Characteristics of Kakdugi Radish Cube by Autumn Cultivars during Salting (가을무 품종별 깍두기 무 절임 특성)

  • Characteristics (salt concentration, weight loss, soluble solid content, moisture content, pH, textural properties) of kakdugi radish cube (kakdugi radish, $2{\times}2{\times}2\;cm$) were evaluated during salting. Five different radish cultivars harvested in autumn were immersed into 10, 15 or 20% brine solution (radish : brine solution = 1 : 2) at $15^{\circ}C$ for 5hrs. The time required to reach the optimum salt concentration (3.0%) was different among cultivars; in the 10% brine solution, 5hr for 'Taeback', 4hr for 'Bakja', 3hr for 'Kwandong' and 'Bakbong', 2hr for 'Bagkwang'. Generally, it was observed that it took shorter salting time at higher concentration of brine solution. While the highest value of weight loss of kakdugi radish cubes was observed with 'Bagkwang', the lowest, 'Taeback'. There was a decrease of pH of kakdugi radish during salting; while 'Bakja' showes little change in pH, 'Bagkwang' shows large decrease of pH. Hardness and fracturability decreased during salting; the highest value of hardness was observed with 'Taeback', the lowest, 'Bagkwang' has the highest moisture content, the lowest soluble solid content and hardness. There was a similarity of characteristics of kakdugi radish cube between two cultivars, 'Taeback' and 'Bakja', as well as 'Bagkwang', and those of 'Kwandong' and 'Bakbong' were between two types of cultivars.

Effects of the Salting of Chinese cabbage on Taste and Fermentation of Kimchi (배추 절임 방법이 김치의 맛과 숙성에 미치는 영향)

  • This study is a result of the experiments to determine the optimum conditions of salting of Chinese cabbages for making tasty Kimchi. For the experiments, various methods of salting of Baechu were set up and the best method of salting had prepared Kimchi to investigated the best salt kind. In the two best results by method of salting salt kind, were investigated for salting time of Kimchi. There were certain amounts of Kimchi had prepared for each case of the combinations of the three conditions. Every case of Kimchi was refrigerated and was evaluated by sensory tests. In the salt concentration, pH and acidity of the Kimchi were measured. The results are as follows; In three cases of Kimchi, for salt concentration, level of 2.4-3.0$^{\circ}$ was maintained in Kimchi solid from the beginning to the end, while it was high in the beginning and gradually lowered in Kimchi liquid. The level of pH in both solid and liquid of Kimchi quickly dropped at the beginning of fermentation period and turned slow as time passed. And the level of acidity was increased little bit in the beginning, but it suddenly multipied until the third day of preservation. Since then, it had increased gradually thereafter as it was before. This experiments show that Kimchi can be the best taste in the case of Chinese cabbage soak in brine- free natural salt are kept for five hours.

Characteristics of Lotus and Lance Asia bell as Ingredients of Kimchi (김치원료로서 연근과 더덕의 절임특성 연구)

  • The study of quality and salting characteristics of root vegetables other than Chinese cabbage was done to develop different kinds of Kimchi. The root vegetables lotus (Nelumbo nucifera) and lance Asia bell (Codonopsis lanceolata) were evaluated as main ingredients for Kimchi by measuring their physico-chemical and microbial properties. Salinity, pH, titratable acidity, reducing sugar, firmness, color change, moisture content, total viable counts, and lactic acid bacteria were investigated to identify adaptability for Kimchi. The initial pH of lotus and lance Asia bell showed 5.7 to 6.3 during the salting period, and the pH decreased with increasing salting periods. The reducing sugar contents of lance Asia bell showed 34.1 to 35.6 mg/g, which were significantly higher compared to lotus 3.2 to 3.4 mg/g. Titratable acidity also showed higher in salted lance Asia bell at 0.36 to 0.4%, while lotus showed 0.17 to 0.27%. Lactic acid producing bacteria increased in lance Asia bell during salting periods and reached $2.1{\times}10^4CFU/g$ after 48 hr of salting. However, no lactic acid bacteria were detected in lotus. As a result of this physico-chemical and microbial analysis, lance Asia bell was more suitable as an ingredient of Kimchi than lotus.

