The purpose of this study was to examine educational meanings of snack and lunch time of 4-year-old children and their teachers in a kindergarten class. The study was done in the Class of 4-year-old children in S Kindergarten located in Songpa-gu, Seoul. And 30 children of this class, Teacher A who is the teacher in charge of the Class, and Teacher B who is the researcher and teacher in charge of it participated in it. The study was carried out by the ethnography method and data collection was done through participation observation, interviews, video and voice recording, and data collection of photography shooting. The results are as follow: First, the children had private conversations, shared their cultures, deepened and expanded their existing concepts, expressed their emotions and relieved their tension, and strengthened relations with friends during the snack and lunch time. Second, the teachers promoted conversation and communication, gave the opportunity that the children can set the lunch table by themselves and tried to make the snack and lunch time with the children by discussing what they are how they are operated with them together. In conclusion, the snack and lunch time can be more meaningful time for children when there are proper educational plans and support of teachers which are considered children's viewpoints.
In order to develop an obesity management program for teenagers, we compared obese and non-obese girls attending high schools in terms of their dietary practices related to snack consumption. Dietary records were collected for 7 days. No significant differences were found for the average daily energy intake between obese and non-obese girls. However, the highest energy intake was greater for obese girls while not much difference was found for the lowest amount of energy intake. Obese girls had significantly lower intakes in calcium (P < 0.01), vitamin A (P < 0.001) and folate (P < 0.01). Mean energy intake from snack ($594.1{\pm}312.1kcal$) was significantly higher for obese girls than for non-obese girls ($360.1{\pm}173.1kcal$) (P < 0.001). A significant, positive correlation was observed between energy intake from snack and total daily energy intake (r = 0.34 P < 0.01) only for obese girls. In case of dietary behaviors, obese adolescent girls consumed significantly greater number of items for snacks and fewer foods for regular meals compared to non-obese girls (P < 0.05). This study suggested that obesity management programs for adolescents should focus on providing strategies to reduce snack through enhancing balanced regular meals.
This study estimate the amount of snack intake of 290 children from ages 3 to 6 living in Seoul, to provide some basic information for a nutrition education program for the promotion of health. Average height and weight of the children were 110.5cm and 19.7kg, respectively. Their body mass indes was 16.2kg/$m^2$ and obesity indesx was 6.5% Calorie intake from snacks was 294kcal, and protein, fat, carbohydrate were 11.3g, 9.3g and 40.6g, respectively. The 117(40.3%) boys prefered boiled-eggs and 112(38.6%) girls prefered fruits. The 133(45.9%) mothers of the children were in their thirties, and 123(42.4%) of them had a college degree. One hundred and thirty one(45.2%) mothers were house keepers, and they had been givins snacks to their children 1 or 2 times daily(245, 84.5%) The daily snack budget was 1,500 won(109, 37.6%). The person who served the snack was a mother(141, 48.6%). As a result, snack intake of pre-school children showed very good but partially showed a potential problem. We hope that the results of this study can be helpful for the nutrition education program for the health and nutrition of pre-school children.
Purpose: The purpose of the study was to examine the snack meal management for infants and toddlers and the demand for snack products according to mothers' sustainable dietary style in the Jeonbuk area. Methods: The participants were 359 mothers in the Jeonbuk area. The data was analyzed using factor analysis, cluster analysis, analysis of variance, and χ2-tests with SPSS v. 25.0. According to the sustainable dietary style, the situation of providing snacks at home, the purchasing behavior for snack products, and the satisfaction and, demand for snack products were investigated. Results: Using the K-clustering method, the sustainable dietary style of the subjects was categorized into 3 clusters. Cluster 1 was the family health-seeking group, cluster 2 was the sustainable dietary trend group, and cluster 3 was the sustainability-interested group. The frequency of snack intakes according to the cluster groups showed a significant difference (p < 0.001). Fruits were the snack item most frequently consumed by all the cluster groups. Approximately 92.8% of mothers had purchased snack products, and 95.2% of the subjects were satisfied with them (p < 0.05). The main reason for satisfaction with the snack products in all the cluster groups was the various kinds of products with considering the growth stage of children. Clusters 2 and 3 required the development of snack products using organic food materials, while cluster 1 required the snack products to be supplemented with various nutrients. Conclusion: It is necessary to develop various snack products according to the sustainable dietary style and the needs of mothers so that these snacks can increase the satisfaction of mothers with the snack products and lead them to better snack purchasing behavior.

The purpose of this study was to investigate perception of snack purchasing behaviors and labeling of foods and nutrition of the middle school students. The survey was conducted from 424 students who are boys and girls of middle school in Naju. Data were analyzed by a SPSS program. According to the survey, snack purchase place had a significant difference between gender(p<.05), and all of the boys and girls responded at a high rate that it's convenience store. Snack eating frequency had a significant difference between boys and girls(p<.05). Boys responded that they ate 1~2 times per a week the most, and girls responded that they ate 1~2 times per a month the most. As for snack purchasing behaviors, depending on gender, that of boys was 2.76 in average and that of girls was 2.87, lower than middle. The reason why students didn't check up food labeling, depending on gender and all of the boys and girls responded 'Expiration date' was first confirmed. As for the understanding of food expression, depending on snack expenses, the reason why food expression contents were hard showed a significant difference, depending on snack expenses(p<.05). As for the understanding of food expression, depending on snack purchase attitude, the students showed a significant difference, depending on snack purchase attitude(p<.001), and the lower the snack purchase attitude was, the less the students checked up snack expression. The reason why students checked up nutrition labeling a significant difference, depending on gender, snack expense and snack purchase attitude(p<.001). 'Weight management' was the highest. The recognition in the necessity of nutrition expression(p<.001) and the necessity of food/ nutrition education and publicity(p<.01) showed significant difference.

