Changes of Hydraulic Conductivity During Desalmization of Reclaimed Tidelands (간척지 토양의 제염과정중 수리전도도의 변화)

  • This laboratory study was carried out in order to produce fundamental data for analyzing salt movement and desalinization effects, using samples of silt loam soil collected in Gyehwado and Daeho reclaimed tidelans, and samples of silty clay loam soil collected in Kimie tideland. Desalinization experiments with gypsum treatment were performed to analyze changes of the hydraulicc conductivity with changes of the soil property and the salt concentration during the desalinization of reclaimed tideland soils by leaching through the subsufface drainage, and correlations between factors infl uencing the reclamation of salt affected soils were analyzed by the statistical method. The results were summarized as follows: 1. The reclaimed tideland soils used in this study were saline-sodic soils with the high exchangeable sodium percentage and the high electrical conductivity. 2. Changes of the hydraulic conductivity with the amount of leaching water and the leaching time elapsed were affected by the amount of gypsum except exchangeable sodium and clay contents. The regression equation between the depth of water leached per unit depth of soil (Dw / Ds : X) or the square root of the leaching time elapsed (T $^1$ $^2$ : X) and the relative hydraulic conductivity (HCr:Y) could be expressed in Y=a . bx. 3. The more exchangeable sodium and clay contents regardless of the amount of gypsum, the more the leaching time was required until a given volume of water was leached through the soil profile. The regression analysis showed that the relationship between the depth of water leached per unit depth of soil(Dw /Ds:X) and the square root of the leaching time elapsed(T$^1$$^2$ :Y) could be described by Y=a . Xb. 4. The hydraulic conductivity was influenced to a major degree by the salt concentration provided that the electrical conductivity was below 10 mmhos / cm during the desalinization of reclaimed tideland soils. The regression equation between the relative electrical conductivity ( ECr : X) and the relative hydraulic conductivity (HCr:Y) could be expressed in Y=a + b . X-$^1$. 5. In conclusion, the hydraulic conductivity, leaching requirements and the leaching time elapsed can be estimated when the salt concentration decreases to a certain level during the desalinization of reclaimed tidelands, and the results may be applied to the analysis of salt movement and desalinization effects.

Quality Characteristics of Low-Salt Myungran Jeotkal Fermented by Vegetable-Origin Lactic Acid Bacteria and Salt from Deep Sea Water

  • In this study, the physicochemical and sensory characteristics of low-salt Myungran jeotkal (Alaskan pollock roe) were evaluated after fermentation at $4^{\circ}C$ and $20^{\circ}C$ with or without the addition of deep sea water, salt from deep sea water, and vegetable-origin lactic acid bacteria (Lactobacillus fermentum JS, LBF). When fermented at $20^{\circ}C$, the addition of LBF to Myungran jeotkal resulted in a slow increase in lactic acid content, followed by an abrupt increase after five days of fermentation. However, when fermented at $4^{\circ}C$, the lactic acid content did not change significantly. Further, when Myungran jeotkal fermented at $4^{\circ}C$, the pH decreased as lactic acid production increased. The salinity of Myungran jeotkal fermented at $4^{\circ}C$ and $20^{\circ}C$ was 7% and was not affected by fermentation period. When fermented at $20^{\circ}C$, volatile basic nitrogen and amino nitrogen contents increased with increasing duration of fermentation. Further, volatile acid content decreased, however, the content of amino nitrogen increased after 11 days of fermentation with LBF and no salt effects were observed. When fermented at $20^{\circ}C$ for 13 days, preference (sensory evaluation) was the highest in all experimental groups after 9 days of fermentation, and then decreased as the fermentation period increased. The free amino acid content was highest (1,648.8 mg/100 g) in Myungran jeotkal when sun-dried salt and LBF were added, 2.3 times higher than in the control.

  • The purpose of this paper is to evaluate FRP rod for aging, which exposed to salt water and pure at elevated temperature. Dielectric constant and tan .delta. on time and frequency domain were tested to observe how rapidly the FRP rod aged. Dielectric constants of FRP rods with treating time were slightly increased. That of FRP rods with frequency, However, showed strongly the effects of large relaxation time estimated from interfacial polarization a or ionic. It is obvious that absorbed water affects to dielectric and electric properties of FRP with increasing the treating time.

