Changes of Qualities in Vacuum Packed Fermented Pork Using a Korean Traditional Sensoning During Storage (전통양념으로 발효숙성하여 진공포장한 돼지고기의 저장 중 품질 변화)

  • Outside muscle of pork ham were cut to cube(7 $\times$ 10 $\times$2 ern) and three Korea traditional seasonings such as soybean paste(Tl), garlic paste(T2), red pepper paste(T3) were seasoned by the proportions of meat to seasonings(1 : 1), respectively. The seasoned samples were fermented by fill into plastic box at 0 $\pm$ 1 $^{\circ}C$ for 10 days. And then, the fermented meat from each pack was vacuum-packaged and stored at 0 $\pm$ 1 $^{\circ}C$ for up to 9 weeks. pH and shear force were decreased during storage periods in all treatment groups and WHC was decreased with storage in T2. The saccarinity of T1 was increased and salinity increased during storage in all treatment groups. pH of T2 was increased than that of other treatments, while decreased saccarinity and shear force of in T2. The salinity were higher in the order of T1 > T2 > T3. Volatile basic nitrogen (VBN) value were increased with storage in all treatment groups. Thiobarbituric acid reactive substances (TSARS) value of Tl was increased with storage while it was decreased T2. Thiobarbituric acid reactive substances(TSARS) value was higher in the order of T1 > T3 > T2 at 9weeks of storage. Surface meat L' values of T1 was increased with storage and T3 decreased with storage whereas, surface meat a' values of T1 was decreased with storage, and T2 was increased with storage. Surface meat b' values of T3 was decreased with storage. Escherichia coli were decreased during storage periods in all treatment groups.

Effects of Storage Temperature and Packaging Methods on the Microbiological and Organoleptic Qualities of Boiled-Dried Anchovies (저장온도 및 포장방법이 건멸치의 미생물학적 및 관능적 품질에 미치는 영향)

  • Microbiological and organoleptic qualities of boiled anchovies were evaluated during storage for 8 months at different temperatures and packaging methods. Microbial populations of marketing samples were 106~107 CFU/g in aerobic bacteria, 103~106 CFU/g in yeasts/molds and 103~105 CFU/g in coliforms, respectively, which were the highest in retail sample, followed by in military goods and wholesale sample. Moreover, anchovies supplied for retail sale and military goods were contaminated with sanitary indicative microbes. The samples stored at ambient condition(15~33$^{\circ}C$, RH 5$0^{\circ}C$95%) lost their marketable quaity mainly due to microbial propagation prior to 6 months, irrespective of packaging methods, corrugated-cardboard box and laminated-film(nylon 15${\mu}{\textrm}{m}$/PE 100${\mu}{\textrm}{m}$). However, cooling(5~1$0^{\circ}C$) as well as well as freezing temperatures($\leq$-18$^{\circ}C$) following laminated-film packaging were effective for keeping the organoleptic qualities of stored anchovies up to 8 months. The population of yeasts and molds was shown the quality-indicative criteria for stored anchovies and their critical levels were 5.00 log counts/g, showing a higher negative-correlationship(r=-0.901) with changes in organoleptic quality.

A Study on the Effect of. Oil Leakage for Soil Contamination, Plants and Groundwater (오일의 누출이 토양오염, 식생 및 지하수에 주는 영향에 관한 연구)

  • Our experiment investigated the degree of soil contaimination caused by oil leakage. Each soil sample was taken by boring 5, 8m below the test areas, located 5 to 30m from storage tanks at oil stations. According to the results from a series of laboratory tests(both soxhiet extract test and gas chromatograph test), Traces of a light oil were found in all samples except in Dj8, rocky soil and gasoline and petroleum were not detected. We concluded that soil contamination was caused by the corrosion of storage tanks or alternatively by oil overflow caused during the flooding of underground water seeping into the tank during heavy rain fall or the spillage caused by carelessness during lubrication. Old stations without a concrete box enclosing their metal tanks run a greater risk of oil leakage. To research the effect of oil leakage on plant growth and underground water, We examined the results of research conducted overseas. According to these results, when oil leakage occurs, plant growth is repressed and agricultural crops experience low productivity levels. Also, the contamination of underground water can be serious when oil spreads to the aquifer layer. As a result of these problems, to prevent oil leakage and minimize its contaminating effects at oil stations, it is necessary to improve facilities of storage tanks and have the monitoring system of oil leakage.

Quality Characteristics of Tomato Packaged with Functional Film Applied to Essential Oil of Artemisia Princeps Pampanini (사자발쑥 정유를 첨가한 기능성 필름에 의한 토마토의 품질 특성)

  • This research was conducted to investigate the effect of essential oil (EO) from Artemisia Princeps Pampanini on quality of tomato during storage. EO was extracted by steam distillation and diluted by 1 and 2%. Total phenolic contents and antioxidative activities of EO were analyzed. Tomato was packaged corrugated box covered with polypropylene (PP) film containing EO (1 and 2%) and then stored at room temperature for 10 days. During storage, appearance, weight loss rate, soluble solid contents, pH and a (redness) value were measured for tomato. Total phenolic contents of EO increased in a dose-dependence. The DPPH and ABTS radical scavenging activities also showed a concentration-dependent increase. The weight loss rate was lowest using the film packaged in 1% EO. During the storage period, soluble solid contents and pH increased in all treatments. The a value increased regardless of EO concentration in films. Especially, tomato packaged with EO film showed a lower a value than non EO-packaged ones. This result suggests that application of EO to film is effective for tomato quality preservation.

