Analysing Productivity in Vietnamese Seafood Processing Firms: A Control Function Approach

  • This study aims to estimate the production function and total factor productivity (TFP) of Vietnamese seafood processing firms. At the same time, the study analyses the impact of internal factors of firms and the quality of economic institutions on the TFP of the Vietnamese seafood processing industry. The study uses the Function Control (FC) approach in TFP estimation and the Feasible Generalized Least Squares (FGLS) regression model in the analysis of factors affecting TFP. The study was carried out on the census data of enterprises of the Vietnamese seafood processing industry collected by the Vietnamese General Statistics Office and Provincial Competitiveness Index data of Vietnam Chamber of Commerce and Industry in the period from 2013 to 2018. Estimated results from the models show that: i) Vietnamese seafood processing firms are, currently, mainly labor-intensive, the TFP contribution and output is only about 2.258. ii) Factors such as the firm's age, firm's size, and the firm's ownership affect TFP. In which, firms that have few numbers of years of operation, small and medium firms, and private firms have low TFP. iii) Institutional quality and the provincial business environment have a positive impact on the TFP of Vietnamese seafood processing firms in this period.

A Study on the Difference of Perceptions of Seafood and Processed Seafood Products: The Case of University Students in Busan and Gyeongsang Area (수산물 음식과 수산물 가공식품에 대한 인식 조사: 부산·경상도 지역 대학생을 중심으로)

  • The purpose of this study is to understand the perception of fishery products and processed food of marine products in college students through empirical analysis. 446 questionnaires were used in the analysis. As a result of the empirical analysis, the frequency of consumption of aquatic food was 2~3 times a week, the place of intake was good for taste of home and aquatic foods, respectively. Purchase motifs of processed fish products are easy, the frequency of ingestion is 3 to 4 times a week, the criteria for selection were always consumed, and the taste was considered to be high when purchased. The perception of nutrition and necessity of consumption of aquatic foods was high and radioactivity was low. 133 male students (57.8%) and 98 female students (45.4%) were aware of the aquatic traceability system. The college students generally has a high preference for the taste of marine products and high frequency of consumption, and they recognized that nutritional excellence and necessity were positive. The marketing strategy should be developed by developing proper product considering the age level and sex of consumers. The limitation is that they are college students in Busan and Gyeongsang provinces and coastal areas.

  • As seafood processing by-products, enormous seafood processing waste waters (SPWWs) are produced at most seafood processing plants, but management of these waste waters are becoming great burden at small capacity processing plant. Hence, almost of them have been discarded without suitable application methods. And these SPWWS might causes of marine environmental pollution and waste in potential food resources. (omitted)

Contamination Status and Safety Management of Marine Biotoxins in Seafoods in South Korea (수산물 중 해양생물독소 오염실태와 안전관리)

  • Marine microalgal biotoxins can accumulate in seafoods, posing significant risk to human health. These toxins include tetrodotoxin (TTX) and can cause paralytic shellfish poisoning (PSP), diarrhetic shellfish poisoning (DSP), and amnesic shellfish poisoning (ASP). With accelerating climate change, the frequency and intensity of harmful algal blooms capable of producing biotoxins have increased. In South Korea, the Ministry of Food and Drug Safety (MFDS) regulates traditional toxins, including TTX and toxins causing PSP, DSP, and ASP. In contrast, the U.S. Food and Drug Administration (FDA) and European Food Safety Authority (EFSA) have established regulatory standards for a broader spectrum of marine biotoxins, including yessotoxins (YTXs), brevetoxins (BTXs), azaspiracids (AZAs), and ciguatoxins (CTXs), to ensure seafood safety. To effectively address this global concern, the MFDS launched an R&D project entitled "Establishment of the Safety Management System for Marine Biotoxins" (2020-2024). This project focused on enhancing analytical methods to detect unregulated toxins, assessing contamination levels, and developing rapid detection techniques. The project proposal emphasizes the need to establish a comprehensive monitoring system to mitigate future risks, particularly as climate change expands the range of toxic marine species. This project aims to advance our understanding of marine biotoxin contamination and strengthen seafood safety measures in South Korea by aligning them with international standards. This special issue compiles knowledge accumulated and technical advancements related to marine biotoxins, stemming from the outcomes of this project. It includes 12 papers describing analyses of various regulated and unregulated marine biotoxins, the current prevalence of seafood contamination, toxicity assessments, rapid analytical methods, and the state of safety management.

  • This study helps to understand menu quality and find out management strategies in the seafood buffet restaurant business. The major objective of this study is to analyze how menu quality affects customer satisfaction through customer value. It also provides preliminary data for improving seafood buffet restaurants in the rapidly changing circumstances of the restaurant business by establishing strategies for high quality menu. The result of the study shows that menu quality(taste, nutrition, freshness) was directly related to customer value, which positively affected customer value. Especially, taste was the most influential factor. Moreover, customer value had a positive effect on customer satisfaction. This result means that such menu quality factors as taste, nutrition, and freshness should be considered in order to satisfy each customer.

