Influence of Dietary Sea Urchin Shell Powder on Physico-Chemical Properties of Chicken Meat (성게 껍질 분말의 급여가 계육의 이화학적 특성에 미치는 영향)

  • The experiment was conducted to study the effect of sea urchin shell powder (SUSD) on the sensory evaluation, meat color, fatty acid and amino acid contents of chicken meat. One hundred sixty broilers were fed diets for five weeks containing 0, 1, 3 and $5\%$ of sea urchin shell powder. The shear forces of the treatment groups were higher than the control uoup and the water holding capacity (WHC) was higher in the control group (P<0.05). The heating loss and pH were not significantly different between control and treatment groups (P<0.05). The hardness, juiciness and flavor evaluated by sensory evaluation were improved by treatments, especially in T2 (P<0.05). The meat color of the treatments group showed redder and darker than that of the control group owing to lower L$\ast$ and higher a$\ast$ value. Among fatty acids, oleic acid contents of the treatment groups were higher than that of the control group. The treatment groups showed a significantly higher total amino acid content (P<0.05) compared to the control group. The results of this experiment indicated that dietary SUSP tended to improve the sensory evaluation.

Studies on the Processing of Sauce by using Red Crab Shell (붉은 대게 껍질을 이용한 소스 제조에 관한 연구)

  • The moisture contained in conventionally extracted red crab shell samples was lower than than in samples extracted using high pressure. In contrast, ash content increased as the extraction time increased and displayed no significant variation in high pressure extraction. Extraction time was influential, with lower lightness (L-value) being obtained in samples extracted at high pressure as compared to traditional extraction. However, large variation in a- and b-values resulted from traditional extraction. For both traditional and high pressure extraction increases in pH, salinity and saccharide content were noted with increasing extraction time, but these parameters did not vary substantially in red crab shell extracted at high pressure. The mineral content in samples extracted by high pressure was higher than in traditionally extracted samples. The mineral content increased with time, with marginally higher contents of essential amino acids and flavor enhancing amino acids noted following high pressure extraction. The contents of the flavor enhancing amino acids increased from 30?60 min, thereafter decreasing. Assessment of consumer acceptance revealed that, while traditionally manufactured red crab sauce was popular, sauce manufactured using a 60 min high pressure extraction was preferred. Extending the high pressure extraction time to 75 min produced a less sensory acceptable product, due to higher mineral and protein levels.

Study on the Soil Improvement in the Grassland I. Effects of the dolomite particle and the shell powder application on soil characteristics, dry matter yield and nutritive value of forages in loam soil (초지에서 토양 개량에 관한 연구 I. 양토에서 도로마이트 입자도와 패각분 시용이 토양특성과 목초의 수량 및 사료가치에 미치는 영향)

  • This study was conducted to investigate the effects of application of the dolomite particle and the shell powder on soil characteristics, dry matter yield and nutritive value of forages in loam soil at the experimental field of National Livestock Research Institute, Suwon, from 1994 to 1996. Application treatments were control, lime, dolomite 0.5, 2.0, 4.0mm, and shell powder in mixed pasture. Rate of dust occurrence was greatly decreased according to dolomite application and the dissolving rate in soil was highest in shell powder application among treatments. Although there was no significant difference, average dry matter yield of forages for 3 years was slightly increased with the application of lime, shell powder, dolomite 0.5mm, 4.0mm, 2.0mm and control in order. Both Ca and Mg contents of forages were no differences among treatments in 1994. However, all treatments were higher than those of control in 1995. And K and Na contents of forages were no differences among treatments. Lime requirement was greatly increased from 2,630 to 6,150kg per ha with the lapse of time. Although soil hardness was optimum level at first, it was likely to become hard little by little after treatments. Solid phase of soil was lowered a little except for control. Organic matter and available $P_2O_5$ contents of soil were highest in shell powder application among treatments, and K, Ca and Mg contents of soil were no differences among treatments. Ca content was increased a little in 1995, but decreased a little in 1996 compared to that of soil before treatments in 1994. AIso, Mg content was lowered than that of soil before experiment in 1995 and 1996. The results demonstrated that use of dolomite and shell powder as lime substitutes could be reduced dust problem and coast pollution as well as soil improvement. Therefore, it is desirable to apply the dolomite and the shell powder every 3 years in loam soil.

