대두 종자크기에 대한 간접선발지표로써 잎 크기의 이용 (Use of Leaf Size for Indirect Selection of Seed Size in Soybean)

  • 대두 종자크기에 대한 간접적인 선발형질로써 잎크기에 대한 이용 가능성을 알기 위하여 종자크기에 있어서 큰 차이를 보이는 12개의 line을 선발하여 2년간 포장시험을 실시하였다. 종자크기와 잎크기의 차이에 있어서 고도의 유의성을 나타내었고 개화전 종자크기에 대한 간접선발로써 잎크기의 이용성이 가능할 것으로 보였다.

콩잎 품종에 따른 이화학적 특성 비교 및 콩잎 분말을 첨가한 두부 개발 (Physicochemical Properties of Soybean Leaf by Cultivar and Development of Soybean Curd Prepared with Soybean Leaf Powder)

  • 본 연구에서는 품종에 따른 콩잎의 이화학적 특성을 살펴보고자, 4종류 콩잎(대원, 대풍, 황금, 서리태)을 이용하여 평가하였으며, 콩잎 분말의 활용방안을 모색하기 위해 콩잎 분말을 첨가한 두부를 개발하여 그 이용 가능성을 알아보았다. 콩잎의 이화학적 특성을 살펴본 결과, 품종별로 유의적인 차이를 나타내었다(p<0.05). 콩잎은 대부분 탄수화물로 이루어져있으며, K, Ca, Mg, Na, P, Fe 등의 무기질이 함유되어 있는데 상대적으로 칼륨 함량이 높음을 확인할 수 있었다. Isoflavone 함량은 모든 품종에서 daidzein 함량이 genistein 함량 보다 함량이 높게 나타났고 특히, 대풍콩잎에서 유의적으로 높은 함량을 나타내었다(p<0.05). 대풍콩잎 분말의 첨가량(0, 0.1, 0.2, 0.3%)을 달리하여 두부를 제조하여 품질 특성을 살펴본 결과, 수율은 두부 간에 유의적인 차이를 보이지 않았다. 명도(L)와 적색도(a)는 대조군에 비해 유의적으로 낮아지는 경향을 보였으나 황색도(b)는 콩잎 첨가 수준이 증가할수록 점점 증가하는 경향을 보였다. 조직감 특성은 유의적인 차이를 보이지 않았으나, 경도(hardness)는 대조군에 비해 콩잎을 첨가한 두부에서 높은 경향을 보였으며 이는 관능평가 결과에서도 비슷한 추이를 나타냈다. 두부의 외관, 맛, 향, 조직감에 대하여 특성 강도를 평가한 결과, 콩잎의 첨가수준이 증가할수록 대조군에 비해 고소한 맛은 덜한 반면, 두부의 색, 향, 조직감은 강하게 평가되었다. 기호도 평가에서는 콩잎을 첨가한 두부가 대조군에 비해 높게 평가되었고, 0.2% 첨가 두부에서 전반적인 기호도가 가장 높은 것으로 나타났다. 이상의 결과를 종합해보면 콩잎 분말 첨가는 전체적인 관능평가에 긍정적인 영향을 미치며, 특히 콩잎 분말 0.2%가 두부의 기호도를 높일 수 있을 것이라고 사료된다. 본 연구를 통하여 콩잎의 이화학적 특성은 품종에 따라 유의적인 차이가 있음을 확인하였으며 식품 소재로서의 콩잎 분말의 이용가능성 또한 확인할 수 있었다. 이러한 연구 결과는 콩잎 분말의 식품학적 가치를 향상시키고 기능성 소재로서의 이용 가능성을 증진시킬 수 있는 기초자료가 될 것으로 기대되며, 나아가 기능성 식품 개발에 크게 기여할 것으로 사료된다.

