국내산과 중국산 능이의 미네랄 함량 비교 (Comparison of the mineral contents in domestic and Chinese sarcodon aspratus)

  • 국내산과 중국산 능이에 대한 다량미네랄, 미량미네랄 및 유해중금속 함량을 비교하여 원산지 판별 가능성을 분석하고자 하였다. 능이의 미네랄 함량은 원자흡광광도계(Atomic absorption spectrophotometer, AAS) 및 유도결합플라즈마 질량분석기(Inductively coupled plasma mass spectrometer, ICP-MS)를 사용하여 분석하였다. 국내산 능이의 Na, Mg, K 및 Ca 함량은 각각 170.3±44.0 mg/kg, 81.3±20.8 mg/kg, 1,123.8±274.3 mg/kg 및 12.1± 4.1 mg/kg으로 분석되었으며, 중국산 능이는 각각 112.2±40.8 mg/kg, 297.8±20.9 mg/kg, 10,938.4±2,914.1 mg/kg 및 52.5±27.7 mg/kg으로 분석되어 유의적 차이가 있는 것으로 나타났다. 미량미네랄 및 유해중금속 함량은 유의적 차이가 나타나지 않았다. 따라서 능이의 원산지 판별 지표 확립을 위하여 향후 다수의 국내산 및 중국산 능이를 사용한 Na, Mg, K 및 Ca 함량 비교분석이 필요한 것으로 판단되었다.

서울시 일부 지역 주부의 나트륨 섭취 감소를 위한 사회인지이론 기반의 영양 교육 프로그램의 적용 및 평가 (Effects of Nutrition Education Program Based on Social Cognitive Theory for Low Sodium Consumption among Housewives Living in Certain Regions of Seoul)

  • 본 연구에서는 서울 일부 지역 주부 140명을 대상으로 사회 인지론을 적용하여 개발된 나트륨 섭취 감소를 위한 영양교육 프로그램을 수행하고, 프로그램의 효과를 평가하기 위하여 나트륨 섭취 관련 지식 및 인식, 환경 인식, 식행동을 조사하여 교육 전후의 변화를 파악하였다. 나트륨 섭취 관련 지식 및 인식 항목에서는 하루 필요 소금 섭취량에 대해 인지하는 비율이 교육 후 77.8%로 교육 전보다 54.6%가 증가하였다. 교육 후 싱거운 쪽의 음식의 간을 선호하는 것으로 인식 변화한 대상자는 25.6%였다. 대부분 대상자들은 식생활에서 저염 섭취에 대한 필요성을 느끼고 있었고, 싱겁게 조리된 음식을 제공할 시 선택하겠다고 응답한 대상자의 비율이 높아 저염 섭취를 위한 환경적 요인이 향상된다면 저염섭취에 대한 자아효능감에 해당하는 개인적 수준의 영역이 높아질 수 있음이 확인되었다. 나트륨 섭취 관련 환경 항목에서는 대상자의 약 2/3가 교육 전 저염식을 먹을 수 있는 곳을 찾아본 경험이 없다고 응답하였으나, 교육 후 찾아본 경험이 있는 것으로 변화된 대상자는 23.6%로 증가하였다. 교육 후 서울 시내에서 저염 음식점의 필요성을 느낀다고 응답한 대상자는 70.0% 이상이었으나, 저염식을 섭취 시 주변에서 먹을 수 있는 곳을 찾는 것은 대체로 어려운 것으로 나타났다(93.5%). 나트륨 섭취 관련 식행동 항목에서 교육 전후로 효과가 있었던 항목은 식품의 영양표시를 확인하고 나트륨이 적은 식품을 선택, 저염 제품 등 나트륨이 적은 식품을 구매, 조리 시 소금의 사용량을 줄이고 마늘, 생강, 고춧가루 등 천연재료를 사용, 패스트푸드(햄버거, 피자 등) 및 가공식품의 섭취 감소 항목으로 직접적인 저염 실천 행동에서의 개선 효과가 유의적으로 나타났다. 그러나 환경 요인과 관련된 식행동인 짜지 않게 조리 요청 여부와 저염 제품 및 건강음식점 소개 여부 항목에서는 행동 변화율이 낮았다. 향후 본 연구에서 수행된 저염 섭취를 위한 영양교육 프로그램을 보완하기 위하여 저염 섭취를 위한 물리적 환경 개선과 병행하여 환경 인식에 대한 평가를 실시하고 대상자가 지속해서 저염 섭취를 위한 행동 변화들이 유지될 수 있는 영양교육 내용이 보완되어야 할 것으로 생각된다.

