The aim of this research was to study the feasibility of the defatted wheat germ flour (DWGF) alone or in combination with xanthan gum (XG) as egg yolk substitutes in mayonnaise formulation. In this research, DWGF was used at different levels (0, 25, 75 and 100%) alone or in combination with the XG (0.2%) as egg substitutes. The effects of these substitutions on the stability, textural and rheological characteristics of mayonnaise were investigated. According to the results, DWGF can be used as an egg yolk substitute in mayonnaise. Combining DWGF and XG as egg yolk substitute, improved the stability, textural and rheological properties. Mayonnaise with 100% egg yolk replacement showed the hardest structure, while the lowest firmness value was obtained in the control containing 100% egg yolk. Also, the highest adhesiveness value occurred in the sample with 100% DWGF. The thixotropic behavior was observed for all investigated mayonnaise samples over the all ranges of the studied shear rate (0.05-450/sec). Furthermore, the highest content of consistency coefficient value was observed in the sample with 100% DWGF and 0.2% XG. Therefore, it can be concluded that low-cholesterol mayonnaise with proper stability, textural and rheological characteristics are achievable by applying of the desirable combination of DWGF and XG.
Objectives: The aim of this study was to identify the complementary and substitute relationships between the use of Korean medicine (KM) and that of Western medicine (WM) in the treatment of musculoskeletal disease. Methods: We analyzed the 2009 Korea Health Panel dataset. General characteristics and the medical utilization of respondents were analyzed descriptively. Logistic regression, negative binominal regression, and Tobit regression analysis were used to identify the relationships between the use of KM and the use, visit frequency, and expenses of WM, respectively. Results: In the treatment of musculoskeletal disease, KM use and non-herbal treatments with Korean medicine significantly reduced WM use. Herb medication use significantly increased WM visit frequency. There were no significant relationships between KM use and WM expenses. Conclusions: There are substitute relationships between WM use and KM use, especially non-herbal treatments in KM. Therefore we need to develop the clinical protocols of KM and WM treatments in the treatment of musculoskeletal disease for proper distribution medical resources.
Article 77 of CISG requires an aggrieved party, the promisee, claiming damages to take reasonable measures to mitigate losses. The reasonable measures required hereunder are limited to those that can be expected under the circumstances having regard to the principle of good faith. When taking such measures, the aggrieved party must do so within a reasonable time under the circumstances. The expenses incurred in taking such measures are recoverable from the promisor. If the aggrieved party fails to do so, the damages recoverable from the promisor are reduced in the amount the loss that should have been mitigated. The aggrieved party's duty to mitigate damages applies to claim for damages only. That is, the violation of this duty should not be invoked against other remedies available under CISG, such as the right to claim specific performance, the right to claim for the price or the right of reduction of price. In practice, under the provision of article 77, the aggrieved party, the seller or the buyer, is often required to enter into a substitute transaction as a measure to mitigate losses and many cases involving a substitute transaction are internationally reported. Therefore this paper intends to provide a certain understanding of the aggrieved party's duty to take measures to mitigate losses based on such cases reported.

The contribution of light in high-energy film dosimetry was examined using six commercially available solid water substitute phantoms. As six commercially available phantoms; RMI-451, Mix-DP, WE211, WE211-Black, PMMA and PMMA Black were evaluated in this study. It is difficult to evaluate the contribution of Cerenkov radiation and the optical permeability to the relative and/or absolute dosimetry using unpacked film in these phantoms. Therefore the contribution of Cerenkov radiation was estimated by the comparison between film densities in the shielded side (shutting off the light) and unshielded sides on a phantom. The effect of optical permeability was measured under ambient light by the time scale method. The results suggest that the use of black colored phantoms may improve the accuracy of dose measurement in film dosimetry.
The aim of this study was to determine the effect of milk as one of the environmental friendly materials that substitute chemical fungicides for control powdery mildew (Sphaerotheca aphanis) of strawberries $(Fragaria{\times}ananassa\;Duch.)$. 'Maehyang' and 'Akihime' varieties planted in greenhouses were evaluated for the control of powdery mildew. Applications of $5\%,\;10\%\;and\;20\%$ milk had much better effects on controlling powdery mildew. In particular, $10\%$ milk showed a higher efficacy than other concentrations applied onto strawberry in greenhouse experiments. Foliar spray application of $10\%$ milk was effective for powdery mildew, whereas drench application was not. Also, foliar spray of $10\%$ milk was able to accelerate more firmness and calcium contents of strawberry fruits than the non-treated. The $10\%$ milk applied with fertilizer salts $(Ca(H_2PO_4)_2-H_2O\;and KH_2PO_4)$ showed there was a similar efficacy to $10\%$ milk alone in greenhouse experiments. White crystals and cracks on strawberry fruits appeared by $20\%$ milk. This result indicated that $10\%$ milk was a useful substitute for fungicides to control powdery mildew of strawberry.
