Interaction between Nutrient Density Diets and Sex on Carcass and Quality Characteristics in Finishing Pigs (사료의 영양소 수준과 성별이 도체 및 육질특성에 미치는 영향)

  • The present study was undertaken to investigate the effects of nutrient density diets and sex on carcass and pork quality characteristics in finishing pigs. A total of 96 pigs(58.04 $\pm$ 6.85 kg) were divided into 2 groups(gilts and barrows), each sex group was assigned to 3 nutrient density(high : 18.5%, middle : 16.0% and low: 14.0% CP, respectively) and raised up to 1l0kg live weight. Each treatment had four replicates with three or five pigs per replicate. The treatments comprised the feeding regimes of 1) the low density diet for 60 days, 2) the middle nutrient density diet for the 30 days followed by a low nutrient density diet for the remaining 30 days and 3) the high nutrient density diet for the 30 days followed by a middle nutrient density diet for the remaining 30 days. Pigs were conventionally slaughtered, and then chilled overnight. Carcass characteristics and grades were determined on those carcasses, and pork loin muscle was removed from each left side at 5th to 13th rib for quality evaluation were evaluated. There were no differences in the carcass weight between sex and nutrient density. Dressing percent of L-L(gilts) treatment was significantly higher than that of other treatments(P< 0.05). Barrows showed a thicker back fat thickness than gilts. There were no difference in intramuscular fat, subcutaneous fat and springiness between sex and nutrient density. Intermuscular fat of barrows groups was significantly higher than the gilts groups(P < 0.05). In the meat quality characteristics, there were no difference in general composition, meat and fat color between sex and nutrient density. pH of L-L(gilts) treatment was significantly higher than that of other treatments(P < 0.05). Cooking loss and shear force value of H-M(barrows) treatment were significantly higher than those of other treatments(P< 0.05). Purge loss of barrows groups was significantly higher than the gilts groups(P < 0.05). Myoglobin content of H-M treatment was significantly lower than L-L and M-L treatments(P< 0.05). Texture of H-M treatment was higher than L-L and M-L treatments. The content of myristic, palmitic, palmitoleic and oleic acid were significantly higher in the barrows groups(P< 0.05). However, stearic, linoleic and arachidonic acid were significantly higher in the gilts(P < 0.05). Amino acid content of L-L treatment was significantly higher than M-L and H-M treatments(P < 0.05). In conclusion, carcass and pork quality characteristics were affected by sex and nutrient density.

Estimation of Additive and Dominance Genetic Variances in Line Breeding Swine

  • Additive and dominance genetic variances were estimated for purebred Landrace selected with line breeding from 1989 to 1995 at Miyazaki Livestock Experiment Station, Kawaminami Branch. Ten body measurements, two reproductive traits and fifteen carcass traits were analyzed with single-trait mixed model analysis. The estimates of narrow-sense heritabilities by additive model were in the range of 0.07 to 0.46 for body measurements, 0.05 to 0.14 for reproductive traits, and 0.05 to 0.68 for carcass traits. The additive model tended to slightly overestimate the narrow-sense heritabilities as compared to the additive and dominance model. The proportion of the dominance variance to total genetic variance ranged from 0.11 to 0.91 for body measurements, 0.00 to 0.65 for reproductive traits, and 0.00 to 0.86 for carcass traits. Large differences among traits were found in the ratio of dominance to total genetic variance. These results suggested that dominance effect would affect the expression of all ten body measurements, one reproductive trait, and nine carcass traits. It is justified to consider the dominance effects in genetic evaluation of the selected lines for those traits.

At each slaughter weight pigs were conventionally slaughtered and then chilled overnight The carcass characteristics (carcass weight backfat thickness and grades) were determined on those carcass, the muscle longissimus dorsi was removed from each left side at 5th to 13th rib and meat qualities were evaluated. Blood profile including cortisol, creatine phos-phokinase (CPK), lactate dehydrogenase (LDH), glucose and phosphorus was not significantly (p>0.05) different among all slaughter weight, However, the calcium contents of pigs at $95\~104\;kg$ were significantly (p<0.05) higher than the other weights. The carcass weight and backfat thickness of pigs slaughtered at $125\~130\;kg$ were higher than those of $105\~110\;or\;95\~104\;kg$. The carcass grade of pigs slaughtered at $125\~130\;kg$ were significantly (p<0.05) lower than the other weight. The moisture contents of pigs slaughtered at $125\~130\;kg$ were significantly lower than the other weights, but crude protein contents were significantly (p<0.05) higher, Cooking loss and shear lone values of pigs slaughtered at $95\~104\;kg$ were significantly (p<0.05) lower than the other weight. CIE $a^*\;and\;b^*$ values of pigs slaughtered at $105\~110\;kg$ were significantly higher than the other weights. These results imply that the carcass characteristics (carcass weight and backfat thickness) could be affected by slaughter weight the cooking loss and shear force values of pigs slaughtered at $125\~130\;kg$ resulted in higher than those of $105\~110kg\;or\;95\~104\;kg$.

