Chemical Components of Yellow and Red Onion (황색과 자색 양파의 화학성분)

  • The chemical properties of yellow and red onion were investigated and analyzed to provide basic data for functional food materialization and processing. The moisture and nitrogen free extract contents of yellow and red onion were 92.80%, 5.13% and 92.47%, 5.59%, respectively. Mineral components of yellow and red onion were rich in K (123.64 and 114.41 mg%), Na (34.09 and 33.57 mg%) and P (27.04 and 20.56 mg%). The major free sugar of yellow onion were glucose (744.2 mg%) and fructose (705.9 mg%). Whereas major free sugar of red onion were sucrose (692.8 mg%) and fructose (517.3 mg%). Glutamic acid, phenylalanine and aspartic acid in yellow and red onion were major amino acids. Abundant free amino acids in yellow onion were hydroxy-L-proline (27.34 mg%), L-serine (27.34 mg%) and L-arginine (26.25 mg%). Abundant free amino acids in red onion were L-glutamic acid (16.35 mg%), ammonium chloride (15.22 mg%) and L-serine (10.93 mg%). Ascorbic acid contents are higher in red onion (28.34 mg%) than in yellow onion (19.20 mg%). Quercetin and total polyphenol of yellow and red onion were 15.24 mg%, 5.70 mg% and 0.319 mg/g and 0.248 mg/g, respectively.

Chemical Composition of Acacia Flower(Robinia pseudo-acacia) (아카시아(Robinia pseudo-acacia) 꽃의 화학성분 조성)

  • Chemical composition was determined to renew interest in acacia flower as food. The moisture content was 86.60%. The chemical composition showed 24.55% of protein, 8.51% of ash, 40.97% of total sugar and 160.44mg% of ascorbic acid on dry matter basis, respectively. Free sugar was mainly composed of fructose, sucrose and glucose. In fatty acid composition, the ratio of saturated and unsaturated fatty acids was 1.7 : 1. The unsaturated acids were primarily composed of polyenoic acid by more than 90%. The amino acid was distributed with a ratio 0.32 of essential to total amino acids. Important elements of acacia flower were K, Mg, Ca, Fe, and Na. Flavor components such as 24.19% of octadecanoic acid, 9.41% of benzyl alcohol, 7.05% of linalool, 5.43% of heptacosane and 4.28% of geraniol were identified as major volatile compounds of acacia flower.

Changes in Chemical Properties of Jeungpyun Product Durins Fermentation (발효시간에 따른 증편제품의 성분 변화)

  • Jeungpyun Products prepared with different fermentation time (0-10 hours) were analyzed to study phenomena occurred during steaming of Jeungpyun dough. The tendencies of changes in chemical Properties of Jeungpyun Products according to the fermentation time were similar to those of Jeungpyun dough. Titratable acidity, lactic acid, total sugar content, reducing sugar content, soluble protein and total content of free amino acid of Jeungpyun product decreased while its pH increased somewhat, during steaming compared with those of Jeungpyun dough. Especially reducing sugar decreased greatly.

Changes in Taste Component of Cheonggukjang prepared with Germinated Soybeans by the Addition of Smoking Process (훈연공정을 첨가하여 제조한 발아콩 청국장의 맛 성분 변화)

  • The aim of this study was to investigate the changes in the taste components of cheonggukjang made with germinated soybeans, which is produced by the addition of a smoking process. The total organic acid content of smoked cheonggukjang made with germinated soybeans (SCGS) was four times higher than that of non-smoked cheonggukjang made with non-germinated soybeans (NCNS). The total organic acid content of SCGS was lower than that of non-smoked cheonggukjang made with germinated soybeans (NCGS). The total free sugar content of NCGS and SCGS was approximately three times higher than that of NCNS. The total free amino acid content of NCGS was significantly decreased compared with that of NCNS, whereas the total free amino acid content of SCGS was 1.2 times higher than that of NCGS. The essential amino acid content of SCGS was significantly increased compared with that of NCGS. The ratio of glutamic acid to the total free amino acid in NCNS and SCGS was 19.6%. Similarly, the ratio of glutamic acid to the total free amino acid in NCGS was 19.1%. There were no significant differences in the total fatty acid content of NCNS, NCGS, and SCGS. The sensory evaluation of appearance, aroma, taste, and overall quality of SCGS was significantly increased compared with that of NCNS and NCGS. These results suggest that smoked cheonggukjang made with germinated soybeans could be utilized for the development of a novel fermented food.

