Instrumental and Sensory Analysis of Fruit Quality in Relation to Storability of 'Niitaka' Pear Fruit ('신고' 배 과실의 품질특성 및 관능검사에 따른 적정 저장기간 판정)

  • Quality of 'Niitaka' pear fruit was evaluated by instrumental and sensory analysis in relation to storability. Fruits harvested at commercial maturity were stored in a common storage room or in a cold storage at $2^{\circ}C$. During storage, fruits were sorted by instrumental measurement of soluble solid content (SSC) and flesh firmness. Then, overall acceptability was evaluated by organoleptic test. Critical storage period was determined by sensory evaluation index for different storage methods. After 60 days of storage, eating quality was acceptable when flesh firmness was higher than $3.3kg/8mm{\emptyset}$. As for soluble solid contents, high eating quality was obtained when pear fruit contained soluble solids higher than $13.0^oBrix$. In 'Niitaka' pears, however, changes in soluble solid content seemed not to be an appropriate parameter to determine storability since SSC increased during both common and cold storage. Data of organoleptic test and postharvest changes in flesh firmness suggested that storability of 'Niitaka' pear fruit seemed to be 30 days in a common storage and 120 days in a refrigerated storage.

Correlation between Soluble Solid Content and Physicochemical Properties of ‘Bing’ Cherry at Different Stages of Ripening after Harvest (‘Bing’ 체리의 숙기에 따른 당도와 이화학적 품질인자의 상관관계)

  • Cherries (Prunus avium L) were selected at the light red (LR) and dark red (DR) stages of maturation. Soluble solid content and the physicochemical properties of fresh 'Bing' cherries were analyzed to identify an instrumental nondestructive attribute reflecting changes in sweetness. Soluble solid content was significantly correlated with various physicochemical properties (firmness, color, and acid level) in LR-stage cherries. In DR-stage cherries, only firmness was positively correlated with soluble solid content. A positive correlation was found between soluble solid content and firmness of 200 randomly selected cherries. Thus, flesh firmness may be a useful quality factor indicating potential consumer acceptance of 'Bing' cherries.

Lycopene Content and Fruit Morphology of Watermelon (Citrullus lanatus) Germplasm Collections

  • High-quality and high-phytonutrient watermelon fruits have strong market opportunities besides their health related benefits. Hence, investigating quality and nutritional related traits of watermelon genetic resources could provide important baseline data in breeding for increased lycopene content thereby increasing the marketability of watermelon. To this end, we have examined some fruit morphological traits and lycopene content of 105 genetic resources. The morphological characters were recorded on the field and inside laboratory and lycopene was measured using spectrophotometric and HPLC methods. Watermelon fruits have shown a diverse morphological characters. Red and pink fleshed fruits dominated in the entire collections. Fruits with higher thickness of rind were found to exhibit less soluble solid content (SSC). Korean origin fruits were characterized by intermediate SSC while USA, RUS, TJK, TKM, TWN, and URY originated fruits had the highest SSC. The lycopene content varied between 41.37 and 182.82 ㎍/g, 2.81 and 163.72 ㎍/g, and 3.54 and 255.47 ㎍/g using HPLC, UV-Vis, and microplate reader instrumnets, respectively. Red- and pink-fleshed fruits had the highest levels of lycopene content compared to the yellow- and orange-fleshed. Lycopene content had a significant positive correlation with SSC, however, no correlations were detected between lycopene and other quantitative fruit morphological characters.

Hence, investigating quality and nutritional related traits of watermelon genetic resources could provide important baseline data in breeding for increased lycopene content thereby increasing the marketability of watermelon. To this end, we have examined some fruit morphological traits and lycopene content of 105 genetic resources. Seeds, originally obtained from 22+ countries, were obtained from the National Agrobiodiversity Center, Jeonju, South Korea, grown in an experimental field and harvested at a fully mature stage. The size of pistil scar (SPS), the width of stripes (WS), weight of fruit (WF), length of fruit (LF), width of fruit (WIF), the thickness of pericarp (TP), soluble solids content (SSC), fruit shape in longitudinal section, ground color of skin, the intensity of the green color of skin, fruit shape at the apical part, grooving distribution, conspicuousness of stripes, and main color of the flesh were recorded on the field and inside laboratory and the lycopene was measured using spectrophotometric and HPLC methods. The lycopene content varied between 41.37 and 182.82 ㎍/g, 2.81 and 163.72 ㎍/g, and 3.54 and 255.47 ㎍/g using HPLC, UV-Vis spectrophotometer, and microplate reader spectrophotometer, respectively. Red- and pink-fleshed fruits had the highest levels of lycopene content compared to the yellow- and orange-fleshed. Lycopene content had a significant positive correlation with SSC, however, no correlations were detected between lycopene and other quantitative fruit morphological characters. Our study demonstrated high diversity exists in fruit morphological traits and lycopene content of the germplasm collections which provide beneficial baseline data for a future breeding program and utilization of watermelon germplasm collections in gene banks for the maintenance and improvement of the current levels of production, marketability, and health-related benefit of watermelon fruits.

