg of $SO_2-eq$ for AP.