Changes in Physicochemical Characteristics of Kochujang Prepared with Different Koji during Fermentation (고오지 종류에 따른 식혜 고추장의 숙성 중 이화학적 특성 변화)

  • Physicochemical characteristics of kochujang prepared with meju, koji and mixture of meju and koji were analyzed during fermentation in order to improve quality of traditional sikhe kochujang. Amino nitrogen content, an index of kochujang quality, was remarkably higher in kochujang prepared with p-2 koji, p-1 koji, mixture of p-2 koji and meju. Titratible acidity of kochujang slightly increased and pH of kochujang increased until 40 days of fermentation and then decreased there after. Citric acid was found as a major organic acid followed in decreasing order by malic, oxalic, succinic, acetic and lactic acids. As a free sugar, maltose, glucose and fructose were detected. Free sugar content was higher in kochujang prepared with p-1 koji than the others. The major free amino acids were aspartic acid, glutamic acid, alanine, phenylalanine and arginine, and total free amino acid content was higher in kochujang prepared with koji, and mixture of meju and koji than the one with traditional meju only. In sensory evaluation, all tested groups did not show a significant difference. This result indicates that addition of koji to sikhe kochujang influences on taste components like free sugars and free amino acids, but decisively not on the sensory properties.

  • Nutritional components, such as approximate compositions, and amino acid, mineral, vitamin, sugar, and fatty acid contents, of artificially cultivated Pleurotus ferulea were analyzed. Contents of carbohydrates, crude lipids, dietary fibers, crude proteins, total amino acids, particularly essential amino acids, minerals, water-insoluble and-soluble vitamins, glucose, and unsaturated fatty acids such as linoleic acid of P. ferulea were higher than those of P. ostreatus and P. eryngii. Results indicate P. ferulea has abundant essential nutrients and thus is good source of functional healthy food.

Evaluation of Nutritional Characteristics of Platycodon grandiflorum Seeds (도라지 종자의 영양학적 특성 평가)

  • In this study, proximate composition, crude fiber, reducing sugar, free sugars, organic acids, minerals and amino acids of Platycodon grandiflorum seeds were analyzed to evaluate its nutritional value. Moisture, crude protein, crude fat, crude ash and carbohydrate contents of seeds were 6.97, 26.05, 27.46, 3.78 and 35.74%, respectively. Crude fiber of 6.31% and reducing sugars of 1.54% were also determined. Sucrose(1,661 mg/100 g) and lactic acid(1,224 mg/100 g) were most abundant free sugar and organic acid, respectively. Both phosphorus and potassium were main minerals that contained more than 700 mg in 100 g seeds. Amino acids analysis of 100 g seeds showed that glutamic acid(3.45 g), arginine(2.51 g), aspartic acid(1.66 g), leucine(1.29 g), lysine(1.10 g), alanine(1.05 g) and glycine(1.04 g) were abundantly contained in order, while others were less than 1 g.

Quality Characteristics of Duck Stock by the Addition of Malic Acid (사과산 첨가량에 따른 오리 육수의 품질 특성)

  • This study was performed to develop duck stock using various nutritional elements in duck bone by the addition of malic acid (0.5%, 1.0%, 1.5% and 2.0%). Moisture contents, b value, and pH were decreased, while the L value, a value, salinity, and sugar contents were increased by increasing the ratio of malic acid. Thirty four types of free amino acid were detected, and the highest individual amino acid content was 1.0%. In a test for different attributes, malic acid content significantly affected properties including color intensity, transparency, acid flavor, savory flavor, acid taste, and savory taste. In the acceptance test, a malic content of 1.0% was preferred for appearance, taste, and overall quality. The optimal malic acid content for maximizing the overall quality of duck stock was 1.0%.

Brewing Method and Composition of Traditional Dungge-Jang in Kyungsang-Do Area (경상도지방 전통 등겨장의 제법조사와 성분에 관한 연구)

  • Brewing method and quality of 10 sample of traditional Dungge-Jang in Kyungsang-Do area were investigated. In order to improve the taste of Dungge-Jang, some amount of boiled bean was added in the Dungge-Jang at early stage of fermentation. The level of amino nitrogen turned out to be low while that of water soluble protein and salt soluble protein was high. Glutamic acid, aspartic acid and proline were the major amino acid in water and salt soluble protein in traditional Dungge-Jang in Kyungsang-Do area. The content of total sugar and free reducing sugar were found to be considerably high, and among the free sugar, glucose was the highest$(2.16{\sim}4.02\;mg/ml)$, followed by maltose and maltotriose. Activities of acid protease and liquefying amylase were $0.13{\sim}1.36$ unit per milliliter and $10.18{\sim}15.19D^{40o}_{30}$ respectively. Result of sensory evaluation showed that the good Dungge-Jang turned out to have well harmonized taste of flavor, sweetness and sourness while the color looked slightly dark and yellow.