Effects of Chestnut Inner Shell Powder on Antioxidant Activities and Quality Characteristics of Pork Patties (율피분말 첨가가 돈육 패티의 항산화 활성과 품질특성에 미치는 영향)

  • This study was conducted to investigate the effects of chestnut inner shell powder on antioxidant activities and quality characteristics of pork patties. Patties were prepared with different amounts of chestnut inner shell powder (0, 1, 3, and 5% of pork quantity). The total phenol contents and DPPH free radical scavenging activities of the patties significantly increased with increasing amount of chestnut inner shell powder. The moisture content and pH of row patties were not significantly different between the control group and treatment groups. The cooking loss rate significantly decreased with increasing chestnut inner shell powder amount. Reduction ratio of the diameter of experimental patties was lower than that of the control patties, although it was not significant. As the content of chestnut inner shell powder increased, L-value decreased while a-value increased in both row patties and cooked patties. However, b-value changed upon heating. The b-value of row patties also increased with increasing chestnut inner shell powder content, whereas the b-value of cooked patties decreased. The hardness, chewiness, gumminess, and cohesiveness of the control group were lower than those of the treatment group. The consumer acceptability score for patties with 1% chestnut inner shell powder was higher than that for patties in terms of overall preference, appearance, color, and texture. Further, overall preference, appearance, and color for patties with chestnut inner shell powder 3% were higher than those of the control group. We suggest that chestnut inner shell can be improve the quality characteristics and consumer acceptability of pork patties, as well as the development of health-oriented meat products.

Fatty Acid Compositions of Three Species of Marine Invertebrates (3종의 해산 무척추동물의 지방산 조성)

  • The lipid components of the gonad of sea urchin Hemicentrotus pulcherrimus, ark shell Scapharca bro-ughtonii and "Gaebul" (Korea name, a worm) Urechis unicinctus were investigated. The total lipid (TL) contents of the sea urchin, the ark shell and the "Gaebul" were 6.10, 0.67 and 0.79%, respectively. The percentages of phospholipid (PL) in TL were higher in the "Gaebul"(72.4%) and ark shell(64.9%) compared to the sea urchin (41.7%). The major lipid classes of PL were phosphatidylcholine and phosphatidylethanolamine, and the former was rich in the sea urchin (56.2%) and the latter in the "Gaebul"(34.4%). In the class of non-polar lipid (NL), the major lipid classes were different from species ; the sea urchin was rich in triglyceride(TG, 89.0%), the ark shell rich in TG (69.2%) and cholesterol (ST 26.8%) and the "Gaebul"rich in ST (70.7%). The prominent fatty acids of the sea urchin were 16 : 0, 14 : 0, 20 : 5n-3, 20 : 4n-6 and 20 : 4n-6 and 20 : 2NMID(non-methylene interupted dien). The percentage of 20 : 4n-6 was the highest of the investigated invertebrates, accounting for 19.8% in PL, but 22 : 6n-3 was not detected in the sea urchin. In case of the ark shell, the prominent fatty acids were 16 : 0, 18 : 0, 20 : 5n-3, 22 : 6n-3 and 22 : 2NMID, especially 22 : 6n-3(9.58%) was richer compared to that of the "Gaebul". The prominent fatty acids of the "Gaebul"were 20 : 5n-3, 16 : 0, 18 : 0 20 : 1n-9, 16 : 1n-7 and 14 : 0. The percentage of 20 : 5n-3 (22.0%) was highest in the PL of the "Gaebul"among the three invertebrates. These differences in the lipid components of all the sample is considered to be due to the different food habits and environmental condition of the invertebrates.