  • In previous paper (Lee et al., 1983) processing method of sardine meat "surimi" was described as a part of the wort to develop new types of ready-to-cook food materials with dark fleshed fishes. As the other part of the work, processing of low salt mackerel fillet was investigated, in this paper, in which fresh mackerel was filleted, salted in brine or with dry salt for an adequate time until the expected salt concentration reached, washed, air dried (3 m/sec, 15 to $20^{\circ}C$), and finally packed individually in K-flex film bag by vacuum or $N_2$ gas substitution. Salting time and salt concentration of brine was decided by the salt level penetrated into the fillet. As the final salt level was fixed to 4 to $5\%$, salting for 20 hours with $10\%$ dry salt or in $15\%$ brine at $5^{\circ}C$ was enough to get that level of salt. If the final salt level was set 5 to $6\%$, salting for 20-24 hours with $15\%$ dry salt or in $20\%$ brine was adequate. Salt penetration, however, was not much influenced by salting method and temperature. Changes in VBN and salt soluble protein occurred more rapidly in cases of salting with dry salt at $20^{\circ}C$ than salted in brine at $5^{\circ}C$, although it was not significant in the period of 20 to 24 hours. Oxidation of lipid and histamine formation during salting at $20^{\circ}C$ could not be neglected if it was delayed loger than 25 hours. Insolubilizing the salt soluble proteins during the storage of salted fillet occurred rapidly regardless of storage temperature. Browning and histamine formation, however, was depended on temperature and packing condition. In case of air pack, deterioration by browning and rancid was deeply developed but not the case for the packs by vacuum or $N_2$ gas substitution. The shelf-life of the salted mackerel fillet based on panel scores of brown color and rancidity, appeared 21 days for the air packed, and more than 30 days for vacunm or $N_2$ gas packed fillet at $20^{\circ}C$.

  • Kimchi has been worldwide recognized as a traditional Korean fermented food, In the Chinese cabbage's pickling, salt content of evenly penetrate into the tissue affects on the texture of matured kimchi, But the previous method which usually using brine salting has a disadvantage of uneven penetration of salt into the leaves and stems. The purpose of the study is to develope the method which produce superior kimchi by evenly penetrate the salt into the tissue rapidly, The dry salting method is directly spread the salt on the surface of chinese cabbage as percentage in weight with 10, 12, 14, 16%(s) and pickled in this state for 5 hours. Brine salting method is soaking chinese cabbage in the 16% salt solution(16%B) for 20 hours. Sensory evaluation, contents of salt, properties of mechanical hardness and micro structure were studied among fresh cabbage, 16%B and 10, 12, 14, 16%(s) cabbage, The result of salt contents in all groups of pickled chinese cabbage were significantly increased compared with fresh cabbage. The compressive force of cabbage's steams by mechanical measurement was significantly decreased but cutting force was increased. In pickled cabbage, the cutting force was the highest correlated with salt content, In the sensory evaluation, the salty taste of leaves and chewy degree were significantly increased, but the hardness and crips of the stems were significantly decreased by increasing salt contents. Therefore the dry salting is the most excellent pickling method in small amount of kimchi production by saving salt amount and time, furthermore due to even penetration of salt into leaves and stems.

Change in the Physicochemical Properties of Dolsan Leaf Mustard under Salting Conditions (절임조건에 따른 돌산갓의 이화학적 특성 변화)

  • To investigate the optimal salting conditions, the physicochemical properties of Dolsan leaf mustard were compared under various salting times and using various washing methods and storage temperatures at 10% saline. On the other hand, the cell number of lactic-acid bacteria in Dolsan leaf mustard salted under the optimal conditions was also examined during the 50-day storage. The results of the sensory evaluation of the crispness value of the Dolsan leaf mustard treated with stepwise washing after 8h salting showed the optimal conditions for long-term preservation. The pH of the salted Dolsan leaf mustard decreased with the increase in the lactic-acid bacteria during the storage at $4^{\circ}C$. The cutting energy slowly increased during the storage, but the cutting energy of the salted Dolsan leaf mustard treated with stepwise washing remained at the initial values. The color of the salted Dolsan leaf mustard did not change during 40-day storage, but the mustard turned brown after 50-day storage, for which reason it could not be made into Dolsan leaf mustard kimchi. These results could be recommended as the optimal salting conditions and storage time of salted Dolsan leaf mustard for making kimchi.

