국내 자생 해조류 추출물의 항산화능 비교분석 연구 (Comparative Analysis of Antioxidant Activity of Korean Seaweeds Extracts)

  • Seaweed-derived foods have long been popular in Korea because of their high content of nutrients that are beneficial to the human body. Recently, Korean seaweeds have been used as raw materials to produce new natural products with health benefits. Herein, we compared the antioxidant activity of 16 Korean seaweed extracts to explore their potential utility as health foods. The total phenolic content (TPC) and 2,2-diphenyl-1-picrylhydrazyl (DPPH) radical scavenging activity of seaweed extracts were determined. We also investigated their ability to protect human diploid fibroblast (HDF) cells against hydrogen peroxide. The results showed that seaweed extracts at a concentration of 100 ㎍/mL did not cause any cell toxicity. Sargassum thunbergii (Jichung-i) had the highest TPC and radical scavenging effects, followed by Porphyra tenera (Gim), Silvetia siliquosa (Tteumbugi), and Sargassum fusiforme (Tot). Hydrogen peroxide increased the production of intracellular reactive oxygen species, while P. tenera (Gim), Saccharina japonica (Dasima), and S. thunbergii (Jichung-i) extracts significantly decreased it. The effect was highest in the S. thunbergii (Jichung-i)-treated HDF cells. These findings indicate that S. thunbergii (Jichung-i) shows promise as a potential antioxidant raw material.

Physicochemical Properties of Restructured Black Goat Jerky with Various Types of Ultra-Ground Seaweed Powders

  • This study investigated the effects of ultra-ground seaweed powders (USP) on the physicochemical properties (proximate composition, mineral contents, pH, color, shear force, sensory evaluation, electronic nose, and electronic tongue) of restructured black goat jerky. Restructured black goat jerky was prepared using three different treatments, i.e., 3% (w/w) each of ultra-ground sea tangle (ST; Undaria pinnatifida), sea mustard (SM; Saccharina japonica), and sea string (SS; Gracilaria verrucosa) powders. Moisture and ash contents were significantly higher in the USP-treated group than in the control (p<0.05). Potassium, calcium, and zinc contents were significantly higher in the SM than in the other USP-treated groups (p<0.05). In contrast, pH values were significantly higher in the ST and SM than in the control and SS (p<0.05). CIE L*, CIE a*, CIE b*, and shear force were significantly lower in the USP-treated groups than in the control (p<0.05). Sensory evaluation revealed no significant difference in taste, texture, seaweed-like odor, and goaty flavor (p<0.05). Principal component analysis (PCA) and peak graph analysis of the electronic nose showed that the SS differed the most from the control compared with the other USP-treated groups, owing to the seaweed odor of ultra-ground SS powder. The PCA and ranking analysis of the electronic tongue showed that the umami taste of the SM was higher than that of the control and other USP-treated groups. Therefore, the potassium, calcium, zinc contents, and umami taste of reconstituted black goat jerky were significantly higher in the SM than in the control and other USP-treated groups.

Impact of Prebiotic on Viability of Lactiplantibacillus plantarum D-2 by Encapsulation through Spray Drying and Its Commercialization Potential

  • This study investigated the impact of inulin (INL) on viability of L. plantarum D-2 (LPD2) by encapsulation through spray drying (SD) and its commercialization potential to alternative of conventional wall material maltodextrin (MD). LPD2, derived from sea tangle (Saccharina japonica) kimchi, is probiotics exhibiting significant attributes like cholesterol reduction, antioxidant properties, and resilience to acidic and bile environments. To enhance storage viability and stability of LPD2, encapsulation was applied by SD technology. The optimum encapsulation condition with MD was 10% MD concentration (MD10) and inlet temperature (96℃). The optimum concentration ratio of MD and INL was 7:3 (INL3) for alternative of MD with similar encapsulation yield and viability of LPD2. Viability of LPD2 with INL3 exhibited almost 8% higher than that with MD10 after 50 days storage at 25℃. Physicochemical characteristics of the encapsulated LPD2 (ELPD2) with MD10 and INL3 had no significant different between flowability and morphology. But, ELPD2 with INL3 had lower water solubility and higher water absorption resulting in extension of viability of LPD2 compared to that with MD10. The comprehensive study results showed that there was no significant difference in the encapsulation yield and physicochemical properties between ELPD2 with MD10 and INL3, except of water solubility index (WSI) and water absorption index (WAI). INL have the potential to substitute of MD as a commercial wall material with prebiotic functionality to enhance the viability of LPD2 by encapsulation.

The Growth of Mugil cephalus, Patinopecten yessoensis and Saccharina japonica in the IMTA System

