  • Soybean sprouts(Paektae chunjari variety) cultivated for 5 days at a high temperature and humidity condition placed in the position of either upside down (method 1) or up right (method 2) were compared with the sprouts grown for 9 days with the conventional method (method 3) with respect to appearance, yield, rotten rate and organoleptic quality. The method 1 sprouts cultivated at a high temperature and humidity by sprinkling underground water (controlled temperature $17^{\circ}C$) 8 times a day were not significantly different in yield, rotten rate and moisture content from the method 2 sprouts except the lighter individual weights. The total weight yield of method 1 sprouts ($699{\pm}8.14%$699±8.14%) was lower than that of the method 3 sprouts ($771{\pm}11.8%$) but there was no significant difference in rotten rate ($0.83{\pm}0.07$). The organoleptic quality of the method 1 sprouts were superior in colour, flavor and overall taste than the method 3 sprouts.

  • This study was conducted to enhance the quality and peach (Yumyung) by ozone treatment. The ozone concentration and treatment time in soaking of peach were 0.1, 0.3 and 0.5 ppm and 30 min respectively. Fruit brix degree, titratable acidity, hardness, colors values, and rotten rate were determined in ripening grade Yumyung peach and when fruits were placed at ambient temperuture(25$^{\circ}C$) during 20 days. No great difference occured between control group and all ozone treatment samples in the changes of brix degree, titratable acidity, hardness and color values at my sampling period. However, the rotten rate of ozone-treated peach stored at 25$^{\circ}C$ was lower than that of control sample. The orders of rotten rate in peaches stored for 15 days at 25$^{\circ}C$ were control products > 0.1ppm ozone-treated > 0.3ppm ozone-treated) 0.5ppm ozone-treated. Therefore, optimal renditions of Yumyung peach stored by ozone treatment at ambient temperature during 20 days were ozone concentration of 0.5ppm, treatment time of 30min, and ozone treatment frequency of four times.

  • In order to improve storability of subtropical yam produced in South Korea, the major pathogens found during the storage were isolated and identified of the pathogenicity, and rot inhibition effect was studied based on the curing treatment condition. Penicillium sclerotigenum and Penicillium polonicum were identified as major pathogens causing rot in subtropical yam during storage, and P. sclerotigenum had stronger pathogenicity. Only the cut surface which has been made during a harvest and has been made smooth before curing generated a normal callus layer. The cut surface of tuberous root was cured in 95% of relativity humidity for three days at $23^{\circ}C$, and cured at $28^{\circ}C$ and $33^{\circ}C$. The observation of callus layer showed that the $23^{\circ}C$ treatment group had similar color saturation between tuberous root and pellicle, while the groups treated above $28^{\circ}C$ showed clear distinction. The generation rate of callus 0.5mm or bigger was 93 percent at $28^{\circ}C$ treatment, 96% at $33^{\circ}C$ treatment, but was 52% at $23^{\circ}C$ treatment. The conventional curing treatment group that used wind or sunlight at room temperature created little callus layer. The infection rate of pathogens according to the relative humidity inside the storage room was low at 40% and 60% of humidity, and the curing treatment period did not make a difference. When the humidity inside the storage room was 80%, all treatment groups rapidly increased the fungal pathogens. The rotten rate of each treatment was studied after 180 days during which the storage temperature was maintained at $16^{\circ}C$ and relative humidity 60%. While the rotten rate of tuberous root that has been cut in conventional curing treatment based on solar and wind was 43%, the one cured at over $28^{\circ}C$ and created the callus layer was less than 18%. While even a healthy tuberous root showed 25% of rotten rate in the traditional treatment group, the one cured at over $28^{\circ}C$ was less than 10%. The weight loss was 1-6% lower in the forced treatment group than in the conventional treatment group.

  • This study was carried out to investigate the effect of environmental conditions of air temperature and relative humidity, varieties, and water content of leaves at harvesting time on the occurrence of barn rot during curing of burley tobacco. The curing environmental condition was combined with 4 air temperatures ranging from 25$^{\circ}C$ to 40$^{\circ}C$ and 3 different relative humidities. The harvested leaves with 3 different water contents were cured during the rainy season in curing barn. Barn rot occurred the most at 30$^{\circ}C$, and reduced at 25$^{\circ}C$ and remarkably decreased at above 35$^{\circ}C$. But no barn rot was observed at 40$^{\circ}C$. In influence of relative humidity, the percentage of rotten leaves was highest at 100% RH and remarkably reduced at lower RH. Among two varieties, KB 101 was rotted smaller than Burley 21 under the all temperature and relative humidity conditions, however those considerably showed no difference. The rate of disease development increased in the lower leaves more than in the upper leaves. In the water content of leaves at harvesting time, 29.5% of the rotten leaves was observed at W.S.D. (water saturation deficit) 10.3%, but no barn rot was found at W.S.D. 6.4%.

  • Physicochemical properties of garlic bulb during storage with different cutting treatments were estimated. Garlic harvested in early June was used in this experiments. Various physicochemical factors of garlic bulb such as weight loss rate, rotten rate, sprouting rate, moisture content, reducing sugar content and total pyruvate content were investigated. Bulbs with roots, bulb without roots and bulb with stem length of l cm, 3 cm, 5 cm were stored at 2$\^{C}$ for eight months. The weight loss increased sharply after 8 months for all treatments. Weight loss occurred most severely in treated garlics with bulbs with 5 cm stem length and progressed steadily at low rates in bulbs with 1 cm stem length. Also, less decay and internal sprouting were observed in bulbs with 1 cm stem length. Cutting treatments of roots were not significant for internal sprouting. Incidence of other chemical properties of bulbs, contents of total sugar, reducing sugar and pyruvic acid were not significant statistically. Moisture contents of treated garlics was remarkably reduced in longer leaving stems. As a result, top-clipped leaving stems fur long, seemed to have a beneficial effect on physicochemical properties of garlic stored at 2$\^{C}$ for 8 months possibly due to reduced weight loss, rotten decaying and sprouting rates. Utilization of such results in the processing industry can be effective.

  • About 8 million tons of straw (dry matter) become rotten during the monsoon(June to August) season in Bangladesh. The possibility of preserving straw with urea, under wet condition during dry period (December to May) and its utilization by cattle has been studied. Five tons of fresh and wet(600g DM/kg material) rice straw were preserved for six months, with 5% urea(W/W) in either dome or rectangular shaped heap without any polythene cover. The preservation quality, acceptability and nutritive value of preserved straw were then comparted with that of dry straw in growing cattle. In both types of heaps, straw was excellently preserved having strong ammonia smell, dark brown in colour with no fungal infestation. Urea preservation of straw increased its CP and ADF content. Preserved straw was readily accepted by the animals and they were healthy throughout the experimental period. Compared to dry straw, urea preserved straw had nonsignificantly higher rumen degradability, straw intgake and growth rate. Similarly, digestibilities of DM(p<0.01), OM(p<0.01) & ADF(p<0.01) were significantly higher in the preserved than the dry straw. It was concluded that wet straw with relatively lower moisture(400 to 500 g/kg straw) content can be readily preserved by using urea without being covered with polythene. Whether the same phenomenon occurs in the preservation of fresh and weet rice straw with relatively higher moisture(600 to 700 g/kg straw) content is yet to be determined.
