Comparison of Quality Characteristics between Imported Skate Rays (수입산 홍어류의 품질 특성 비교)

  • This study was conducted to compare quality characteristics of imported skate rays. The moisture content was higher in imported skate rays than in domestic mottled skate, while the protein content displayed a contrasting pattern. From measurements of the volatile basic nitrogen content, pH, viable cell counts, and urea and ammonia contents, the freshness of skate rays imported from Chile, Canada and Uruguay was considered to be inferior to domestic mottled skate, while the freshness of skate rays imported from the USA was similar. The measurement of physicochemical properties revealed that four kinds of imported skate rays were of inferior quality, as compared to domestic mottled skate.

Fishing characters of skate ray, Raja pulchra by the offshore longline fishery in Heuksan-do, Korea (흑산도 근해연승어업의 참홍어 (Raja pulchra) 어획 특성)

  • Catches, CPUE, fishing season, disc width composition and fishing ground were studied to rebuild skate ray, Raja pulchra resource by the offshore longline fishery in Heuksan-do, Korea. Annual catches and CPUE of skate ray were increased from 2003 to 2010 (CPUE: from 2007 to 2010) continuously. The main fishing season of the skate ray was from December to next May. Disc width at 50% maturity for Raja pulchra by sex were estimated to be 65.83cm, 57.01cm by female and male respectively. The range of disc width was 22.3-112.0cm and the average disc width was 66.9cm, 60.0cm by female and male of Raja pulchra respectively during 2007-2010. Annual average of disc width of female skate ray was decreased from 2007 to 2010. The fishing grounds were formed from the coastal water off Hong-do to the coastal water off Gyeogyeolbiyeol-do, Korea. The center of fishing ground in October was formed in the northwestern coastal water off Gyeogyeolbiyeol-do and separated from that of the other months.

  • The feeding habits of ocellate spot skate (Okamejei kenojei) were studied by analysis of stomach contents. Specimens of O. kenojei (n=379) were collected in the cosatal waters five west Islands of the Korea, monthly from January to December 2019. The size of O. kenojei ranged from 5.9 to 34.5 cm in disc width (DW). O. kenojei was consumed mainly macrura (77.9%) and pisces (21.9%) in % IRI. But, brachyura, stomatopoda, cephalopods, and others showed a low ratio. The macruara feeding rate was highest in summer, whereas the proportion of pisces was the higher in winter than other seasons.

A Comparison of the Taste and Nutritional Properties of Domestic Mottled Skate Beringraja pulchra according to the Area Caught, Sex, and Weight (지역, 성별 및 중량에 따른 참홍어(Beringraja pulchra)의 맛 및 영양 성분 비교)

  • This study investigated the taste and nutritional properties of domestic mottled skate Beringraja pulchra as affected by the area caught, sex, and weight. Regardless of these three parameters, free amino acids comprised the main factor affecting taste in all B. pulchras. Taste values for B. pulchra ranged from 2.24 to 3.61, which were much lower than values for other fish. The total amino acid content in B. pulchra ranged from 18.82 to 21.34 g/100 g, similar to values in other fish. The major amino acids affecting both the taste value and total amino acid in B. pulchra were glutamic acid, aspartic acid, and lysine. Mineral content in B. pulchra was as follows: calcium, 252.7-288.3 mg/100 g; phosphorus, 248.2-269.3 mg/100 g; potassium, 345.9-389.5 mg/100 g; magnesium, 24.1-26.7 mg/100 g; and iron, 0.4-0.7 mg/100 g. Based on the results of free amino acid and taste value (used as an indicator to evaluate taste), and total amino acid and minerals (used as an indicator to evaluate nutritional value), the taste and nutritional properties of B. pulchra were not influenced by the area caught or weight, but were affected by the sex of the fish.

  • The purpose of this study was to search the calcium and iron rich foods in Korean people. The food sources presented in the current home economics textbooks of middle and high school were investigated. And 40 kinds of calcium and iron rich foods were selected by the quantity in 100g edible portion. one serving size and according to 1997 food supply data. Also 3 major food groups of calcium and iron supply in Korean were identified, and 10 rich foods for each food groups were selected. The results were summarized as follows. 1. The food sources of calcium 1) The food sources of calcium presented in the home economics textbooks of middle and high school are milk and dairy products. small fishes such as anchovy icefish and dried strip and green vegetables etc. 2) The calcium rich foods by 100g edible portion were in order of skim milk powder river snail sesame sea mustard. whole milk powder. snapping turtle loach sea tangle(dried) opossum shrimp and sea lettuce(dried). And the calcium rich foods by the calcium content in one serving were in order of river snail snapping turtle opossum shrimp loach spiny lobster skate skim milk powder small alaska pollack freshwater crab condensed milk whole milk powder skate ray and milk. 3) The 3 major calcium supply food groups in Korean were vegetables fish and shellfishes and milk and dairy products. 4) The calcium supply foods according to the quantity of food supply in 1997 was in order of sea mustard, milk anchovy chinese cabbage soybean skin milk powder laver shrimp welsh onion and maize. The vegetables were the important sources of calcium in Korean. 2. The food sources of iron 1) The food sources of iron which are commonly presented in the textbooks of middle and high school were meat liver egg(egg yolk) and green vegetables etc 2) The iron rich foods on the basis of the iron content in 100g edible portion were in order of surf clam marsh clam laver(dried)( sea lettuce(dried), crayfish pelilla seed little neck clam orient hard clam, venus clam, and freshwater carab. And the iron rich foods by the iron content in one serving were in order of surf clam marsh clam crayfish little neck clam orient hard clam freshwater crab venus clam hen cockle green confertii(fresh) pen shell and spiny lobster. 3) The 3 major iron supply food groups in Korean were cereals an cereal products fishes and shellfishes and vegetables. 4) The iron supply food according to the quantity of food supply in 1997 was in order of soybean sea mustard maize rice meat edible viscera laver wheat flour, pook, red pepper, egg and bovine meat.