  • Objectives The present study aimed to investigate the change in marker compounds, anti-oxidative and anti-inflammatory effects of salt-water processed Cortex Eucommiae. Methods To evaluate the influence of processing on anti-oxidant effect of Cortex Eucommiae, changes in total phenol, total flavonoid, 2,2-diphenyl-1-picrylhydrazyl (DPPH) free radical scavenging, 2,2'-azino-bis(3-ethylbenzothiazoline-6-sulphonic acid) (ABTS) free radical scavenging, and ferric reducing antioxidant power (FRAP) between processed and raw Cortex Eucommiae were assessed. In addition, nitrite assay was conducted to determine the influence of processing on anti-inflammatory effect of Cortex Eucommiae. Cell viability was also examined as to elucidate whether processing affects cytotoxicity of Cortex Eucommiae. Finally, high-performance liquid chromatography (HPLC) analysis was conducted to monitor changes in pinoresinol diglucoside amount of processed and raw Cortex Eucommiae. Results Salt-water processed Cortex Eucommiae showed higher total phenol and flavonoid amount, compared to raw Cortex Eucommiae. Furthermore, anti-oxidative activity of processed Cortex Eucommiae was improved as discovered in DPPH, ABTS, and FRAP assays. Anti-inflammatory effect of Cortex Eucommiae was also enhanced following salt-water processing, as evidenced in nitrite assay. HPLC analysis found that the amount of pinoresinol diglucoside, widely known as the marker compound of Cortex Eucommiae, increases through salt-water processing. All experiments were performed with non-toxic concentration of Cortex Eucommiae; processing did not affect the cytotoxicity of Cortex Eucommiae up to the currently adopted concentration. Conclusions The present results support that salt-water processing of Cortex Eucommiae is beneficial in terms of marker compound amount, anti-oxidative, and anti-inflammatory activities. Additional investigations are needed to standardize the processing method of Cortex Eucommiae.

Simple discrimination method of male and female depending upon the specific gravity of pupa in silkworm, Bombyx mori L. (잠용의 비중에 의한 간이한 자웅감별법)

  • The aim of this experiment was to investigate the method of discrimination of male and female depending upon the specific gravity of pupa in silkworm varieties which are being recommended in Korea at present. The results obtained are as follows: 1. The specific gravity of silkworm pupa existed between 1,000 and 1,100. 2. Female pupae went to the bottom of salt water(NaCl), around 1,020 of specific gravity, while male pupae came near to the surface of salt water. 3. Salt water of around 1,020 specific gravity was not harmful to the pupa, egg laying ability and moth emerging ability. 4. The effect of salt water on the other useful characters will be assigned to the next chance, and also the device of cocoon cutting machine is being studied.

Changes in the Free Amino Acid Content of the Shucked Oyster Crassostrea gigas Stored in Salt Water at 3℃

  • Shucked oysters were soaked in an equal weight of salt water and stored at $3^{\circ}C$ for 7 days. Changes in the free amino acid content of the whole body and in the adductor muscle were evaluated by a practical distribution method. With the exception of aspartic acid and tyrosine, no significant changes in free amino acids or ammonia were observed in whole-body shucked oysters during the storage period. In contrast, the majority of free amino acids in the adductor muscle decreased significantly. Most of these free amino acids were detected in considerable amounts in the surrounding salt water after 7 days of storage. Both the weight of the whole body and the salinity of the surrounding salt water decreased significantly during the storage period. These results suggest that free amino acids were eluted from the cutting surface of the adductor muscle and indicate that the free amino acid content per shucked oyster and in the adductor muscle, decreases during cold storage.

  • The principal objective of this study was to determine the optimal mixing ratios of three different quantities of spirulina, salt and water for the preparation of Korean rice cake (Dukbokiduk) via response surface methodology on the basis of color, texture, and sensory test. The spirulina levels were tested in a range of $1{\sim}3%$, the water levels in a range of $15{\sim}25%$, and salt levels were tested a range of $0.5{\sim}1%$ by weight of rice powder. Taste was influenced most profoundly by the amount of added spirulina. Optimal taste was achieved with 1% of spirulina, 0.75% of salt and 20% water. Thus, the optimal mixing ratios of spirulina, salt, and water for Dukbokiduk were 1.0%, 0.57%, and 19.46%, respectively.