Fisheries Marketing Management Effectiveness of Discount Store (대형할인점의 수산물유통효율성에 관한 연구)

  • This Study attempts to analysis the degrees of the efficiency of fisheries marketing channel's effectiveness, which are traditional marketing channel's effectiveness of fisheries wholesale markets and Discount Store's effectiveness such as margin, marketing performance. The study methodologies include not only a field sample survey but also a field interview. The results of this study are summarized as follows. First, at the numbers of fisheries marketing channel's margin factors, traditional marketing channel's margin factors are more than discount store's margin factors. Secondly, at the comparative study result of marketing channel margin efficiency, traditional marketing channel's prices are similar to discount store's prices. That is, consumers have bought similar retail price's seafood products through traditional marketing channels as well as discount stores cannels. Finally, however most consumers prefer discount stores to traditional retail stores because of discount store's multi-functions such as assortment of goods, freshness, exchange, refund and employee's kindness. In conclusion, the most important factor of fisheries marketing management is to realize the appropriate balance between marketing margin and consumer satisfaction.

Development of an Hazard Analysis Critical Control Point (HACCP) Application Model for Dried Anchovy Workplace (마른멸치 작업장의 식품안전관리인증기준(HACCP)모델 개발)

  • This study were attempted to apply the HACCP system adopted in the dried anchovy workplace to ensure the hygiene safety of dried anchovy workplace. In this study, HACCP system procedures, including HACCP team organization, determination of critical control point(CCP), establishment of critical limits, mornitering and verification etc., were established using KFDA 12 procedures. To determine whether hazards were critical elements, we evaluated the likelihood and seriousness of each hazard element. The likelihood of residual microorganism and metal piece exceeding the acceptable limit in dried anchovy products were demonstrated to be a critical hazard element. Management of the boiling(CCP-1B) and metal detection(CCP-2P) were determined to be a critical control point. The standards for acceptable residual microorganism and metal piece were set based on relevant laws and regulations, and then the limits were adapted and established for the CCP. An HACCP plan applicable to dried anchovy workplace was established.

  • The Ministry of Food and Drug Safety is executing a five-year research project called "Establishment of a Safety Management System for Marine Biotoxins" to determine a safety management system for marine biotoxins. This initiative aims to manage public health concerns by proactively addressing the emerging risks of climate change and the diversification of imported foods. By establishing a robust national management system and promptly responding to marine biotoxin incidents, this project aims to prevent the introduction of new toxins and ensure the safety of domestic seafood products, thereby contributing to food safety management in the Korean fishery industry.

  • For the last few years, the wholesale market system in Japan has been experiencing a lot of changes in the related sectors. The greatest changes in the environments surrounding the wholesale market were enlargement of the producers' cooperatives, increase of fisheries products marketed in the outside of the wholesale market system, and management aggravation of the related businessmen, These changes resulted in the revision of the wholesale Market Law in 1999 to cope with the social needs successfully. Recently, fisheries wholesale markets in Japan have a few problems like declining of earning power, weakening of management constitution, etc. Consequently, Japanese government presents policy for enforcing the competition power through reform laws related with fisheries wholesale markets. Also the fisheries wholesale markets have been trying variety and active countermeasures like undertaking, merger, coalition, etc. to overcome the crisis.

Association between seafood intake and frailty according to gender in Korean elderly: data procured from the Seventh (2016-2018) Korea National Health and Nutrition Examination Survey (한국 노인의 성별에 따른 수산물 섭취 수준과 노쇠 위험성의 상관성 연구: 제 7기 (2016-2018) 국민건강영양조사 자료를 이용하여)

  • Purpose: This study investigates the association between seafood consumption and frailty according to gender in the Korean elderly. Methods: Cross-sectional data from the Seventh (2016-2018) Korea National Health and Nutrition Examination Survey was procured for this study. Data from 3,675 subjects (1,643 men and 2,032 women) aged ≥ 65 years were analyzed. Levels of seafood intake were assessed by a one-day 24-hour dietary recall, and subjects were classified into three tertiles by gender according to frailty phenotype: robust, pre-frail, and frail. Multinomial logistic regression analysis was performed to clarify the association between seafood consumption and frailty for each gender. Results: The prevalence of frailty was determined as 13.4% for men and 29.7% for women. Participants with a higher seafood intake had higher intakes of grains, fruits, and vegetables, while the intake of meat was significantly lower. In both men and women, the group with higher seafood intake showed higher energy and micronutrient intakes. The frail prevalence and frailty score were significantly low in the highest tertiles of seafood consumption compared to the lowest tertile in men and women (p < 0.001). After adjusting for confounder, the highest tertile of seafood consumption showed a decreased risk of frailty compared to the lowest tertile only in women (hazard ratio [HR], 0.50; 95% confidence interval [CI], 0.32-0.78; p-trend = 0.008 vs. HR, 0.52; 95% CI, 0.32-0.83; p-trend = 0.008; respectively). Conclusion: Results of this study suggest that seafood consumption potentially decreases the risk of frailty in the elderly.