The Effect of Phaseolus Angularis Shell on Soyang-in Metabolic Syndrome with Obesity (적소두(赤小豆) 외피(外皮)(Phaseolus angularis shell)의 고지방식이로 유도된 비만 동물모델에서 항비만, 항고지혈증 효과)

  • Objectives This experimental study was designed to investigate the effect of Phaseolus angularis shell on metabolic syndrome. Methods Each 5 C57BL/6J mice were randomly assigned to normal diet group, high-fat diet(HFD) control group, high-fat diet plus 15.6 mg/kg/day of Orlistat(HFD-Orlistat) group, high-fat diet plus 100mg/kg/day of Phaseolus angularis shell extract(HFD-PAS_E) group. Weight, the blood chemical and hematologic parameter was med. The mRNA expression was assayed through Reverse transcriptase polymerase chain reaction(RT-PCR). Results In HFD-PAS_E group, the body weight gain, weight of liver, and the level of LDL-Cholesterol were significantly decreased and the level of HDL-Cholesterol were significantly increased. The size of adipocyte in HFD-PAS_E group was smaller than HFD group's. In HFD-PAS_E group, the expression of leptin, PPAR-${\gamma}$, AP2/FABP4 mRNA in liver adipocyte tissue was decreased, the expression of Adiponectin, UCP-2 mRNA in liver adipocyte tissue was increased and the expression of Leptin, C/EBP-a, AP2/FABP4 mRNA in epididymal adipocyte tissue was decreased. Conclusion These results suggest that Phaseolus angularis shell has inhibitory effects on metabolic syndrome by reducing the body weight and the levels of lipid contents in high-fat-diet induced obese mice.

Effects of Fly Ash,Gypsum,and Shell on the Chemical Properties of Soil and Growth of Chinese Cabbage in Plastic Film Housed Paddy (시설재배논에 석탄회,석고,패각시용이 토양화학성과 배추의 생육에 미치는 영향)

  • In order to evaluate the utility of bituminous coal fly ash, gypsum, oyster shell as soil amendments, aadic clayloam paddy soils with low calaum content were amended in the upper 15㎝ with amendments, and then Chinese cabbage was cultivated under plastic film house. Amendments treated were, in metric tons per hectare, i) none(Check) ; ii) 80 fly ash(FA) ; iii) 4 shell(SH) ; iv) 56 fly ash+24 gypsum (FG) ; v) 40 fly ash+24 gypsum+0.8 shell(FGS). On the whole, soil chemical properties were improved by amendments treatments. Amongst treatments, FA prominently neutralized soil pH and increased contents of Av. $P_2O_5$, Ex. K, and Av. B in soils. Besides, it showed the highest ratio in bacteria/fungi and (bacteria+actinomycetes)/fungi. FGS also affected the neutralization of soil pH and the increment of Ex. Mg. Amendments plants appeared alkaline damages only at early growing stage, but showed positive responses in fresh weight yields : 23% for FGS : 21% for FG : 19 18% for SH. At harvesting, leaves both of FA and FGS plants had higher values in contents of N, P, K, Ca, Mg, Fe, Mn, Zn, B, reduang-sugar, and vitamin-C than of others. In especial, Check plants appeared the heart rot symptoms owing to calaum defiaency differently from amendments plants. Taken together, FGS was an effective combination enable to maximize the utility of fly ash, gypsum, shell as soil amendments, espeaally in cabbage yield and quality.