Effect of Organic Residue Incorporation on Salt Activity in Greenhouse Soil (시설재배지 토양에서 유기자재 투입이 염류활성도에 미치는 영향)

  • In Korea, salt stress is one of the major problems limiting crop production and eco-environmental quality in greenhouse soil. The objective of this study was to evaluate the effectiveness of organic residues (Chinese milk vetch, maize stalk, rice straw, and rye straw) for reducing salt activity in greenhouse soil. Organic residues was incorporated with salt-accumulated soil (EC, 3.0 dS $m^{-1}$) at the rate of 5% (wt $wt^{-1}$) and the changes of electrical conductivity (EC) was determined weekly for 8 weeks under incubation condition at $30^{\circ}C$. The EC, microbial biomass carbon (MBC), and water soluble ions in soil was strongly affected by C/N ratio of organic residues. After 8 weeks incubation, the concentration of water soluble $NO_3{^-},\;Ca^{2+}$, and $Mg^{2+}$ was significantly decreased in organic residues having high C/N ratio (maize stalk, rice straw, and rye straw) incorporated soil compared to organic residues having lower C/N ratio (Chinese milk vetch) incorporated soil. The EC value in Chinese milk vetch incorporated soil was higher than control treatment. In contrast, maize stalk, rice straw, and rye straw amended soil was highly decreased the EC value compared to control and Chinese milk vetch applied soil after 4 weeks incubation. Our results indicated that incorporation of organic residues having high C/N ratio (>30) could reduce salt activity resulting from reducing concentration of water soluble ions.

Quality Properties of Beef Jerky Replaced Salt with Soy Sauce, Red Pepper Paste and Soybean Paste during Storage

  • The aim of this study was to investigate the quality properties of beef jerky replaced salt with soy sauce, red pepper paste, and soybean paste. The quality properties of beef jerky including final water activity ($a_w$), moisture content, pH, color, shear force, total plate counts, thiobarbituric acid reactive substance (TBARS) values, and sensory evaluations were investigated. The sliced beef samples were marinated in salt (control), soy sauce (T1), red pepper paste (T2), and soybean paste (T3) for 24 h and then dried at $70^{\circ}C$ for 6-8 h. The water activity of finished beef jerky varied from 0.72 to 0.70. The water activity for control and T1 samples decreased more rapidly as drying proceeded up to 6 h. The samples with salt replacement showed a lower pH and lightness than the control (p<0.05). The T1 sample showed a significant decrease in total plate counts after 21 d of storage (p<0.05). The TBARS for all treatments increased with storage days (p<0.05). The TBARS were significantly lower in T2 and T3 samples compared to control and T1 until 21 d of storage (p<0.05). The samples with salt replacement showed a lower intensity of saltiness than the control. Sensory evaluations found that the replaced soy sauce of beef jerky samples had better overall acceptability scores than the other treatment samples. It was concluded that replacing salt with soy sauce can delay lipid oxidation and enhance the sensory acceptance of beef jerkies.

  • For the Effective utilization of the fish resources in coastal regions, investigations on preparation of powdered dried arkshell instant soup., quality stability of the products during storage and utilization as a food material were carried out with arkshell, Anadara broughtonii. Three kinds of powdered instant soup were prespared as 0% table salt(A), 5% table salt (B), 15% table salt(C) and packed with vacuum in laminated film bag. (polyester/nylon: 85${mu}ell$/15${mu}ell$, 18$\times$27cm) Their processing conditions and quality stability during storage at room temperature for 90 days were examined. Powdered instant soup was made by washing raw arkshell to remove visceral, clay, sand and blood, hot air drying(60$\pm$1$^{\circ}C$, 20 hrs) after draining and pulverizing dried arkshell to 35 mesh. Powdered instant soup was made by adding 2% sugar 0% table salt (5% and 15% table salt), 10.5% monosodium glutamate, 0.3% black pepper and 0.3% garlic powder to the pulverized dried arkshell. The condition of moisture and water activity of the products were 5.9-6.9% and 0.42-0.43, respectively. The moisture content s , water activity and pH of the products were showed little change and volatile basic nitrogen of them increased slightly during storage. Thiobarbituric acid value increased up to 60 days of storage and then decreased slightly. In solubility, powdered instant soup were showed no remarkable difference comparing with goods on the market. The color value of th products were showed little change during storage, In sensory evaluation, product B were scored slightly higher, in most cased, in flaver, color. taste and overall acceptability comparing with product A or product C during storage. Judiging form the sensory evaluation, powdered instant soup of 5% table salt (B) were the most desirable, and the quality of the products was stable for 90 days at 20$\pm$3$^{\circ}C$.
