To measure the contents of several heavy metal elements (Cr, Mn, Ni, Cu, Zn, Cd, Hg, Pb) in Korean seaweeds which are closely related to food resources, various seaweed samples were collected from thirteen to seventeen seaweed-producing districts. The results obtained from the experiment are summarized as follows: 1. The content of heavy metal elements in seaweeds of individual sample ranged from 0.0005 to 25.0373 ppm. Their mean levels were as follows: laver, 0.0024∼3.9297 ppm; sea lettuce, 0.0011∼25.0373 ppm; sea mustard, 0.0005∼23.5071 ppm; sea tangle, 0.0006∼4.8550 ppm. The mean levels of Cd and Pb were specially low in the samples collected from the area II in Kangwon and area Ⅸ in Kyungbook. 2. The mean levels of heavy metal elements of collected samples ranged from 0.0117 to 4.4944 ppm. Laver showed the lowest level of Hg and sea lettuce showed the highest level of Mn. Their mean levels of elements were as follows: laver, 0.0117∼2.3339 ppm; sea lettuce,0.0232∼4.4944 ppm; sea mustard, 0.0129∼1.5139 ppm and sea tangle, 0.0182∼1.7410 ppm. 3. The mean levels of heavy metal elements from several locations ranged from 0.0085 ppm to 8.4148 ppm. The mean levels of heavy metal elements in sea mustard from area V of Kyungbook were the lowest, but the mean levels of heavy metal elements in sea lettuce from area Ⅷ of Kyungnam were the highest. The mean level of heavy metal elements were as follows: laver, 0.3613∼1.1124 ppm; sea lettuce, 0.1415∼8.4148 ppm; sea mustard, 0.0729-3.1182 ppm; sea tangle, 0.0085∼0.7587 ppm. 4. Generally the heavy metal elements were detected in the seaweed samples from all locations. The mean levels of heavy metal elements varied with locations and kinds of samples. The levels of heavy metals of the samples taken from all locations from the East Sea, the South Sea, and the West Sea areas showed 99% safety range.
Eight quality standards of the brown seaweed, Undaria pinnatifida were designed and evaluated with dry products collected from aquacultured and wild areas. Contents of n-3 fatty acids (stearidonic acid and eicosapentaenoic acid), anti-edema activity, and total carbohydrate were measured as functional criteria. Total bacteria and molds were counted for safety conditions. Amounts of a brown pigment fucoxanthin, debris, and moisture were measured to evaluate the visible status of the products. When the seaweeds were tested in 1 g dry weight basis, they showed n-3 fatty acids in the range of approximately 0.2-2.8 mg, total carbohydrate of 0.39-0.71 g, total bacteria of $10^{4-6}$ cells, mold of $10^2$ cells, fucoxanthin of 0.4-1.5 mg, and debris of 10-24 mg. Anti-edema activity was 0.03-0.47 AU at 40 mg/mL extract. Moisture content was 11.4-12.6%.

Fucoidan is a physiologically functional ingredient extracted from seaweed brown algae, which is a sulfated polysaccharide containing fucose as a main molecule backbone. Fucoidan has a variety of immune-modulating or -stimulating effects, including promoting antigen uptake and enhancing anti-bacterial, anti-viral and anti-tumor effects. In addition, recent studies have suggested the possibility of use of fucoidan as a vaccine adjuvant in the field of human vaccine. Use of fucoidan as supplementary feeds have already been studied, but the development of fucoidan as an adjuvant of fish vaccine is still premature. However, the intracellular uptake of fucoidan differs depending on the molecular weight of fucoidan, and there is a limit to the study on specific immune response including the production of antibodies to fish caused by an artificial infection of pathogen. Although the safety of fucoidan has been demonstrated in animal cells, there is a need to confirm the safety of fucoidan in fish. Therefore, active research in this field is needed to use fucoidan as a vaccine adjuvant. This study discussed the effects of fucoidan on immune stimulation, humoraland cellular- immunity including humans and animals. The prospect of fucoidan as a vaccine adjuvant in fisheries also reviewed.
Seaweeds represent a widely harnessed marine resource that are valued for their abundant supply of essential nutrients, particularly proteins and amino acids. In Korea, where over 500 species of seaweed thrive and more than 50 are utilized for culinary purposes, seaweed has become a staple in regular diets. In this study, we focused on five of the most commonly consumed seaweed species in Korea: Capsosiphon fulvescens, Hizikia fusiforme, Porphyra yezoensis, Saccharina japonica, and Undaria pinnatifida. We closely examined the amino acid compositions of these five species. High-performance liquid chromatography showed that aspartic acid, glutamic acid, alanine, and leucine were the most abundant amino acids in the seaweeds. Principal component analysis revealed that the five seaweed species could be classified into three clusters according to their amino acid composition, partially corroborating findings from the phylogenetic analysis. Among various amino acids, glutamic acid, aspartic acid, and alanine were the primary amino acids driving differentiation. Notably, U. pinnatifida and C. fulvescens, which demonstrated close phylogenetic proximity, exhibited remarkably similar amino acid profiles. Conversely, although P. yezoensis and S. japonica shared a phylogenetic relationship, they displayed distinctly different amino acid compositions. H. fusiforme emerged as a distinct group in both analyses.

This study investigated the dif usion characteristics of Ecklonia cava spores around marine forest reefs. For this purpose, a numerical analysis was conducted using field observations in the target area and an EFDC model. Based on the results of field observations and the EFDC model, Flow-3D was performed on three types of marine forest reefs, mamely triangular pyramid reef, double-dome reef, and ribbed reef, to monitor the movement direction and maximum movement distance for E. cava spores. As a result, the equilaterally triangular pyramid reef and double-domed reef were found to have a maximum settlement of spores of 10 m in the northwestern direction and 6 m in the western direction. The ribbed reef had a maximum settlement of spores at 4m. These results show that consideration of the diffusion characteristics of E. cava spores when the seaweeds are installed can increase the effectiveness of the algae as substrate of adhesion.

