A Study on the Satisfaction and the Importance of Contract Foodservice in Colleges in Jeju (위탁 급식 업체에 대한 중요도와 만족도에 관한 연구 - 제주지역 대학업체를 대상으로 -)

  • In this study, to improve the quality of school lunch in local colleges, we conducted a survey on students who attend 2 year colleges in Jeju region. With its own unique regional characteristics and the change of its school lunch program from direct management to consignment, there were some questions about how each factor in school lunch program affects on students' satisfaction with it and we tried to present helpful data to improve school lunch programs in each region. The survey took place from May 5 to May 10, 2005 covering the colleges only in Jeju region. There were 200 sets of questionnaires issued and distributed to the students who are currently using school lunch programs. Only 168 sets were retrieved and processed statistically. 2 sets out of 168 questionnaires had to be thrown away because there were wrong entries of some questions, which made overall retrieving rate 83%. In this study, SPSS 10.0 , one of the statistical package programs, was used as an analyzing tool to make Frequency Analysis. To verify credibility, Cronbach's Alpha Element Analysis was done and T-test and ANOVA was also made. After Recurrence Analysis for elements of satisfaction regarding main factors that is considered to be important to customers, we found that importance of following factors: appearance of food, incongruity between main and side dishes, availability of seasonal food, availability of preferred menu, absence of food stock, waiting time, accessibility of food counters, space between chairs, presentation of a menu, food tray's shape, and color of food trays. The importance of those showed high but satisfaction with the same factors was low. So the primary improvement on these factors should be made to increase satisfaction. Finally we concluded that in large extent, importance of each factor definitely affects on students' satisfaction.

Comparison on the ritual food of Yeosu and Pusan area (여수와 부산지역의 제수 비교)

  • In this study a survey was conducted to compare the foods prepared for the Korean ancestral service on Memorial Day, Thanksgiving Day and New Year's Day in the Yeosu and Pusan areas. Me(tap) as the main food in the rituals was highly used on New Year's Day in the Pusan region, whereas Tteokguk was highly used in the Yeosu region. As for soup ingredients in the rituals, jogae, soegogi and mu were more frequently used in the Pusan region than in the Yeosu region on Memorial Day and festive days. Jogijjim, gaorijjim, sangeojjim, myeongtaejjim, galbijjim, dakjjim, and bugeojjim were highly used in the Yeosu region but cheongeojjim and domijjim were highly used in the Pusan region. Gosari and doraji namul were highly used in both regions but most vegetables were hishly used in the fきn region except for sukju and chwi namul. Jogi gui was the most common in both regions, whereas seodae, yangtae and byeongeo-gui were highly used in the Yeosu region but dubu, jogi and mineo-gui were highly used in the Pusan region. Songpyeon injeolmi, gangjeong, and yakgwa were highly used in the Pusan region. Most fruits except apple were highly used in the Pusan region. With regard to the liquor used for the rituals, there was no difference in the use of cheongju between the two areas, whereas takju was highly used in the Pusan region but soju was highly used in the Yeosu region. The results of this study showed that the use of ritual foods varied a little according to the region and that ritual food use was based on seasonal foods, preference of ancestors, and special products of the region.

A Study of Evaluation for Service Quality Importance of the Korean Cold Noodle Restaurant in Seoul ${\cdot}$ Kyunggi Area (서울 ${\cdot}$ 경기지역 냉면전문점의 서비스 품질에 대한 중요도 평가)

  • The purpose of this study was to analyze evaluation variables of service quality of Korean restaurant especially focused on cold noodle restaurants(CNR). The data were analyzed about customer’s expectation of food service quality, service quality was improved by employee’s service in restaurant and employee education in the focus on CNR. The survey was carried out 423 customers and 50 employees in Seoul and Kyunggi province. All statistical data analyses were conducted using the Statistical Package for the Social Science(SPSS version 10.0). The consumer’s evaluation score of service quality were significantly different by consumer’s characteristics. The well planned service at CNR must be developed according to consumer variables such as sex and age group. The evaluation score of service quality were not significantly different by seasonal variation and consumer’s menu selection. The evaluation score of service qualities in CNR were significantly different between customer variables with employees variables. All of the evaluation points of service quality in employees were significantly higher than customers. This result was show that well-trained employees were important factors in consumer satisfaction. Through the employee education program, consumer oriented service mind mort be to developed in employees and employees’ recognition about the importance of service increased the satisfaction of customer using CNR.

