The cultivation in sawdust media, mushroom productivity, and fruiting body characteristics of Lentinula edodes strains NIFoS 2778 and NIFoS 3363 were compared according to the inoculation conditions. The cultivation period was 5% shorter when liquid spawn was used. Fruiting bodies were induced after 113 days of incubation on media inoculated with liquid spawn, and the cultivation period was 119 days on media inoculated with solid spawn. Mushroom productivity of NIFoS 2778 was the highest (661.4 g) when 36 mL of liquid spawn was used. For NIFoS 3363, mushroom production was higher under liquid inoculation conditions when the same amount of liquid and solid spawns were used. The mushroom characteristics of the two strains were not significantly different, except for gill width and stipe diameter.
We investigated the morphological traits, hardness and color of fruting bodies on eight strains according to changes of the humidities in mushroom house in Flammulina velutipes. The morphological traits like length and thickness of stipe, diameter and thickness of pilei didn't show any relations to humidity. Variation of these traits were rather showed by strains. ASI 4065 and ASI 4031 produced the longest stipes and ASI 4103 did the shortest ones. Fruiting body of ASI 4103 showed the most thickness of stipe, diameter and thickness of pilei. The pilei of ASI 4065, ASI 4021 and the stipe of ASI 4153 was the thinest. Brightness (L) values of white strains were increased at the low humidity except ASI 4021. But chroma (a, b) value showed little variation according to the humidity. L value of brown strains usually increased at the low humidity and a chroma (a, b) value showed little variation according to the humidity. But the chroma (a) value of pilei increased and the chroma (b) value of pilei decreased at the hight humidity. Most strains were brighter at pilei than at stipes. Hardness were not any relations to the humidity. In general, hardness of stipes were higher than that of pilei and their degrees were different according to strains. Hardness of ASI 4021 was the highest and ASI 4166 was the lowest. White strains were higher than brown strains at the hardness. As a result, hardness was rather affected by strains than by humidity.
This study was carried out to improve standardization of agricultural products and investigate quality changes during preservation at various treatments. The standardization does much to improve merchantable quality, distribution efficiency and fair dealings by shipping of the standard agricultural products. Mushrooms notified as the standard are five; Pleurotus ostreatus, Pleurotus eryngii, Flammulina velutipes, Agaricus bisporus and Ganoderma lucidum. But many farmers are suffering from strict standards. Therefore, modification of these standards is required to fit farmhouse situations. Fruit-body weight of A, B and C grades of the marketed Agaricus bisporus was 19.3g, 12.2g and 10.4, respectively. Average pileus diameter of A grades was 43.3mm but B and C grades did not show significant difference. Average stipe length of A, B and C grades was 9.8mm, 13.1mm and 11.6mm, and stipes thick was the highest in A grades. The weight loss rate of stipe cutting of Agaricus bisporus was 12.6% in harvested mushrooms and the rate of stipe cutting length was 60.8%. The diameter of Agaricus bisporus stored for 5 days was 3.5~4.5cm but decreased rapidly in 15 days. The weight loss rate of the high temperature samples lowered rapidly than that of the low temperature samples. Conversely, the L value of the low temperature samples was higher than that of the high temperature samples.

These studies were carried out to develop an artificial cultivation method. The diameter and thickness of pileus ranged $1.5{\sim}7.0\;cm$ and $0.8{\sim}3.0\;cm$, respectively. The diameters of stipe were $1.2{\sim}2.5\;cm$ and the lengthes were $4.5{\sim}9.0\;cm$. The spore fingerprint was white. The sizes were spore $10.8{\sim}12.2{\times}4.35{\sim}5.65\;{\mu}m$, basidia $50.0{\sim}59.2{\times}7.4{\sim}7.8\;{\mu}m$, nalsistidia $21.75{\sim}28.7{\times}4.8{\sim}6.1\;{\mu}m$, pileus hymenium cell $50.6{\sim}66.0{\times}4.4{\sim}6.7\;{\mu}m$, and stipe hymenium cell $28.6{\sim}33.0{\times}5.5{\sim}6.6\;{\mu}m$. The thirty percent mixture of rice and wheat bran into sawdust gives the high density of mycelia and the good development of fruiting structure. The optimum water contents of sawdust substrates were $60{\sim}65%$ in which condition the mycelium grows well and gives high density. In PP bottle cultivation, the first fruiting period was $6{\sim}8$ days earlier in nonscratching samples than scratching ones, but the quantity of fruiting body was higher in scratching samples than nonscratching ones. In the case of PP bag cultivation, the first fruiting was 10 days faster, and the quantity of fruiting bodies was 30% higher in samples with 30% wheat bran than those with rice bran. The fleshiness of stipe was $2{\sim}3$ times harder than that of pileus.
