Quality Characteristics of Noodle Supplemented with Skate (Raja kenojei) Skin and Bone Powder (홍어 분말 첨가에 따른 국수의 품질 특성)

  • This study evaluated the quality characteristics of dried noodles made of wheat flour supplemented with different concentrations of skate powder. Cooking quality, mechanical texture properties, gelatinization temperature and viscosity were measured, after which sensory evaluation was performed with prepared noodles. Water binding capacity, solubility and swelling power of the composite skate powder and wheat flours were higher than those of pure wheat flour. Gelatinization temperature of the composite skate powder and wheat flours increased, while initial, interim, and maximum-viscosity at $95^{\circ}C$, decreased, with increasing skate powder content. In relation to color values, increasing skate flour content led to decrease in L and b values and increase in a value. For the textural characteristics, the addition of skate powder increased hardness, springiness, chewiness and adhesiveness. Overall, noodles made with 3% skate powder were preferred compared to other samples.

Welfare Interface using Multiple Facial Features Tracking (다중 얼굴 특징 추적을 이용한 복지형 인터페이스)

  • We propose a welfare interface using multiple fecial features tracking, which can efficiently implement various mouse operations. The proposed system consist of five modules: face detection, eye detection, mouth detection, facial feature tracking, and mouse control. The facial region is first obtained using skin-color model and connected-component analysis(CCs). Thereafter the eye regions are localized using neutral network(NN)-based texture classifier that discriminates the facial region into eye class and non-eye class, and then mouth region is localized using edge detector. Once eye and mouth regions are localized they are continuously and correctly tracking by mean-shift algorithm and template matching, respectively. Based on the tracking results, mouse operations such as movement or click are implemented. To assess the validity of the proposed system, it was applied to the interface system for web browser and was tested on a group of 25 users. The results show that our system have the accuracy of 99% and process more than 21 frame/sec on PC for the $320{\times}240$ size input image, as such it can supply a user-friendly and convenient access to a computer in real-time operation.

Antibacterial Activity and Cream Stability of Quercus salicina Blume Extract (참가시나무 추출물의 항균 활성 및 크림 안정성 평가)

  • The antibacterial effect of Quercus salicina Blume extract was investigated and then the stability of a cream containing it best performing fraction, the ethyl acetate fraction, was evaluated. The antibacterial effect was evaluated on the skin microorganisms Staphylococcus aureus, Bacillus subtilis, Propionibacterium acnes, Escherichia coli, and Pseudomonas aeruginosa. Among the Q. salicina Blume extract fractions, the ethyl acetate fraction demonstrated the lowest minimum inhibitory concentration against S. aureus (1,200 ${\mu}g/ml$), B. subtilis (2,500 ${\mu}g/ml$), P. acnes (1,200 ${\mu}g/ml$) and P. aeruginosa (312 ${\mu}g/ml$). Therefore, a cream containing 0.25% ethyl acetate fraction of Q. salicina Blume extract was prepared and evaluated for stability. The pH, viscosity, and absorbance of the cream were measured under various temperatures (4, 20, 37, $45^{\circ}C$) and sun light during a 12 week period. The changes in viscosity, absorbance and pH of the cream did not change significantly during the term of the experiment when compared with a placebo cream. In addition, any change in color or odor of the cream was not observed during the 12 weeks. These results indicate that the ethyl acetate fraction of Q. salicina Blume extract has a high antibacterial effect and is stable as a cream. There is therefore some potential for its use in cosmetic materials.

Usefulness of External Monitoring Flap in the Buried Jejunal Free Flap (유리 공장 피판술 후 외부 감시 피판의 유용성)

  • Purpose: The jejunal free flap has the shorter ischemic time than other flap and requires a laparotomy to harvest it. As the evaluation of the perfusion the buried flap is very important, the perfusion of the buried jejunal free flap requires monitoring for its salvage. We tried to improve the monitoring flap method in the jejunal free flap and examined its usefulness. Methods: From March 2002 to March 2006, the monitoring flap method was applied to 4 cases in 8 jejunal free flaps for the pharyngeal and cervical esophageal reconstructions. The distal part of the jejunal flap was exposed without suture fixation through cervical wound for monitoring its perfusion. The status of perfusion was judged by the color change of jejunal mucosa and mesentery. If necessary, pin prick test was performed. Doppler sonography was applied to mesenteric pedicle of the monitoring flap in case of suspicious abnormal circulation. Results: The monitoring flap shows no change in 3 cases, but the congestion happened in one case at the 12 hours after the operation. This congestion was caused by the twisting or kinking of the mesenteric pedicle of the monitoring flap. So, we fixed up the monitoring flap close to adjacent cervical skin for prevention of rotation. Finally, the main part of transferred jejunal flap was intact. Conclusion: The success of a jejunal free flap depends on close postoperative monitoring and early detection of vascular compromise. So, various monitoring methods have been tried, for instance, direct visualization using a fiberoptic pharyngoscope, through a Silastic window placed in the neck flap, or external surface monitoring with an Doppler sonography, use of a buried monitoring probe. But, all of the above have their own shortcomings of simplicity, non-invasiveness, reliability and etc. In our experience, monitoring flap can be a accurate and reliable method.

