재료배합과 제조방법에 따른 떡의 특성에 관한 문헌고찰 (A Literature Review about Characteristics of Korean Rice Cake by Ingredients and Preparation Methods)

  • A literature on Korean rice cakes by ingredients and preparation methods was reviewed with published literatures in Korea from 1950 to 1995. The result were as followed; 1. The 46 volumes about preparation of Korean rice cakes were reported. There were 32 steamed (Jeung-byung), 6 pounded (Do-byung), 4 fried (Yu-jeon-byung), and 4 boiled Korean rice cakes (Kyung-Dan). This result showed that steamed Korean rice cake was the most frequently studied among any other kinds of Korean rice cakes. 2. The reports on preparation of Korean rice cakes were rare during $1950's{\sim} 1960's$. In 1970's, there were few papers about basic study for Korean rice cakes. And it was reached 8 volumes of steamed, each 1 volume of fried or boiled Korean rice cakes. From 1990's, the more scientific researches were progressed vigorously so reached 11 volumes till 1995 but it was limited to Solgi and Jeungpyun etc. This result shows that the experiment for Korean rice cake was not various. 3. The preceded studies for Korean rice cake were investigated to see texture, sensory, quality characteristic and effect of substitutes added to original ingredients.

혼합물 실험계획법에 의한 쑥 첨가 찜 케이크의 최적화 (Optimization of Ingredient Mixing Ratio for Preparation of Steamed Cake with Mugwort (Pseudosasa japonica Makino) Powder)

  • This study examined the optimal ingredient mixing ratio for the preparation of steamed cake containing mugwort (Artemisia princeps var. orientalis) powder. After preliminary studies, the following ingredient ranges were determined; 110~129% sugar, 3~8% mugwort powder, 10~25% oil. Among the different mixture designs, the D-optimal design was chosen for analysis. The results of F-test, specific gravity, viscosity, volume and color values (L, a, b), hardness decided a linear model, while the sensory characteristics (color, taste, texture and overall acceptance) decided a quadratic model. The fitness analysis results showed that in all characteristic, the probabilities were significant within 0.05%; thus, the models were accepted as appropriate. The response surface and trace plot results showed that increasing amounts of mugwort powder decreased the brightness, and increased redness and yellowness. As the level of added oil increased, the softness of the cake increased. Cake samples received low sensory evaluation scores when sugar, mugwort powder, and oil were added above their optimal levels. The optimum formulations by the numerical and graphical methods, were similar, and with the numerical method presented as: sugar, mugwort powder, and oil at 120.7%, 5.1%, and 16.2%, respectively(flour weight basis). The above results demonstrate the feasibility of adding mugwort powder to sponge cake, and therefore, the commercialization of mugwort powder cake marketed as a functional food is deemed possible.

검류 첨가에 의한 개량 증편의 노화억제 효과 (The Retrogradation of Steamed Korean Rice Cake (Jeungpyun) with Addition of Gums)

  • Guar 검, xanthan 검, pullulan을 첨가하여 증편을 제조하여 $4^{\circ}C$에서 저장한 시료의 수분함량의 변화는 유의차가 없었다. 검의 첨가 농도를 낮게 하여 증편을 제조한 경우에는 검 첨가증편의 경도가 무첨가군에 비해 감소하였으나 검의 첨가농도가 0.5% 이상을 첨가하게 되면 pullulan을 제외하고 경도가 무첨가군보다 높게 나타났다. 검류 첨가에 의해 증편의 노화 유형은 변화했으며, Avrami 지수는 pullulan과 xanthan검을 첨가한 경우에는 n=1에 가까운 값을 나타내어, xanthan 검과 pullulan의 노화 유형이 유사하게 나타났다. Pullulan의 첨가량이 증가함에 따라 시간상수(1/k)도 5.37에서 15.65로 증가하는 것으로 나타났다. 이와 같은 실험결과에 의해 검류 첨가량에 따라 수분함량 변화가 거의 발생하지 않으며, 경도 변화도 적게 나타났다. Xanthan 검 또는 pullulan 첨가가 증편의 노화 속도를 늦춰줌으로써 노화가 지연되며 shelf-life 연장에 효과가 있는 것으로 나타났으며, xanthan 검 또는 pullulan보다 guar 검 첨가한 경우가 가장 효과가 적음을 알 수 있었다.