Topping Effect on Growth and Yield of Soybean Growth in Paddy Field

  • This study was conducted to determine the effects of two plant populations (28 and 14 plants per $m^2$) and two toppings in conventional plant population (28 plants per $m^2$) on soybean (Glycine max L. cv. Pungsannamulkong) cultivated in the paddy field. The two topping time were taken at 6$^{th}$ to 7$^{th}$ and 8$^{th}$ to 9$^{th}$ trifoliolate leaf stages in the conventional plant population. Experimental design for growth data was a randomized complete block with three replications, and samples were taken at R1 (July 31), R3 (August 19), R5 (September 2) and R7 (September 23) growth stages. The branch number of soybean was relatively higher in the low plant population (14 plants per $m^2$) and with the topping at the 6$^{th}$ to 7$^{th}$ leaf stage, in the conventional plant population (28 plants per $m^2$), and with topping at the 8$^{th}$ to 9$^{th}$ trifoliolate leaf stage in descending order. The highest average branch length of soybean was observed in the low population and the longest branch length was observed from the soybean with topping at the 6$^{th}$ to 7$^{th}$ leaf stage. The leaf number per plant was decreased in order of in the low population, with the topping at 6$^{th}$ to 7$^{th}$ trifoliolate leaf stage, with the topping at 8$^{th}$ to 9$^{th}$ trifoliolate leaf stage, and in the conventional population. The leaf area was high in the low population and with topping at 6$^{th}$ to 7$^{th}$ trifoliolate leaf stage and was relatively low in the conventional population and with the topping at 8$^{th}$ to 9$^{th}$ trifoliolate leaf stage in soybean. The dry weight of leaves and branches was high in the low population and with the topping at 6$^{th}$ to 7$^{th}$ trifoliolate leaf stage and was relatively low in the conventional population and with topping at 8$^{th}$ to 9$^{th}$ trifoliolate leaf stage. The leaf number per plant was high in the low population and with topping at 6$^{th}$ to 7$^{th}$ trifoliolate leaf stage and was relatively low in the conventional population and with topping at 8$^{th}$ to 9$^{th}$ trifoliolate leaf stage. The grain yield per 10a was high with the topping at 6$^{th}$ to 7$^{th}$ trifoliolate leaf stage.

콩잎 물김치의 숙성과정 중 이화학적 변화 (The Physicochemical Change of Soybean-Leaf Water Kimchis during Fermentation)

  • This study was attempted to investigate the physicochemical changes during soybean-leaf water kimchis fermentation by adding wheat flour in cooking water. Soybean-leaf water kimchis with five different levels of wheat flour in cooking water(0%;A, 5%;B 10%;c, 15%;D, 20%;E) were tested for rhological parameters, fine structural changes, sensory evaluations and chemical analysis. The composition of the soybean-leaf was moisture (80.9%), protein(6.8%), fat(0.6%), ash(2.1%) and alkalinity (+14.9). The amount of reducing sugars of sample A and other samples were 0.75% and 1.08∼1.4% in the initial fermentation stage, but decreased to 0.3 and 0.43∼0.50% in the later fermentation stage, respectively. The pH of sample A decreased from 5.17 to 4.72 during the initial fermentation. On sample B, C, D and E, pH's decreased rapidly during the initial fermentation, but they did not change much in the later fermentation stage. The pectin contents of all samples decreased during 2nd and 4th day of fermentation, then the change was slow. The amount of hemicellulose. cellulose and lignin in terms of the DNF and ADF were varied from 4 to 33%, but the contents of them did not greatly changed during the fermentation. The sensory evaluation showed that both B and C samples had the good score in sweety taste, roasted nutty taste, and the ease of swallowing measured as chewiness. From these results, the optimum soybean-leaf water kimchis can be prepared when 200g soybean-leaf, 1000$m\ell$ water, 15g garlic, 3% red pepper powder and 5 ∼0% wheat flour were fermented at 20$^{\circ}C$ for 2 days.

