주요 식이섬유질원이 흰쥐의 장내균총조성에 미치는 영향 (Effect of Dietary Fiber Sources on the Composition of Intestinal Microflora in Rats)

  • This study was performed to investigate the influence of various dietary fiber sources(rice bran, Chinese cabbage, radish, apple, laver, sea mustard) on the intestinal microflora in rats. Eight groups of rats were fed each experimental diets containing 5% of total dietary fiber for 4 weeks. Total viable counts and the numbers of Bifidobacterium, Lactobacillus, Clostridium, E. coli and Staphylococcus were determined by nonselective medium and various selective media. The number of Bifidobacterium(p<0.01) was higher in the apple and sea mustard groups than those in the other groups and the number of Lactobacillus(p<0.01) was lower in the radish group. A decrease in the intestinal population of clostridium was shown in the sea mustard group. The E. coli(p<0.01) and Staphylococcus(p<0.01) populations decreased in the apple group compared with other groups. These findings suggest that the apple fiber and sea mustard fiber are effective in improving intestinal flora of rats.

칼슘급원식품의 체내이용성 연구 (A Study on the Bioavailability of Dietary Calcium Sources)

  • This study was conducted to investigate the effect of various types of calcium sources on calcium metabolism. Sprague-Dawley male rate weighing approximately 82g were divided into 6 groups and fed experimental diets containing about 0.2% calcium for 4 weeks. Perilla leaves, dried sea mustard, mulberry leaves, loach, skim milk powder, and CaCO3 were used as calcium sources for this study. Food intake of experimental groups showed no significant difference from that of control group, but food efficiency ratio were higher in group fed loach as a calcium source. Apparent calcium absorption from perilla leaves, and skim milk powder groups as good as that in CaCO group. Femur length showed no significant difference among exjerimental groups with different calcium sources. The breaking force of bone was higher in loach and dried sea mustard groups. Weight, ash weight, and calcium content of the femur were higher in the loach diet group than in the others. Thus, calcium from not only skim milk powder but also perilla leaves, dried sea mustard, mulberry leaves, and loach appears readily available and all of these can be recommended as calcium sources.

미역 페이스트 첨가에 의한 고기 패티의 품질변화 (Quality Changes of Meat Patties by the Addition of Sea Mustard Paste)

  • Sea mustard paste was prepared by treating wet and dried sea mustard with 0.1M Na2CO3, which mainly aimed to extract alginate from the cell wall of sea mustard. The pastes were added to beef, chicken and pork to manufacture the meat patties. The effects of adding the paste were investigated in terms of sensory properties, texture(hardness)and weight changes after cooking. The sensory attributes such as taste, color, texture and juiciness were generally enhanced by adding the paste. The hardness of cooked patties was significantly decreased, so the paste provided softer texture. The addition of paste also resulted in decreasing the weight loss of meat patties after cooking.

다당류 분해효소의 첨가가 미역 추출액의 수율 및 점도에 미치는 영향 (Effects of Polysaccharide Hydrolase on Solids Yields and Viscosity of Aqueous Extracts of Sea Mustard)

  • 3가지의 다당류 분해효소를 사용한 가수분해가 미역추출액의 상징액율, 고형분 수율, 점도에 미치는 영향을 조사하였다. 그 결과 추출전에 효소분해할 때 고형분 농도를 27.31%, 고형분 수율을 14.04%까지 증가시켰다. 그러나 미역 분산액을 원심분리 후의 상징액율은 약간 낮았다. 추출액의 점도는 효소분해 초기에 유의적으로 증가하였다.

미역의 Brassinosteroid 활성물질검색 (Investigation of Brassinosteroid Substances in Undmia pinnatifida)

  • 미역엽상부의 MeOH추출물에 포함되어 있는 brassinosteroid활성물질을 검색하기 위하여 용매분획, CCD, silica gel흡착 chromatography, Sephadex LH-20 chromatography, charcoal 흡착 chromatography, Bondesil chromatography, 그리고 reverse phase의 HPLC등의 수법을 이용하여 분리 정제하고 각 단계에서 생물검정법으로 활성을 검정한 결과, 해조류인 미역에도 brassinosteroid활성물질의 존재가 인정되었는데, 그 함량은 타 식물의 영양조직에 비교하여 낮은 수준이었다.

  • 해조묵제조 과정에서 묵중 $Ca^{++}$함량 및 조직학적 변화를 조사하였다. 겔화한 동안 미역이 다사마 보다 $Ca^{++}$함량증가가 빠르면, 겔형성 후 수침시 유출되는 $Ca^{++}$량도 미역이 다시마 보다 많았다. 알칼리용해 및 여과는 묵 수침시 $Ca^{++}$유출량을 감소시켰다. 미역은 불규칙하고 긴 세포벽을, 다시마는 비교적 규칙적인 세포벽으로 이루어져 있으며, 알긴산은 세포벽 주위에 주로 존재하였다. 가열, 알칼리 용해 및 묵제조에 딸 알긴산은 점차적으로 용해되었으나 사상세포는 다시마인 경우 미세하게 절단되었으나 미역인 경우는 상당부분 묵 중에 잔존하였다.

