시판 반건조 붕장어(Conger myriaster)의 위생학적 품질특성과 품질관리를 위한 가이드라인 (Sanitary Quality Characterization of Commercial Semi-dried Conger Eel Conger myriaster and the Guideline for Controlling Quality)

  • Semi-dried conger eel Conger myriaster is considered as a health food in Korea due to its richness in vitamins, minerals, proteins and omega-3 fatty acids. This study characterize the sanitary quality of commercial semi-dried conger eel for developing high quality semi-dried products and suggested the guideline for controlling the quality. Moisture content ranged from 41.2% to 73.4% (mean: 61.5%), volatile basic nitrogen ranged from 16.1 to 93.6 mg/100 g (mean: 55.1 mg/100 g), and peroxide value ranged from 15.2 to 69.8 meq/kg. Viable cell counts ranged between 6.51 and 8.53 log CFU/g, while the Escherichia coli count ranged from undetectable to 4.6 log CFU/g. Based on these chemical and microbial findings, we suggest that provisions be established for development of high quality semi-dried conger eel as follows: 50-68% for moisture content, < 50 mg/100 g for volatile basic nitrogen content, < 60 meq/kg for peroxide value, and negative for E. coli. Among the 16 commercial semi-dried conger eel products used in this study, the standard-passed product was only GS-L.

시판 반염건 민어의 위생학적 품질 특성 (Sanitary Quality Characterization of Commercial Salted Semi-dried Brown Croaker)

  • 반염건 민어는 특유의 육조직, 맛 및 영양가가 우수하여 국내에서 아주 선호되고 있는 수산가공품 중의 하나이다. 본 연구에서는 전통수산가공품의 하나인 반염건 민어를 지역명품으로 개발하기 위한 기초 자료로서 시판 반염건 민어의 위생학적 특성에 대하여 살펴보았다. 시판 반염건 민어의 생균수 및 대장균은 각각 4.2~8.3 log(CFU/g) 및 18>~4.6 log(MPN/100 g)이었다. 또한 시판 반염건 민어의 수분 함량은 64.2~77.1% 범위, 염도는 2.1~9.5% 범위, 휘발성염기질소 함량은 14.1~58.1 mg/100 g 범위, 과산화물값은 19.1~107.2 meq/kg 범위였다. 이상의 반염건 민어에 대한 미생물학적 및 화학적 결과에 의하면 지역 명품 반염건 민어를 가공 및 유통하기 위해서는 반드시 적절한 품질 규격[원료는 모두 국산, 수분 함량은 65% 이하, 염도는 2~3% 범위, 휘발성염기질소 함량 50 mg% 이하, 생균수 및 대장균은 각각 6 log(CFU/g) 이하 및 음성]이 있어야 할 것으로 판단되었다.

  • Methods for the development of home meal replacement seafood tailored to consumer needs for the advanced use of Broughton's ribbed ark Scapharca broughtonii (BRA) in Korea are required. In this study, we developed a cheese-topped, semi-dried, and seasoned Broughton's ribbed ark (S-BRA) tailored for the younger generation with an improved texture and fish odor. The optimization of conditions to improve the texture and fish odor was performed using RSM. The design of the model was appropriate because there was no significant difference (P>0.05) between the predicted and actual values of moisture content, hardness, and overall acceptance, and the optimal preparation conditions were a vinegar content of 2.68%, a soaking time of 62 min, a drying temperature of 60℃, and a time of 162 min. The S-BRA manufactured under these optimal conditions exhibited a lower odor intensity compared to the unsoaked and undried control, suggesting that the fish odor of S-BRA has been improved. The moisture content related to the texture of the S-BRA was lower than that of the control, and the hardness was higher. Therefore, the S-BRA developed in this study will appeal to people of all ages, especially the younger generation; their consumption is expected to increase.

  • This study investigated the sanitary characteristics of commercial salted semi-dried convict grouper Epinephelus septemfasciatus (SSD-CG) and longneck croaker Pseudotolithus typus (SSD-LC) and suggested standards for salted semi-dried fish (SSD-F), based on the domestic standards for salted mackerel (Scomber japonicus or kwamegi) and salted dried yellow corvenia (Pseudosciaena manchurica), and sanitary characteristics of commercial SSD-F. For the commercial SSD-CG and SSD-LC, respectively, the moisture content ranged from 64.6-76.1 and 65.7-77.5%, salinity from 2.7-8.2 and 1.5-4.9%, volatile basic nitrogen (VBN) from 22.1-88.2 and 13.5-87.4 mg/100 g, peroxide value (POV) from 17.2-195.0 and 28.5-190.2 mEq/kg, and viable cell counts from 6.1-8.4 and 5.4-7.2 log (CFU/g). No Escherichia coli was detected in six kinds of SSD-CG or three kinds of SSD-LC. The standard for controlling the quality of SSD-F is the moisture content (>68%), salinity (>3%), VBN content (>50 mg/100 g), POV (>60 mEq/kg), viable cell counts (>$10^6$ CFU/g), E. coli (>MPN/100 g), and others. Using the established standards, no commercial SSD-F passed. The chemical, microbial, and other results for commercial SSD-F suggest that provisions for controlling the quality of high-quality SSD-F should be established.

