Studies on Preparation of a Cheese-like product from Soybean Milk (콩을 이용한 치-즈제조에 관한 연구)

  • 1) Among five lactic acid bacteria examined, Str. thermophilus and Str. diacetilactis produced remarkably greater amount of acids in soybean milk than Str. lactis, Str. cremoris and L. bulgaricus. 2) Soybean milk and skimmed dry milk were combined in the ratio of 7 : 3 and were carried out in lactic acid fermentation for 24 hours at optimum temperature. The result indicated that the yield of precipitation and protein content of it were the most, the moisture content was the least and curd structure formed was considered too hard. 3) Based on these and other results, following procedure was used for manufacturing: soybean milk and skimmed dry milk were combined in the ratio of 7 : 3, heated at $121^{\circ}C$ for 20 min., cooled, added Str. thermophilus as lactic acid starter and incubated for 24 hours and $37{\pm}1^{\circ}C$. The curd was cooked, hooped, and pressed for 24 hours, to the surface of which, Penicillium caseicolum and sodium chloride were spread. During ripening of the curd at $15^{\circ}C$ and $85{\sim}90%$ RH for 21 days, Pen. caseicolum was highly developed after 7 days, pH was increased and proteolytie activity has reached to the peak point after 14 days. After 7 days of ripening total water soluble nitrogen, water soluble protein nitrogen and amino acids nitrogen were begun to increase. After 21 days of ripening total water soluble nitrogen, water soluble protein nitrogen and amino-N reached to 52%, 32% and 14% of total nitogen. In the soybean cheese, after 21 days of ripening, 17 or more kinds of amino acids were detected by two-dimentional paper chromatography. The product contained 63.2% of moisture, 17.5% of crude protein, 13.2% of crude fat, 2.8% of crude ash and 2.5% of sodium chloride.

The Growth of L.acidophilus and B. bifidum in Fermented Milk Product (Lactobacillus acidophilus와 Bifidobacterium bifidum의 발효 유제품내의 성장)

  • The optimal condition for manufacturing the yoghurt by using B. bifidum and L. acidophilus was studied. Optimal growth condition of B. bifidum and fermentation effects of B. bifidum, L. acidophilus and Str. thermophilus in mixed culture were investigated separately. Fermentation conditions of B. bifidum were optimized in 12% reconstitued skim milk. The addition of BIOS 2000 to 12% skimmilk was effective on the growth and acid production of B. bifidum. There was asymbiosis among B. bifidum, L. acidophilus and Str. thermophilus in mixed culture which resulted in higher viable cell numbers and acid production. The optimum production of yoghurt was achieved by incubation at $37^{\circ}C$ for 8 hours with 5% mixed starter culture (B. bifidum+L.acidophilus+Str. thermophilus). In this case the effective ratio of B. bifidum: L. acidophilus: Str. thermophilus was 2:1:1 on both acid production and viable cell counts.

Use of $^{99m}TcO_4^-$ Salivary-Thyroid Ratio As a Test of Thyroid Function (갑상선스캔상에서 갑상선섭취율의 추정방법 : 타액선-갑상선계수율)

  • Total 114 patients were studied prospectively with radioiodine uptake (RAIU) and $^{99m}TcO_4^-$ thyroid scan to design a very simple, rapid and inexpensive method measuring the thyroid uptake on thyroid scan. After the RAIU was obtained at 24 hours after P.O. of $^{131}I$, Thyroid scan was performed at 20 minutes after LV. of $^{99m}TcO_4^-$ and the bilateral salivary glands were included in the scan field. Pinhole collimated and computer assisted gamma camera was used. Three regions of interest were set on each salivary gland and on the thyroid by automatic edge detection method. Mean counts per pixel were calculated for each ROI and the salivary-thyroid ratio (STR) was defined as; $$STR(%)=\frac{Mean\;counts\;per\;pixel\;of\;salivary\;glands\;(KC)}{Mean\;counts\;per\;pixel\;of\;thyroid\;gland\;(KC)}\times100$$ 114 cases consisted of 41 normal, 55 hyperthyroid and 18 hypothyroid patients and correlation between the STR and the RAID were evaluated in total and each group. The STR and the RAID showed reverse linear regression in 114 cases (r= -0.8, P=0) and closer correlation was shown in hyperthyroid group (r= -0_9, p=0). Mean STR in normal group was 47.6%. In predicting the RAID by STR, sensitivity and specificity were 88.3% and 64.9% in 114 cases and 95.3% and 83.3% in hyperthyroid group. It is recommended that the STR be used in place of the RAID giving same information at saving time, money and radiation exposure.

Relay Performance Analysis of TTR and STR Relay Modes in IEEE 802.16j MMR System

  • The IEEE802.16j standard uses non-transparent relay stations to extend coverage. There are two types of non-transparent relay modes, that is, the time-division transmit and receive (TTR) relay mode which can operate with one of two types of frame structures, a single-frame and multiframe structure, and the simultaneous transmit and receive (STR) relay mode. In this paper, we analyze the relay performance of TTR and STR relay modes in IEEE 802.16j MMR system. We also propose a fair resource allocation scheme for the downlink relay frame. Numerical results show that relay performance of the TTR with a single-frame or a multiframe structure and that of the STR relay modes are almost the same in a two-hop system. However, in a three-hop system, the TTR mode with a single-frame structure outperforms other relay modes.

  • In order to be utilized as a database in forensic identification and parentage test, allelic frequency and genotype distribution of short tandem repeat(STR) F13B locus was analysed by polymerase chain reaction in 210 Korean adults who are not related. The results were as follows. 1. 3 alleles and 56 genotypes of F13B locus were detected and heterozygosity value was 48.6% and allelic diversity value was 0.639 and the power of discrimination was 0.804. 2. The observed each alleles and allelic frequency was 8(0.069), 9(0.193), 10(0.738). In conclusion, the allelic frequency of STR F13B locus in the Korean is considered as an useful DNA allelic profile for forensic identification, but it should be used with several other STR locus to get definitive conclusion of analysis for individual identification and parentage testing.

Study on the Rheological Properties of the Lactic acid Fermented Milk (유산균배양액의 유체역학적 성질에 관한 연구)

  • As a link in the studies on the extracellular polysaccharide by lactic acid bacteria, the experiment was conducted to investigate the viscosity variations and rheological properties of 10% reconstituted skim milk and 12% reconstituted whole milk, respectively. 1. 10% reconstituted skim milk cultured by Str. thrennophilus 510 showed strong flow property of pseudoplastic fluid depending upon the production of exopolysaccharide. And the viscosity reached the highest value within 14% concentration. 2. 12% reconstituted whole milk cultured by lactic acid bacteria indicated flow property of pseudoplastic fluid. But there was a big difference in the viscosity as compared with 10% skim milk. 3. The maximum consistency index (k) and the minimum flow behavior index (n) of the fermented milk by Str. thermophilus 510 were 43 and 0.09, respectively. They were 35 and 0.09, in case of Lb. bulgaricus.

Speech and Music Discrimination Using Spectral Transition Rate (주파수 변화율을 이용한 음성과 음악의 구분)

  • In this paper, we propose the spectral transition rate (STR) as a novel feature for speech and music discrimination (SMD). We observed that the spectral peaks of speech signal are gradually changing due to coarticulation effect. However, the sound of musical instruments in general tends to keep the peak frequencies and energies unchanged for relatively long period of time compared to speech. The STR of speech is much higher than that of music. The experimental results show that the STR based SMD method outperforms a conventional method. Especially, the STR based SMD gives relatively fast output without any performance degradation.