Fish-frames which are left after obtaining fillets or muscle during fish processing, consist of useful food components such as muscle, collagen, calcium, eicosapentaenoic acid (EPA) and docosahexaenoic acid (DHA). This study was carried out to prepare snack using flatfish frame and also to elucidate food component characterization of the snack. The results of heavy metal and volatile basic nitrogen (VBN) content suggested that flatfish frame was a suitable material for preparing snack. The optimal addition ratio of flatfish frame to mix was 3% for preparing snack according to the results of VBN content, water activity and sensory evaluation. The major fatty acids of the snack with 3% flatfish frame (SFF) were 16:0 and 18:0 as saturates, 18:1n-9+7 as monoenes, and 18:2n-6 and 18:3n-3 as polyenes, while EPA and DHA were contained in small amount SFF. Total amino acid content (9,281.9 mg/100 g) of the SFF was higher than that of the snack without flatfish frame (7,791.3 mg/100 g) and the major amino acids were aspartic acid, glutamic acid, proline and leucine. The calcium and phosphorus contents of SFF were 492.3 mg/100 g and 270.3 mg/100 g, respectively. The Ca/P of SFA was 1.82 which is a good ratio for the absorption of calcium. The SFF was superior in total amino acid, calcium and phosphorus contents compared to the snack without flatfish frame.
It is said that a mode of dietary behavior changes together with socioeconomic and cultural transformation. Formation of dietary habit of pre-school children influences upon direction of this changes, specially. So, this study was planned to analyst the dietary pattern of pre-school children. A survey was carried out for 3 days of 28 pre-school children with a mean age of 4 years and 3 months. Each child's matter wrote dietary pattern and kinds of food as staple, subsidiary and snack. The results showed that; (1) the average meal frequency a day was 3.1 and interval between meal was 5.1 hours (for breakfast to lunch & lunch to supper) and 12.6 hours (for supper to breakfast), (2) there were 27 different kinds of foods as staple and cereal products consumed the most among those, and 82 different kinds of foods as subsidiary and KIMCHI products were eaten the most rating, (3) the average snack frequency a day was 5.0. There were 76 different kinds of foods as snack, among them cold drink was the best. The present observation suggested that pre-school children had a tendency to take meat regularly, but snack very irregularly, and kinds of foods taken as staple, subsidiary and snack didn't keep the nutritional balance. Parent's concern about dietary behavior of their children is demanded more than ever.
This study was conducted to provide basic information on toothbrushing habits, snack intake frequency, and current dental caries in elementary school students. A total of 188 students (105 boys and 83 girls) in Changwon city participated in this study. Dental examination was conducted by two dental hygienists in July, 2010. The results were as follows. Exactly 86.2% of students were shown to have dental caries, which includes a sealant and removed teeth due to decay. The average number of teeth with dental caries per student was 3.8. Exactly 60.6% of students were shown to maintain correct toothbrushing habits to prevent dental caries, but only 12.8% brushed their teeth immediately after a meal or snack. Exactly 82.4% percent of participants received toothbrushing education, 47.1% of them received it from an expert, 43.9% received from their parents, and 28.2% used tooth paste with fluorine. Regarding snack intake frequency, ice cream was the most consumed cariogenic food and white milk was the most consumed protective food. The >=7 teeth with dental caries group consumed higher frequency of carbonated beverages intake than the 'no dental caries' group (P<0.05), and the '5~6 teeth with dental caries' group consumed higher frequency of chocolate intake than 'no dental caries' group (P<0.05).
The purpose of this study was to investigate the nutrition knowledge of kindergarten teachers and their attitude toward kindergarten lunch and snack service programs. Self-administered questionnaires were completed by 293 kindergarten teachers from January to February 1995. The results were as follows : 77.8% of the kindergarten teachers were taking part in the school meal service program. Most teachers were interested in the special training in child nutrition management, however, only 34.0% of the respondents had taken the nutrition related courses. The average score of nutrition knowledge of kindergarten teachers was 15.9$\pm$2.9 out of possible 28 points. They had better knowledge on such subjects as nutritional physiology and food choices for children, but had lower scores on practical subjects as calorie and nutrient value of food, cooking and nutrition management for children. When they chose snack items for children, teachers highly considered the nutritional value of snacks. Milk, cornflakes & milk, steamed potato, boiled egg, orange, apple and gimbap were their favorite choices for children's snacks. Other factors to be considered included children's preference, convenience in food service, and price of snack.
The purpose of this study was to investigate the antioxidative and physical properties of finger food type rice snacks and pumpkin rice snacks for infants aged 6 to 12 months old. The addition of rice germ did not affect density or porosity, and there was no significant difference when compared with commercial products. The addition of rice germ to the rice snack group did not reduce the longitudinal expansion quality of the rice snack. The WAI of RW and SW values were 9.83 and 8.93, respectively, which were significantly higher than those of other samples (p<0.05). The results of this study show that the addition of rice germ to rice snack resulted in reduced density and porosity of rice snacks and maintenance of a high water absorption index, which are more desirable characteristics for products. The products with rice germ showed significantly higher antioxidative activities among all samples (p<0.05).