Effects of Sources and Levels of Dietary Carbohydrate on Growth and Body Composition of Juvenile Sea Cucumbers, Apostichopus japonicus

  • A factorial feeding trial of different levels of three carbohydrate sources (wheat flour, $\alpha$-potato starch, and sodium alginate) was conducted to determine proper sources and levels of dietary carbohydrate for juvenile sea cucumbers. Three replicate groups of juvenile sea cucumbers (770 mg average weight) were fed the experimental diets once a day for 10 weeks. After feeding trial, survival of sea cucumbers was not significantly different between diets. The body weight of sea cucumbers was significantly (P<0.01) affected by both source and level of dietary carbohydrate, tending to decrease as dietary carbohydrate level increased. Body weight of sea cucumbers fed a 25% wheat flour diet was the highest but was not significantly different from that of sea cucumbers fed diet containing 10% wheat flour with 15% sodium alginate (P>0.05). No significant differences were observed in contents of moisture, crude protein, crude lipid and ash of sea cucumbers among dietary treatments. These results suggest that sea cucumbers utilize wheat flour and sodium alginate more efficiently than they do $\alpha$-potato starch, and that a formulated diet containing 43-60% carbohydrate may be suitable for juvenile sea cucumber culture.

Effect of Limited Oxygen Supply on Coenzyme $Q_{10}$ Production and Its Relation to Limited Electron Transfer and Oxidative Stress in Rhizobium radiobacter T6102

  • Coenzyme $Q_{10}$ ($CoQ_{10}$) production from Rhizobium radiobacter T6102 was monitored under various oxygen supply conditions by controlling the agitation speeds, aeration rates, and dissolved oxygen levels. As the results, the $CoQ_{10}$ production was enhanced by limited oxygen supply. To investigate whether the $CoQ_{10}$ production is associated with its physiological functions of electron carrier and antioxidant, the effects of sodium azide and hydrogen peroxide on the $CoQ_{10}$ production were studied, showing that the $CoQ_{10}$ contents were slightly enhanced with increasing sodium azide (up to 0.4 mM) and hydrogen peroxide (up to $10\;{\mu}M$) concentrations. These results suggest the plausible mechanism where the limited electron transfer stimulating the environments of limited oxygen supply and oxidative stress could accumulate the $CoQ_{10}$, providing the relationship between the $CoQ_{10}$ physiological functions and its regulation system.

식용 버섯류의 무기물 함량 (Studies on the Mineral Content of Edible Mushrooms)

