Streptococcus sp J-C1 producing bacteriocin was isolated from Kimchi. The optimum conditions for bacteriocin production by Streptococcus sp. J-C1 were evaluated. For the maximum yield of bacteriocin production by Streptococcus sp. J-C1, the cell should be harvested at the late stationary phase and the temperature, pH and NaCl concentration should be 25$\circ$C, pH 8 and without the addition of NaCl, respectively. Sucrose should be used as a carbon source and organic nitrogen such as peptone should be used as a nitorgen source for the best yield. The production of bacteriocin is related to the cell growth of Streptococcus sp. J-C1. The bacteriocin from Streptococcus sp. J-C1 was active for gram positive microorganisms such as Lactobacillus sp., Leuconoctoc sp., Lactococcus sp., Streptococcus mutans, Staphylococcus aureus amd Bacillus subtilis and also active for gram negetive bacteria such as Acetobacter aceti. Antibacterial activity of the bacteriocin was completely disappeared by protease treatment.
The pathogenic organisms occurred in cultured marine fishes in Kamak Bay were investigated from March to November in 1993. The samples were collected at 7 sampling stations once a month. Nine species of pathogenic organisms (Vibrio sp., Edwardsiella sp., Flexibacter sp., Streptococcus sp., Micrococcus sp., Caligus sp., Trichodina sp., Lymphocystis and Staphylococcus sp.) were identified as pathogenic organisms from four different species of fish (Sebastes schlegeli, Paralichthys olivaceus, lateolabrax japonicus and Pagrus major) collected in the study areas. Most of pathogenic organisms were found at over 20^{\circ}C$ of sea water temperature from June to October in 1993. On the test of drug sensitivity, Vibrio sp. (KS-9303) was sensitive to oxytetracycline and chloramphenicol ; Edwardsiella sp. (KP-9315) to oxytetracycline ; Flexibacter sp. (KP-9318) to oxytetracycline, chloramphenicol and oxolinic acid ; Streptococcus sp. (KP-9319) to erythromycin, chlorampheicol and oxytetracycline. However, all these 4 isolated bacteria were resistant to ampicilin, steptomycin, sulfamethoxazole and nitrofurazone.
This study was conducted to investigate the disinfection effects of chlorine dioxide ($ClO_2$) on 4 fish pathogenic bacteria (Vibrio anguillarum, Edwardsiella tarda, Streptococcus sp. and Staphylococcus sp.) isolated from infected olive flounders. The bacteria were exposed to different concentrations of ClO$_2$ (0.129, 0.246 and 0.455 ppm) and response times (0.5, 1, 3, 5 and 10 min), and then were incubated for 12 hr. The effective disinfection concentrations of $ClO_2$ against experimental bacteria by $ClO_2$ for 0.5 min were observed with 0.455 ppm for Staphylococcus sp., 0.246 ppm for V. anguillarum and E. tarda, and 0.129 ppm for Streptococcus sp., respectively. The duration of exposure at low concentration of $ClO_2$ increased for the disinfectant ability to experimental bacteria.

The strain producing L-lactic acid from starch was isolated from kimchi. The isolated strain was identified as a homofermentative Streptococcus sp. through its morphological, cultural, biochemical characteristics, and named Streptococcus sp. JEJ-6. Lactic acids are of two types, one L-specific and the other D-specific form in a stereospecific form. Streptococcus sp. JEJ-6 produced selectively L-lactic acid from all of the tested carbon sources. The optimum conditions for the L-lactic acid production from the isolated microorganism were determined. For the maximum yield of L-lactic acid from Streptococcus sp. JEJ-6, the cell should be harvested at the early stationary phase, and the growth temperature, pH, and NaCl concentration should be 37$^{\circ}C$, pH 7.0 and 0.1%, respectively. 4% Soluble starch as substrate and organic nitrogen sources such as peptone and yeast extract should be used for the best yield. The optimum pH of the nicotinamide adenine dinucleotide(NAD)-dependent and NAD-independent lactate dehydrogenase(LDH) activities was pH 8.5 and pH 7.0, respectively.

Streptococcus sp. is generally known as a strain that produces hyaluronic acid. In this study, we focused on ingredients other than hyaluronic acid among several metabolites produced by Streptococcus sp. during cultivation. The hair experimental sample (HAIRCLETM) was prepared with Streptococcus sp. culture filtrate under the condition that hyaluronic acid was not produced and the effect on the hair was identified. Tensile strength of hair was tested with a universal testing machine (UTM). Surface properties of a hair were examined with an atomic force microscope (AFM). Our results suggest that HAIRCLETM could prevent damage to a hair such as destroyed-cuticle, increased-faction force, and broken-hair. Furthermore, hair-related experiments confirmed that HAIRCLETM could promote the expression of hair growth factors VEGF, HGF, and Wnt10b and mitigate male hair loss by inhibiting androgen receptors and TGF-β2 expression. In addition, it was confirmed that the expression of barrier-related factors (INV, CLDN-1) was increased for oxidative stress, and the COX-2 expression, an inflammatory factor, was inhibited, thereby improving damaged scalp barriers and alleviating induced inflammation.