Association of the A-G Polymorphism in Porcine Adiponectin Gene with Fat Deposition and Carcass Traits

  • The adiponectin gene is known to be involved in the regulation of energy homeostasis involving food intake, carbohydrate and lipid metabolism. Human adiponectin gene polymorphisms have been recently reported to be associated with obesity, insulin sensitivity and the risk of type 2 diabetes. The present study was carried out to investigate the porcine adiponectin gene as a candidate gene for fat deposition and carcass traits. A mutation of A178G of the porcine adiponectin gene that resulted in substitution of the amino acid Isoleucine to Valine was identified. AcyI PCR-RFLP was used to detect the polymorphism of the genotypes in five different pig populations (Large White, Landrace, Duroc, Chinese breeds Meishan and Qingping). The A allele frequency was significantly higher among subjects from Chinsese lard type breeds, while the G allele was the only one present in those from Western lean type breeds. To determine if there was an association of the polymorphism with phenotypic variation, the mutation was tested in 267 pigs of the "Large $White{\times}Meishan$" F2 resource population. The results of association analyses showed significant associations of the genotypes with fat deposition and carcass traits. Allele G was significantly associated with increase in loin eye height, loin eye area and lean meat percentage and bone percentage, and decrease in fat mean percentage, ratio of lean to fat, shoulder fat thickness, 6-7 rib fat thickness, thorax-waist fat thickness and buttock fat thickness. The substitution of A178G (Ile60Val) happened to be located at amino acid 60 in the collagenous domain of porcine adiponectin which might affect the association into higher-order structures, and accordingly affect the posttranslational modifications and optimal biological activity of the multimeric forms. The identified functional polymorphism provides new evidence of adiponectin as an important candidate gene affecting fat deposition and carcass traits in pigs.

Comparison of genomic predictions for carcass and reproduction traits in Berkshire, Duroc and Yorkshire populations in Korea

  • Objective: A genome-based best linear unbiased prediction (GBLUP) method was applied to evaluate accuracies of genomic estimated breeding value (GEBV) of carcass and reproductive traits in Berkshire, Duroc and Yorkshire populations in Korean swine breeding farms. Methods: The data comprised a total of 1,870, 696, and 1,723 genotyped pigs belonging to Berkshire, Duroc and Yorkshire breeds, respectively. Reference populations for carcass traits consisted of 888 Berkshire, 466 Duroc, and 1,208 Yorkshire pigs, and those for reproductive traits comprised 210, 154, and 890 dams for the respective breeds. The carcass traits analyzed were backfat thickness (BFT) and carcass weight (CWT), and the reproductive traits were total number born (TNB) and number born alive (NBA). For each trait, GEBV accuracies were evaluated with a GEBV BLUP model and realized GEBVs. Results: The accuracies under the GBLUP model for BFT and CWT ranged from 0.33-0.72 and 0.33-0.63, respectively. For NBA and TNB, the model accuracies ranged 0.32 to 0.54 and 0.39 to 0.56, respectively. The realized accuracy estimates for BFT and CWT ranged 0.30 to 0.46 and 0.09 to 0.27, respectively, and 0.50 to 0.70 and 0.70 to 0.87 for NBA and TNB, respectively. For the carcass traits, the GEBV accuracies under the GBLUP model were higher than the realized GEBV accuracies across the breed populations, while for reproductive traits the realized accuracies were higher than the model based GEBV accuracies. Conclusion: The genomic prediction accuracy increased with reference population size and heritability of the trait. The GEBV accuracies were also influenced by GEBV estimation method, such that careful selection of animals based on the estimated GEBVs is needed. GEBV accuracy will increase with a larger sized reference population, which would be more beneficial for traits with low heritability such as reproductive traits.

Effects of Dietary Bamboo Charcoal on the Carcass Characteristics and Meat Quality of Fattening Pigs

  • The purpose of this study was to investage the effects of dietary bamboo charcoal on the carcass characteristics and meat quality of fattening pigs. Fifty four crossed pigs of $61.0{\pm}1.0$ kg body weight (BW) were grouped and housed in 6 animals (3 barrows and 3 gilts) per pen and 3 replications per treatment. The basal diet (C) was supplied with 0.3% bamboo charcoal as treatment 1 (T1) and 0.6 % as treatment 2 (T2). The pigs were fed that experimental diet for 42 days, thereafter 10 longissimus dorsi (LD) per treatment were randomly collected at the time the pigs reached an average weight of $110.0{\pm}5.0$ kg. The carcass weight, backfat thickness, and the carcass grade were better (p<0.05) in the pigs fed bamboo charcoal than in C. The crude fat concentration of LD was higher (p<0.05) in T1 than in C. While the composition of stearic acid and arachidonic acid was lower (p<0.05) in treatments than in C, the composition of oleic acid and linoleic acid of treatments was higher (p<0.05) than C. The physico-chemical characteristics, such as meat color and amino acid composition of LD were not affected (p>0.05) by the supplemented bamboo charcoal. In conclusion, dietary supplementation with bamboo charcoal improved the carcass grade and fatty acids composition of pork meat from fattening pigs, where the composition of unsaturated fatty acids was increased, but that of saturated fatty acids was decreased.