Compositions and Seasonal Variations of Free Sugars and Non-volatile Organic Acids in Brown Algae, Ecklonia cava, Sargassum ringgoldianum and Myagropsis myagroides (감태, 큰잎모자반 및 외톨개모자반의 유리당 및 비휘발성 유기산의 조성과 그 계절적인 변화)

  • The compositions and seasonal variations of free sugars and non-volatile organic acids of brown algae, such as Ecklonia cava, Sargassum ringgoldianum and Myagropsis myagroides were investigated by gas chromatography. Four kinds of free sugars, such as xylose, glucose, galactose and floridoside were identified. The most abundant one was floridoside marking 118.7 mg/100 g, 90.9 mg/100 g and 70.0 mg/100 g in Ecklonia cava, Sargassum ringgoldianum and Myagropsis myagroides, respectively. There were not distinguishable seasonal variations in the contents of free sugars in all the samples. In the case of organic acids, nine kinds were identified in Ecklenia cava and major ones were succinic, citric, malic, fumaric, oxalic and lactic acid, of which succinic acid was the most abundant one marking $30.6\%$ of total organic acids. In Sargassum ringgoldianum and Myagropsis myagroides, eight kinds were identified, which major ones were succinic, citric and malic acid in both samples, and they marked $68.4\%$ and $61.1\%$ of total organic acids in Sargassum ringgoldianum and Myagropsis myagroides, respectively. There were not distinct changes in the content of total organic acids according to seasons in all the samples examined. The contents of total organic acics in Ecklonia cava was a little more than Sargassnm ringgoldianum and Myagropsis myagroides.

  • In order to investigate the content and seasonal variation of the extractive components including taste compounds, free amino acids, nucleotides and related compounds, quanternary ammonium bases, and guanidino compounds of ascidian collected from the south coast of Korea were determined bimonthy from April to October in 1990. The extractive nitrogen was composed of $60{\sim}62\%$ as free amino acids, $12{\sim}16\%$ as betaines, $5{\sim}9\%$ as nucleotides, and others as trimethylamine oxide(TMAO) and total creatinine. The muscle of ascidian was rich in such free amino acids as taurine, proline, glutamic acid, glycine and glycinebetaine. Most of nitrogenous compounds in the extractives showed a marked seasonal variation with a maximum in summer or autumn. AMP content was relatively high among nucleotides. Succinic acid, malic acid, lactic acid and pyroglutaric acid were the major organic acids in ascidian. The results of omission test suggested that the taste of ascidian is attributed to mainly free amino acid, betaines, nucleotides and nonvolatile organic acid in order.

Characteristics of Salted Radish Cubes at Different Season (계절별 절임 무의 특성)

  • Characteristics (salt concentration, weight loss, soluble solid content, moisture content, and textural properties) of radish cube $(2{\times}2{\times}2\;cm)$ were evaluated during salting. Three different summer radish cultivars harvested in high land were immersed into 15% brine solution (radish : brine solution = 1 : 2) at $15^{\circ}C$ for 4 h. The time required to reach the optimum salt concentration (3%) was different among cultivars; 3 h for 'Bakbong', 4 h for 'Kwandong' and '92343'. Similar weight loss (about 24-26%) of salted radish cubes was found among cultivars. While the highest value of weight loss of salted radish cubes was observed with '92343', the lowest, 'Bakbong'. Hardness decreased during salting; the highest value of hardness was observer with 'Kwandong', the lowest, 'Bankbong'. The sample of '92343' has the lowest moisture content but has the highest soluble solid content and hardness, while 'Bakbong' has the highest moisture content, but has the lowest soluble solid content and '92343'. In separate experiments, seasonal variations in characteristics of salted radish cubes at optimum salt concentration (3%) were observed: for 'Bakbong', salt concentration, weight loss, soluble solid content, and hardness, and for 'Bakwang', salt concentration, weight loss, and hardness were higher in autumn cultivars than in spring or summer one, while moisture contents of both cultivars were higher in spring or summer cultivars than in autumn one.