해조분말 추출물의 건조방법에 따른 품질 및 항산화 특성 (Quality Characteristics and Antioxidant Properties in Spray-dried and Freeze-dried Powder Prepared with Powdered Seaweed Extracts)

  • 본 연구에서는 해조분말의 산업적 활용을 위하여 미역, 다시마 열수 추출물을 분무건조 및 동결건조한 분말에 대한 품질 및 항산화 특성을 비교 분석하였다. 미역 추출물의 분무건조 및 동결건조 수율은 유의적인 차이는 없는 반면, 다시마에서는 동결건조에서 월등히 높았다. 수분함량은 분무건조에서 유의적으로 높았으며, 색도는 분무건조가 동결건조에 비하여 $L^*$ 값 및 hue angle 값은 낮고 $a^*$ 값 및 $b^*$ 값은 높은 경향을 나타내었다. 흡습특성에서는 분무건조 분말이 동결건조 분말에 비하여 낮은 흡습성을 나타내었다. 미역, 다시마의 alginates 함량은 전반적으로 분무건조 시 높은 함량을 나타내었으며 총 폴리페놀 및 플라보노이드 함량 역시 분무건조가 동결건조에 비하여 유의적으로 높은 함량을 나타내었다. DPPH 라디칼 소거활성, SOD 유사활성, 아질산염 소거능 및 지질산패 억제능은 미역, 다시마 모두 농도증가에 따라 활성이 증가하는 결과를 나타내었으며 분무건조물에서 높은 활성을 나타내었다.

Optimization for Reduced-Fat / Low-NaCl Meat Emulsion Systems with Sea Mustard (Undaria pinnatifida) and Phosphate

  • The effects of reducing fat levels from 30% to 20% and salt concentrations from 1.5% to 1.0% by partially substituting incorporated phosphate and sea mustard were investigated based on physicochemical properties of reduced-fat / low-NaCl meat emulsion systems. Cooking loss and emulsion stability, hardness, springiness, and cohesiveness for reduced-fat / low-NaCl meat emulsion systems with 20% pork back fat and 1.2% sodium chloride samples with incorporation of phosphate and sea mustard were similar to the control with 30% pork back fat and 1.5% sodium chloride. Results showed that reduced-fat / low-NaCl meat emulsion system samples containing phosphate and sea mustard had higher apparent viscosity. The results of this study show that the incorporation of phosphate and sea mustard in the formulation will successfully reduce fat and salt in the final meat products.

  • Sea mustard (Undaria pinnatifida), an important edible seaweed belonging to the brown algal family of Alariaceae, contains copious physiologically active substances. It has long been popular in Korea as a food and is frequently consumed in the form of soup. It is also commercially available as a home meal replacement. In this study, we developed a seasoning key base with a high degree of sensory preference from sea mustard using the extrusion cooking process. Extrusion cooking conditions were optimized through response surface methodology. Barrel temperature (X1, 140℃-160℃) and screw speed (X2, 158-315 rpm) were set as independent variables, and overall preference was determined as the dependent variable (Y, points). An optimal condition was obtained at X1 = 148.5℃ and X2 = 315 rpm, and the dependent variable (Y, overall acceptance) was 7.95 points, similar to the experimental value of 7.81. Umami taste had a relationship with the overall acceptance of sea mustard seasoning. In the electronic nose and tongue, increased sourness and umami intensities were associated with the highest sensory score. The samples were separated well by each characteristic via principal component analysis. Collectively, our study provides imperative preliminary data for the development of various seasonings using sea mustard.

부산 태종대 굴통머리 미역(Undaria pinnatifida)의 화학적 특성 및 항산화 효과 (Chemical Characteristics and Antioxidant Effects of Sea Mustard Undaria pinnatifida from the Gultongmeori Area, Taejongdae, Busan)

  • We investigated the nutritional characteristics and antioxidant effects of sea mustard Undaria pinnatifida fractions from Gultongmeori in Taejongdae, Youngdo, Busan. Based on dry weight, the moisture, crude protein, crude lipid, crude ash, and crude fiber contents were 34.98%, 11.55%, 0.43%, 17.82%, and 3.45%, respectively. To evaluate the antioxidant effect, we used radical scavenging (DPPH and ABTS), reactive oxygen species (ROS) production measurement, and DNA oxidation assays. Total flavonoid and phenol contents were higher in the n-hexane fraction than in other fractions. The n-hexane fraction was more effective at scavenging free radicals than other fractions as assessed using DPPH and ABTS assays (P<0.05). The ROS production assay showed that all sea mustard fractions decreased H2O2 induced cellular ROS production compared to that seen in the control (P<0.05); however, the n-hexane fraction reduced cellular ROS production to a greater extent than the other fractions. Furthermore, the n-hexane fraction from Gultongmeori significantly inhibited genomic DNA oxidation. These results indicate that the antioxidant effect of sea mustard is associated with its high flavonoid and phenol content. This study proposes that processed food products supplemented with sea mustard can be developed as functional foods to promote health in the local population.