콩[Glycine max(L.) Merrill] 품종간의 UV-B에 대한 감수성의 차이

  • The experiment was conducted to determine the effects of enhanced UV-B on growth and differential responses among cultivars in soybean. The soybean cultivars subjected to enhanced UV-B irradiation at daily dose of 11.32 kJ $m^{-2}(UV-B_{BE})$ revealed that the growth was significantly depressed. Plant height, leaf number, leaf area and dry weight were inhibited by UV-B irradiation showing differential responses among cultivars used. Danyeubkong seems to be less sensitive to the enhanced W-B irradiation, while Keunolkong more sensitive. Reduction of chlorophyll content was also found significantly greater to Keunolkong. Specific leaf weight an index of leaf thickness, and flavonoid content known as UV-absorbing compounds were significantly Increased in Danyeubkong by UV-B, but those In the other cultivars were not significantly affected. The results indicated that there are cultivar diferences in tile growth and phisiological responses to the enhanced UV-B irradiation and specific leaf weight and UV-absorbing compounds in the leaves were highly related to the sensitivity of soybean by UV-B irradiation.

  • The low and unstable yield of soybean has been a major problem in Japan. Excess soil moisture conditions are one of the major factors to restrict soybean productivity. More than 80 % of soybean crops are cultivated in converted paddy fields which often have poor drainage. In central and eastern regions of Japan, the early vegetative growth of soybean tends to be restricted by the flooding damage because the early growth period is overlapped with the rainy season. Field observation shows that induced excess water stress in early vegetative stage reduces dry matter production by decreasing intercepted radiation by leaf and radiation use efficiency (RUE) (Bajgain et al., 2015). Therefore, it is necessary to evaluate the responses of soybean growth for excess water conditions to assess these effects on soybean productions. In this study, we aim to modify the soybean crop model (Sinclair et al., 2003) by adding the components of the restriction of leaf area development and RUE for adaptable to excess water conditions. This model was consist of five components, phenological model, leaf area development model, dry matter production model, plant nitrogen model and soil water balance model. The model structures and parameters were estimated from the data obtained from the field experiment in Tsukuba. The excess water effects on the leaf area development were modeled with consideration of decrease of blanch emergence and individual leaf expansion as a function of temperature and ground water level from pot experiments. The nitrogen fixation and nitrogen absorption from soil were assumed to be inhibited by excess water stress and the RUE was assumed to be decreasing according to the decline of leaf nitrogen concentration. The results of the modified model were better agreement with the field observations of the induced excess water stress in paddy field. By coupling the crop model and the ground water level model, it may be possible to assess the impact of excess water conditions for soybean production quantitatively.

콩잎 김치의 숙성에 미치는 소금농도의 효과 (Effect of Salt Concentration on Soybean Leaf Kimchi Fermentation)

  • 콩잎김치의 소금농도별 저온에서의 숙성효과를 시기별로 조사하였다. 그 결과 숙성이 진행됨에 따라 pH가 점차로 낮아지고 산가는 증가하였다. 소금농도 1.5% 처리한 콩잎김치에서 가장 빨리 pH가 저하하였다. 염농도 측정에서 처리한 소금농도별로 염농도가 높았으며, 숙성 8일경에 모든 처리에서 염농도가 급격히 증가하였으며 그 이후에는 안정적 양상을 보였다. 소금농도별 미생물상 변화에서 총균수는 숙성이 진행됨에 따라 증가하였다가 감소한 후 일정한 경향을 유지하였고, 젖산균은 숙성되면서 발효 시작시에 현저한 증가를 보인 후 큰 변화 없이 일정한 양상을 유지하는 경향이었으며 처리한 소금농도가 높을수록 발효후기에 젖산속 균의 생육이 활발하였다 소금농도 3.0% 혹은 4.5% 처리한 콩잎김치에서 관능평가 결과 좋은 점수를 받았으며 냄새에서는 좋은 평가를 받았다. 또한 짠맛에서도 보통에 가까운 점수를 받았다.

