우수저류조의 형상과 도류벽 및 자갈채움에 따른 SS 제거효율 (SS Removal-rate Efficiency of Storm-water Detention Storage Tank Depending upon Length, Inside Training Wall and Gravel Filling)

  • An experimental study is performed on reducing the pollutants supplied by storm water through enhancing efficiency of SS from the detention storage tank where CSOs are kept temporarily before discharge to the receiving water system. SS removal efficiency is investigated in accordance with various conditions of the detention pond-such as its length, the existence of training wall, and the use of gravel filling. The removal efficiency is strongly affected by the detention pond's length until the critical falling distance of the suspended solids is reached. For cases where the tank has a length longer than this critical condition, the removal rate shows less sensitivity. To enhance the SS removal efficiency of tanks of shorter than the critical length, we studied alternative types of tank in which inside training walls are installed. The results showed improvement of 14 to 37% in removal efficiency in 2hours detention(2 training walls). The important factor in achieving a high SS removal rate is ensuring the critical length of the detention pond, but for the cases where the basin length cannot be guaranteed, baffles or a gravel filling scheme may be introduced to attain considerable efficiency. The results of studying and comparing different storage tank conditions show that, in terms of elimination efficiency, a storage tank with gravel filling and training walls > a storage tank with gravel filling > a storage tank with training walls > an empty tank. The experimental results should contribute to development of related further research, by empirically verifying the already assumed importance of critical falling distance, training walls, and gravel filling schemes.

저장조건, 쌀, 조리기구와 유지 종류가 밥의 저항전분 함량 변화에 미치는 영향 (Effect of Storage Conditions, Rice, Cooker and Oil Types on the Changes of Resistant Starch Contents of Cooked Rice)

  • The changes of resistant starch (RS) contents of cooked rice with soybean and coconut oils under different storage conditions were investigated and RS contents were compared between the rice and cooker types. The japonica (Hopyeong) and the indica (Thailand) type rice were cooked (washed rice: water = 100: 130) using an electric cooker and a saucepan. The coconut oil and soybean oil (3%, based on rice, w/w) were added into cooking water before heating. The RS contents of freeze-dried cooked rice powders (newly-cooked rice, stored for 12 h in the refrigerator, microwave heating after storage for 12 h in the refrigerator) were measured by the AOAC method. The RS contents of cooked rice using a saucepan were higher than those using an electric cooker. The indica type cooked rice had a higher RS content than the japonica type cooked rice, regardless of storage conditions. However, addition of oil before cooking rice resulted in increased RS content on storage in the refrigerator. The highest RS content of the cooked indica type rice with soybean oil ($5.89{\pm}0.22%$) that was stored for 12 h in the refrigerator was analyzed. The results suggested that the cooked rice formed retrograded (RS3) and amylose-lipid complex (RS5) type RS; furthermore, the RS content is affected by storage conditions, rice, cooker and oil types.

저온피해 단감의 대형포장 저장에 따른 품질 변화 (The Quality Change and Storage Life of 'Fuyu' Persimmon Chill-injured in Tree)

  • 단감을 저온피해 정도에 따라 저온저장하여 품질변화를 조사하였다. 중량감모율은 모든 처리구간에 큰 차이는 없었지만, 저온피해 정도와 저장기간이 길어질수록 모든 처리구에서 중량감소를 보였다. 경도의 경우는 단감의 품질을 좌우하는 중요한 요소로 저온피해가 길어질수록 경도가 낮아지면서 연화가 빨리 진행되었다. 정상과는 25.5 N에서 큰 변화는 없었다. 반면에 저온피해 1일과는 26.7 N에서 점점 낮아져 18.2 N까지 낮아졌으며, 저온피해 3일과는 16.1 N에서 12.22 N으로, 저온피해 5일과는 10.8 N에서 5.8 N까지 낮아졌다. 가용성 고형물 함량과 총산함량은 처리구간에 유의적인 차이는 없었다. 에틸렌은 정상과보다 2배의 에틸렌을 생성하였다. 저온피해가 심해질수록 에틸렌의 발생량은 증가하였고, 경도변화와도 관련됨을 알 수 있었다.