  • To investigate on the trace element content of twelve edible mushrooms and Aloe arborescens, i. e., Lentinus edodes, Ganoderma lucidum (culturing in wood and soil), Tricholoma matsutake, Agaricus bisporus, Cyrophora esculenta, Auricularia auricula-Jude (produced in Korea and China), Sarcodon asparatus, Pleurotus ostreatus, Coriolus versicolor, Smilax rotundifolia and Aloe arborescerts were analyzed by Atomic absorption spectrometer. The obtained results were summerized as follows: 1. Potassium, sodium, magnesium and iron content for the most part samples were in large quantities, especially phosphorus content of those was highest ammount for the all samples. 2. Sodium content was much ammount in the Lentinus edodes (39mg) and Ganoderma lucidurn (20 mg), Culturing in wood and soil, while potassium was very high ammount in the Aloe arborescens and other samples. Mush ammount of magnesium as compared with others was Lentinus edodes (144mg), Ganoderma lucidurn (128mg), Aloe arborescerts (50mg) and pleurotus ostreatus (60mg). Phosphorus content of Ganoderma lucidurn, Lentinus edodes, Gyrophora esculenta, Auricularia polytricha and Agaricus bisporus was much ammount while iron content of all samples equality higher ammount. Sodium content of Aloe arborescens was not analyzed out for almost all, its potassium (82mg), magnesium (50mg) and iron (18rng) content comparatively higher quentity than others minerals and phosphorus volume (4.9mg) as compared with others, was conspicuously lower detect. 4. Cadimium and lead content of harmful metal element were detected on trace quentity for the most part samples 5. Organic acids of samples i.e., Legtinus edodes, Agaricus bisporus, Pleurotus ostreatus and Ganoderma lucidum were Citrate, Malate, Fumalate, Succinate, Oxalate, Acetate, Lactate, and Tartarate and Citrate, Malate and Fumarate contents were higher amount remarkbly than other organic acids. Tartarate content was trace amount.

Influence of Curing and Heating on Formation of N-Nitrosamines from Biogenic Amines in Food Model System using Korean Traditional Fermented Fish Product

  • The myeolchi-jeot samples were divided into different groups with or without the supplementation with biogenic amines. Subsequently, the samples were placed in an oven at $80^{\circ}C$ for 1 hr to allow the chemical reaction to proceed, and then were analyzed for N-nitrosamine contents using GC-TEA. N-nitrosamine was not detected in any of the myeolchi-jeot samples which had been treated with/without sodium nitrite. On the other hand, the yield of N-nitrosopyrrolidine from 1,000 mg/kg of putrescine and spermidine in the myeolchi-jeot samples (treated with 5 mg/kg of sodium nitrite) was 0.002 and 0.014%, respectively. N-nitrosamine was not produced from any other biogenic amines like, histamine, tyramine, cadaverine and spermine. In addition, curing and heating were the factors which influenced the formation of N-nitrosamine during the nitrosation of biogenic polyamines. For the formation of N-nitrosamine in the food systems, treatment with sodium nitrite and heating at appropriate temperature along with the satisfied supplementation of biogenic polyamines are required.

Assessment of compressibility behavior of organic soil improved by chemical grouting: An experimental and microstructural study

  • Tropical organic soils having more than 65% of organic matters are named "peat". This soil type is extremely soft, unconsolidated, and possesses low shear strength and stiffness. Different conventional and industrial binders (e.g., lime or Portland cement) are used widely for stabilisation of organic soils. However, due to many factors affecting the behaviour of these soils (e.g., high moisture content, fewer mineral particles, and acidic media), the efficiency of the conventional binders is low and/or cost-intensive. This research investigates the impact of different constituents of cement-sodium silicate grout system on the compressibility behaviour of organic soil, including settlement and void ratio. A microstructure analysis is also carried out on treated organic soil using Scanning Electron Micrographs (SEM), Energy Dispersive X-ray spectrometer (EDX), and X-ray Diffraction (XRD). The results indicate that the settlement and void ratio of treated organic soils decrease gradually with the increase of cement and kaolinite contents, as well as sodium silicate until an optimum value of 2.5% of the wet soil weight. The microstructure analysis also demonstrates that with the increase of cement, kaolinite and sodium silicate, the void ratio and porosity of treated soil particles decrease, leading to an increase in the soil density by the hydration, pozzolanic, and polymerisation processes. This research contributes an extra useful knowledge to the stabilisation of organic soils and upgrading such problematic soils closer to the non-problematic soils for geotechnical applications such as deep mixing.

