신선도표시계를 이용한 쇠고기 및 돼지고기의 저장 중 신선도 측정 및 품질 변화 (Use of Freshness Indicator for Determination of Freshness and Quality Change of Beef and Pork during Storage)

  • 식육의 신선도를 판정 할 수 있는 신선도표시계를 제작하여 냉장 저장 중 돼지고기의 삼겹살과 쇠고기의 등심의 신선도 및 품질 변화를 측정하고자 저장 중 표면 pH, VBN, TBARS, 총균수 전자코 측정 및 관능검사를 수행하였다. 저장기간 중 삼겹살과 등심 모두 저장 6일 경과 후 신선도표시계의 색이 변하였다. 저장 기간 중 품질의 변화를 측정 한 결과 신선도표시계의 반응 시점과 같은 저장 6일에 VBN, TBARS, 총균 수의 값도 부패 시점 기준에 도달하는 값을 나타내었고 관능검사 결과도 저장 6일 이후에는 이취 등에 의하여 가식이 불가능 하였다. 전자코 분석에서도 저장 0일째, 저장 6일째, 저장 10일째의 향기 분석에 있어서 뚜렷한 차이를 보였다. 본 연구 결과는 저장 중 식육의 이화학적, 미생물학적, 관능적 변화를 고려할 때, 제작된 신선도표시계의 시료 부착을 통하여 유통 중인 식육의 선선도 측정이 가능하다고 판단된다.

염수를 이용한 공기방울 세척이 딸기의 저장 시 품질특성에 미치는 영향 (Effect of Air Bubble Washing with Brine on Quality Characteristics of Strawberries during Storage)

  • 본 연구에서는 딸기의 냉장 및 상온 저장 시 일반세균, pH, color, firmness 등의 품질특성에 있어 염수 세척에 따른 영향을 분석하였다. 시료는 세척하지 않은 대조구, 염수세척 시료구, 염수세척 후 물기제거한 시료구 세 가지 종류로 준비하였다. 일반세균의 경우 염수세척 후 물기제거한 경우에 염수세척 시료구와 비세척 대조구에 비해 세균수가 저감화되었으며, 대수증식기가 나타나지 않았다. pH의 경우, 비세척 대조구와 염수세척 시료구에서는 다소 감소했으나, 염수세척 후 물기를 제거한 시료구에서는 거의 변화가 없는 것으로 나타났다. 적색도는 비세척 대조구와 염수세척 후 물기제거 시료구에서 저장기간이 경과함에 따라 증가되었으나, 염수세척 시료구에서는 감소되었다. 경도의 경우 $4^{\circ}C$에서 저장했을 때, 저장 간에 큰 변화를 보이지 않았다. 결론적으로 딸기를 염수세척하여 물기를 제거할 경우, 저장기간을 크게 연장할 수 있을 것으로 사료된다.

참외 식초 및 농축액 함유 음료의 저장 중 품질 변화 (Quality Change of Beverage Containing Muskmelon Vinegar and Concentrated Muskmelon Juice during Storage)

  • 참외의 부가가치 향상을 위한 일환으로 가공제품인 참외음료를 제조하였으며, 참외음료는 액상과당 $11\%$, 참외식초 $3\%$, 참외농축액 $1\%$ 및 정제수 $84\%$를 첨가하여 제조하였다. 참외 식초/농축액을 함유한 음료에 대한 저장온도 및 저장시간에 따른 관능적 품질 변화 및 이화학적 품질 변화를 모니터링한 결과 관능적인 품질과 이화학적 품질 모두 저장시간보다는 저장온도에 더 많은 영향을 받는 것으로 나타났다. 관능적인 품질은 낮은 온도에서 더 좋은 경향을 나타내었으며, 이화학적 품질에 있어 저장온도가 증가할수록 이화학적 품질의 변화가 크게 나타났다. 참외 음료의 관능적인 특성 및 이화학적 특성을 보존하면서 저장하기 위해서는 저장온도를 $60^{\circ}C$이하로 설정하는 것이 필요함을 알 수 있었다.