시판 반염건 민어(Miichthys miiuy)의 영양 및 맛 특성 (Nutritional and Taste Characterization of Commercial Salted Semi-dried Brown Croaker Miichthys miiuy)

  • This study characterized the nutrition and taste of commercial salted semi-dried brown croaker Miichthys miiuy (SSD-BC). The mean crude protein content of the commercial SSD-BC was $19.8{\pm}1.7%$ (range, 17.7-23.2%), and the mean crude lipid content was $0.6{\pm}0.3%$ (range, 0.3-1.1%). The total amino acid content ranged from 17.08 to 18.56 g/100 g, except for sample code 5, which was 22.24 mg/100 g and differed significantly from the other samples. The major amino acids in the commercial SSD-BC were aspartic acid, glutamic acid, leucine, and lysine. In the commercial SSD-BC, the calcium ranged from 11.1-21.4 mg/100 g, phosphorus from 148.4-209.2 mg/100 g, and magnesium from 12.2-48.2 mg/100 g. Monoenoic acid (37.1-40.3%) was the most common fatty acid, followed by saturated acid (33.9-36.3%) and polyenoic acid (25.1-29.2%). The prominent fatty acids in the commercial SSD-BC were 16:0 (23.9-26.5%), 16:1n-7 (11.3-13.0%), 18:1n-9 (19.7-21.5%), and 22:6n-3 (6.9-10.7%). The mean trichloroacetic acidsoluble nitrogen content was 248.1 (range, 137.2-334.2) mg/100 g. The evaluation demonstrated that the commercial SSD-BC is rich in nutrition and taste.

Response Surface Methodology를 이용한 숭어(Mugil cephalus) 반염건품의 개발 (Development of Salted Semi-dried Common Gray Mullet Mugil cephalus using Response Surface Methodology)

  • This study examined the optimal salting drying method and processing conditions (salt concentration, curing time, dry temperature, and drying time) for preparing salted semi-dried common gray mullet (SSD-CGM) Mugil cephalus based on the moisture content, salinity, and overall acceptance using response surface methodology (RSM). The moisture content, salinity, and overall acceptance of SSD-CGM prepared with different salting methods revealed that dry salting was the optimal salting method for preparing high-quality SSD-CGM. The optimal drying method for preparing high-quality SSD-CGM based on the drying velocity and sensory color was hot air-blast drying. The results of the RSM program indicated that the optimal independent variables ($X_1$, salt concentration; $X_2$, curing time; $X_3$, dry temperature; $X_4$, drying time) based on the dependent variables ($Y_1$, moisture content; $Y_2$, salinity; $Y_3$, overall acceptance) for high-quality SSD-CGM were 5.6% for $X_1$, 2.7 h for $X_2$, $47.0^{\circ}C$ for $X_3$, and 8.5 h for $X_4$ for uncoded values. The predicted values of $Y_1$, $Y_2$, and $Y_3$ for SSD-CGM prepared under optimal conditions were 54.4%, 4.2%, and 6.3, respectively, while the experimental values were $55.2{\pm}1.0%$, $4.1{\pm}0.3%$ and $6.7{\pm}0.8$. The actual and predicted values did not differ.

  • The aims of this study were to optimize the processing procedure of high-quality semi-alternating temperature dried Israeli carp Cyprinus carpio (SAD-IC) and to investigate the sensory properties of the product. Based on the differences in moisture content of the dorsal and ventral muscles, high quality SAD-IC was prepared by alternating the drying temperature between 4 h at 35℃, and 2 h at 5℃, three times before final drying for 2 h at 35℃. The surface in SAD-IC produced under the optimal alternating-temperature drying process had a markedly superior browning index value and softer texture compared to products produced using constant-temperature drying. SAD-IC produced from dorsal and ventral muscle had significantly superior taste values than the raw material. These results suggest that SAD-IC has the potential to be industrialized.

The Effect of Feeding Different Levels of Sardine Fish Silage on Broiler Performance, Meat Quality and Sensory Characteristics under Closed and Open-sided Housing Systems

  • Two experiments were conducted to evaluate the use of fish silage prepared from Indian oil sardines, Sardinella longiceps, as partial replacement of soybean meal as a sole source of protein for growing broiler chickens. The main objective of Experiment 1, an ileal digestibility assay, was to assess the nutritional value of fish silage compared with soybean meal for feeding broiler chickens. The two test ingredients, soybean meal and dried fish silage, were incorporated into semi-synthetic diets, as the only component containing protein. The ileal digestibility coefficients of amino acids of fish silage were considerably higher than those of soybean meal (p<0.001). The lower digestibility of amino acids from soybean meal was related to the presence of anti-nutritional factors such as trypsin inhibitors. Fish silage had higher levels of sulphur-containing amino acids than soybean meal. The objective of Experiment 2, a growth study, was to evaluate the effect of feeding fish silage on performance and meat quality characteristics of broiler chickens raised under closed and open-sided housing systems. Four diets containing various levels of fish silage (0, 10, 20 and 30%) were evaluated. Daily feed intake, body weight gain and feed conversion ratio were measured. At the end of Experiment 2, 96 birds were randomly selected and slaughtered to evaluate meat quality characteristics. Housing type had significant effects on feed intake and body weight gain (p<0.01). Birds in the open-sided house consumed 4.7% less amount of feed and gained 10.6% less than their counterparts in a closed house. Birds in both houses fed diets containing 10 and 20% fish silage gained more than birds fed 30% fish silage. The current study produced evidence that fish silage can replace up to 20% of soybean meal in broiler diets without affecting either growth performance or the sensory quality of broiler meat.