Fouling organisms attached to a ship not only greatly increase the resistance of the ship as they grow on the hull but also cause disturbances in local marine ecosystems as they move with the ship. Accordingly, the International Maritime Organization has started discussing the removal of biofouling and evaluation of cleaning performance to prevent the migration of hull-fouling species. In this study, specimens of FRP(Fiber Reinforced Plastic), HDPE(High Density Polyethylene), and CFRP(Carbon Fiber Reinforced Plastic) materials used for small ship construction were cured in Gyeokpo Port (Jeonlakbuk-do) for about 80 days. Then, attached organism removal experiments were performed using a water jet nozzle. The results show that seaweeds, such as laver, were removed when the distance between the nozzle and the specimen was 1.8 cm and the pressure was 100 bar. Furthermore, it was confirmed that the cleaning of barnacles was possible only when the pressure was 200 bar or more.

In this study, the possibility of using marine life for cosmetic materials was assessed by establishing a fermentation process of seaweed, such as Ecklonia cava, Enteromorpha prolifera, Chondria crassicaulis, Eiseniabicyclis, Codium fragile, Seaweed furcata, Gloiopeltis tenax, Grateloupia elliptica, Undaria pinnatifida, and Saccharina japonica. Lactobacillus sakei isolated from Kimchi was used for effective fermentation and whole milk powder was used as an additive. 2.0 % of crushed seaweed and 1.0 % of whole milk powder were added and afterwards, 1.0 % Lactobacillus sakei was added after cooling to $40^{\circ}C$. After cooling and filtering the fermented product, butylene glycol, glycerine, and 1,2-hexandiol, which have the effect of a preservative, were added to mix and complete the final product. Among the ten kinds of seaweeds, the process was found to be highly effective in the fermentation of Ecklonia cava, Codium fragile, Undaria pinnatifida, and Saccharina japonica. The amount of fermentable substances in cosmetics was determined and the safety of the raw material was verified using the HET-CAM (The Hen's egg test-Chorioallantoic membrane) test.
In this study, the contamination of 4 types of heavy metals (lead, cadmium, arsenic, and mercury) was monitored in 80 seaweeds and their processed products, and a food safety assessment was also carried out for these heavy metals. Lead, cadmium and arsenic were analyzed by ICP-OES and mercury was analyzed by mercury analyzer. The detection ranges of heavy metals were found as follows: Pb (N.D-0.802 mg/kg), Cd (N.D-0.759 mg/kg), As (0.134-17.296 mg/kg), and Hg (0.0005-0.0331 mg/kg). Pb and Hg showed no significant differences among seaweeds whereas Cd and As were significantly higher in the species hizikia fusiforme (P<0.05). Food safety assessment from seaweed intake was measured by PTWI (Provisional Tolerable Weekly Intake), PTMI (Provisional Tolerable Monthly Intake), and MADL (Maximum Allowable Daily Body Load) as set by JECFA (Joint FAO/WHO Expert Committee on Food Additives). Pb and Hg were 0.197%, 0.036% of PTWI respectively, while Cd was 1.877% of PTMI and As was 0.619% of MADL. Therefore, it was found that heavy metal levels of seaweed were low and was considered to be safe for consumption.
The purpose of this study was to investigate the fatty acid composition and the rancidity of commercial deep-fat fried foods in Kangreung. the 7 kinds of samples were purchased form snack corners in 3 markets at AM 10 and PM 6 o'clock. The acid value, peroxide value and TBA value of the deep-fat fried foods were determined and the fatty acid composition were analyzed. The range of acid value was 0.45∼1.79, that of peroxide value was 1.24∼8.64meq/㎏,and that of TBA value was 12∼140 in all samples. There was significant difference in most of all samples by purchasing time and kinds of samples. But there was not specific tendency by purchasing times in each sample. Most of the acid value, peroxide value and TBA value of the samples fried with meats or sea foods showed higher value than the that of samples fried with vegetables or seaweeds. The fatty acid composition of the total lipids in the deep-fat fried foods were similar to one another. The major fatty acids were linoleic acid(C18 : 2) , oleic acid(C18 : 1) in order of content. Minor fatty acids were palmitic acid(C16 :0), linolenic acid(C18 : 3), stearic acid (C18 : 0) in order of content. the P/S ratio was the range of 2.12/1∼4.71/1 and the that of the samples fried with meats was the highest among samples. so there was the same tendency in this result between the chemical properties(acid value, peroxide value, TBA Value) and fatty acid composition. As a result of acid value and peroxide value in this study, the commercial deep-fat fried foods in Kangreung was safety.
Norovirus, which causes gastroenteritis in humans, is an important food-borne pathogen worldwide. In an effort to discover an antiviral substance against norovirus, extracts from several seaweeds were evaluated for antiviral activity against feline calicivirus (FCV), which was used as a surrogate. The methanolic extract of Undaria pinnatifida exhibited the most significant antiviral activity and virucidal efficacy against FCV. The concentrations of the extract that reduced viral replication by 50% ($EC_{50}$) and resulted in the death of 50% of the host cells ($CC_{50}$) were 0.05 mg/mL and 1.02 mg/mL, respectively. The selectivity index, calculated from the ratio of the $CC_{50}$ and $EC_{50}$ was 20.4. No FCV infection of host cells occurred following a 1-h incubation in the presence of 12.50 mg/mL U. pinnatifida extract, indicating that the virus was completely inactivated by the extract treatment. The results obtained in this study will contribute to the development of a natural antiviral substance that will prevent food-borne disease caused by norovirus.