Effects of Different Feeding Regimes on Deer Meat (Venison) Quality Following Chilled Storage Condition

  • This study was conducted to investigate the effect of different feeding regimes on the quality of deer meat (venison) following storage at $4^{\circ}C$ for various durations. Twelve 5-year-old elk stags about 350 kg were stratified by weight and randomly assigned to one of four dietary treatments (three elk stags per treatment). The dietary treatments consisted of a feeding concentrate of 1.5% of body weight (T1), feeding concentrate of 1.8% of body weight (T2), feeding concentrate ad libitum (T3), or a home-mixed ration ad libitum (T4). The pH values of deer meat were not significantly different among treatment groups but were affected by duration of storage. Cooking loss increased under T4 treatment with increasing storage time at $4^{\circ}C$ (p<0.05). Increased storage time also resulted in significant decreases in shear force under T2 and T3 treatment compared to that under other dietary treatments (p<0.05). Lightness ($L^*$), redness ($a^*$), and yellowness ($b^*$) parameters were not significantly different among treatment groups, but lower values of $a^*$ and $b^*$ were observed under T1 and T4 treatment with increasing durations of storage (p<0.05). The chemical and fatty acid composition had no significantly different among treatments. Therefore, meat quality was most affected by increased storage time at $4^{\circ}C$. These results may serve as the basis for further study of deer meat (venison) from Korea.

가정배달급식의 포장방법 및 저장조건이 식중독균의 생존에 미치는 영향 (Influence of Packaging Methods and Storage Conditions on Recovery of Inoculated Foodborne Pathogens in Home-Delivered Meals)

  • 가정배달급식의 저장기간 중 식중독 발생에 대비하여 식중독균의 증식 양상을 사전에 예측하기 위한 기본자료를 얻고자 표고고기전, 갈치조림, 더덕구이에 주요 식중독 원인균을 접종하여 wrap 포장, 상압 및 진공포장 처리한 후, -18, 4, $25^{\circ}C$에서 5일간 포장방법 및 저장조건에 따른 변화를 살펴보았다. 가정배달급식을 위한 음식에 주요 식중독균을 접종한 결과, 식중독균의 성장 및 증식은 적용된 음식을 진공포장 처리하여 냉장 및 냉동저장시에 억제되는 것으로 입증되었고, 접종된 주요 식중독균의 포장방법 및 저장조건에 따른 성장 및 증식은 저장온도에 유의적인 영향을 받는 것으로 나타났으며, 특히, L. monocytogenes는 저장기간에 대해서도 유의적인 영향을 받는 것으로 나타났다. 따라서 표고고기전과 갈치조림의 냉장저장 시에는 L. monocytogenes가 저장 5일에 증가하므로 음식품질을 유지하고 식중독균 발생을 방지하기 위해서는 3일까지 저장하는 것이 바람직한 것으로 판단되었다.

CA 저장한 사과의 상온방치시 경도변화 (Changes in Firmness of Apples during Exposure to Room Temperature after CA storage)

  • 홍옥과 후지를 $3%O_2-2%CO_2$$4%O_2-3%CO_2$의 CA 저장조건에서 각각 8개월간 저장한 후 $20^{\circ}C$ 상대습도 70%의 외기에 방치시키면서 사과의 경도에 관련된 몇가지 변화를 저온 저장고에서 동기간 저장한 후 방치시킨 사과와 비교하였다. 저장후 $20^{\circ}C$에 방치한 사과의 총펙틴 함량과 경도는 방치기간이 경과함에 따라 수용성 펙틴의 함량과 polygalacturonase의 활성 증가에 반하여 감소하였다. 이러한 변화는 저온 저장한 사과가 CA 저장한 사과보다 심하였고 홍옥이 후지보다 현저하였는데 특히 방치 초기 5일동안에 더욱 심하였다. 한편 저온저장고에 저장한 홍옥 및 후지는 $20^{\circ}C$에서 5일정도 상품적 가치를 지니나 CA 저장한 홍옥은 이보다 5일, 후지는 10일 정도 더 상품성이 연장되는 것으로 관능검사 결과 나타났다.

