This study was performed to investigate the phyico-chemical characteristics of breast meat from spent hens (SP) in comparison with the same part from the broilers (BR). The moisture and crude protein contents for SP were 72.56% and 24.26%, which were lower than 75.87% and 24.64% for BR. Crude fat and crude ash contents in SP were 0.45% and 1.00%, which were higher than the BR contents of 0.41% and 0.51%. The respective L, a and b value for SP were 48.61, 2.40 and 2.42, which were lower than the BR values of 49.41, 1.45 and 3.06 respectively. The pH for SP was 5.89, which was higher than pH 5.79 for BR. The WHC for SP was 50.29%, which was lower than that of BR at 62.31%. SP scored 28.04% in the heating loss test, which was significantly higher than 19.09% for BR. The shear forces for SP and BR were 4.86 kg and 1.36 kg respectively, which meant that the texture of SP was much tougher than that of BR. Hardness for SP was 8.89 kg while that of BR was 3.92 kg indicating that the SP texture is firmer than that of BR. Oleic acid was most abundant fatty acid in both samples and was at 44.15% in SP and 27.68% in BR.
Four specimens of unknown Coilia sp. were collected for the first time from the Yellow Sea in 2008 and compared with Coilia mystus and Coilia nasus. Coilia sp. showed similar morphology to C. mystus and C. nasus, but differed in that its tail was considerably shorter. We conducted an analysis of the morphological and genetic characteristics in an effort to clarify the taxonomic position of Coilia sp. In counts and measurements, Coilia sp. were well distinguished from C. nasus by the number of scutes (42-44 in Coilia sp. vs. 40-45 in C. mystus vs. 45-55 in C. nasus), ratio of dorsal base length to head length (43.4-47.6 vs. 37.9-47.6 vs. 33.0-41.0), and eye length to head length (19.2-20.8 vs. 17.0-22.4 vs. 13.8-18.2). In caudal skeleton of Coilia sp., urostyle, hypural and epural bones were not observed; instead of them, caudal fin rays were supported by the last vertebra, neural and haemal spines' extension. The molecular phylogenetic relationship was analyzed using 414 base-pair 12S rRNA mitochondrial DNA sequences. The Kimura-2-parameter distance between Coilia sp. and C. mystus was 0.3%, but was 1.3% between Coilia sp. and C. nasus. Both the neighbor-joining tree and maximum-likelihood tree showed that Coilia sp. are closely clustered with C. mystus. Therefore, our results suggest that the Coilia sp. may be a deformed fish of C. mystus.
Characteristics and pathogenicity of Yersinia sp. strain isolated from diseased cultured olive flounder, Paralichthys olivaceous were studied. The causative organisms were identified as Yersinia sp. by biochemical and biophysical characteristics. The strain was named KF-1, and it showed the optimal growth rate at pH 9.0 and 1% NaCl. Total cell protein peptide bands of the Yersinia sp. KF-1 were between 14.4-100.6 Kd in molecular weight by the electrophoretic analysis, and a total of 28 bands appeared. The band found at 32.8 Kd in molecular weight was the major one of electrophoretic phase. In the pathogenicity test of the isolate to the flounder injecting with $1.0{\times}10^7$ cfu/fish 9 died out of 10 within 60 hrs, and in the group with $1.0{\times}10^7$ cfu/fish 5 died within 60 hrs. Thus the $LD_{50}$ was presumed to be $1.0{\times}10^7$ cfu/fish. In the drug sensitivity test KF-1 strain was sensitive to chloramphenicol, gentamycin, kanamycin, streptomycin and pefloxacin, and intermediate to erythromycin, and resistant to ampicillin, cephalothin, sulfamethoxazole/trimethoprim, tetracycline and vancomycin.
The purpose of this study is to determine potential effectiveness of sourdough starter powder (made of Korean wheat flour) in the quality characteristics of bread and in the substitution effect of a dough improver in bread baking. The bread containing sourdough starter powder was considered to be most suitable for making sourdough bread. As a result, SP 10 showed the best fermentation rate and the highest volume and specific volume. In sensory testing, SP 10 was most preferable among others. According to experimental comparison between optimal addition ratio of SP 10 and other sourdough starter powder products available in Korean domestic market, SI had the highest fermentation rate, highest volume and specific volume. Analysis of texture showed that SI was soft with the lowest hardness and the highest elasticity. Sensory test showed that SI was most preferable of all, and SP 10 was more preferable than BP. It was concluded that SP 10 was not less preferable in the aspect of preference at sensory test than other products. Hence, it is expected that sourdough starter powder made of Korean wheat flour will be possibly more popular and effective in replacing some portion of dough improver of baking.
Acanthnmoebn sp. YM-4 is simitar to A. culbertsoni based upon morphological characteristics of trophozoites and cysts. However, based on other characteristics, pathogenicity to mice, in uitro cytotoxicity and isoenzyme patterns, Acanthomoebo sp. YM- 4 was quite different from A. culbertsoni. Restriction fragment length polymorphism (RFLP) analysis of mtDNA is useful in the classification of members belonging to the genus Acanthcmoebn. Therefore, in this study, RFLP analysis of Acnnthcmoeba mtDNAs was accomplished using five restriction enzymes: Hnelll, Hinull, Clcl, Pudl and ScE. Each restriction enzyme produced approximately 3-15 fragments (range: from 0:6 kip to 34.4 kbp) . The mtDNA genome size, calculated by the summation of restriction fragments, averaged 46.4 kbp in Acnnthamoeba sp. YM-4,48.3 kbp in A. culbertsoni and 48.8 kbp in A. polyphaic, respectively. Digested mtDNA fragments of Accnthcmoeba sp. YM-4 contained nine and seven same size fragments, respectively, from a total of 67 and 69 fragments observed in A. culbertsoni and A. polyphcgn. An estimate of the genetic divergence was 10.1% between Acanthamoebc sp. YM-4 and A. culbertsoni, and 9.9% between Acanthamoebn sp. YM-4 and A. polyphcga.