알로에가루 첨가 설기떡의 저장기간에 따른 품질특성 (Quality Characteristics of Seolgiddok added with Aloe Powder during Storage)

  • 알로에가루 첨가량(0%, 1.5%. 3.0%. 4.5%. 6.0%)을 달리하여 제조한 알로에 설기떡을 4일간 저장하면서 기계적 품질특성과 관능적 품질특성을 평가하였다. 수분함량은 제조 직후 대조구가 47.76%였고, 알로에 가루 첨가량이 많아질수록 낮아져 6.0% 첨가가 37.38%로 가장 낮게 나타났다. 저장기간별로는 대조구와 첨가군 모두 저장기간이 길어질수록 수분함량은 감소하였다. 물성측정에서 응집성, 탄력성, 점착성, 부착성, 씹힘성은 가루 첨가량이 증가할수록 감소하는 경향을 보였고, 견고성은 알로에가루 첨가량이 많을수록 증가하였으며, 저장기간이 경과할수록 높아졌다. 색도에서 L값은 설기떡에 첨가한 알로에 가루량이 많을수록 유의적으로 감소하였고, a값의 경우 제조직후 대조구는 -0.86이었으며, 알로에가루 첨가량이 많을수록 양의 값을 나타내어 적색을 띠는 것을 알 수 있었고, b값은 알로에가루 첨가량에 따라 유의적으로 증가하였다. 총균수는 알로에가루의 첨가에 따라 총균수가 적게 나타났으며, 관능검사는 색, 알로에 향, 알로에 맛, 쓴맛의 경우 알로에가루 첨가량이 많을수록 관능적 특성도가 높게 나타났으며 반면 촉촉한 정도, 부드러운 정도는 알로에 가루 첨가량이 적을수록 높게 평가되었다. 전반적 기호도는 알로에 가루 3% 첨가구가 가장 기호도가 높은 것으로 나타났다. 따라서 설기떡에 알로에 가루를 사용함으로써 떡의 품질이 향상되어 건강 기능성 상품 개발이 가능할 것으로 예상되며 향후 알로에의 기능적 성분 분석 등의 연구가 부가되어 다양한 식품조리에 대한 응용연구가 이루어져야 하겠다.

어린보릿가루 첨가 거품형 찜케이크의 재료 혼합비율의 최적화 (Optimization of Ingredient Mixing Ratio for Preparation of Steamed Foam Cake with Barley (Hordeum vulgare L.) Sproutling Powder)

  • This study was performed to determine the optimum ratio of each ingredient in the steamed foam cake with barley (Hordeum vulgare L.) sproutling powder. The experiment was designed according to the D-optimal design of mixture design, which showed 14 experimental points including 4 replicates for three independent variables (sugar 112${\sim}$139%, barley sproutling powder 1${\sim}$8%, and oil 5${\sim}$25%). The compositional and functional properties of test were measured, and these values were applied to the mathematical models. A canonical form and trace plot showed the influence of each ingredient on the mixture final product. The results of F-test, volume, color values (L, a, b), textural properties (hardness, gumminess, chewiness) and sensory characteristics (softness) decided a linear model, while the sensory characteristics (color, smell, taste, overall acceptance) decided a quadratic model. The volume of steamed foam cake was increased by sugar addition, and a negative effect was exerted by barley sproutling powder and oil. L and a of color values increased but the b value decreased with increasing sugar and oil content, whereas barley sproutling powder tended to decrease all color values. The addition of barley sproutling powder also had a positive effect on the textural properties (hardness, gumminess, chewiness). Sensory characteristics (color, smell, softness, taste, overall acceptance) could suffer counter results with the excessive addition of sugar, barley sproutling powder, and oil. The optimum formulations by numerical and graphical methods were similar: sugar, barley sproutling powder, and oil were 130.4%, 4.0%, and 10.7% by numerical method, compared to 130.4%, 4.0%, and 10.7% by graphical method, respectively.

함초 첨가 거품형 찜케이크의 재료 혼합비율의 최적화 (Optimization of Ingredient Mixing Ratio for Preparation of Steamed Foam Cake with Added Saltwort (Salicornia herbacea L.))