The effect of adding 10% fat substitute (10%F) or 2% plum extract (2%P) on the formation of hydrocarbons and 2-alkyl-cyclobutanones (2-ACBs) in freeze-dried beef patties, irradiated (IR) at 44 kGy, and freeze-dried irradiated cooked beef patties was investigated. Hydrocarbons, such as $C_{16:3}$, $C_{16:2}$, $C_{17:2}$ and $C_{17:1}$, were detected only in irradiated samples and their concentrations were high in the order of 2%P+IR, IR and 10%F+IR. Only irradiated beef samples produced 2-ACBs (2-DCB, 2-TCB, 2-TeCB), and their amounts were high in reverse order. The addition of fat substitute or plum extract did not help in reducing hydrocarbons and 2-ACBs in the freeze-dried irradiated cooked beef. However, the amounts of radiation-induced hydrocarbons and 2-ACBs in all irradiated beef patties even at 44 kGy were too small to be of concern for human consumption.
Disinfection is a very important process in water plant on account of our surface water usage. Particularly. the rainfall of Korea is concentrated in summer time. it is almost carried away to ocean before our utilization as water resource. To overcome the unbalance of water resource, artificial dams and reservoirs are constructed. According to such storage of water to aggravate water pollution and make the increase of water cleaning chemicals. Chlorine, as a main traditional chemical for water treatment. is focused on account of THMS formation in recent days. In this paper. the data of a water plant located in Seoul is adopted as the foundation of water quality analysis and introduce the substitute chemicals to supplement the harmful formation. additionally. Conclusions are summarized as follows: 1. The water quality of water resource is the worst in summer time and the supply of cleaning chemical is inevitably increased on account of general bacteria increase. 2. Chlorine, as a main chemical for water cleaning, formed the cancer-causing organic THMS with water molecules. 3. One of substitute chemical. chlorine dioxids suppress the formation of THMS comparing with the case of chlorine only. Therefore. the continuous research of substitute chemicals should be activated. 4. Stone is one of the oldest material for construction and artistic works. This study investigates the current use of stones in landscape constructional works, and the design criteria to advance the arts of natural stone arrangements. Thirty four experts and thirty two others were surveyed with various photos of simulated construction works of natural stone arrangements fond improved design guidelines. Major findings are as follows: -The payment for the use of stones ranges approximately 5 to 10% of total cost of landscape constructional works. More stones may be used when better retailing system is introduced, working skill is standardized, and more of the substitute natural stones made of blasted rocks are provided and the cost goes down. -Preferences showed little difference for the mixed use of different sizes, colors and shapes of stones, and for the use of similar ones, in the construction of walls. This does not match with the current design guidelines. -Arranging three stones, which symbolizes heaven, earth, and human being, was the most preferred. As the supply of natural stones is limited and more substitute stones are used, it its needed to establish guidelines for the production of substitute stones. -Grasses are much more preferred between pavement stones than mortars. -In current practices, top of piled up natural stones is usually arranged level. More freely curved top lines are preferred to straight line.
This study was carried on the quality characteristics of cake prepared with Co(com oil) containing MCT(medium chain triglycerides), which is used as a fat substitute. In tile cake prepared with MCT-CO containing $10{\sim}30%$ MCT, the appearance and the degree of gelatinization were similar to those of cake prepared with NS-CO(non-substituted corn ell) Cake batter prepared with MCT-CO showed higher specific gravity and consistency than those of cake prepared with NS-CO and increased by increasing MCT contents. The baking loss of cake prepared with MCT-CO was more than that of cake prepared with NS-CO and increased by increasing MCT contents as well. The rheological properties of cake represented significant different by MCT substitution ratio(p<0.05). Gumminess, hardness and chewiness of cake prepared with MCT-CO containing $20{\sim}30%$ MCT were about 2 times higher than those of cake prepared with NS-CO, while springiness and cohesiveness showed similar pattern between the cake prepared with MCT-CO or NS-CO. In sensory evaluation, appearance. color and flavor of cake prepared with CO substituted by MCT up to 100% were better assessed and the taste was better in range of 30% MCT-CO but the texture was less accepted than that of cake prepared with NS-CO.

The objective of this study was to improve the qualities of Saengsik (substitute meal formulated with uncooked cereal powder) such as functionality, safety and sensory preference by using Lactic Acid Bacteria (LAB). The optimum formulation of fermented Saengsik (substitute meal) was verified as $40\%$ of fermented brown rice, $13\%$ of fermented job tears, $5\%$ of yellow soybean, $5\%$ of waxy rice, $5\%$ of sorghum, $3\%$ of Seumok bean, $1\%$ of sesame, $3\%$ of barley, $2\%$ of red bean, $5\%$ of prosomillet, $2\%$ of foxtail millet, $9%$ of black rice, $3\%$ of buckwheat, $1\%$ of chestnut, $2\%$ of pumpkin, $3\%$ of peanut. Fermented Saengsik decreased significantly serum glucose in STZ-induced diabetic rats. However, serum lipid levels were not affected by fermented Saengsik. In rats fed with high-fat diet, serum triglyceride level was slightly decreased and the contents of liver triglyceride were significantly decreased by supplementation of fermented Saengsik.