Salt Effect of Metal Ion Substituted Membranes for Water-Alcohol Systems Using Pervaporation Processes (투과증발공정을 이용한 물-알코올계에 대한 금속이온이 치환된 이온교환막의 염효과 연구)

  • The hydorgen ions in PVA/SSA membranes were substituted with monovalent metal ions, $Li^{+}$, $Na^{+}$, $K^{+}$, divalent metal ion forms, $Mg^{2+}$, $Ca^{2+}$, $Ba^{2+}$, trivalent metal ion forms, $Al^{+}$. The effect of exchange with metal ions was investigated through the swelling measurement and pervaporative experiments for water-ethanol and water-methanol mixtures at various operating conditions. In addition, ESCA analysis was carried out to study the substitution of the metal ions in membranes. The swelling ratio decerased in the sequence of $Li^{+}$, $Na^{+}$, $K^{+}$ and this might be due to the 'salting-out` effect while the swelling ratios for divalnet and trivalent ion-substituted membranes were affected by the combined effect of salting-out, electrostatic crosslinking and extent of metal ion substitution. For the pervaporation performance, PVA/SSA-$H^{+}$membrane showed the lowest flux and highest separation factor for all aqueous ethanol solutions. The typical results of the flux, 59 g/$m^{2}$hr and the separation factor, 44 were obtained at $50^{\circ}C$ for 90% ethanol aqueous mixture. For water-methanol solutions, the PVA/SSA membranes substituted with monovalent PVA/SSA membranes substituted with divalent and tribalent metal ions, both `salting-out` and electrostatic effects affected the pervaporative results.

  • The changes in the various chemical compositions and textural properties of salted vegetables during salting and fermentation were reviewed with 25 papers published from 1981 to 1991 The changes in the texture of vegetables were largely affected by the properties of pectic substances, and additional factors such as salt type, salt concentration, salting time, temperature, preheating treatment, enzyme, salt mixtures, salt-fermented fish and garlic contents, were concerned complexly.

Influence of Inorganic Salts on Aqueous Solubilities of Polycyclic Aromatic Hydrocarbons

  • Setschenow constants of six alkali and alkaline earth metal-based electrolytes (i.e., NaCl, KCl, CaCl$_2$, K$_2$SO$_4$, Na$_2$SO$_4$, NaClO$_4$) for three polycyclic aromatic hydrocarbons (PAHs) (i.e., naphthalene, pyrene, and perylene) were investigated to evaluate the influence of a variety of inorganic salts on the aqueous solubility of PAHs. Inorganic salts showed a wide range of K$\_$s/ values (L/mol), ranging from 0.1108 (NaClO$_4$) to 0.6680 (Na$_2$SO$_4$) for naphthalene, 0.1071 (NaClO$_4$) to 0.7355 (Na$_2$SO$_4$) for pyrene, and 0.1526 (NaClO$_4$) to 0.8136 (Na$_2$SO$_4$) for perylene. In general, the salting out effect of metal cations decreased in the order of Ca$\^$2+/>Na$\^$+/>K$\^$+/. The effect of SO$_4$$\^$2-/>Cl$\^$-/>ClO4$\^$-/ was observed for anions of inorganic salts. The K$\_$s/ values decreased in the order of perylene>pyrene>naphthalene for K$_2$SO$_4$. However, the order of decreasing salting out effect for NaCl, KCl, CaCl$_2$, and NaClO$_4$ was perylene>naphthalene>pyrene. Hydration free energy of the 1:1 and 2:1 alkali and alkaline earth metal-based inorganic salts solution was observed to have a meaningful correlation with Setschenow constants. Thermodynamic interactions between PAH molecules and salt solution can be of importance in determining the magnitude of salting out effect for PAHs at a given salt solution.

Comparison of Cutting and Compression Tests for the Texture Measurement of Chinese Cabbage Leaves (절단시험과 압착시험에 의한 배추잎의 조직감 측정 비교)

  • The texture measurement of Chinese cabbage leaves used for Kimchi preparation were con ducted by cutting and compression test and the results were compared to the sensory evaluation. The cutting force of cabbage leaf stalk increased by blanching or salting, and a maximum cutting force was attained by salting in 15% salt solution for 5 hours. The compression force and recovered height measured by compression test of Chinese cabbage leaf stalk decreased by blanching or salting, and the breaking point disappeared. Treatment with $CaCl_2$ solution increased the cutting force compression force and breaking strength of fresh leaves, but the effect disappeared by salting or blanching. Cutting strength could be used as a parameter indicating the hardness and chewiness of salted cabbage. Compression force and breaking strength could indicate the textural changes of blanched leaves, but were not useful for the measurement of hardness and chewiness of salted leave.
