Effect of Bean Water Concentration and Incubation Time of Yukwa Paste and Packaging Method on the Quality of Yukwa (유과 반죽의 콩물 농도 및 Incubation time과 포장방법이 유과의 저장 중 품질 특성에 미치는 영향)

  • Effect of bean water concentration and incubation time of Yukwa paste as well as packaging method on the quality of Yukwa was investigated. Quality loss in Yukwa during storage was dependent on the packaging method such as bamboo packaging at $30^{\circ}C$, nitrogen packaging at $30^{\circ}C$ and LDPE packaging at $-18^{\circ}C$. Peroxide value increased with bean water concentration, but showed no significant difference by incubation time. The hardness of Yukwa decreased with the increase of bean water concentration, incubation time, and storage time but showed no significant difference by packaging method. Sensory evaluation after storage for 3 months showed that Yukwa color was significantly influenced by packaging method and bean water concentration. The volume was also significantly influenced by bean water concentration and incubation time. Off-flavor showed significant difference by storage method. Tenderness, taste and overall desirability showed significant difference by bean water concentration. Crispness showed significant difference by storage method and bean water concentration.

Sensory and Textural Characteristics of Julpyun ( Korean traditioned rice cake ) as Influenced by Soaking Time of Rice (쌀의 수침시간에 따른 절편의 특성)

  • This investigation was undertaken for me purpose of studying me sensory and textural properties of Julpyun (Korean traditional rice cake) made by various soaking time (1, 4, 6, 8, and 12 hours) of rice during storage at room temperature. The storage periods were 2, 4, 6, and 10 hours. Sensory evaluation was done by a panel of 12 judges majoring in food and nutrition. The luation was repeated 3 times. Objective evaluation was done by rheometer and color difference meter. As a result of me sensory evaluation for Julpyun made by various soaking time and storage periods, mere were significant differences (p<0.001) in most of characteristics between soaking time and storage periods. Julpyun made by soaking time for 12 hours showed the most favorite tendency during storage periods. The result of textural properties measured by rheometer showed similar trend to those of sensory evaluation. By me color difference meter, L (lightness) value were increased by increasing the soaking time. There were significant differences (p<0.001) between me samples.

  • A one-shot system (device) refers to a system that is stored for a long period of time and is then disposed of after a single mission because it is accompanied by a chemical reaction or physical destruction when it operates, such as shells, munitions in a defense weapon system and automobile airbags. Because these systems are primarily related with safety and life, it is required to maintain a high level of storage reliability. Storage reliability is the probability that the system will operate at a particular point in time after storage. Since the stored one-shot system can be confirmed only through inspection, periodic inspection and maintenance should be performed to maintain a high level of storage reliability. Since the one-shot system is characterized by a large loss in the event of a failure, it is necessary to determine an appropriate inspection period to maintain the storage reliability above the reliability goal. In this study, we propose an optimal inspection policy that minimizes the total cost while exceeding the reliability goal that the storage reliability is set in advance for the one-shot system in which periodic inspections are performed. We assume that the failure time is the Weibull distribution. And the cost model is presented considering the existing storage reliability model by Martinez and Kim et al. The cost components to be included in the cost model are the cost of inspection $c_1$, the cost of loss per unit time between failure and detection $c_2$, the cost of minimum repair of the detected breakdown of units $c_3$, and the overhaul cost $c_4$ of $R_s{\leq}R_g$. And in this paper, we will determine the optimal inspection policy to find the inspection period and number of tests that minimize the expected cost per unit time from the finite lifetime to the overhaul. Compare them through numerical examples.