  • 콩의 입중에 따른 다수성 콩 품종육성의 엽형 모델을 찾고자 기존의 품종들을 대상으로 일의 형태 및 해부학적 특성과의 관계를 조사했는데. 그 결과를 요약하면 다음과 같다. 1. 엽신의 두께는 소립형 품종보다는 대립형 품종이 두꺼웠으며, 단위엽의 엽면적에서도 대립형 품종들이 큰 경향이었다. 2. 엽육조직의 관찰결과 소립 장엽형 품종과 대립 환엽형품종의 책상세포 및 해면세포가 두껍고 치밀하게 배열되어 있었다. 3. 단위엽면적당 $\textrm{CO}_2$ 흡수량, 주당 $\textrm{CO}_2$ 흡수량, 엽신 및 책상세포의 두께는 종실수량과 정의 상관이 인정되었으며, 단위엽의 엽면적과는 부의 상관을 보였다. 4. 따라서 품종간의 특성은 및 기능의 차이로서 인정할 수 있었으며 특히 $\textrm{CO}_2$ 동화량 및 엽육조직의 두께와 엽육세포의 치밀함 등은 품종간 특성차이를 나타내는데 크게 기여하였다.

Effect of Rice Straw Compost on Cadmium Transfer and Metal-ions Distribution at Different Growth Stages of Soybean

  • In soil-to-plant transfer of heavy metals, the amount absorbed and accumulated varies depending on the environment conditions. The absorption rate of cadmium (Cd) in plants differs considerably depending on the bioavailability of Cd in the soil, while usage by various organic matters is also reported to affect absorption patterns. Therefore, this study aimed to identify the difference in the transfer of essential metal ions and Cd to various plant parts when rice straw compost was used to cultivate soybean (Glycine max L. cv. Daepung). In the two-leaf stage of soybean cultivated in a greenhouse, Cd was mixed in the soil, after which the Cd and essential metal ions contents, and physiological changes of soybean seedlings were studied on the 15th and 25th day. The Cd toxicity in the plant was reduced with the use of rice straw compost. Further, the Cd content varied with the plant part, and was higher in young leaves (3rd and 4th leaf) than in the stem. When analyzed by leaf age, the Cd transfer was highest in young leaves (3rd and 4th leaf), followed by mature leaves (1st and 2nd leaf). While there was no significant difference between plant tissues in the absorption rate of copper (Cu) and zinc (Zn) when rice straw compost was used against Cd toxicity, the absorption rate of manganese (Mn) and iron (Fe) showed a significant decline in both the control and rice straw compost treatment conditions, as well as a significant difference between leaf ages. Therefore, these results confirm that the use of rice straw compost against Cd toxicity is effective, and implies that the rate of Cd transfer in the soybean plant varies significantly with leaf age.

대두잎의 성숙도가 갈색무늬병의 진전에 미치는 영향 (EFFECTS OF LEAF MATURITY ON THE DISEASE PROGRESS OF SEPTORIA BROWN SPOT IN SOYBEAN)

  • 대두 갈색무늬병의 진전은 한 식물체에서 상위엽으로의 진전속도(수직감염율 : vertical progress)과 밀접한 관계가 있다. 실제로 포장에서의 갈색무늬병 진전은 주로 하위엽에서 발병하기 시작하여 상위엽에 비하여 이병정도가 높은 것이 보통이다. 이러한 현상의 원인을 구명하기 위하여 수행한 본 실험에서 갈색무늬병의 감염율은 잎의 성숙도와 정의 상관을 보였으며 이러한 유엽저항성은 접종원의 분포와는 무관한 것으로 보였다. 또 상위엽의 엽표면일출액 (leaf diffusate)은 병원균 포자발아 및 관계신장의 억제 정도가 하위엽의 일출액에 비하여 높았으며 이러한 경향은 저항성품종에서 더욱 현저하여 엽일출액의 어떤 발아억제물질이 갈색무늬병의 유엽저항성에 관여하는 것으로 추정되었다.