Postharvest Quality of Satsuma Mandarin Fruit Affected by Controlled Atmosphere (CA 저장이 온주밀감의 수확 후 품질에 미치는 효과)

  • This research was conducted to find out whether controlled atmosphere(CA) can maintain Satsuma Mandarin fruit fresh longer compared to cold storage. Fruit harvested in Nov. 1998 at Jeju Province were stored in three different CA condition including cold storage. The CA treatments consisted of combinations of 3%, 5% and 10.9% $CO_2$ with 1% and 3-3.9% $O_2$, respectively. Weight and firmness were maintained higher in static CA chambers than in the cold storage. Soluble solid content in fruit of cold storage increased until 2 months of storage and thereafter sharply decreased, whereas that of CA-stored fruit increased slowly throughout the storage period of 120 days. Citric acid decreased obviously in all the treatments with a partially longer retention in CA chambers during storage. Sensory evaluation clearly showed that CA could extend market period of Satsuma Mandarin fruit.

Laborsaving Effect and Fruit Characteristics of Grape ‘Campbell Early’ According to Pedicel Thinning ('캠벨얼리' 포도의 지경솎기에 따른 작업 절감 효과 및 과실 특성)

  • The experiment were carried out in 7-year-old ‘Campbell Early’ grape to increase work efficiency by fruit cluster thinning methods (Pedicel and berry thinning). Pedicel thinning, such as labor-saving cluster thinning of grape, was 6.7 fold higher than the berry thinning for work efficiency. The fruit cluster weight and number of berry were lower in the fruit cluster thinning fruits than in the none-fruit cluster thinning, however, the soluble solid content (SSC) was high and titratable acidity (TA) was low in the fruit cluster thinning fruits than in the none-fruit cluster thinning fruits. Therefore, the bruising rate of berries was decreased in the fruit cluster thinning fruits. Quality uniformity by fruit cluster thinning was proper in fruit cluster weight of 350~450 g when SSC and TA in part of lower, middle and upper of cluster was considered.

Non-destructive quality prediction of truss tomatoes using hyperspectral reflectance imagery (초분광 영상을 이용한 송이토마토의 비파괴 품질 예측)

  • Spectroscopic measurement method based on visible and near-infrared wavelengths was prominent technology for rapid and non-destructive evaluation of internal quality of fruits. Reflectance measurement was performed to evaluate firmness, soluble solid content, and acid content of truss tomatoes by hyperspectral reflectance imaging system. The Vis/NIR reflectance spectra was acquired from truss tomatoes sorted by 6 ripening stages. The multivariable analysis based on partial least square (PLS) was used to develop regression models with several preporcessing methods, such as smoothing, normalization, multiplicative scatter correction (MSC), and standard normal variate (SNV). The best model was selected in terms of coefficient of determination of calibration ($R_c^2$) and full cross validation ($R_{cv}^2$), and root mean standard error of calibration (RMSEC) and full cross validation (RMSECV). The results of selected models were 0.8976 ($R_p^2$), 6.0207 kgf (RMSEP) with gaussian filter of smoothing, 0.8379 ($R_p^2$), $0.2674^{\circ}Bx$ (RMSEP) with the mean of normalization, and 0.7779 ($R_p^2$), 0.1033% (RMSEP) with median filter of smoothing for firmness, soluble solid content (SSC), and acid content, respectively. Results show that Vis / NIR hyperspectral reflectance imaging technique has good potential for the measurement of internal quality of truss tomato.

Freshness of Tomatoes Cultivated in Egypt by Packaging Functional MA film (기능성 MA 필름으로 포장한 이집트산 토마토의 신선도)

  • To investigate the effect of functional MA film packaging on tomatoes produced in Egypt packed 7 kg corrugated paperboard box during 7 days of storage at room temperature, the weight loss, titratable acidity, soluble solid content(SSC, $^oBrix$), vitamin C and the rate of decay were measured. The weight loss in 0.06 mm functional MA film was 1.5%, but was 3% in non-packed tomatoes after 7 days of storage. The titratable acidity and SSC in functional MA film was kept higher than that of non-packed tomatoes and vitamin C and the rate of decay in functional MA film was changed lower than the others.

Quality Characteristics and Antioxidant Activities of Organically and Conventionally Grown Carrot (유기 및 일반재배에 따른 당근의 품질비교)

  • Demand for organic agriculture has greatly increased in the past decade. The objective of this study was to evaluate quality the characteristics and antioxidant activities of organically and conventionally grown carrots. Organically and conventionally grown carrots were harvested in Jeju Island, Korea. Carrot extracts were investigated for their antioxidative components (total phenolic and flavonoid contents) and their antioxidant activities (DPPH and ABTS radical scavenging activities). The quality characteristics of carrots were estimated in terms of hardness, length, weight, moisture contents, and soluble solid content (SSC). Conventionally grown carrots showed higher values than organic carrot in terms of hardness (p<0.05), but there was no significant difference in moisture contents or SSC. In the case of antioxidant activity, organic carrots showed a higher value for DPPH radical scavenging activity (p<0.05). However, there was no significant difference in other antioxidants. Consequently, quality characteristics and antioxidant activities were different between organically and conventionally grown carrots.

Effect of MA Packaging on Quality of 'Fuji' Apple (MA저장법이 '후지' 사과의 품질에 미치는 영향)

  • To investigate the effect of funcitional MA film 0.3 mm and control(non-pack) during 24 weeks of storage on 'Fuji' apple, the weight loss, firmness, a titratable acidity, soluble solid content(SSC $^{\circ}Brix$) and the rate of decay were measured. After 20 week storage, weight loss was $4.65\%$ in control, but $0.31\%$ in 0.03 mm funcitional MA film. The titratable acidity, soluble solid content and firmness were changed a little. The rate of decay was $4.2\%$ in control, and $1.1\%$ in funcitional MA film.