피조개의 이용에 관한 연구 1. 피조개 분말수우프의 제조 및 저장중의 품질안정성 (Studies on the Utilization of Arkshell 1. Preparation and Quality Stability during Storage of Powdered Dried Arkshell for Instant Soup)

  • For the Effective utilization of the fish resources in coastal regions, investigations on preparation of powdered dried arkshell instant soup., quality stability of the products during storage and utilization as a food material were carried out with arkshell, Anadara broughtonii. Three kinds of powdered instant soup were prespared as 0% table salt(A), 5% table salt (B), 15% table salt(C) and packed with vacuum in laminated film bag. (polyester/nylon: 85${mu}ell$/15${mu}ell$, 18$\times$27cm) Their processing conditions and quality stability during storage at room temperature for 90 days were examined. Powdered instant soup was made by washing raw arkshell to remove visceral, clay, sand and blood, hot air drying(60$\pm$1$^{\circ}C$, 20 hrs) after draining and pulverizing dried arkshell to 35 mesh. Powdered instant soup was made by adding 2% sugar 0% table salt (5% and 15% table salt), 10.5% monosodium glutamate, 0.3% black pepper and 0.3% garlic powder to the pulverized dried arkshell. The condition of moisture and water activity of the products were 5.9-6.9% and 0.42-0.43, respectively. The moisture content s , water activity and pH of the products were showed little change and volatile basic nitrogen of them increased slightly during storage. Thiobarbituric acid value increased up to 60 days of storage and then decreased slightly. In solubility, powdered instant soup were showed no remarkable difference comparing with goods on the market. The color value of th products were showed little change during storage, In sensory evaluation, product B were scored slightly higher, in most cased, in flaver, color. taste and overall acceptability comparing with product A or product C during storage. Judiging form the sensory evaluation, powdered instant soup of 5% table salt (B) were the most desirable, and the quality of the products was stable for 90 days at 20$\pm$3$^{\circ}C$.

장기저장 미곡의 성분변화 특성 (Studies on the Change of Components with Long-Term Storage of paddy)

  • In order to investigate the changes of rice qualities during 4 years storage of paddy stored in ware-house of normal temperature condition. Temperature in warehouse was changed more than 3$0^{\circ}C$ under the influence of average temperature outside of a warehouse. Water content of paddy was not increased over 15% But as average temperature in warehouse was gone up 18$^{\circ}C$ from June to September every years it was supposed that these periods were to be deterioration of rice quality. On investigation of change in paddy it was supposed that these periods were to be deterioration of rice quality. On investigation of change in paddy components during the long term storage, reducing, sugar, amylose, crude protein were increased 0.24%, 19.23%, 7.02% at enterance time to 0.5%, 20.31% 7.46% 4 years later respectively. Max viscosity final visocity and set back value by amylograph were increased 449B,U 610B.U, 161B.U to 493B.U, 715B,U 222B.U but breakdown was decreased 125B.U to 76B.U with the increase of storage period. Gel consistency of rice stored was decreased 44.7mm at enterance time to 39,9mm 4years later. Fatty acid was increased remarkably 4.5KOHmg/100g to 24.4KOHmg/100g. Germination ratio and germ activity of paddy during long-term storage were decreased 97%, 100% to 0%, 0.4% respectively, With the increase of storage period contaminated paddy by molds increased and its by bacteria decreas-ed.

  • A thermal storage systems was designed to correspond to the temporal or quantitative variation in the thermal energy demand, and most of its heat is stored using the latent and sensible heat of the heat storage material. The heat storage method using latent heat has a very complex phenomenon for heat transfer and thermal behavior because it is accompanied by a phase change in the course of heating/cooling of the heat storage material. Therefore, many studies have been conducted to produce an experimentally accessible as well as numerical approach to confirm the heat transfer and thermal behavior of phase change materials. The purpose of this study was to investigate the problems encountered during the actual heat transfer from an internal storage tank through simulation of the process of storing and utilizing thermal energy from the thermal storage tank containing charged PCM. This study used analysis methods to investigate the heat transfer characteristics of the PCM with simultaneous heating/cooling conditions in the rectangular space simulating the thermal storage tank. A numerical analysis was carried out in a state considering natural convection using the ANSYS FLUENT(R) program. The result indicates that the slope of the liquid-solid interface in the analysis field changed according to the temperature difference between the heating surface and cooling surface.