Dynamics of Heavy Metals in Soil Amended with Oyster Shell Meal (굴 패화석시용에 따른 토양 내 중금속 동태 변화)

  • A large amount of oyster-shell waste has been illegally disposed at oyster farm sites along the southern coast of Korea, which already created serious environmental problems. Therefore, the study was undertaken to increase the consumption of oyster shell meal as a soil amendment. The effects of oyster shell meal on dynamics of heavy metals and uptake of heavy metals by spring Chinese cabbage were evaluated in silt loam soil (in Gyeongsang National University, Jinju, Gyeongnam-do, Korea), where 0, 4, 8, 12 and 16 Mg $ha^{-1}$ oyster-shell meal fertilizer were added. Lime treatment (2 Mg $ha^{-1}$) was selected as a control. In the results of this study, cabbage yields were increased by increasing levels of oyster-shell meal fertilizer. With increasing levels of oyster-shell meal fertilizer, total heavy metals concentrations were not significant among treatments. However, 0.1N HCl extractable heavy metals concentration was significantly reduced due to increasing of soil pH. A lot of portion (ca. $80{\sim}90%$) heavy metals fraction of all fractions was residual phase in soil after harvesting. The contents of Cu, Mo, Zn in cabbage were slightly increased by increasing levels of oyster shell meal fertilizer. However, there were no toxic symptoms of heavy metals during cultivation. Conclusively, it was estimated that oyster shell fertilizer could be a good amendment to increase productivity of crop and reduce uptake of heavy metals by crop and mobility of heavy metals in soil.

Effect of Oyster Shell Powder on Soil pH and Growth and Yield of Apple (토양의 산도교정과 사과 생육에 대한 패화석 시용 효과)

  • Effects of oyster shell powder as a liming material were investigated in an apple orchard. Soil texture of the apple orchard was silty clay loam (Upyeong series with 7% of slope) and topsoil pH was 5.6. Treatments of 1,590 kg oyster shell powder $ha^{-1}$ and calcium-magnesium carbonate as much as oyster shell powder were included in the experiment. With treatments of oyster shell powder and calcium-magnesium carbonate, the length, number and diameter of new branches and the diameter of main, secondary and side branches increased in comparison with control. With oyster shell powder application, soil pH increased from 5.6 to 6.8 at the harvest. In addition, it increased exchangeable Ca from 2.6 to $4.2cmol_c\;kg^{-1}$. But it didn't make any difference in chlorophyll, sugar and malic acid contents. The apple weight per fruit of oyster shell powder application was 9 g more than that of control. Apple yield was highest ($37,000kg\;ha^{-1}$) in the oyster shell powder treatment, and the yield increase was significantly different at 5% level LSD. We concluded that the oyster shell powder can be an alternative of lime and effective to restore soil nutrient balance in apple orchard soil.

Evaluation of SO2 Absorption Efficiency for Calcined Oyster Shell Slurry Using a Simulated Spray Type-flue Gas Desulfurization (FGD) System: A Comparative Study with Limestone Slurry (모사 Spray Type 배연탈황설비를 이용한 소성패각 슬러리의 SO2 흡수능 평가: 석회석과의 비교연구)

  • About 300,000 tones of oyster shell are annually produced in Korea and, thus, a massive recycling plan is required. Many desulfurizing studies using oyster shells with chemical composition of $CaCO_3$ have been performed so far; however, most of them have focused on dry desulfurization. This study investigates the possibility of using oyster shells for wet desulfurization after calcination. For this, a simulated wet desulfurization facility of spray type was devised and compared the SOx-stripping characteristics of calcined oyster shell with those of limestone. The calcined oyster shell slurry indicate a better desulfurizability than the slurries of raw shell or limestone because the oyster shell transformed to a more reactive phase ($Ca(OH)_2$) by the calcination and hydration. Because of this reason, when the calcined oyster shell slurries were used, the reaction residue showed the higher gypsum ($CaSO_4{\cdot}2H_2O$) contents than any other cases. In the continuous desulfurization experiments, calcined oyster shell slurry showed a wider pH variation than limestone or raw oyster shell slurries, another clear indication of high reactivity of calcined oyster shells for $SO_2$ absorption. Our study also shows that the efficiency of wet desulfurization can be improved by the use of calcined oyster shells.