Differences in Ethylene and Fruit Quality Attributes during Storage in New Apple Cultivars

  • Physiological characteristics of five new apple cultivars from the Korean apple breeding program were evaluated as a function of harvest time and storage after harvest. Internal ethylene concentration (IEC), flesh firmness, soluble solids concentration (SSC), and titratable acidity (TA) were measured in 'Summer Dream', 'Summer King', 'Green Ball', 'Picnic', and 'Hwangok' apples at harvest, during shelf life at $20^{\circ}C$, and one day after cold storage at $0.5^{\circ}C$ in air. IEC increased during shelf life in 'Summer Dream', 'Summer King', and 'Green Ball' but not in 'Picnic' or 'Hwangok', regardless of harvest time. Flesh firmness decreased towards harvest time and decreased gradually with time in cold storage only in the former three cultivars. In turn, IEC increased during cold storage in the first three cultivars but not for the last two cultivars, irrespective of harvest time. Changes in SSC and TA did not consistently relate to harvest time or storage period but TA tended to decrease as IEC increased. Furthermore, IEC was negatively correlated with flesh firmness except in the 'Green Ball' cultivar but the significance level was much greater in 'Summer Dream' and 'Summer King' (p < 0.0001) than in 'Picnic' (p < 0.01) or 'Hwangok' (p < 0.05) cultivars. Flesh firmness was positively correlated with TA in the first three cultivars but not in the last two cultivars. Overall, the results indicate that cultivars for which IEC increased after harvest had reduced flesh firmness and TA after storage.

Manufacturing Demi-glace Sauce Added with Different kinds of Thickening Agents and Quality Characteristics (전분을 달리한 농후제의 이용에 따른 Demi-glace sauce 제조 및 품질 특성)

  • This research was studied to find out the best ingredients for making demi-glace sauce, using the thickening agent with glutinous rice, non-glutinous rice, brown rice, and black rice, and to look into the quality characteristics. The moisture of demi-glace sauce depending on the thickening type was that the roux added cereals was higher than the control. In addition, it was increased depending on the extension of the storage time. The control was the highest on pH and acidity. On variation depending on the storage time, all of the experimental groups showed decrease on pH. Demi-glace sauce with brown rice and black rice roux showed increase of acidity. The DPPH radical was not tended to be decreased in the experimental group, but it was rapidly decreased in the control, depending on the extension of the storage time. Demi-glace sauce with non-glutinous rice was the highest on Hunter's color L value and generally increased according to the storage time. Also demi-glace sauce with glutinous rice was the highest on 'a' value and 'b' value but was decreased according to the storage time. The control was highest on viscosity, and demi-glace sauce with non-glutious and black rice roux were low on the variation of viscosity depending on the storage time. Increment of total bacteria in demi-glace sauce with black and brown rice roux was relatively lower than the control on storage stability test, and demi-glace sauce with brown rice roux got the highest point after swallow, taste and overall of sensory evaluation.

Changes in the Quality Characteristics of Semi-dried Small Squid Idiosepius paradoxus during Refrigerated Storage (반 건조 새끼 오징어(Idiosepius paradoxus)의 냉장저장 중 품질특성의 변화)

  • This study evaluated the quality characteristics of semi-dried small squid Idiosepius paradoxus treated with grapefruit Citrus paradisi seed extract (GSE) during refrigerated storage for 6 months. The moisture content and water activity decreased significantly in both control and GSE-treated groups with increasing storage time, but there was no significant difference between groups. During storage, the degree of water activity reduction was lower in the GSE-treated group than in the control. The pH change was similar in both groups during storage. The thiobarbituric acid reactive substances (TBARS) value of the GSE-treated group was lower than that of the control until 4 months of storage, and was subsequently higher than in the control group. The Hunter color L value did not differ significantly during storage between groups, whereas the a and b values decreased significantly (P<0.05) in both groups with increasing storage time. The hardness value of the semi-dried small squid increased with storage time, but there was no statistical difference between GSE treatment and control. There were more viable cells in the control group than the GSE-treated group after 5 months of storage. According to the sensory evaluation, neither the taste, color, odor, nor texture differed statistically during storage between groups, while overall acceptability was significantly lower in the GSE-treated group than the control after 6 months of storage.

