Case Study on Job Flow Improvement of Foodservice at a University Hospital (대학병원 급식업무 개선 사례 연구)

  • Background : In order to cope with changes in the management environment at hospitals, increased interests are drawn in patient foodservice system on Continuous Quality Improvement Activity as the method of approaching a quality food service and effective management. Thus, as a part of this activity, this study was conducted to evaluate job flow improvement that was already performed and the results of that process at the dietetic department of a university hospital, focusing on improving management. Method : On February 15 of 1998. the dietetic department formed a job flow-improvement to decide on the priority of job flow improvement, and prepared specific action strategies and schedule of the priority: after a 5 month process period, job improvement achieved on June 15. 1998. Also, economic achievement of the task was evaluated through labor productivity analysis and cost-benefit analysis. Results : The patient food service system which was managed decentralized at the present hospital was centralized, some steps of the food service process were integrated, and quality of patient food was improved. Also, as a solution of the problems expected when conducting job flow improvement was made on food service equipments and utensils. The result of evaluating the job flow improvement that labor productivity improved by 18.2% compared to before the improvement and the result of the analysis of cost-benefit showed that Benefit-Cost (B/C) ratio was 2.22. showing financial merit on the investment. Conclusions : Continuous Quality Improvement Activity needs to be initiated and conducted in the future in various areas of hospital foodservice system in order to actively adopt to ever changing hospital management environment. In order to achieve this goal, many researches and more efforts need to be put in by people in charge of hospital food service management, and interests and support are needed from hospital policy makers.

Chromatographic Fractionation of Protease Inhibitors from Fish Eggs (어류 알로부터 Protease Inhibitors의 크로마토그래피법에 의한 분획)

  • A protease inhibitor from fish eggs was fractionated using chromatographic methods. The fractionation efficiency was evaluated in terms of specific inhibitory activity (SIA, U/mg), purity (fold), total inhibitory activity (TIA, U), and recovery (%). The protease inhibitor (PI) from egg extracts of skipjack tuna (ST Katsuwonus pelamis), yellowfin tuna (YT Thunnus albacares) and Alaska pollock (AP Theragra chalcogramma) was fractionated using Sephadex G-50 gel filtration and DEAE-Sepharose CL-6B anion exchange chromatography based on protein size exclusion and net charge, respectively. Fractions exhibiting strong inhibitory activity were contained in the 30-50 kDa fraction on gel filtration and in the range of 0.4-0.7 M NaCl gradient fraction on anion exchange chromatography. The respective TIA and percent recovery of the fraction obtained with gel filtration toward trypsin and $N{\alpha}$-benzoyl-L-arginine-p-nitroanilide (BAPNA) were 2,758.7 U and 29.6% for ST, 1,005.5 U and 25.6% for YT, and 1,267.5 U and 26.0% for AP. Gel filtration chromatography was more effective at fractionating PI than using ion exchange chromatography. These results suggest that fish eggs act as serine protease inhibitors and might be useful for protease inhibition in foodstuffs.

  • Using the ETC Service, it is now possible to charge a vehicle for driving pass a specific toll booth electronically, without the vehicle even having to slow down. The smart card and card reader used to collect tolls electronically have a serious problem which it dose not have a standard for the ETC system. In this paper, we suggest the ETC system using mobile phone to collect tolls efficiently instead of existing system which is consist of a Interface Module to connect between a mobile phone and OEE, a mobile phone to send the information of tollgate fees and OEE to communication with RSE of roadway in the vehicle. This primary focus of this system is the IM functions and protocol to assist of the existing mobile phone and OBE.