This study was conducted to investigate the macrobenthic community in Ulsan Bay and Onsan Bay, in November of 1997. The density of benthic animals was 535 md./m2, and the number of species was 117. Polychaeta was the most dominant faunal group, comprising a total of 63 species, and its density was 380 md./m2 The most dominant benthic macrofauna was Cirratulrus cirratulas (2.7%), and followed by Tharyx sp. (16.6%), Ruditapes philippinarum (16.1%), Lumbrineris longifolia (10.3%) and so on. The dominant species occupied their distinct unique distribution area. Tharyx sp., R. philippinarum and Grandidierella sp.1 occurred mainly in Ulsan Bay, L. longifolia and Euchone sp. in Onsan Bay, and C. cirratulas and Cirriforimia tentaculata in both bays. By cluster analysis, study area was divided into 4 station groups: Northern Ulsan Bay (Al), the middle area of Ulsan Bay (Bl), offsea area between Ulsan Bay and Onsan Bay (Bll), and Onsan Bay (C). Northern Ulsan Bay was characterized by low species number and high density. The dominant species were C. cirratulas R. philippinarum and Tharyx sp. The middle area of Ulsan Bay was by low species number and density, and its characteristic species was Grandidierella sp.1. The offsea area between Ulsan and Onsan Bay was by high species number and low density. Onsan Bay was by high species number and high density, and its important species were L. longifolia and Euchone sp.
Biopolishing using cellulases was introduced in the production of cotton fabric in order to improve the quality of fabric environmental friendly and is commonly used in the textile industry. In this study, the application of a crude cellulase from Acanthophysium sp. KMF001, which was excellent for the saccharification of cellulose, on biopolishing was evaluated. The optimum treatment biopolishing condition was at $50^{\circ}C$ and pH 4.5 for 60 minutes with 10% crude cellulase of fabric weight. After the optimized biopolishing, the crude cellulase of Acanthophysium sp. KMF001 reduced the tensile strength of the tested cotton fabric less than a commercial cellulase. The appearance of the cotton fabric after the treatment of the crude cellulase of Acanthophysium sp. KMF001 was similar to the fabric after a commercial cellulase treatment. All these results support that the crude cellulase of Acanthophysium sp. KMF001 was a good biopolishing cellulase.
Various physico-chemical and biological methods have been used to remove. cyanobacteria which causes blooms and releases toxin. The purpose of the following experiment is aimed finding out which cyanobacteria are affected by $_L-lysine $ and what concentration of$_L-lysine $ inhibits cyanobacteria. The 20 samples of Microcystis sp. have been tested. To prove the growth inhibition on Microcystis sp., double-layered agar method and microplate method have been used. When the concentration of $_L-lysine $ is as heavy as 100 ${\mu}g\; ml^{-1}$~300 ${\mu}g\; ml^{-1}$, some Microcystis sp. have made halo zone. Some Microcystis sp. have shown so high activity as to be inhibited in their growth by the $_{L}$-lysine of concentration 10 ${\mu}g\; ml^{-1}$ with microplate method. These activities are various in accordance with every species. In additions, the microplate method has been proven to be an easy way which examine the lytic activity on the species of algae.e.
Studies were conducted to investigate the changes of teleomorph of Diatrype stigma on bed-log of shiitake (Lentinula edodes) and appearance of secondary harmful fungi from December 1999 to August 2001. The color of stroma was changed from red brown to dark brown after 12 months. The size of ostioles became smaller and the number of ostioles decreased as time passed. Most of the ostioles disappeared after 20 months from toleomorph formation. Perithecia and ascospores were gradually disappeared, and perithecia containing ascospores were observed at 10% of bed-logs tested after 20 months. Concerning the secondary harmful fungi infecting the bedlog of shiitake after teleomorph of D. stigma, Hypoxylon truncatum (Anamorph : Nodulisporium sp.), Schizophyllum commune and Trichoderma spp. were observed on stroma of D. stigma. Penicillium sp. occurred on spore-horn of Libertella sp. (Anamorph of D. stigma). Besides, Hypoxylon howeianum and some species of Myxomycetes were observed. Also, Libertella sp. appeared again at some bed-logs.

An organic solvent-tolerant lipase of Pseudomonas sp. BCNU 154 that was isolated from wastewater in the industrial complex region had optimal activity at $37^{\circ}C$ and pH 8. This crude extracellular lipase from BCNU 154 exhibited maximum stability in toluene, retaining about 6.01 U/ml (117.53%) activity for 2 h. $Ca^{2+}$, $Mg^{2+}$, $NH_4{^+}$, and $Na^+$ ions and triton X-100 activated the enzymes, whereas $Ba^{2+}$, $Hg^{2+}$, and $Zn^{2+}$ ions inhibited their activity. Pseudomonas sp. BCNU 154 lipase revealed stable activity comparable to that of the commercial immobilized Novozym 435. Thus, this organic solvent-tolerant lipase could have potential as a whole cell biocatalyst in industrial chemical processes without the use of immobilization.