The antimicrobial activity of Artemisia princeps var. orientalis essential oil against a partial fish pathogenic bacteria was examined. The growth of Aeromonas hydrophila, Aeromonas salomonicida, Aeromonas sorbia, Edwardsiella tarda and Streptococcus sp. (yellowtail) were inhibited at concentrations of 1,000 to 2,000 ppm. The A. salmonicida was inhibited at 1,000 ppm, A. hydrophila, A. sorbia, E, tarda and Streptococcus sp. (yellowtail) at 1,500 ppm, but Vibrio anguillarum, Vibrio ordalii, Edwardsiella ictaluri and Streptococcus sp. (SF 1) were grown on 100-2,000 ppm.
For the treatments and protection of bacterial fish disease, many requirements are needed for aquatic probiotics so that they are effective in aquaculture animals but are also harmless to humans. In the present study, among 17 candidate probiotic bacteria (CPB) obtained from the edible part of the shellfish, Bacillus sp. CPB-St (CPB-St) were selected and in vitro evaluated for the possibility as a probiotic strain for the control of fish streptococcosis which frequently occurs in the olive flounder farms. CPB-St showed inhibitory effects on the growth of various fish pathogenic bacteria, Streptococcus sp., S. parauberis, S. iniae, Lactococcus garvieae and L. piscium by the double layer test ranging about 18~26 mm of clear zone. Inhibitory activity of CPB-St to Streptococcus sp. was observed 6 hours after and the growth of Streptococcus sp. was decreased to 8~55 folds in the co-culture of CPB-St with Streptococcus sp.. The safety of CPB-St to fish and survival of CPB-St in the intestine were assessed in the olive flounder, Paralichthys olivaceus. Fish mortality was not observed in artificial infection with CPB-St for 2 weeks. CPB-St was entirely excreted from the stomach and intestine 24 hours after oral injection. This results indicate that CPB-St has potential applications as a probiotic for the control of fish streptococcosis in aquaculture.
Dental caries is one of the most common oral diseases in the world. Glucosyltransferase (Gtase) of Streptococcus mutans (S. mutans) plays an important role in the develo pment of dental caries. For the purpose to develop anti- caries, we examined the effect of metabolites isolated from Streptomyces sp. M-20 on Gtase and the growth of S. mutans. Streptomyces sp. M-20 isolated from Mongolian soil showed 95~96% sequence homology with that of Streptomyces lin- colnensis. The metabolites of Streptomyces sp. M-20 were partially purified by extraction with ethyl acetate, silica gel column chromatography and preparative TLC. Partially purified metabolite, red colored component (MR-20) in ethyl acetate fraction showed potent antibacterial activitiy against S. mutans and inhibitory activity against Gtase purified from S. mutans, while another isolated yellow component (MY-20) showed no activity against S. mutans. The inhibitory activity of MR-20 against Gtase was confirmed by activity staining on SDS-polyacrylamide gel electrophoresis. The concentration of MR-20 for 50% inhibition $(IC_{50})$ against Gtase activity was $60{\mu}g/ml$. These results suggest that MR-20 can be developed for antibacterial agent and anticaries.
For the production of Casein Phosphopeptide(CPP) inhibiting the insolubility of calcium, 10% sodium caseinate was treated with 1.5% of protease from Streptococcus sp.. Optimal conditions and productivity for the CPP production, and properties of the CPP were compared with tryptic hydrolysates of sodium caseinate. Optimum conditions of pH, temperature and reaction time were 8.0, 50C, 4 hrs, respectively. Under these conditions the productivity of CPP was 23% and Molecular weight of CPP was ranged from 3, 000 to 17, 000. The results also showed that the insolubility of calcium was completely inhibited by using 1.5 times of CPP for the amount of calcium.
Streptococcal nuclease was completely purified by stepwise CM-Sepharose column chromatography from crude extracts isolated from Streptococcus sp. The active enzyme fraction was eluted with the buffer containing 0.2 M NaCl. The purified enzyme showed a homogeneity on SDS PAGE and had a molecular weight of 35,000 daltons. The optimum pH and temperature for the enzyme were 9.0 and $50^{\circ}C$, respectively.