A Survey on the Perception and Preparation of Traditional Korean Festival Foods in Seoul and the Kyonggi Area (서울.경기 지역 대학생들의 세시음식에 대한 인지도와 이용에 관한 연구)

  • This study was conducted to analyze the perception and observance of traditional Korean holidays and preparation of traditional Korean holiday foods among university students in Seoul and the Gyeonggi area in order to further develop modernize and globalize the foods. The analysis revealed that the traditional Korean holidays with the highest perception and observance was Seollal, followed by Chuseok, Jeongwaldaeboreum, Dongji, Dano and Sambok. Traditional Korean festival foods such as Ddukgook, Mandoogook, Sikhye, Injeolmi, Yookgeijang, Kalgooksoo, Songpyon, Galbizzim, Soondubu and Samgyetang also scored high in perception and preparation. Schools were the most frequent route of introduction to Korean traditional festival foods at a rate of 41.6%. Special educational institutions and schools were also high at introduction rates of 38.3% and 19.5% respectively. The results of this study show that traditional Korean festival foods need to be further developed, as the succession of traditional food culture was the highest among 61.4% and 41.3% of the respondents who answered that the 'standardization of flavor, nutrition and cookery' is the most necessary action to popularize seasonal specialty foods.

Empirical Modeling of Fouling Rate of Milk Pasteurization Process : A case study

  • Fouling in heat exchanger becomes a major problem of dairy industry and it increases the production cost. These are lost productivity, additional energy, additional equipment, chemical, manpower, and environmental impact. Fouling also introduces the risk of food safety due to the improper heating temperature which allow the survival of pathogenic bacteria in milk, introducing biofilm formation of pathogenic bacteria in equipments and spreading the pathogenic bacteria to milk. The aim of this study is to determine the fouling rate during pasteurization process in heat exchanger of pasteurized milk produced by Village Cooperative Society (KUD) "X" in Malang, East Java Indonesia by using empirical modeling. The fouling rate is found as $0.3945^{\circ}C/h$ with the heating process time ranged from 0 to 2 hours and temperature difference (hot water inlet temperature and milk outlet temperature) ranged from 0.654 to $1.636^{\circ}C$. The fouling rate depends on type and characteristics of heat exchangers, time and temperature of process, milk type, age of milk, seasonal variations, the presence of microorganism and more. This results will be used to plan Cleaning In Place (CIP) and to design the control system of pasteurization process in order to maintain the milk outlet temperature as standard of pasteurization.

A Study on Special Events at School Foodservice Operations in the Busan Area (부산지역 학교급식의 이벤트 실시 현황)

  • The purpose of this study was to investigate the status of implementing special events within school foodservice operations. A total of 359 questionnaires were distributed to dietitians employed at school foodservice operations in Busan from July 1 to 31, 2006 (response rate: 93%). The results indicated that approximately half of the respondents (47.7%) did not implement special events. The types of special events that foodservice operations had most frequently implemented were 'traditional festival day events' (19.0%), 'subdivisions of the season events' (18.3), 'seasonal events' (17.1%), 'school events' (13.0%), 'single day events' (10.2%). According to the dietitians' characteristics, older dietitians implemented 'healthy food events' more frequently than younger dietitians. 'Traditional festival day events' (p<0.05) and 'subdivisions of the season events' (p<0.01) were more frequently implemented in independently managed foodservices than in contract operations. On the other hand, 'international food events', 'gift events', and 'healthy food events' were more frequently implemented in contract foodservices than in independent operations (p<0.001). Dietitians from elementary and middle schools implemented 'winter solstice', 'midsummer', 'children's day', and 'school foodservice day' events more frequently, whereas dietitians from high schools implemented 'midsummer', 'Valentine's day', and 'teacher's day' events more frequently. Most dietitians (94%) had never received education or training for special event marketing previously. Therefore, these results suggest there may be a need to develop educational programs on special event marketing for dietitians.

Analysis of the Life Cycle of Menus in Restaurants - A Case Study of 'T' Restaurant - (레스토랑 메뉴 수명주기(Menu Life Cycle) 패턴 분석 - T레스토랑 사례를 중심으로 -)

  • This study investigated the life cycle of menus and made suggestions on the appropriate time for when new menus should be developed. For this purpose, a total of 636 customers who visited 'T' Restaurant more than 25 times in the past three years were used for analysis. After estimating product life cycles based on sales and selling period, an empirical study was conducted. In terms of product life cycle, a growth stage was observed in the category of pasta and pizza in both stores A and B, whereas sales in the rice category stayed constant. Regarding trend in seasonal sales, a big difference was detected between the two stores. While store A was already in the decline stage of the life cycle in all menu categories, store B remained in the growth stage. In terms of menu life cycle, the product life cycle of long-lived products was observed in the pasta category in both stores A and B. While the pizza category was in the growth stage, the product life cycle of long-lived products was observed in the rice category. It is expected that the results of this study could be useful in development of new menus and product life cycle management to fulfill diverse customer needs in the dining-out business.
