The Antecedents of satisfaction of eco-friendly seafood: The moderating effect of gender (소비가치 관점에서의 친환경 수산물 제품 만족도의 선행요인 분석: 성별의 조절효과를 중심으로)

  • The objective of this study is to analyze how consumption value affects customer satisfaction toward eco-friendly seafood products. Moderating role of gender is also examined. For empirical validation of our model, data were collected from a cross-sectional survey of 307 consumers in the South Korea, who have bought a eco-friendly seafood, a representatives eco-friendly product. The results demonstrated several important findings. First, emotional consumption value, social consumption value and functional consumption value had significant positive effects on eco-friendly seafood product satisfaction, Second, interaction effect of social value and gender had a positive effect on satisfaction. Third, interaction effect of functional value and gender had a negative effect on satisfaction. Theoretical and managerial implications are suggested.

Blood Heavy Metal Concentrations of Korean Adults by Seafood Consumption Frequency: Using the Fourth Korea National Health and Nutrition Examination Survey (KNHANES IV), 2008 (국민건강영양조사 제4기 2차년도 (2008)를 이용한 어패류 섭취빈도에 따른 한국 성인의 혈중 중금속 농도 조사)

  • To determine blood heavy metal concentrations by seafood consumption in Korean adults, blood cadmium, mercury, and lead concentrations in a representative sample of 1,709 Koreans participated in the Fourth Korea National Health and Nutrition Examination Survey (KHANES IV-2) in 2008 were analyzed by age and seafood consumption frequency. The mean blood cadmium, mercury, and lead concentrations were $1.14{\pm}0.73{\mu}g/L$, $5.50{\pm}3.83{\mu}g/L$, and $2.56{\pm}1.22{\mu}g/dL$, respectively. The subjects aged ${\geq}$ 50 years had significantly higher blood cadmium concentrations than the subjects aged 20~39 years. Blood mercury concentrations of the 50's were significantly higher than those of the 20's and 30's (p < 0.05). Approximately, 43% of males and 22% of females had blood mercury concentrations > $5.8{\mu}g/L$ which is a blood mercury level equivalent to the current Reference Dose. Only 2 subjects had lead concentrations > $10{\mu}g/dL$, the standard lead level by the Centers for Disease Control and Prevention, USA. The subjects consuming pollack, mackerel, anchovy, corvina, shellfish, and salted seafood at least once a week had significantly higher mercury concentrations than the subjects consuming those seafoods less than once a month. However, there were no clear relationships between blood cadmium and lead concentrations and seafood consumption frequencies.

Development of Fish Cake Using Salmon Oncorhynchus keta Frame Muscle (연어(Oncorhynchus keta) 프레임육을 활용한 어묵의 개발)

  • This study aimed amount optimization of salmon Oncorhynchus keta mince (SM), threadfin bream Nemipterus virgatus surimi (TBS), natural tomato (NTC) and paprika colorants (PC) for preparation of fish cake using molding device and response surface methodology (RSM). The results of the RSM program for processing of fish cake indicated that the amount optimization of independent variables based on the dependent variables (Y1, gel strength; Y2, overall acceptance) for high-quality FC were 263.8 g for SM, 88.5 g for TBS, 0.11 g for NTC and 0.20 g for PC. Hunter redness and overall acceptance of fish (salmon) cake, which was prepared under the optimum amounts, were 13.82 and 8.33 score, respectively. The fish (salmon) cake was superior in sensory overall acceptance to commercial fish cake.

Nutritional Characteristics of Seasoned Laver Pyropia yezoensis with Conger Eel Conger myriaster Seasoning Sauce (붕장어(Conger myriaster) 조미소스를 활용한 조미김(Pyropia yezoensis)의 영양특성)

  • This study compared the nutritional characteristics of seasoned laver Pyropia yezoensis with conger eel Conger myriaster seasoning sauce (SL-CES) with those of commercial seasoned laver (C-SL). SL-CES had higher protein and lower ash contents than those of C-SL. However, the moisture and lipid contents did not differ between them (P>0.05). The total amino acid content of SL-CES was 21.79 g/100 g, similar to that of C-SL (21.49 g/100 g). The major amino acids in SL-CES were aspartic acid, glutamic acid, and alanine. The SL-CES contained 125.7 mg calcium, 461.6 mg phosphorus, 2183.7 mg potassium, 9.5 mg iron, and 2.6 mg zinc per 100 g SL-CES. These amounts were all higher than those in C-SL, except for Zn. The major fatty acids in SL-CES were 16:0, 18:1n-9, and 18:2n-6.

Taste, Flavor and Nutritional Characteristics of Fish Cake Made from Salmon Oncorhynchus keta Frame Muscle (연어(Oncorhynchus keta) 프레임육을 활용한 어묵의 맛, 냄새 및 영양 특성)

  • This study was conducted to evaluate fish cake made from salmon Oncorhynchus keta frame muscle (FC-SFM) in terms of taste, flavor, and nutritional characteristics. FC-SFM was significantly higher in moisture and lower in ash and carbohydrate than commercial fish cake (CFC). There were no significant differences in protein and lipid contents between FC-SFM and CFC (P<0.05). The total amino acid content of FC-SFM was higher than that of CFC. The major amino acids found in FC-SFM were aspartic acid and glutamic acid. The mineral content based on 100 g of FC-SFM was 76.7 mg calcium, 126.3 mg phosphorus, 19.1 mg magnesium, and 88.7 mg potassium. The total fatty acid content of FC-SFM was 1,833 mg/100 g, which was lower than that of CFC. The major fatty acids found in FC-SFM were 16:0, 18:1n-9, and 18:2n-6. The eicosapentaenoic acid and docosahexaenoic acid content of FC-SFM was higher than that of CFC. The results suggest that FC-SFM has different nutritional characteristics to CFC, and FC-SFM could be commercialized.

