Purpose: The purpose of this study is to develop a walking-type two-row sesame reaper, which can simultaneously perform the cutting and collecting of sesame plants and other crops like perilla and soybean. Methods: The factors involved in reaping sesame were determined experimentally in order to design a prototype of the sesame reaper. The prototype is made up of four parts for cutting, conveying, collecting, and running. The height of two disc-plate saw blades on the cutting part is adjusted by an adjusting wheel, and peripheral speed is adjusted in accordance with the running speed. The conveying belt of the conveying part can be tilted from $0^{\circ}$ to $90^{\circ}$. The collecting part extracts a predetermined amount of transferred sesame plants. The prototype was used to evaluate the performance at different working speeds, so that the work efficiency can be calculated. Results: The center of gravity of the sesame plants was 900 mm, measured from the end of the cut stem. The diameter of the disc-plate saw blade was determined to be 355 mm, peripheral speed was 20.4-32.7 m/s, and the picking height of the conveying belt for sesame was 130 mm. The performance of transfer and collection of the sesame, when the insertion angles were $60^{\circ}$ and $90^{\circ}$, proved to be excellent. However, when the angle was over $120^{\circ}$, the performance was only 75-80%. The performance was at 100% efficiency when the ratio between running speed and conveying belt speed of the prototype was 1:2, which seems to be the ideal ratio for the sesame reaper. Conclusions: A sesame reaper was developed, which can integrate the processes of cutting, conveying, and collecting, by investigating and considering various factors involved in the reaping process. The sesame reaper can reduce the costs for yielding and producing sesame due to its highly efficient performance.
This experiment was conducted to find out optimum priming treatment conditions to the sesame seed as a preliminary study for enhancing sesame germination properties. Effective priming agents and concentrations for sesame seed were $K_3PO_4$, 200 mM and PEG6000, -1.0 MPa respectively. Optimum priming temperature and duration were $15^{\circ}C$, 4 days in view of germination speed and germination percentage. PEG6000 with -1.0 MPa was selected as an efficient priming treatment condition at $15^{\circ}C$, 4 days. This study suggested that priming treatment to sesame seed would be an effective technique enhancing sesame seed germination and shortening time to the $T_{50}$ at the field condition, but the efficiency of priming treatments to the sesame seed would be strongly dependent on individual or integrated conditions of priming agent, concentration, temperature and duration etc.
The developed final shattering machine for labor-saving mechanization of shattering of sesame consisted of input part, shattering part, re-shattering part for unshattered pod and pneumatic sorter. The bundle of sesame was held as upside down and fed into the machine continuously. Then, the fed bundle of sesame was shattered by side shock and agitation. The performance of shattering for the sun dried bundle of sesame of conventional manual work and final shattering machine was compared. Since the shattering ratio measured by the final machine was 97.2% at the first operation, in case of fully dried sesame by drying stand, the harvest of sesame can be completed by only one time shattering operation. The work hour per area of 10 a for the mechanical work and the manual work were 0.3 hour and 13.9 hour, respectively. The total shattering ratio of the final machine with vertical feedings of bundle of sesames was 97.2%.
The purpose of this study is to investigate the preservation of traditional sesame dasik when stored in different packaging material by comparing its physical and sensorial characteristics. The quality and sensory characteristics of sesame dasik that were evaluated were moisture content, water activity, number of microflora, texture profile, Hunter color different value, and sensory properties (color, chewiness, overall acceptability, etc) during the storage at 35\pm1^\circ{C}$ temperature and $73\pm{2%}$ relative humidity. And the packaging materials were paper boxes (coated 0.02mm thickness polyethylene film), plastic boxes, and oriented polypropylene laminated film. Traditional sesame dasik is made from sesame powder 100g, honey 25g, rice syrup 25g, and table salt 0.5g. During the storage period, the changes in water content and water activity of sesame dasik with different packaging material showed a slight decline. On the other hand, it increased in hardness, and "a" and "b" value of Hunter color difference during the storage. Texture profile analysis data change in hardness was the greatest after the third day in a paper box, and it was affected by the moisture content of dasik and the temperature and relative humidity of the air. Therefore plastic boxes or oriented polypropylene laminated film was found to be better suited than paper boxes for storing sesame dasik.
검은깨에 포함된 항산화활성물질의 검색을 횐깨와 병행하여 수행한 결과, 흰깨와 같이 검은깨에도 항산화 활성물질의 존재가 인정되었으며, 활성의 크기는 흰깨가 검은깨보다 약간 높았으며 볶음처리를 하면 항산화활성이 증가하였다. 이들 참깨에 함유된 활성획분의 chromatography상의 거동에 있어서 상당부분 유사성이 인정되었다. 또 볶은 깨의 기름과 박을 분리하여 활성을 검정한 결과 양자에 포함된 활성본체가 서로 유사하였으며 활성의 강도는 기름의 경우가 훨씬 강하였고, 박의 경우 항산화 활성이 기름에 비해 약하다고는 하나, 상당한 항산화 활성물질의 잔류가 인정되었다.
깨다식의 감미 및 물성 등의 개선을 위해 꿀보다 높은 점도와 hardness를 가지는 쌀엿과 조청 등을 첨가 혼합하여 품질을 조사한 결과를 요약하면 다음과 같다. 깨다식의 적정 재료 배합비는 깨가루 100 기준시, 꿀과 쌀엿의 동량 혼합액 50%(w/w)였으며, 이를 기준으로 제조한 깨다식의 이화학적 특성은 당도 17.44 brix$^{\circ}$, 수분 12.16, 환원당 15.44, 단백질 12.88, 지방 32.02, 조회분 2.82 %이었고, 기계적 특성 중 TPA의 chewiness는 0.28~0.30, hardness는 27.22~27.44 g/$\textrm{cm}^2$이고, 색도의 L값은 41.67, a값 4.58, 그리고 b값은 16.99였다.