  • To obtain basic data for the utilization of saltwort (Salicornia herbacea L.) as a functional ingredient in steamed foam cake, the optimum component ratios for major raw ingredients (saltwort, salt, and wheat flour) as independent variables that affect the product quality were scientifically determined using RSM (response surface methodology) technique. A three-factor and five-level rotational central composite design was used for treatment arrangement. The complete design consisted of 16 experimental points. The three independent variables selected for the RSM experiment were amounts of saltwort (X$_1$, 5${\sim}$25 g), salt (X$_2$, 0${\sim}$10 g), and wheat flour (X$_3$, 470${\sim}$530 g). The optimum responses in specific gravity of the batter and volume, color, texture, and sensory evaluation result of the cake were obtained. The specific gravity and viscosity of the batter at p<0.01 was verified from the regression curve. The characteristic of the batter was influenced by all independent variables, but was extremely dependent on the amount of saltwort ordinary points of the surface responses from the batter formed the minimum points for specific gravities of the batter while viscosities of the batter appeared with the saddle points. Analysis of the response indicated that the amount of saltwort was the most influential factor over the physical properties of the cake, among the dependent variables. Ordinary points of the surface responses from the cake formed the maximum points for loaf volume, hardness gumminess, and chewiness, while Hunter colorimetric parameters appeared with the saddle points. The result indicated that level of the saltwort deviating more or less from the optimal amount decreased the volume and increased the specific gravity with less tender product. Ordinary points of the surface responses of the sensory evaluation scores from the cake formed the maximum points for appearance, flavor, softness, and overall acceptability, while color values appeared with the saddle points. The result also indicated that the level of the saltwort deviating more or less from the optimal amount reduced the preference for the product. Integration of the optimum responses common to all dependent variables that overlapped all the contour maps finally indicated that the combination of 8.3${\sim}$13.8 g saltwort, 2.5${\sim}$6.6 g salt, and 486.5${\sim}$511.5 g wheat flour under the selected preparation recipe optimized the physical and sensory properties in the teamed foam cakes. Practical preparation of the product with median amounts of the ingredients, i.e., 11.0 g saltwort, 4.6 g salt, and 499.0 g wheat flour resulted in similar qualities to the predicted responses. In conclusion, these study results indicated that preparation of steamed foam cake with added saltwort ingredient could potentially produce a more nutritious product with less salt. Further research is required to acquire the optimum levels for sub-ingredients to improve the product quality.

잡과병 관련 조리법에 관한 문헌고찰 - 조선시대부터 현대까지의 조리서를 중심으로 - (A Literature Review on Recipes in Connection with Japgwabyung - Focus on Recipe Data Published in Korea from the Joseon Dynasty to the Modern Era -)

  • The purpose of this study was to investigate the literature in connection with the names and recipes of japgwabyung recorded between 1392 and 2000. The names of japgwabyung were classified into eight types, including japgwabyung, japgwapyun, japgwajumbyung, japgwago, and japgwadanja. The names of japgwatteoks, classified with recipes, were Jjjin-tteoks, Chin-ttoks, and Salmeun-tteoks. The main ingredients used for japgwabyung were glutinous rice, nonglutinous rice, and buckwheat. The subsidiary ingredients were fruits, spices, seeds, and sweeteners. This study classified the names of japgwabyung, depending on the recipes, as japgwabyung, japgwapyun, japgwadanja, and japgwainjulmi. In addition this study classified recipes, depending on names, as steamed rice cakes made of sedimentary rice, steamed valley rice cake, steamed rice ]cakes with stuffs filled in and with bean powder dredged after striking, and steamed or struck rice cake with bean powder dredged. The main ingredients were glutinous rice and nonglutinous rice. The subsidiary ingredients were chestnuts, jujubes and dried persimmons, with other fruits being added according to taste.