Effects of Storage Temperature and Time on Hatchability of Ross Broiler Breeder Eggs (로스 육계 종란의 보관온도와 기간이 부화율에 미치는 영향)

  • This experiment was carried out to investigate the effects of storage temperature and time on hatch-ability of the commercial Ross broiler breeder eggs. In Trial 1,720 eggs collected in the morning were allotted to four storage time treatments (3, 5, 7 and 9 days), with three replicates per treatment. The storage temperature was fixed at $4^{\circ}C$. In Trials 2 and 3, similar protocol was used as in Trial 1 except that the storage temperature was fixed at $17^{\circ}C$ and $28^{\circ}C$respectively. In Trial 1, hatchability was significantly (P<0.05) reduced when the eggs were stored more than 3 days. In Trial 2, no significant difference was found among all treatments, indicating that, at 17$^{\circ}C$ storage temperature, the eggs could be stored up to 9 days without reducing hatchability. In Trial 3, however, hatchability of eggs stored for 9 days was significantly reduced compared to the other treatments. In conclusion, we found out that optimum hatchability can be achieved with a storage temperature of $17^{\circ}C$ for Ross broiler eggs stored for up to 9 days.

Effects of Various Packaging Systems on the Quality Characteristic of Goat Meat

  • 40 goat kid ribcages were held for 7 days in storage conditions ($4^{\circ}C$) and used to determine the effects of three different packaging methods (atmospheric air, vacuum and modified atmosphere package (MAP) 10:70:20 mixture of $N_2:O_2:CO_2$) on meat quality of the chops. L* was affected by the packaging method being lighter than MAP chops. The coordinate a* significantly increased during storage time. For MAP-packed chops and those kept in atmospheric air, b* increased markedly during storage time whereas it remained unaffected throughout storage when in vacuum packages. Final pH values ranged from 5.6 to 5.8 and no effects were found for either storage time or packaging method. WHC means were lowest for the three packaging methods on day 7 of storage and highest on day 1. Storage time increased water loss in vacuum treatments. Trained panel colour acceptability was lower at 3, 5 and 7 days than on day 1 of storage for atmospheric air treatment and vacuum packaging, while for the MAP treatment average values on days 5 and 7 were lower than those observed on days 1 or 3. Trained panel odour was lower for atmospheric air and vacuum packages at 3, 5, and 7 days storage than at 1 day, while no differences were found in trained panel odour acceptability for MAP packages. With reference to consumers, the MAP proposed in the present study is the chosen method for storing goat meat, rather than vacuum or atmospheric air packaging.

An Efficient Correction Storage Scheme for Unsteady Flows

  • An efficient correction storage scheme on a structured grid is applied to a sequence of approximate Jacobian systems arising at each time step from a linearization of the discrete nonlenear system of equations, obtained by the implicit time discretization of the conservation laws for unsteady fluid flows. The contribution of freezing the Jacobian matrix to computing costs is investigated within the correction storage scheme. The performance of the procedure is exhibited by measuring CPU time required to obtain a fully developed laminar vortex shedding flow past a circular cylinder, and is compared with that of a collective iterative method on a single grid. In addition, some computed results of the flow are presented in terms of some functionals along with measured data. The computational test shows that the computing costs may be saved in favor of the correction storage scheme with the frozen Jacobian matrix, to a great extent.

Changes in Quality Characteristics of Peeled Chestnuts with Storage Temperature (박피 밤의 저장온도에 따른 품질 특성 변화)

  • Peeled chestnuts were stored at different temperatures($-10^{\circ}C$ and $-20^{\circ}C$) and for different times(0, 10, and 20 min at $90^{\circ}C$) for blanching over a 6 month period. Analyses were conducted for moisture content, total sugar content, browning index, polyphenol compounds, PPO activity, and SEM. Moisture content and PPO activity were increased by storage time. The increments for the samples stored at $-20^{\circ}C$ were lower that for the samples stored at $-10^{\circ}C$. The Browning index was increased by storage time, and increments for the samples stored at $-20^{\circ}C$ were lower that for the samples stored at $-10^{\circ}C$. Scanning electronic microscopy(SEM) studies were performed on peeled chestnuts. Results showed that the wrinkle structure of the cell wall was enhanced by storage time, and the level of enhancement was higher at $-10^{\circ}C$ than at $-20^{\circ}C$.