The facial tissue expansion to achieve the natural cervicomental angle (자연스러운 목턱각 성형을 위한 안면부 조직확장술)

  • Purposes: Wide scars occurring on the lower face and neck are a source of both functional and esthetic problems. Consequently, we can use skin grafts, pedicled flaps, free flaps, and tissue expansion for the reconstruction of this area. Compared with other reconstruction techniques, tissue expansion is advantageous in that it enables the maintenance of a color and texture similar to that of the adjacent tissue. However, the conventional method of tissue expansion has been reported to lead to an unnatural cervicomental angle and to the deformity of adjacent structures. We have therefore made efforts to prevent these problems through the use of several operative procedures. Methods: Forty-one patients with lower facial and cervical scars underwent tissue expansion. The tissue expansion was performed using a rectangular-shaped Nagosil$^{(R)}$ tissue expansion device. On insertion of the tissue expander, the intermediate area of superficial fat layer was dissected and then the tissue expander was inserted to make a flap that was as thin as possible. In advancement of the flap, a capsule-formed by the tissue expander-was used for the interrupted fixed suture of the flap to the fascia of the platysma muscle of the neck. This procedure was performed multiple times and also performed between the flap and the periosteum of the mandible, such that the tension was removed during the suture of the flap margin. Finally, the patients were fitted with a Jobst$^{(R)}$ facial garment in order to stabilize the operation site at least twelve months. Results: The most prevalent location of the scar was the cheek (15 cases), followed by the chin in 14 cases and the neck in 12 cases. The mean size of scar was $55.7{\pm}39.4cm^2$. Conclusions: Using our procedures, we have experienced no significant deformities and have also achieved a more natural cervicomental angle in the patients.

Breeding of 'Daewang' Strawberry for Forcing Culture with Good Taste and Fragrance (맛과 향이 좋은 촉성재배용 딸기 '대왕' 품종의 육성)

  • A new cultivar 'Daewang' strawberry was developed by the National Institute of Horticultural & Herbal Science for forcing culture in 2010. The cultivar 'Daewang' was originated from the cross between 'Maehyang', a high firmness cultivar and 'Wongyo 3111', a high sugar content in 2006. The cultivar shows erect plant type, vigorous growth habit, early flower bud differentiation with 12-15 flowers per cluster from planting on healthy nursery. Fruits of 'Daewang' are conical type having a bright red skin color, and 16-17 g in an average weight. 'Daewang' is suitable for forcing culture as time required for dormancy breaking ranged between 50 and 100 hours. This cultivar has excellent taste for high sugar/acid ratio as sugar content of $11.1^{\circ}Brix$, acidity of 0.39% with abundant texture and can be harvested by late spring because the fruit firmness of 'Daewang' was $18.2g{\cdot}mm^{-2}$ that was about $7.9g{\cdot}mm^{-2}$ higher than $10.3g{\cdot}mm^{-2}$ of 'Akihime' cultivar. But although total yield is not significantly different from 'Akihime' cultivar, its marketable yield is remarkably higher than that of 'Akihime' cultivar. Disease and pest resistance of 'Daewang' have a tendency to sensitive powdery mildew, anthracnose and spotted spider.

Breeding of a New Late-season Pear Cultivar 'Mansoo' with Large Sized High Quality and Long Storability (저장력 강한 고품질 대과 만생종 배 '색수(晩秀)' 육성)

  • 'Mansoo' is a late-season pear cultivar with extra large and high quality fruit of long storability, which was released by National Horticultural Research Institute in 1995. The cultivar originated from the cross between 'Danbae' and 'Okusankichi' at Suwon in 1978, had been under regional adaptability test at nine areas in the name of 'Wonkyo Na-15' for 4 years since 1992. It was vigorous in tree growth and upright in tree shape. Its flower bud is easily maintained, resulting in higher productivity than 'Danbae' and 'Okusankichi'. It bloomed a day later than 'Niitaka', and showed cross-compatibility with 'Niitaka', 'Chojuro' and some other varieties. Harvesting time of 'Mansoo' is late October in Suwon. The fruit shape is oblate and skin color is light yellowish brown. The fruit weighed 600-700 g and has 12-13% soluble solids content. The flesh is soft, juicy, and has negligible grit. It is resistant to black leaf rot (Alternaria kikuchiana Tanaka).