Farm Animal Mortality Management Practices in Sunchon-si (순천시의 폐사가축 처리실태에 관한 연구)

  • Disposal methods of managing carcass in Korea livestock production systems include burying, digesting, rendering, carcass dumping to manure pile, dead animal disposer and mini-incinerator. Burying was usually the most practical method of carcass disposal in our livestock farms. Burying, carcass dumping to manure pile, dead animal disposer and mini-incinerator may have environmental regulatory and economic liabilities when used as a means of carcass disposal. In many cases in this survey, these disposal methods offer a poor choice for the producer due to individual site conditions, geology, cost, air emissions, rendering plants. A survey questionnaire that addressed the issues to livestock producers was prepared. The questionnaire addressed two main topics as follows: 1) types of livestock and generation amounts of carcass 2) Number of breeding animals and disposal methods of livestock mortality. A total of 36 livestock producers were interviewed. The results of obtained in this survey were summarized as follows: The number of breeding poultry, swine, beef cow and dairy cow was 251,000, 2,600, 142 and 92 heads per year and the generation amounts of annually carcass was 0.46, 15.32, 0.36, 1.36 tons per year of each poultry, swine, beef cow and dairy cow farms, respectively. The disposal methods of carcass were burying (42%), carcass dumping to manure pile (36%), rendering (8%), incineration (6%), digesting (6%), carcass disposer (2%), respectively. These results can be used as basic information to establish the standard of carcass composting facility.

Wildlife as Potential Vectors of African Swine Fever Virus

  • The African swine fever virus (ASFV) remains contagious for a long time, not only in the carcass, but also in the bone marrow of an infected animal. The scavenging activity of various animals on ASFV-infected carcasses is a likely risk factor for ASFV transmission. Thus, we conducted this study to determine whether scavengers are potential vectors for ASFV. In nonprotected wild boar carcasses on the forest floor, we investigated the seasonal patterns of carcass decomposition and scavenger visits for feeding on them. The duration from fresh to early skeletonization (only bones and leather remaining) of adult carcasses was 37.6±23.1 days (n=3, range=11-51 days) in winter. The duration from fresh to later skeletonization (only bones and some fur remaining) of all carcasses, including subadult carcasses, was 8.3±2.5 days (n=4, range=7-12 days) in summer. At all three study sites, leopard cats (30.3%), large-billed crows (21.6%), and golden eagles (18.1%) were the frequently visiting species, representing more than 10% of the total visits (343 visits) in winter, whereas raccoons (21.9%), grey-backed thrushes (39.4%), and eyebrowed thrushes (14.7%) were the most frequent visitors in summer. In winter, crows or cinereous vultures were the first animals to arrive at a carcass; in summer, raccoons or crows arrived first. Our results showed that wild boars, raccoons, and leopard cats relatively frequently visited wild boar carcasses and stayed there for a long time. Wild rodents chewing on or staying near carcasses were photographed during winter. In addition to wild boars, thus, mammals, such as raccoons, leopard cats and rodents, and birds, such as accipitrids and thrushes, may be spreaders of ASFV in South Korea.

Identification of a Bromodomain-containing Protein 2 (BRD2) Gene Polymorphic Variant and Its Effects on Pork Quality Traits in Berkshire Pigs

  • Bromodomain-containing protein 2 (BRD2) is a nuclear serine/threonine kinase involved in transcriptional regulation. We investigated the expression and association of the BRD2 gene as a candidate gene for meat quality traits in Berkshire pigs. BRD2 mRNA was expressed at relatively high levels in muscle tissue. Statistical analysis revealed that the c.1709G>C polymorphism of the BRD2 gene was significantly associated with carcass weight, meat color ($a^*$, redness), protein content, cooking loss, water-holding capacity, carcass temperatures 4, 12 and 24 h postmortem, and the 24 h postmortem pH in 384 Berkshire pigs. Therefore, this polymorphism in the porcine BRD2 gene may be used as a candidate genetic marker to improve meat quality traits in pigs.

Mapping of Quantitative Trait Loci on Porcine Chromosome 7 Using Combined Data Analysis

  • To further investigate the regions on porcine chromosome 7 that are responsible for economically important traits, phenotypic data from a total of 287 F2 individuals were collected and analyzed from 1998 to 2000. All animals were genotyped for eight microsatellite loci spanning the length of chromosome 7. QTL analysis was performed using interval mapping under the line-cross model. A permutation test was used to establish significance levels associated with QTL effects. Observed QTL effects were (chromosomewide significance, position of maximum significance in centimorgans): Birth weight (<0.01, 3); Carcass length (<0.05, 80); Longissimus muscle area (<0.01, 69); Skin percentage (<0.01, 69); Bone percentage (<0.01, 74); Fat depths at shoulder (<0.05, 54);Mean fat depth (<0.05, 81); Moisture in m. Longissimus Dorsi (<0.05, 88). Additional evidence was also found which suggested QTL for dressing percentage and fat depths at buttock. This study offers confirmation of several QTL affecting growth and carcass traits on SSC7 and provides an important step in the search for the actual major genes involved in the traits of economic interest.