A Study on the Development of Set Menu according to Market Segmentation of Chinese Restaurant (중식당의 시장세분화에 따른 세트메뉴 개발에 관한 연구)

  • This study aimed to develop Chinese restaurant set menu which was proper to tendency of market segmentation by using conjoint analysis. In order to examine tendency of market segmentation, this study investigated the important factors and effective values of whole market and segment market. First, the study found that whole market and segment market seemed to prefer seafood to meat except Cluster 3 (Gentle demand type). Second, regarding efficiency of attribute level, the study found that crap soup is favored over seafood in both whole market and segment market except Cluster 1 (strong demand type). Third, Cluster 1 (strong demand type) showed a high level of efficiency on menu which is mixed with meat and seafood. In Cluster 2 (middle demand type), there was a high level of efficiency in meat menu. In case of Cluster 3 (gentle demand type), seafood menu showed high level of efficiency. Forth, there was a high level of efficacy in rice and western dessert menu on the result of analysis on whole market and segment market. Therefore, this study suggests that the preference of seafood is more higher than the preference of meat. It means that current customers care their health more than they used to be. According to this study, people who want to develop Chinese restaurant menu should focus on seafood more than meat. What's more, marketers of chinese restaurants have to not only present new awareness and fresh atmosphere but also provide typical composition of set menu for target customers.

Effects of Fermented Fecal Solid Diets on Growth of the Sea Cucumber Apostichopus japonicus (육상어류양식장의 고형오물을 발효시켜 만든 사료를 급여한 해삼(Apostichopus japonicus)의 성장)

  • The effects of fermented fecal solid diets on the growth of the sea cucumber Apostichopus japonicus was investigated in a recirculating aquaculture system (RAS) during a 90-day experiment at 16.5-17.5℃, 32±0.5 psu salinity, pH 7.9-8.2, and 5.2-7.1 mg/L dissolved oxygen. The aim was to determine the feasibility of RAS fecal solid waste as a renewable feed for A. japonicus. In this study, unfermented fecal solid (UF), fermented fecal solid (FF), and commercial feed (CF) diets were used. The results showed that the growth rate did not differ significantly (P>0.05) between A. japonicus fed FF and CF; however, the growth rates of A. japonicus fed FF and CF were ~50% higher than that of those fed UF. Thus, utilization of fecal solid by A. japonicus may overcome the problem regarding accumulation of RAS waste. Use of a fermentation process would improve utilization of fecal solid as a renewable food source for A. japonicus.

Effect of Fish Farm Fecal Solid Diets on the Growth and Energy Budget of Juvenile Sea Cucumber Apostichopus japonicus (육상어류양식장 고형오물을 공급한 해삼(Apostichopus japonicus)의 성장과 에너지 수지)

  • We conducted a 90-day feeding experiment to evaluate the growth and energy budget of the sea cucumber Apostichopus japonicus. Sea cucumbers with a mean initial wet body weight of 3.03±0.06 g were fed one of the following three diets: an eel fecal solid diet, rainbow trout fecal solid diet, or a commercial diet at a water temperature of 17±1℃ and salinity of 32±1 psu. The results suggested that the diets affected the final body weight, specific growth rate (SGR), food ingestion, feces production ratio, and hence the growth and energy budget of the sea cucumbers. Sea cucumbers fed the eel and rainbow trout fecal solid diets showed poorer energy absorption, assimilation, and growth than those fed the commercial diet. The sea cucumbers fed the commercial diet had a significantly higher SGR and proportion of energy used for growth than those fed the other two diets. Sea cucumbers fed the rainbow trout fecal solid diet showed a comparatively higher ingestion rate and feces production ratio than those fed the commercial diet. The eel and rainbow trout fecal solid diets, therefore, were not suitable for sea cucumbers in intensive cultivation. Our findings will facilitate further development of more appropriate diets for culture of sea cucumber.

Optimum Sterilization Conditions and Quality Characteristics of the Retort-Sterilized Crab Analog (레토르트 Crab Analog의 살균 최적화 및 품질 특성)

  • This study developed a normal temperature-circulatable retort-sterilized crab analog (RSCA) with a long shelf-life by retort sterilization. We examined the optimum sterilization conditions and quality characteristics of the RSCA. A central composite design for response surface methodology (RSM) was adopted to optimize of the retort sterilization. The central composite design consisted of 11 samples: four factorial points, four star points, and three central points. The sterilization temperature and $F_0$-value for retort sterilization were the independent variables, and the shearing force, whiteness, and sensory score for texture were the dependent variable. The RSM analysis of the multiple response optimization for the RSCA using the Minitap statistical programing gave an $F_0$-value of 3.3 min. at $117.5^{\circ}C$. The RSM analysis also indicated that the sterilization temperature during retort sterilization was the most influential factor, while the $F_0$-value had little effect on the quality of the RSCA. The moisture, pH and volatile basic nitrogen contents of the RSCA product were 73.1%, 7.3 and 17.2 mg/100 g, respectively, and viable cells count was >18 CFU/g. And sensory quality characteristics of this RSCA was similar to those of a commercial crab analog.