Oyster mushroom is a type of mushroom that is commonly cultivated and consumed in Korea. P. ostreatus 'Suhan' is a preferred cultivar for many mushroom farmers because it has a dark pileus and thick stipe. However, as it is very sensitive to environmental conditions, farmers consistently demand an alternative cultivar. To develop a new cultivar, the parental strains KMCC01680 ('Suhan') and KMCC00478 ('Gosol') were selected from various collected P. ostreatus strains by cultivating genetic resources. P. ostreatus 'Heuksol' was developed by the method of Mon-Mon crossing between monokaryotic strains derived from 'Suhan' and 'Gosol'. Thirty strains of 174 crossed strains were initially selected by cultivation experiments. After bulk cultivation tests, 'Heuksol' was selected. The nuclear DNA profile of 'Heuksol' was similar to those of the parental strains, 'Suhan' and 'Gosol', when RAPD (random amplified polymorphic DNA) primers and UPF (Universal PCR Fingerprinting) 2, 3, and 4 were used. The optimum temperature for mycelial growth was $30^{\circ}C$ for 'Heuksol', but medium-high temperatures were also appropriate, especially $13-20^{\circ}C$. The fruiting body production per bottle (1,100 mL) was approximately 140.8 g. When compared to the control strain 'Suhan', the thickness of the stipe of 'Heuksol' was greater than that of 'Suhan' (13.5 mm vs 9.4 mm). The pileus diameter of 'Heuksol' was similar to that of 'Suhan' and the pileus thickness of 'Heuksol' and 'Suhan' was 19.7 mm and 21.8 mm, respectively. 'Heuksol' had more a productive stipe number than 'Suhan' and the pileus of 'Heuksol' was dark gray, even at high temperatures. Therefore, it was suggested that this new cultivar, 'Heuksol', could provide an alternative to 'Suhan' and contribute to the profit of oyster mushroom farms.
In this study, we analyze the growth environment using smart farm technology in order to develop the optimal growth model for the precision cultivation of the bottle-grown oyster mushroom 'Suhan'. Experimental farmers used $88m^2$ of bed area, 2 rows and 5 columns of shelf shape, 5 hp refrigerator, 100T of sandwich panel for insulation, 2 ultrasonic humidifiers, 12 kW of heating, and 5,000 bottles for cultivation. Data on parameters such as temperature, humidity, carbon dioxide concentration, and illumination, which directly affect mushroom growth, were collected from the environmental sensor part installed at the oyster mushroom cultivator and analyzed. It was found that the initial temperature at the time of granulation was $22^{\circ}C$ after the scraping, and the mushroom was produced and maintained at about $25^{\circ}C$ until the bottle was flipped. On fruiting body formation, mushrooms were harvested while maintaining the temperature between $13^{\circ}C$ and $15^{\circ}C$. Humidity was approximately 100% throughout the growth stage. Carbon dioxide concentration gradually increased until 3 days after the beginning of cultivation, and then increased rapidly to approximately 2,600 ppm. From the 6th day, $CO_2$ concentration was gradually decreased through ventilation and maintained at 1,000 ppm during the harvest. Light was not provided at the initial stage of oyster mushroom cultivation. On the $3^{rd}$ and $4^{th}$ day, mushrooms were irradiated by 17 lux light. Subsequently, the light intensity was increased to 115-120 lux as the growth progressed. Fruiting body characteristics of 'Suhan' cultivated in a farmhouse were as follows: Pileus diameter was 30.9 mm and thickness was 4.5 mm; stipe thickness was 11.0 mm and length was 76.0 mm; stipe and pileus hardness was 0.8 g/mm and 2.8 g/mm, respectively; L values of the stipe and pileus were 79.9 and 52.3, respectively. The fruiting body yield was 160.2 g/850 ml, and the individual weight was 12.8 g/10 unit.

Ecklonia cava Kjellman, which has recently gained popularity due to the spread of farming techniques, is expected to be developed in various varieties in the future. There exist increased needs for research on the basis of natural populations and inter-regional morphological variations. We compared the morphology of the aquaculture and natural populations from 16 coastal areas in Korea. The 18 traits found suitable for distinguishing varieties were selected from 14 measurement traits and 4 ratios related to the main morphology and characteristics of primary blade, secondary blade, and stipe. In the cluster analysis, Janggil (E4) and Sorok (S7) showed significant differences from those of the same coastal region. Two groups, including Suyou (Q6, Q8, and Q10) which was the second year of farming, of the rest of the populations from East sea and southern coast were distinguished. Three populations of Jeju were divided into a regional group. In the principal component analysis (PCA), a large number of populations from East sea and Southern coast appeared in the center with aquaculture populations. PC1 and PC2 associated with traits of secondary blade index, stipe length and diameter, stipe length/primary blade length, primary blade length and width, secondary blade number, secondary blade length and width, divided E4, S7 and populations of Jeju region. As a result, the 18 characters of this study were found to be useful as criteria for discrimination of populations with significant differences in each coastal region, and these populations were expected to be candidates for new varieties.