Genetic regulation for the biosynthesis of glutamate family in Corynebacterium glutamicum (Corynebacterium glutamicum에서의 glutamate계 아미노산 생합성의 유전적 조절)

  • The regulation of three ammonia assimilatory enzymes, GDH (glutamate dehydrogenase), GS (glutamine synthetase) and GOGAT (glutamate synthase), has been examined in C. glutamicum. Three kinds of arginine auxotrophs blocked in each step of arginine biosynthetic pathway from glutamate were selected as arg 5, arg 6, arg 8. Histidine and tryptophan auxotrophs were also selected because histidine and tryptophan repressed GS biosynthesis in E. coli. These strains were cultured on the media containing nitrogen-excess and limited conditions, to compare the specific activities of ${\alpha}$-ketoglutarate dehydrogenase(${\alpha}-KGDH$), GDH, GS, GOGAT from the cell-free extracts. These results showed that enzyme levels of ${\alpha}-KGDH$ and GDH from 3 kinds of arginine auxotrophs, histidine and tryptophan auxotrophs in nitrogen-excess condition and those of GS and GOGAT in nitrogen limited condition were increased compared with opposite condition. The tryptophan and histidine auxotrophs showed higher level of glutamate and glutamine than parental strains and other mutants. it is assumed that the higher levels of ${\alpha-KGDH}$ and GDH from mutants in nitrogen-excess condition promoted the accumulation of glutamate and glutamine in fermentation broth. The inhibition of GS activities by ADP suggested that GS is regulated by energy charge in C. glutamicum. The results with histidine, tryptophan, glycine, alanine, serine and GMP implied that a system of feedback inhibition were effective. The GDH, GS and GOGAT biosynthesis in culture broth was markedly repressed by the nature and kinds of available nitrogen sources such as tryptophan, proline, glycine, alanine, serine and tyrosine.

Molecular Orbital Theory on Cellulolytic Reactivity Between pNP-Cellooligosccharides and ${\beta}$-Glucosidase from Cellulomonas uda CS1-1

  • A ${\beta}$-glucosidase with the molecular mass of 160,000 Da was purified to homogeneity from cell extract of a cellulolytic bacterium, Cellulomonas uda CS1-1. The kinetic parameters ($K_m$ and $V_{max}$) of the enzyme were determined with pNP-cellooligosccharides (DP 1-5) and cellobiose. The molecular orbital theoretical studies on the cellulolytic reactivity between the pNP-cellooligosaccharides as substrate (S) molecules and the purified ${\beta}$-glucosidase (E) were conducted by applying the frontier molecular orbital (FMO) interaction theory. The results of the FMO interaction between E and S molecules verified that the first stage of the reaction was induced by exocyclic cleavage, which occurred in an electrophilic reaction based on a strong charge-controlled reaction between the highest occupied molecular orbital (HOMO) energy of the S molecule and the lowest occupied molecular orbital (LUMO) energy of the hydronium ion ($H_3O^+$), more than endocyclic cleavage, whereas a nucleophilic substitution reaction was induced by an orbital-controlled reaction between the LUMO energy of the oxonium ion ($SH^+$) protonated to the S molecule and the HOMO energy of the $H_2O_2$ molecule. A hypothetic reaction route was proposed with the experimental results in which the enzymatic acid-catalyst hydrolysis reaction of E and S molecules would be progressed via $SN_1$ and $SN_2$ reactions. In addition, the quantitative structure-activity relationships (QSARs) between these kinetic parameters showed that $K_m$ has a significant correlation with hydrophobicity (logP), and specific activity has with dipole moment, respectively.

  • Ansim Flat DATA Plan is a DATA additional service product related to DATA call in a mobile telephone company A. Up to now, the company A is selling it by outbound TM after targeting customers which used data within specific price band. In this paper, we propose a targeting method applying score model combining response rate and retention rate by data mining. The suggested target model is to find customers more likely not only to respond to outbound TM but also to retain Ansim Flat DATA Plan. The proposed targeting method is expected to improve both from 23.7% to 38.8% in the response rate and from 53.2% to 61.4% in the retention rate.