  • In this study, we investigated the growth of striped mullet (Mugil cephalus), Yesso scallop (Patinopecten yessoensis) and kelp (Saccharina japonica) farmed under the IMTA (integrated multi-trophic aquaculture) system developed by national institute of fisheries science (NIFS). The farmed striped mullets grew from an initial length and weight of $152.5{\pm}12.1mm$ and $41.6{\pm}7.8g$ in October 2013 to $154.2{\pm}5.6mm$ and $47.5{\pm}8.6g$ in November, $160.2{\pm}8.7mm$ and $55.9{\pm}9.1g$ in December and $168.4{\pm}9.6mm$ and $58.4{\pm}8.7g$ in January. The fish continued to grow and reached $190.2{\pm}9.4mm$ in length and $87.5{\pm}8.9g$ in weight in April and $256.4{\pm}9.7mm$ and $156.7{\pm}6.7g$ in October 2014. The daily growth rate (DGR) for total fish length was 0.015~0.1 mm/day during the periods of fast growth and attained 0.038~0.1 mm/day during February ~ March. The kelp grew from an initial blade length and wet weight of $1.19{\pm}0.2cm$ and $0.0028{\pm}0.0012g$ in January 2014 to $3.3{\pm}0.8cm$ and $2.5{\pm}0.9g$ in February and $126.5{\pm}11.6cm$ and $107.4{\pm}22.6g$ in March, after which, erosion occurred and slowed the growth. The DGRs for kelp length ranged 0.03~1.9 mm/day in January 2014 and increased to 0.88~1.9 mm/day during March~April. Increasing water temperatures beginning in April lowered the DGR to 0.03 mm/day. Yesso scallops grew from an initial shell length, shell height and wet weight of $11.83{\pm}0.6mm$, $12.68{\pm}0.7mm$ and in September 2013 to $19.9{\pm}2.5mm$, $20.8{\pm}2.6mm$ and $0.9{\pm}0.04g$ in November 2013. They continued to grow to $45.91{\pm}0.71mm$ in shell length, $42.55{\pm}0.8mm$ in shell height and $12.7{\pm}1.3g$ in wet weight by May 2014 and $60.2{\pm}2.51mm$, $554.6{\pm}2.61mm$ and $24{\pm}2.70g$ by October 2014. The DGRs for shell length of Yesso scallop ranged from 0.02 to 0.256 mm/day with higher values of 0.256~0.27 mm/day during November~December 2013 and March~April 2014.

다시마 물 추출액과 발효액의 항산화 및 항염증 활성 (Antioxidant and Anti-inflammatory Activities of Water and the Fermentation Liquid of Sea Tangle (Saccharina japonica))

  • 본 연구에서는 다시마 물 추출액과 유산균(Lactobacillus brevis)으로 발효한 다시마 발효액의 이화학적 특성 및 항산화 활성과 항염증 활성에 대하여 검토하였다. 다시마 물 추출액 및 발효액의 pH는 각각 6.18과 4.16이었고, 당도는 $8.50^{\circ}Brix$$7.40^{\circ}Brix$였다. 다시마 물 추출액과 발효액의 주요 유리아미노산은 glutamic acid와 aspartic acid 및 alanine으로 발효에 의해 glutamic acid는 감소한 반면 GABA의 함량은 증가하였다. 다시마 물 추출액 및 발효액의 총 폴리페놀 함량은 각각 $498.29{\mu}g\;GAE/ml$$615.77{\mu}g\;GAE/ml$였다. DPPH radical 소거능은 농도 의존적으로 증가하였으며, 10% 농도에서의 DPPH radical 소거능은 각각 89.89%와 96.94%로 나타났다(p<0.05). 다시마 물 추출액과 발효액의 SOD 활성 또한 농도 의존적으로 증가하였으며, 다시마 발효액의 경우 물 추출액보다 유의적으로 활성이 증가하는 결과가 나타났다(p<0.05). 나아가 LPS로 유도된 RAW 264.7 대식세포를 이용하여 항염증 활성을 검토하였다. 다시마 물 추출액과 발효액의 ROS 생성은 1% 농도에서 각각 189.90% 및 174.69%를 나타내었다. 또한, 염증성 cytokines인 $TNF-{\alpha}$$IL-1{\beta}$의 분비량은 다시마 발효액이 물 추출액보다 유의적으로 감소하는 결과가 나타났다(p<0.05). 이상의 결과에서와 같이 다시마 추출액과 발효액은 높은 항산화 및 항염증 활성이 있는 것으로 나타났으며, 특히 발효에 의해 그 활성이 증가하여 기능성 식품소재로서 활용이 가능할 것으로 사료된다.

Occurrence and diet analysis of sea turtles in Korean shore

  • Background: Sea turtles, which are globally endangered species, have been stranded and found as bycatch on the Korean shore recently. More studies on sea turtles in Korea are necessary to aid their conservation. To investigate the spatio-temporal occurrence patterns of sea turtles on the Korean shore, we recorded sampling locations and dates, identified species and sexes and measured sizes (maximum curved carapace length; CCL) of collected sea turtles from the year 2014 to 2020. For an analysis of diets through stomach contents, we identified the morphology of the remaining food and extracted DNA, followed by amplification, cloning, and sequencing. Results: A total of 62 stranded or bycaught sea turtle samples were collected from the Korean shores during the study period. There were 36 loggerhead turtles, which were the dominant species, followed by 19 green turtles, three hawksbill turtles, two olive ridley turtles, and two leatherback turtles. The highest numbers were collected in the year 2017 and during summer among the seasons. In terms of locations, most sea turtles were collected from the East Sea, especially from Pohang. Comparing the sizes of collected sea turtles according to species, the average CCL of loggerhead turtles was 79.8 cm, of green turtles was 73.5 cm, and of the relatively large leatherback turtle species was 126.2 cm. In most species, the proportion of females was higher than that of males and juveniles, and was more than 70% across all the species. Food remains were morphologically identified from 19 stomachs, mainly at class level. Seaweeds were abundant in stomachs of green turtles, and Bivalvia was the most detected food item in loggerhead turtles. Based on DNA analysis, food items from a total of 26 stomachs were identified to the species or genus level. The gulfweed, Sargassum thunbergii, and the kelp species, Saccharina japonica, were frequently detected from the stomachs of green turtles and the jellyfish, Cyanea nozakii, the swimming crab, Portunus trituberculatus, and kelps had high frequencies of occurrences in loggerhead turtles. Conclusions: Our findings support those of previous studies suggesting that sea turtles are steadily appearing in the Korean sea. In addition, we verified that fish and seaweed, which inhabit the Korean sea, are frequently detected in the stomach of sea turtles. Accordingly, there is a possibility that sea turtles use the Korean sea as feeding grounds and habitats. These results can serve as basic data for the conservation of globally endangered sea turtles.