Solution to Decrease Spatial Dose Rate in Laboratory of Nuclear Medicine through System Improvement (시스템 개선을 통한 핵의학 검사실의 공간 선량률 감소방안)

  • Objectives: This study aims at decreasing spatial dose rate through work improvement whilst spatial dose rate is the cause of increasing personal exposure dose which occurs in the process of handling radioisotope. Methods: From February 2013 until July 2013, divided into "before" and "after" the improvement, spatial dose rate in laboratory of nuclear medicine was measured in gamma image room, PET/CT-1 image room, and PET/CT-2 image room as its locations. The measurement time was 08:00, 12:00 and 17:00, and SPSS 21.0 USA was opted for its statistical analysis. Result: The spatial dose rate at distribution worktable, injection table, the entrance to the distribution room, and radioisotope storage box, which had showed high spatial dose rate, decreased by more than 43.7% a monthly average. The distribution worktable, that had showed the highest spatial dose rate in PET/CT-1 image room, dropped the rate to 42.3% as of July. The injection table and distribution worktable in the PET/CT-2 image room also showed the decline of spatial dose rate to 89% and 64.4%, respectively. Conclusion: By improving distribution process and introducing proper radiation shielding material, we were able to drop the spatial dose rate substantially at distribution worktable, injection table, and nuclide storage box. However, taking into account of steadily increasing amount of radioisotope used, strengthening radiation related regulations, and safe utilization of radioisotope, the process of system improvement needs to be maintained through continuous monitoring.

  • Advanced Television Systems Committee (ATSC) -A/90, which is a standard for terrestrial data transmission in Korea, defines synchronized data that has a strong timing association with a separate Program Element. It is classified as synchronized streaming data that is carried in packetized elementary stream (PES) packets or a synchronized non-streaming data that shall be carried in digital storage media command and control (DSM-CC) section. In this paper, we study the design and verification of synchronized streaming data processing algorithm based on ATSC -A/90. We designed a parser and a player for the algorithm development. The received PES packet including synchronized streaming data is parsed in the parser. The parsed synchronized streaming data is synchronized and displayed by player. Finally, we ascertained that STB was working properly with MPEG-2 transport stream (TS) containing synchronized streaming data, as the proposed algorithm is implemented on a set-top box.

  • In existing public parcel locker, if there is not an empty storage box, it is not used. In existing private parcel locker, because it is a lock-based locker, there is strong weak point in security. To prevent these drawbacks, the proposed private parcel locker has a menu-driven remote control application which is operated on smartphone. The lock release and the security number change by the security number which is stored in the Electrically erasable read-only memory, are possible. As a result, the proposed method has better advantages than the existing methods in terms of unnecessariness of empty storage box check and security by the security number accumulation function and the automatic SMS transmission representing parcel locker operation result.

Flexible Crypto System for IoT and Cloud Service (IoT와 클라우드 서비스를 위한 유연한 암호화 시스템)

  • As various IoT devices appear recently, Cloud Services such as DropBox, Amazon S3, Microsoft Azure Storage, etc are widely use for data sharing across the devices. Although, cryptographic algorithms like AES is prevalently used for data security, there is no mechanisms to allow selectively and flexibly use wider spectrum of lightweight cryptographic algorithms such as LEA, SEED, ARIA. With this, IoT devices with lower computation power and limited battery life will suffer from overly expensive workload and cryptographic operations are slower than what is enough. In this paper, we designed and implemented a CloudGate that allows client programs of those cloud services to flexibly select a cryptographic algorithms depending on the required security level. By selectively using LEA lightweight algorithms, we could achieve the cryptographic operations could be maximum 1.8 faster and more efficient than using AES.

Influence of Vacuum Cooling on Browning, PPO activity and Free Amino Acid of Shiitake Mushroom (진공 예냉처리가 포장 저장중 표고버섯의 품질에 미치는 영향)

  • The influence of vacuum cooling and modified atmospheric packaging was investigated about browning degree, polyphenoloxidase(PPO) activity and free amino acid of shiitake mushroom. During storage, surface browning was inhibited by precooling. PPO activities of shiitake mushroom was increased during storage. Especially, PPO activity was rapidly increased as surface browning was proceeded. And PVC-wrapped mushroom was lower than carton box-packed mushroom in the changes of surface browning and PPO activity. Total free amino acid contents of shiitake mushroom was 2,510 mg% at harvest, but free amino acid content of shiitake mushroom decreased consistantly during storage. Precooled mushroom had more free amino acid content than non-precooled and their contents were fluctuated by storage temperature, packaging methods and storage periods.

Monitoring of Respiration and Soluble Carbohydrate Changes in Mushrooms Following ${\gamma}$-Irradiation (전리에너지가 버섯의 호흡과 당에 미치는 영향)

  • Respiration and soluble carbohydrates of stored mushrooms (Agaricus bisporus) were determined to be associated with physiological and biochemical changes induced by ionizing radiation treatment which was applied for extending the shelf-life. Immediately after gamma irradiation at 1 to 3 kGy, the respiratory rate of mushrooms increased linearly with increasing doses of irradiation, and then it normarized after 2 days of storage at $9{\pm}1^{\circ}C$ and $80{\pm}7%$ RH. In the nonirradiated mushrooms, the respiratory peak was observed at around 5 to 6 days after storage, while irradiation treatment not only reduced respiratory activities of stored mushrooms, but prolonged the peak development. Moisture content and dry matter of mushrooms packaged in a paper box and polyethylene film were relatively constant during the storage for 20 days and the reducing sugar contents decreased significantly after 5 days of storage(p<0.01). Free sugars of mushroom pilei, which consisted of mannitol, trehalose and glucose, also markedly decreased at the earlier part of the storage period and thereafter, 2 kGy irradiation resulted in the reduction of their changes.