Breeding of "Wongyo 3111", Intermediate Strawberry Parent Line with High Sugar Content and Large-sized Fruit (고당도 대과성 특성을 지닌 중간모본용 딸기 "원교 3111호" 육성)

  • Strawberry is an out-crossed crop that is relatively sensitive to inbreeding, and as a result, most of breeding programmes in strawberry have been based on selection breeding where elite parents are selected from intercrossing. Also, pedigree breeding has been successfully employed in a number of instances to concentrate genes of interest. Therefore, in order to obtain inbred line having the genotype of excellent combining ability by selfing and incrossing to improve breeding efficiency of strawberry, elite varieties were self-pollinated. From the selfing line of "Benihoppe" cultivar, we selected "Wongyo 3111" having excellent horticultural traits such as plant vigor, sugar content and fruit hardness among these progenies. "Wongyo 3111" shows erect plant type, vigorous growth habit, early flower bud differentiation with 16~17 flowers per cluster. Fruits of "Wongyo 3111" are conical type having a bright red skin color, and 17.2 g in an average weight. Also that have a relatively more high sugar/acid ratio and firmness than check cultivars as sugar content of 11.3oBx, acidity of 0.50% and firmness of 21.7 g/$mm^2$. But although yield of "Wongyo 3111" is not significantly different from check cultivars, its marketable yield is remarkably lower than that of check cultivars because of poor fruit-setting under low temperature. Disease and pest reactions of "Wongyo 3111" are more sensitive to powery mildew, anthracnose and spotted spider mites than check cultivars. Therefore, "Wongyo 3111" is suitable for intermediate parent line better than as a cultivation cultivar.

Scab (Venturia nashicola) Resistant Pear, "Wonkyo Na-heukseong 2" (배 검은별무늬병 저항성 "원교 나-흑성 2호")

  • "Wonkyo Na-heukseong 2" was selected from a cross between "Kiyomaro", late season European cultivar with highly resistance and "Mansoo", late season Asian cultivar with long storability, large size and low susceptibility to pear scab made in 1997 at the National Institute of Horticultural & Herbal Science of Rural Development Administration in Korea. "Kiyomaro", released cross between "Taiheiyo" and "Bartlett" with scab resistance caused by Venturia nashicola in Japan, with no visual symptoms on any leaves was used as scab resistant source after field investigation and artificial inoculation test during 1997~1999. "Wonkyo Na-heukseong 2" blooms 1 day earlier than "Mansoo" and 3 days later than "Kiyomaro" in 2008. It is strong in tree vigor and upright-spreading in tree habit. It is classified as highly resistant to pear scab as "Kiyomaro" and "Bartlett", and cross-compatible with parental variety and Korean major pear varieties such as "Niitaka" and "Wonwhang". The average optimum harvest time of "Wonkyo Na-heukseong 2" was approximately 180 days after full bloom and it matured about 20 days shorter than parental varieties. The fruit is spindle in shape and yellowish greenish brown in skin color. Average fruit weight was 484 g and soluble solids content was $13.2^{\circ}Brix$. The flesh had medium to high juice and negligible grit. Its fruit was crisp like Asian pear.

Study on the Bioactive Characteristics of Morinda citrifolia as a Cosmetic Raw Material (화장품 소재로서의 노니 추출물에 관한 특성연구)

  • This study attempted to investigate the possibility of the use of Morinda citrifolia (MC) as a cosmetic ingredient from its physiological activities such as antioxidant activity, cytotoxicity and anti-aging effect. MC is a tropical plant that has been used as traditional polynesian foods and medicines for over two thousand years. It has been reported that this shrub can improve antimicrobial, anti-cancer and anti-inflammatory effects and strengthen an immune system. The in vitro antioxidant activity of MC was performed to see the DPPH scavenging activity by measuring total polyphenol content and total flavonoid content. As a result, a lack of any cytotoxicity was confirmed in human dermal fibroblasts (HDF) cell. When MC extract at a concentration of over $50{\sim}100{\mu}g/mL$ was added, MMP-1 expression considerably diminished. In an in vivo test, in addition, cream containing MC extract was prepared and applied to a total of 22 women in their 30 ~ 50s in ages in the morning and in the evening for four weeks. Changes in keratin, melanin index, pore, skin color and wrinkles under the naked eyes were then comparatively measured. Keratin levels slightly increased in the control group but decreased in the experimental group. In addition, wrinkles diminished in the experimental group. This study found that MC extract controls many MMP-1 related mechanisms with great potential for use as a natural ingredient of anti-aging cosmetics.