자색 양파분말 첨가 설기떡의 품질특성 (Quality characteristics of Korean steamed rice cake containing different amount of red onion powder)

  • 자색 양파 분말 첨가량(0, 3, 6, 9, 12)을 달리하여 제조한 자색 양파 설기떡의 기계적 품질특성과 관능적 품질특성을 평가하였다. 수분함량은 제조 직후 대조구가 43.74%였고, 자색 양파 분말 첨가량이 많아질수록 낮아져 12% 첨가가 37.02로 가장 낮게 나타났다. 물성 측정에서 탄력성, 부착성, 씹힘성은 가루 첨가량이 증가할수록 감소하는 경향을 보였고, 견고성과 응집성은 양파분말 첨가량이 많을수록 증가하였다. 색도 L값은 설기떡에 첨가한 자색 양파 가루량이 많을수록 유의적으로 감소하였고, a값의 경우 제조 직 후 대조구는 2.18이었으며, 자색 양파 첨가량이 많을수록 적색을 띄는 것을 알 수 있었고, b값은 자색 양파 분말 첨가량에 따라 유의적으로 증가하였다. 관능검사는 색, 향, 맛, 촉촉한 정도, 부드러운 정도, 씹는 정도의 경우 자색양파 분말 첨가량이 많을수록 관능적 특성도가 높게 나타났으며, 전체적인 기호도는 자색양파 분말 9% 첨가구가 가장 기호도가 높은 것으로 나타났다. 따라서 설기떡에 자색 양파 분말을 사용함으로써 떡의 품질이 향상되어 건강 기능성 상품 개발이 가능 할 것으로 예상되며 향후 자색 양파의 기능적 성분 분석 등의 연구가 부가되어 다양한 식품조리에 대한 응용연구가 이루어져야 하겠다.

「규합총서(閨閤叢書)」에 수록된 떡의 종류 및 조리법에 대한 고찰 (A Literature Review Investigation Collecting and Cooking Methods of Tteok (Rice Cake) in 「Gyuhapchongseo」)

  • 본 연구는 조선 후기 고문헌인 "규합총서(閨閤叢書)"에 나타난 떡의 종류 및 조리방법을 고찰하여 떡의 종류, 떡에 사용된 재료, 떡의 조리법에 대한 내용을 정리하여 전통조리법을 이해하고, 현재의 기호와 식생활에 맞게 재창조하는 데 필요한 문헌적 자료를 제공하고자 함을 목적으로 한다. "규합총서(閨閤叢書)"는 조선시대 빙허각 이씨가 한글로 쓴 가정대백과 전서이다. '주식의편'에 요리법을 소개하고 있으며, 떡의 분류와 함께 28종의 떡이 기록되어 있다. 연구방법은 내용분석 방법(Contents Analysis)을 이용하였다. 떡을 조리형태에 따라 분류하면 찌는 떡 15가지(53.5%), 치는 떡 2종류(7.1%), 삶는 떡3종류(10.7%), 지지는 떡 7가지(25%), 기타 1가지(3.5%)로 찌는 떡이 53.5%로 가장 많았다. 떡의 주재료에 따라 분류한 결과, 찹쌀이 13회, 멥쌀이 10회, 기타가 5회로 나타났다. 떡의 주재료로는 찹쌀이 12회(42.8%), 멥쌀이 10회(35.7%), 기타가 6회(21.4%)로 찹쌀이 멥쌀보다 많이 사용한 것으로 나타났다. 부재료는 꿀, 잣, 대추 순으로 많이 사용하였고, 연육, 검인, 수시, 생마, 송기, 백봉령 등 약제도 부재료로 사용되었다.

마카다미아 가루를 첨가한 설기떡의 품질 특성 (Quality Characteristics of Sulgidduk added with Macadamia Powder)

  • In order to find out the possible effects of steamed rice cake with varying addition of macadamia powder on quality improvement, this study applied 3%, 6%, 9% and 12% addition of macadamia powder. As a result, it found that the more addition of macadamia powder led to significantly higher crude oil content. Further it revealed that whit more addition of macadamia powder, it tended to show a lower L value. Also with more addition of macadamia powder a higher b value was shown. According to SEM, it was found that the 0% group showed an inconsistent grain size and porosity, local distribution of big lumps and rough surfaces, whereas more addition of macadamia powder tended to show a large mass formation and smoother cross-section. The 12% group showed a gradually decreasing hardness. According to the results of sensory characteristics, it was found that the 12% group showed the highest level in flavor, nutty, softness, after taste and overall quality. Conclusively, it is found that the preparation of steamed rice cake using macadamia powder is helpful to keep flavor and softness; moreover, it contributes to the overall quality of rice cake.