  • Clays, which are abundant in nature and eco-friendly, have been utilized throughout human history due to their characteristic physicochemical properties. Recently, a variety of clays such as montmorillonite, kaolinite, sepiolite and layered double hydroxide with or without chemical modification have been extensively studied for potential application in industries. Clays that possess a large specific surface area, high aspect ratio, nanometer sized layer thickness and controllable surface charge could be utilized as polymer fillers after appropriate chemical modifications. These modified clays can improve mechanical and gas barrier properties of polymer materials but also provide sustained antibacterial activity to polymer films. Furthermore, engineered clays can be utilized as scavengers for chemical or biological pollutants in water or soil, because they have desirable adsorption properties and chemical specificity. In this review, we are going to introduce recent researches on engineered clays for potential applications in future industries such as food packaging and environmental remediation.

Developing Price Response Functions for Internet Content Services (인터넷 콘텐츠 서비스에 있어서 가격반응함수의 추정에 관한 연구)

  • Content services on the Internet is getting attention as a new business model, selling digital content in real-time on the web. However, most of these content-based business is based on advertisement model rather than direct-payment-based business model. One of the difficulty in setting up charge-based content service is that the pricing paradigm of digital content is different from traditional pricing of products or services. The objective of this study is to empirically derive the feasible price response functions for these content services. Based on conjoint analysis of popular attributes of digital content, several price response function models were fitted against the conjoint data, using online movie viewers' preferences for different attributes of the service. Fitted function models were linear, multiplicative, exponential, attraction, and Gutenberg models. attraction model was found to be well-fit with the data for several specific combinations of attributes. Implications for pricing strategy is discussed at the end.

Synthesis and Electrochemical Characterization of Silica-Manganese Oxide with a Core-shell Structure and Various Oxidation States

  • Silica-manganese oxides with a core-shell structure were synthesized via precipitation of manganese oxides on the $SiO_2$ core while varying the concentration of a precipitation agent. Elemental analysis, crystalline property investigation, and morphology observations using low- and high-resolution electron microscopes were applied to the synthesized silica-manganese oxides with the core-shell structure. As the concentration of the precipitating agent increased, the manganese oxide shells around the $SiO_2$ core sequentially appeared as $Mn_3O_4$ particles, $Mn_2O_3+Mn_3O_4$ thin layers, and ${\alpha}-MnO_2$ urchin-like phases. The prepared samples were assembled as electrodes in a supercapacitor with 0.1 M $Na_2SO_4$ electrolyte, and their electrochemical properties were examined using cyclic voltammetry and charge-discharge cycling. The maximum specific capacitance obtained was 197 F $g^{-1}$ for the $SiO_2-MnO_2$ electrode due to the higher electronic conductivity of the $MnO_2$ shell compared to those of the $Mn_2O_3$ and $Mn_3O_4$ phases.

Preparation of Core-Shell Structured Iron Oxide/Graphene Composites for Supercapacitors Application (코어-쉘 구조의 산화철/그래핀 복합체 제조 및 슈퍼커패시터 응용)

  • Core-shell structured $Fe_3O_4/graphene$ composites were synthesized by aerosol spray drying process from a colloidal mixture of graphene oxides and $Fe_3O_4$ nanoparticles. The structural and electrochemical performance of $Fe_3O_4/graphene$ were characterized by the field-emission scanning electron microscopy, X-ray diffraction, Raman spectroscopy, cyclic voltammetry, and galvanometric discharge-charge method. Core-shell structured $Fe_3O_4/GR$ composites were synthesized in different mass ratios of $Fe_3O_4$ and graphene oxide. The composite particles were around $3{\mu}m$ in size. $Fe_3O_4$ nanoparticles were encapsulated with a graphene. Morphology of the $Fe_3O_4/graphene$ composite particles changed from a spherical ball having a relatively smooth surface to a porous crumpled paper ball as the content of GO increased in the composites. The $Fe_3O_4/GR$ composite fabricated at the weight ratio of 1:4 ($Fe_3O_4:GO$) exhibited higher specific capacitance($203F\;g^{-1}$) and electrical conductivity than as-fabricated $Fe_3O_4/GR$ composite.