In an attempt to establish the appropriate ventilation device for the bottle culture of king oyster mushroom (Pleurotus eryngii), we investigated carbon dioxide concentration and fruiting body formation according to the various ventilation systems within the mushroom house. In addition to, the efficiency of air circulation and growth rate as well as the appearance of physiologically abnormal phenotypes during their growth stage were also evaluated. four different ventilation devices, parallel-pressure type, positive-pressure type, negative-pressure type, and positive- and negative-pressure type were applied in this study. The positive-and negative-pressure type showed the highest efficiency of air circulation as $CO_2$ concentration was 800 ppm and the level of air current was relatively low compared to the other types (the $CO_2$ concentration of parallel-pressure type was 1,400 ppm). Moreover, the stipe length, the cap diameter, yield, and general quality grown in positive- and negative type ventilation device were also better than in the other three devices though it took slightly longer period for harvesting (18.4 days) than the others (17.6, 17.9 and 18.3 days). The appearance of physiologically abnormal phenotypes such as fruiting body lump, soft rot, and brown rot were significantly decreased in positive-and negative type compared to other types, while the appearance rates were not much different for other symptoms of bacterial ooze, stipe limb and stipe bumpy. In summary, we propose that the optimal ventilation system for the bottle culture of king oyster mushroom is positive- and negative type, and this device is expected to increase the total quality as well as yield all year around.
This study was conducted to investigate the optimum supplementation ratio when replacing cotton seed meal with rapeseed meal for cultivating oyster mushrooms. The chemical properties among the treatments were pH 4.5~4.7, total carbon content was 46.3~46.5%, total nitrogen content was 1.6~1.7%, and carbon-nitrogen ratio was 27.0~27.8. These did not differ significantly from the control. Mycelial growth was 85.1 mm (Heuktari), and 72.8 mm (Suhan-1Ho) in medium containing 5% rapeseed meal, with no significant difference in mycelial density between cultivars. Fruiting body characteristics are as follows: In 'Heuktari', the color of the pileus was darker than control with an L value of 32.5, and pileus thickness and diameter were 3.2 mm and 27.6 mm, respectively. Stipe length and diameter were 86.0 mm and 9.1 mm, respectively. Valid stipe number per bottle (1,100 cc) was 25.9, and a yield of 189.7 g/1,100 cc was recorded in mixed medium containing 5% rapeseed meal (higher than control). In mixed medium containing 10% rapeseed meal, the yield was 184.5 g/1,100 cc (comparable to control). In 'Suhan-1Ho', supplemented with 5% rapeseed meal, pileus color was darker than control color, with an L value of 28.8. Pileus thickness was 4.5 mm. Stipe diameter was 12.3 mm (higher than control), and yield was 145.5 g/1,100 cc (comparable to control).
A total number of 916 fruiting bodies of Ganoderma lucidum (Fr.) Karsten grown naturally in Korea were collected to investigate the morphological characters and some other useful characters related to the quality of the fungus and the results obtained are summarized as follows; The host tree showing the highest parasitic rate by the Genoderma lucidum(Fr.) Karsten was oak tree and the parasitic rate of the tree was 86.2%. The order of parasitic rate of the host trees by the fungus next to the oak was peach, chestnut, persimmon and acasia. The size, shape and color of fruiting bodies were varied according to the host trees. The average size of fruiting bodies collected was 40 to 100 mm by 30 to 80mm. The fruiting bodies with pileus size of 60 by 45 mm, pileus thickness of over 10mm, pileus minor axis/stipe length ratio of over 0.65 and pileus thickness/pileus minor axis ratio of over 0.22 were considered having higher commerical values. The external shape of the fruiting body was very important criterion to evaluate the quality of the Ganoderma lucidum (Fr.) Karsten. A great variation in characters such as pileus shape, color, marginal shape, zonation of pileus, pileus thickness, poroid layer of fruiting bodies and shape of stipe were observed from the fruiting bodies of G. lucidum collected in Korea. Further studies will be necessary for the genetic nature of these characters.