Catching Efficiency of Gill Net and Trammel Net for Ceramic Artificial Reefs Fishing Ground in the Coastal Area of Geomun-do, Korea (한국 거문도연안 세라믹어초어장에서의 홑자망과 삼중자망에 의한 어획성능)

  • It has been, in general, known that the catching efficiency of a trammel net is better than that of a gill net because of the variability of catch species and size. In this stidy, A fishing gear test was carried out to analyze the catching efficiency of the gill net and the trammel net on the coast of Geomun-do of southern Korean waters and fish school aggregation was also investigated using a underwater video camera. CPUE of the gill net was 49.2% higher than the trammel net but fish species was 34.5% lower where there was no difference on the significance level of 5% by ANOVA test. Main catch species caught by the gill net were red seabream(Pagrus major) and triggerfish(Aluterus monoceros), skate ray(Raja Kenojei) and red seabream for the trammel net, and the average body length of red seabream was shorter than the trammel net. It was thought that the reason of higher catch in the gill net than the trammel net was a fish school which can be caught easily by gill net and the size of population was suitable for the gill net.

Development of Species-Specific PCR to Determine the Animal Raw Material (종 특이 프라이머를 이용한 동물성 식품원료의 진위 판별법 개발)

  • In this study, the detection method was developed using molecular biological technique to distinguish authenticity of animal raw materials. The genes for distinction of species about animals targeted at Cytochrome c oxidase subunit I (COI), Cytochrome b (Cytb), and 16S ribosomal RNA (16S rRNA) genes in mitochondrial DNA. The species-specific primers were designed by that Polymerase Chain Reaction (PCR) product size was around 200 bp for applying to processed products. The target 24 raw materials were 2 species of domestic animals, 6 species of poultry, 2 species of freshwater fishes, 13 species of marine fishes and 1 species of crustaceans. The results of PCR for Rabbit, Fox, Pheasant, Domestic Pigeon, Rufous Turtle Dove, Quail, Tree Sparrow, Barn Swallow, Catfish, Mandarin Fish, Flying Fish, Mallotus villosus, Pacific Herring, Sand Lance, Japanese Anchovy, Small Yellow Croaker, Halibut, Jacopever, Skate Ray, Ray, File Fish, Sea Bass, Sea Urchin, and Lobster raw materials were confirmed 113 bp ~ 218 bp, respectively. Also, non-specific PCR products were not detected in compare species by species-specific primers. The method using primers developed in this study may be applied to distinguish an authenticity of food materials included animal raw materials for various processed products.

Analysis of Nutrient Composition of Baechu Kimchi (Chinese Cabbage Kimchi) with Seafoods (수산물을 첨가한 배추김치의 영양성분 분석)

  • The nutrient composition, including the proximate composition and the mineral, vitamin, amino acid, and free-amino-acid levels, of baechu kimchi (Chinese cabbage kimchi) to which 14 kinds of seafood (flatfish, yellow corvina, sea beam, pollack gizzard shad, ray, gray mullet, skate, hairtail, anchovy, sea squit, pen shell, scallop, small octopus)were added was analyzed. The seafoods were added to salted cabbage at concentration of 10% (w/w) and the prepared seafood baechu Kimchi (BK) was stored at $5^{\circ}C$ for seven days. The levels of moisture (82.09-88.56%), crude lipid (0.31-0.64%), and crude ash (2.70-3.50%) did not differ much among the samples, but the level of crude protein of the BK-with-seafood samples (2.42-5.15%) was greater than that of the control BK (2%), without seafood. The Fe and Ca contents of BK with flatfish showed the highest values (4.1 and 74 mg/100 g, respectively). The vitamin A contents of BK samples with 14 different kinds of seafood were higher than that of the control BK. Moreover, the BK with sea squit had higher vitamin $B_2$ (0.90 mg/100 g) and vitamin C (8.48 mg/100 g) contents among all the BK-with-different-kinds-of-seafood samples. Total amino acids were detected in all BK-with-seafood samples, most of which had high levels of glutamic acid, aspartic acid, proline and alanine. Glutamic acid was the most abundant of all the amino acids. The major free amino acids were hydroxyproline, glutamic acid, alanine, proline, leucine, and valine, of which hydroxyproline was the most abundant. In conclusion, BK with seafood is thought to be a very good source of protein, which is very important from dietary life of humans.