Polyethylene film포장(包裝)에 의(依)한 단감의 CA저장(貯藏)에 관(關)한 연구(硏究) (Studies on the CA Storage of Sweet Persimmon in Polyethylene Film Pack)

  • polyethylene필립포장(包裝)에 의(依)한 단감의 장기냉장법(長期冷藏法) 개발(開發)을 위하여 1973년도(年度)에는 30상자(箱子)의 단감을 공시(共試)하여 기초연구시험(基礎硏究試驗)을 실시(實施)하고 하여 1974년도(年度)에는 진영(進永)단감협동조합(協同組合)의 50평(平)짜리 냉장고(冷藏庫)에 2,500상자(箱子)의 경제규모(經濟規模)의 실용화(實用化) 시험(試驗)을 실시(實施)하여 저장기간별(貯藏期間別)로 품질변화(品質變化) 상태(狀態)를 조사(調査)하는 동시(同時) 단계적(段階的)으로 저장(貯藏)단감을 출하(出荷)하여 시판(市販)하므로서 소비자(消費者)의 반응(反應)과 단감저장(貯藏)의 기업성(企業性)을 검토(檢討)하여 다음과 같은 결론(結論)을 얻었다. (1) 김해진영산(金海進永産) 단감 부유(富有)는 $2^{\circ}C{\pm}1^{\circ}C$에서 냉장(冷臧)하면 1개월간(個月間)을 저장(貯藏)이 가능(可能)하였고 PE필림으로 밀봉포장(密封包裝)했을때는 저장기간(貯藏期間)을 크게 연장(延長)할 수 있었으며 이때 포장(包裝) PE필림의 두께가 0.08mm와 0.1mm일때는 다음해 2월말일(月末日)까지 약(約) 4개월간(個月間)을 안전(安全)하게 저장(貯藏)할 수 있었다. (2) PE필림 밀봉포장(密封包裝)으로 단감의 저장중(貯藏中) 증산(蒸散)에 의(依)한 중량감소(重量減少)를 크게 억제(抑制)할 수 있었으며 필림두께가 0.04mm이상(以上)일때 그 효과(效果)가 뚜렷하게 나타났다. (3) 과실(果實)을 필림대(袋)속에 $3{\sim}5$개씩 넣어 소포장(小包裝)는 것이 한상자분(箱子分)(15kg)을 큰 필림포대(包袋)에 넣어 밀봉포장(密封包裝)한 것에 비(比)하여 저장성(貯藏性)이 다소(多少)좋았다. (4) 필림포장내(包裝內)의 $CO_2$축적량(畜積量)은 필림의 두께가 두꺼울수록 증가(增加)하나 저장(貯藏) 1개월후(個月後)부터는 극(極)히 완만(緩慢)한 증가(增加)를 보였으며 0.06mm와 0.08mm포장구(包裝區)에서는 대체(大體)로 $5{\sim}6%$선(線)을 유지(維持)하였다. (5) 단감은 저장중(貯藏中) 전당(全糖), 총산(總酸) 및 Vitamin C는 다같이 감소(減少)하였으며 그중(中) 특(特)히 무포장구(無包裝區)의 과실(果實)에서 현저(顯著)하였다. (6) PE필림 밀봉포장(密封包裝) 냉장(冷藏)단감은 출고후(出庫後) 필림포장(包裝)한 그대로 유통(流通)시키는 것이 포장(包裝)을 제거(除去)한 것보다 품위유지(品位維持)에 유리(有利)하였으며 외기상온(外氣常溫)에서 10일간(日間)은 무난(無難)하게 상품적(商品的) 가치(價値)를 보지(保持)할 수 있었다. (7) 단감의 필림포장냉장(包裝冷藏)은 시장성(市場性)이 좋고 경제적규모(經濟的規模)로 냉장(冷藏)했을때 제반경비(諸般經費)를 공제(控除)하고도 기업성(企業性)이 인정(認定)되었다.