Characteristics of Endosperm Starch of the Rice Mutant Lines Induced by Sodium Azide

  • Rice consumption per capta, in South Korea, has been decreased dramatically, owing to the changes of living patterns. Because of not only the major energy source of Korean people but also major income source of Korean farmers, diversifying end-use-quality of rice has been demanded. To the context, 'Suweon 472', a high yielding and early mature japonica line and released as 'Namilbyeo' to framers in 2002, was treated with a chemical mutagen, Sodium Azide to find endosperm mutant types. A total of nine endosperm mutat lines, including five waxy, one dull, two floury, and one white core type, were identified from the 3,542 mutatagen treated lines. Amylose contents, iodine reaction, disintegration in alkali solution, gelatinization in urea solution and amylogram properties of those nine endosperm mutant lines were evaluated to address the possibility as new genetic materials for diversifying rice quality of Korean japonica cultivars. All embryo mutants were clearly differentiated from their wild type, 'Suweon 472', in terms of physic-chemical properties evaluated. The endosperm mutant lines would be very useful in expanding untiliztation of rice through opening new rice markets of processed foods from Korean japonica rice.

서울지역 유통 반찬류의 나트륨, 칼륨 함량 및 식중독균 오염도 조사 (Contents of Sodium, Potassium and Food-borne Pathogens Contamination of Side Dishes Distributed in Seoul Area)

  • 나트륨 저감화를 위한 식생활 기초자료를 확보하고자 서울지역 백화점, 대형마트, 재래시장 등에서 포장되어 판매되는 반찬류를 대상으로 나트륨 및 칼륨 함량을 조사하였다. 반찬류 22종류 92건의 100 g당 평균 나트륨 함량 및 칼륨 함량은 각각 $893.5{\pm}449.7mg/100g$, $307.4{\pm}213.5mg/100g$으로 나타났다. 조림류의 나트륨 함량이 $1,003.6{\pm}322.2mg/100g$으로 가장 높았으며, 조리방법에 따른 평균 나트륨 함량은 조림류, 무침류, 나물류로 조사되어 나물류가 나트륨을 적게 섭취할 수 있는 반찬유형으로 적합할 것으로 사료된다. 조림류와 무침류의 나트륨함량은 나물류와 통계적으로 유의한 차이가 있었다. 주요 반찬류의 1회 제공량당 나트륨 함량은 174.9~404.5 mg으로, 세계보건기구의 1일 최대 권고량(2,000 mg)대비 섭취비율이 8.7~20.2% 수준으로 나타났다. 멸치조림, 콩나물, 파래무침의 1회 분량 당 나트륨 섭취비율은 각각 WHO 권고량의 14.2%, 15.5%, 20.2%로 나타나, 3가지 반찬을 동시에 섭취한다고 가정하면 1일 최대 권고량의 약 50%(1,000 mg)를 섭취하게 된다. 그러므로 식단을 작성할 때 나트륨 함량 등을 고려하여 반찬을 선택하고, 즉석반찬의 표준 저염조리법 개발 및 포장반찬의 나트륨 함량 표시도 적극적으로 시행하여 소비자에게 선택권을 제공하여야 할 것으로 생각된다. 칼륨/나트륨 비는 나물 0.51, 무침 0.40, 조림 0.37로 반찬유형별로 유의한 차이가 없었다. 시금치나물 및 콩조림에서 각각 1.70, 0.81로 나타났으며, 고사리는 0.09로 나타났다. 칼륨/나트륨비가 1 이상이면 고 나트륨 섭취에 의한 고혈압 예방 및 개선효과가 있다고 보고되어 식단표 작성에 참고하면 유용할 것이다. 서울시내 일부 백화점, 대형마트, 재래시장 내 반찬가게에서 구입한 나물류 20건, 무침류 34건, 조림류 38건 총 92건 반찬시료에서 식중독균은 모두 검출되지 않았다.

The Effect of the Pretreatment Print Paste Contents on Colour Yield of an Ink-jet Printed Cotton Fabric

  • Optimum condition concerning the content of pretreatment print paste and steaming time for ink-jet printing was newly developed through the orthogonal analysis. The cotton fabric treated under the newly developed optimum condition could achieve a high level of colour yield similar to that of the commercially pretreated cotton fabric available in the market for ink-jet printing. The results were discussed thoroughly in this paper.