"규합총서(閨閤叢書)"에 수록된 부식류의 조리법에 관한 고찰 (A Literature Review Examining the Ingredients and Cooking Methods of the Side Dishes in "Gyuhapchongseo")

  • "Gyuhapchongseo" was published in 1809, and introduced the cooking method of the noble class in the late Joseon dynasty. The characteristics of the side dishes in "Gyuhapchongseo" are as follows. Firstly, red pepper was used as whole red pepper, shredded red pepper, powdered red pepper, or Korean hot pepper paste. Secondly, salt-fermented fish was used in some forms of Kimchi, including Sukbakgi, Dong A Sukbakgi, and Gyochimhae. Thirdly, to retain the juiciness of meat during roasting, meat was spread cold water on the surface, dipped into the washing water of rice or wrapped with wet paper. Fourth, to improve the visual effect of a dish, cooked foods were displayed with various color schemes, panfried foods with two tones (egg white and yellow) of color on each side and the use of radish pigmented with deep red color. On examination of the characteristics of food in "Gyuhapchongseo", I would suggest applicable practices for the present cuisine. The use of gravy produced from the boiling down of fish flesh could raise the nutritive value of Kimchi. In "Gyuhapchongseo", Yak po (semi-dried minced beef) is noted as being good for elderly people with bad teeth. A steamed dish with dog meat in Dong A in "Gyuhapchongseo" is made by hollowing out Dong A and putting a dog in it to cook the dog meat to well done in a fire made with the hulls of rice. This technique could be used to present cuisine for steamed and roasted dishes using food ingredients such as pumpkin, sweet pumpkin, and overripe cucumber.

식품 중 홍국색소의 분석법에 관한 연구 (Studies on the Determination Method of Monascus Pigments in Foods)

  • 우리나라에서 허용된 천연색소인 홍국색소는 "천연식품[식육류, 어패류(경육포함), 과실류, 채소류, 해조류, 두류 등 및 그 단순가공품(탈피, 절단 등)], 다류, 고춧가루 및 실고추, 김치류, 고추장 및 식초"에 사용금지토록 사용기준이 규정되어 있으나, 현재 식품중 홍국색소의 분석방법이 아직 확립되어 있지 않은 실정이므로 식품중 홍국색소의 최적분석방법을 확립하고자 하였으며, 확립된 분석법을 적용하여 국내유통중인 식품중 홍국색소의 함유량을 조사하였다. 따라서, 식품중의 홍국색소는 TLC, HPLC, Prep. HPLC, $H^1-NMR$ 및 MS로 홍국색소성분 중 monascin과 ankaflavin을 분리 확인하였으며, 이 두 성분을 표준물질로 하여 다음과 같은 정량분석법을 확립하였다. 역상계 칼럼인 Capcell pak $C_{18}$ UG120을 이용하여 HPLC 분석을 하였으며, 이 때 이동상 및 파장조건은 각각 메틸알콜 : 물 : 초산(75 : 25 : 0.5) 및 390 nm이었다. Monascin, ankaflavin의 회수율은 혼합어육소시지, 시럽, 맛살, 반건조소시지, 혼합프레스햄, 소시지 순으로 나타났으며, 혼합어육소시지에서는 평균 94.1%, 92.9%로 가장 높았고 맛살에서는 평균 85.1%, 85.8%의 회수율을 나타냈다. Monascin은 소시지, 반건조소시지, 혼합프레스햄, 시럽 등에서 평균 $71.5{\sim}88.6%$로 양호하였으나, ankaflavin은 평균 $40.0{\sim}59.4%$로 비교적 낮은 회수율을 나타냈다. 조사대상식품인 국내유통 가공식품중 맛살, 소시지, 혼합어육소시지, 반건조소시지, 혼합프레스햄 및 시럽 등 총 6종에 대하여 monascin과 ankaflavin의 함량을 확립된 분석법으로 정량분석한 결과는 다음과 같았다. Monascin의 경우 맛살에서 $0.01{\sim}3.31\;g/g$ 혼합어육소시지에서 $0.05{\sim}0.10\;g/g$, 반건조소시지에서 $0.34{\sim}0.35\;g/g$이 각각 검출되었고, 나머지 품목에서는 모두 불검출이었다. 한편, ankaflavin의 경우 맛살에서만 $0.02{\sim}0.89\;g/g$이 검출되었으며, 나머지 품목에서는 모두 불검출이었다.