참깨 탈지박에 다량존재하는 수용성 lignan화합물을 $\beta$-glucosidase로 처리하여 얻어진 참깨박 추출물의 항산화 효과 및 기존 항산화제들과의 상승효과를 비교, 검토하고자 하였다. 참깨박 추출물 중에서도 sesamin 및 sesamolin이 peak가 확인되었으며, 각각 8.32%(8,315.4mg/100g) 및 0.28%(2,824.5mg/100g)의 함량을 나타냈다. Sesamin과 sesamolin은 배당체의 aglycone으로서 탈지박 중에 존재하는 것으로 나타났다. 참깨박 추출물의 항산화효과는 첨가농도가 증가함에 따라 증가되었으며, 이들의 효과는 같은 농도(100ppm)의 $\alpha$-tocopherol이나 ascorbyl palmitate 첨가구보다 항산화효과가 우수하였으나 BHA보다는 다소 약한 효과를 보였다. 또한 가수분해 물은 $\alpha$-tocopherol과 강한 상승 작용을 보여주었으나 ascorbyl palmitate와는 비교적 약한 상승작용을 나타내었다.
The aim of this study is to examine the radical scavenging activity of perilla and sesame oil that Koreans traditionally consume. For DPPH radical scavenging activity, oil and its hexane/70% methanol extracts (ME) are used and for superoxide and hydroxyl radical scavenging activities, ME are used. Unrefined perilla oil, sesame oil, and refined sunflower oil are used. The yields for ME of perilla, sesame and sunflower oil are 0.57, 0.61, and 0.30%, respectively, and the amounts of phenolic compounds in ME of corresponding oil are 18.77, 88.64 and $0.05\;{\mu}g$ tannic acid/mg, respectively. $IC_{50}$ for DPPH scavenging activity of perilla, sesame and sunflower oil are 2.12, 1.91, and 3.35 mg/mL, respectively and those for ME of corresponding oils are 0.42, 0.07, and 43.11 mg/mL, respectively. In DPPH assay, the solvent used for oil sample is iso-octane and that for ME is methanol. Superoxide anion scavenging activity of ME of perilla, sesame and sunflower oil tested at 1 mg/mL concentration are 21.10, 13.25, and 3.14%, respectively. Hydroxyl radical scavenging activities of those samples tested at 1 mg/mL concentration are 86.08, 93.30, and 93.17%, respectively. In summary, the refining process seems to remove the phenolic compound during oil processing. Antiradical substances in perilla and sesame oils responsible for scavenging DPPH radicals are present in the methanol fraction, while the antiradical substances in the sunflower oil are in the lipid fraction. DPPH scavenging activity of ME of sesame oil is significantly higher than that of perilla oil (p<0.05). However, superoxide anion scavenging capacity of ME of perilla oils was found to be greater than that of both sesame and sunflower oils (p<0.05).
참기름에 이종의 식용유를 혼합하였을 때 이를 판별할 수 있는 방법을 연구하기 위하여, 순수한 참기름을 비롯한 일반적인 식용유 5종의 UV흡수양상을 조사하여 각 식용유의 UV흡수특성을 이용하여 순수한 참기름과 혼합 기름을 구별할 수 있는 근거를 마련하였다. 순수한 참기름의 spectrum은 215, 230 및 290 nm에서 흡수피크를 형성한 반면, 옥수수유, 들기름 및 대두유는 모두 215, 230 및 280 nm에서, 그리고 미강유는 215, 290 및 320 nm에서 흡수피크를 형성하였다. 참기름의 290 nm에서의 흡수피크는 참기름 제조과정인 참깨의 볶는 온도와 시간이 증가할수록 그 흡광도가 증가하는 경향이 있었으며, 일반적인 조건으로 추정되는 $200^{\circ}C$, 60분간 볶은 후 제조한 참기름은 대략 0.7 정도의 흡광도를 나타내었다. 참기름에 미강유를 혼합한 기름에서는 320 nm에서 미강유의 존재를 확인할 수 있는 흡수피크가 나타나고, 참기름에 옥수수유, 들기름 또는 대두유를 각각 혼합한 기름들은 290 nm에서의 흡광도가 순수한 참기름의 흡광도에 비하여 적었으며, 이종기름의 혼합율이 높을수록 비례적인 감소를 나타내었다.
참기름은 높은 항산화활성 및 항암작용 등의 우수한 영양학적 가치를 지니는 반면 비싼 가격으로 인하여 가짜 참기름의 유통이 범람함에 따라 이를 판별할 수 있는 분석 방법의 확립이 요구되는 실정이다. 질량분석기를 바탕으로 한 전자코를 이용하여 들기름이 혼합된 참기름을 제조하여 진위 판별을 시도하였다. 각각의 유지를 전자코를 이용하여 분석, 통계처리하였다. 혼합 참기름의 휘발성 향기성분으로부터 생성되는 ion fragment 중 40-160 amu에서 각 시료 간에 차별성이 높은 fragment(m/z)를 선택하여 해당 intensity값을 판별 분석한 결과, 참기름 및 들기름은 뚜렷하게 구분되었다. 미량의 들기름이 혼합된 참기름은 첨가된 들기름의 농도에 비례하여 제1판별함수값(DF1)과 높은 상관관계를 나타내었다. 참기름의 볶음온도 및 시간 등의 제조조건 및 재배환경, 재배 산지, 제조회사 등의 요인에 의하여 순수한 참기름의 향기패턴이 달라지는 것을 인도산과 국산 참기름을 이용하여 분석하였다. 향후 참기름의 위조 여부를 검증하는 방법에 하나로 활용될 수 있을 것이다.