Nano inclusions in sapphire samples from Sri Lanka

  • The turbid/translucent, near colorless(milky) metamorphic sapphire samples from Sri Lanka have been characterized after the heat treatment in $N_2$ at $1650^{\circ}C$. As-received sapphire specimens became bluish-colored and exhibited more clarity after the heat treatment. It was found that the color change at inclusions zoning region is attributed by the dissolution. As received samples contain the micro/nano inclusions such as rutile($TiO_2$), ilmenite($FeTiO_3$), spinel($MgAl_{2}O_{4}$)/ulvospinel($Fe_{2}TiO_{4}$) and apatite($Ca_5(PO_4)_3$), which were dissolved by the heat treatment and form the blue color through $Fe^{2+}/Ti^{4+}$ charge transferring. The microstructures become different because as the dissolution of apatite($Ca_5(PO_4)_3(OH,F,Cl)$) in alumino silicates($Al_{2}SiO_{5}$) occurred, resulting in morphological change with the appearance of(Ca, Mg, Al) silicate on the surface. Both as-received and heat treated samples showed the rhombohedral crystal structure of $Al_{2}O_{3}$.

Storage Stability and Shelf Life Characteristics of Korean Savory Sauce Products

  • This study evaluated the storage stability of a variety of sauce products in the Korean market, determined primary quality indices for three typical products, and proposed functional relationships that are useful for determining shelf life at different temperatures. Most of the products examined were found to combine hurdles of low pH, low water activity, and the use of heat processing as methods for producing the required storage stability while maintaining the sensory quality of the products. For a meat extract solution produced for cold noodles (pH=4.3; $a_w=0.98$), the primary quality change determining shelf life was lipid oxidation, determined here by the TBA value. The primary quality index of a soybean paste seasoning mix (pH=4.0; $a_w=0.78$), which had a microbial load of 2.8 log (CFU/g), was a decrease in its pH. The primary quality index for a sandwich spread (pH=4.0; $a_w=0.88$) was changes in its surface color. The temperature dependence of changes in the primary quality indices can be described by the Arrhenius equation, which can estimate the shelf life at any arbitrary limit as a function of temperature. The activation energies for changes in the primary quality indices of the meat extract solution, the soybean paste seasoning, and the sandwich spread were 20.3, 27.2, and 43.5 kJ/mol, respectively.

졸-겔법에 의한 $SrTiO_3:Pr^{3+}$ 형광체의 $SiO_2$$Al_2O_3$ 코팅에 따른 발광특성 (Luminescent Properties of $SrTiO_3:Pr^{3+}$ Phosphor Coated with $SiO_2$ and $Al_2O_3$ by Sol-Gel Method)

  • Field emission display(FED) is actively investigated in view of the development of full color flat-panel display, which can replace some cathode-ray tube(CRT). Thus, the development of new phosphors appropriate for FED is urgently needed and has been actively investigated. In this work, $SrTiO_3:Pr^{3+}$ phosphor was prepared by sol-gel method and the coating was applied by sol-gel method combined with sonication on these phosphor's surface into diluted precursor solution. It was found that very fine particles of coating material were formed on phosphor's surface. The luminescent intensity of $SrTiO_3:Pr^{3+}$ phosphor coated with $SiO_2$ and $Al_2O_3$ was considerably increased without any noticeable change in color chromaticity. The optimum concentration of coating material was found to be 1wt% and the optimum pH value of the solution was 10.

태풍의 이동경로에 따른 해양환경변화관측을 위한 해색 자료 분석 (Analysis of Ocean Color Data for Observation on the Ocean Environment Change Caused by Typhoon Path)

  • 태풍이 해양을 이동할 때 해양환경은 물리 생물학적으로 한반도 주변해역에 영향을 미친다. 태풍이동의 결과로써 해양의 수직적 혼합과 용승작용은 해양 표층수 냉각을 유도하고 태풍의 경로에 따라 식물플랑크톤의 증가를 초래하며, 태풍 전과 후의 해양환경은 해양표층의 생물학적 변화에 중요한 역할을 했다. 비록 태풍 이동의 원인으로 해양 표층수의 냉각이 확대되지만, 엽록소, K490, SST와 같은 다른 물리-생물리적 반응은 서로 다른 경향을 나타낸다. 본 연구의 목적은 한반도 주변해역에 영향을 미치는 태풍 이동경로와 해색센서에 의해 관측된 해양환경변수를 비교하는데 있다. 부유물질, 흡광계수(K490), 엽록소와 같은 해양환경변수는 2002년부터 2005년 MODIS 자료가 적용되었다. 태풍이동 후 동해에서는 평균 엽록소 농도가 1-4배 증가하였고, 태풍 이동경로를 따라 태풍 이후 MODIS 엽록소의 평균 농도가 증가하였다. 그러나 제주도 해역은 동해역과 반대의 경향을 나타내었다.

감즙처리가 견직물의 태에 미치는 영향 (The Effect of Persimmon Juice Treatment on Hand Values of the Silk Organza)

  • Silk organza can make the silhouette of clothes bulky and rich, owing to its stiffness. And silk organza in the gum has better dyeability so can be dyed more bright and deeper color than scoured silk because silk organza has sericin gum that has better dyeability than fibroin. So, silk organza came into the most broad use as the material for Hanbok, especially in summer. But the silk organza has poor color fastness. Sericin is removed from organza when silk organza go through scouring. The purpose of this research is to find out the optimum conditions that the scoured silk fabrics can get stiffness by persimmon juice treatment. For experiments, non scoured, partially scoured and fully scoured silk fabrics were prepared by alkali treatments. Then 3 kinds of silk fabrics were treated with the concentration of 1, 5, 10, 50 and 100% of persimmon Juice. The change of fiber surface of the various silk fabrics were observed By SEM. The hand values of those fabric samples also were measured hand values by Kawabata Evaluation System and stiffness by Cantilaver method. By scouring, the silk organza got more flexibility and less cohesiveness between their fibers. And it can be a little more bulky by removing gum. Namely, silk organza lost its unique stiff and crisp handle. By the persimmon juice treatment, tannin component could be coated on the fiber surface. so that the stiffness of the fabrics were improved.

  • In this study, we reviewed the color changes accompanying the laundering, wash fastness, and abrasion fastness of chitosan-treated cochineal-dyed fabrics. The treatment methods were classified into two based on the chitosan treatment: (Method 1): fabric specimens were pre-treated with chitosan prior to the dyeing procedure in salt form. (Method 2): the state of chitosan acid salt formation, coated on the yarn surface, was destroyed and neutralized prior to the dyeing process. The changes in the chitosan treatment methods bear more important meaning in view of the durability. In Method 1, it is highly likely for the chitosan to be detached from the surface by water during laundering since the chitosan is coated as acid salt state. In Method 2, the resistance d the chitosan to water was supposed to revive since the chitosan would return to its original state. Differences in the resistance of the chitosan treatrrent, however, according to the Method 1 and Method 2, fell short of our expectations. In Method 2, the wash fastness did not improve as we expected since the bond between the fibers comprising fabric specimens and the chitosan is not high even if the chitosan itself has high resistance to water.

빗각 증착으로 제조된 TiN 박막의 특성 (Properties of TiN Films Fabricated by Oblique Angle Deposition)

  • Oblique angle deposition (OAD) is a physical vapor deposition where incident vapor flux arrives at non-normal angles. It has been known that tilting the substrate changes the properties of the film, which is thought to be a result of morphological change of the film. In this study, OAD has been applied to prepare single and multilayer TiN films by cathodic arc deposition. TiN films have been deposited on cold-rolled steel sheets and stainless steel sheet. The deposition angle as well as substrate temperature and substrate bias was changed to investigate their effects on the properties of TiN films. TiN films were analyzed by color difference meter, scanning electron microscopy, nanoindenter and x-ray diffraction. The color of TiN films was not much changed according to the deposition conditions. The slanted and zigzag structures were observed from the single and multilayer films. The relation between substrate tilting angle (${\alpha}$) and the growth column angle (${\beta}$) followed the equation of $tan{\alpha}=2tan{\beta}$. The indentation hardness of TiN films deposited by OAD was low compared with the ones prepared at normal angle. However, it has been found that $H^3/E^2$ ratio of 3-layer TiN films prepared at OAD condition was a little higher than the ones prepared at normal angle, which can confirm the robustness of prepared films.
