  • A Study of Instant rice selected attributes of instant rice, the decrease in rice consumption is in fact been hailed as a stock and based on dietary lifestyle through prior research, attempting to validate whether the behavior between the related implications. The instant rice revitalization plan of conducting were developed further, consumers want instant rice and at the same time. Confirmed based on the selected attributes of instant rice according to consumer dietary lifestyle through this research to know could have instant rice selection attributes affect the degree of the action. Compare the differences of regional instant rice selected attributes gradually increasing area for future research, instant rice consumers surveyed Seoul, Gyeonggi-do area only residing in the limitations of this study, which, because you are studying in different regions.

Paddy Rice Culture Experiment Using Treated Sewage Effluent From Constructed Wetland (인공습지 오수처리수를 이용한 벼재배 실험)

  • A pilot study was performed at the experimental field of Konkuk University in Seoul, to examine the feasibility of the constructed wetland system for sewage and the effect of treated sewage irrigation on the paddy rice culture and its soil characteristics. The constructed wetland performed well, in that effluent concentrations of pollutants were significantly lower than concentrations of the influent. Median removal efficiencies of BOD$_{5}$ was about 78% and slightly lower during winter. Removal efficiencies form TN and TP were approximately 48 and 21%, respectively, and relatively less effective than that of BOD$_{5}$. Irrigation of treated sewage to paddy rice culture did not affect adversely in both growth and yield of rice. Instead, plots of treated sewage irrigation showed up to 50% more yield in average than the control plot. It implies that treated sewage irrigation might be beneficial to rice culture rather than detrimental as long as it is treated adequately and used properly. Soil was sampled and analyzed before transplanting and after harvesting. pH was slightly increased due to irrigation water, but it may not be concerned as long as the treated sewage is within the normal range. EC was increased in first year but decreased in second year, therefore salts accumulation in the soil could be less concerned. OM and CES was slightly increased, which might be beneficial on growing plants. TN did not show apparent pattern. Available phosphorus was decreased after rice culture, but the quantity of phosphorus(TP-available phosphorus) was rather increased which implies that excessive phosphorus supply may result in phosphorus accumulation in the soil. Overall, the constructed wetland was thought to be an effective sewage treatment alternative, and treated sewage could be reused as a supplemental source of irrigation water for paddy rice culture without causing adverse effect as long as it is treated adequately and used properly. For full-scale application, further investigation should be followed on environmental risk assessment, tolerable water quality, and fraction of supplemental irrigation.ion.

A Literature Review on Recipes in Connection with Japgwabyung - Focus on Recipe Data Published in Korea from the Joseon Dynasty to the Modern Era - (잡과병 관련 조리법에 관한 문헌고찰 - 조선시대부터 현대까지의 조리서를 중심으로 -)

  • The purpose of this study was to investigate the literature in connection with the names and recipes of japgwabyung recorded between 1392 and 2000. The names of japgwabyung were classified into eight types, including japgwabyung, japgwapyun, japgwajumbyung, japgwago, and japgwadanja. The names of japgwatteoks, classified with recipes, were Jjjin-tteoks, Chin-ttoks, and Salmeun-tteoks. The main ingredients used for japgwabyung were glutinous rice, nonglutinous rice, and buckwheat. The subsidiary ingredients were fruits, spices, seeds, and sweeteners. This study classified the names of japgwabyung, depending on the recipes, as japgwabyung, japgwapyun, japgwadanja, and japgwainjulmi. In addition this study classified recipes, depending on names, as steamed rice cakes made of sedimentary rice, steamed valley rice cake, steamed rice ]cakes with stuffs filled in and with bean powder dredged after striking, and steamed or struck rice cake with bean powder dredged. The main ingredients were glutinous rice and nonglutinous rice. The subsidiary ingredients were chestnuts, jujubes and dried persimmons, with other fruits being added according to taste.

Studies of Cooking Quality with Various Functional Rice (특수미의 혼합취반 적성 검정)

  • This study was investigated to examine the physicochemical properties of functional rice and the adaptable food processing of the added functional rice. The functional rice are Sanghwang rice, Agaricus rice(fermented with basidiomycota), Tochukaso rice, fermented with Monascus rubber rice. Fermented with Monascus rubber rice contains more crude protein, curde lipid, moisture, and total dietary fiber. The cross sectional shapes of the functional rice show polygon shapes, the starch granules of those rice are transformed. In sensory evaluation, fermented with Monascus rubber rice was showed the lowest values for glossness, color, flavor, sweetness, harshness, overall acceptability. The textural properties for those ratios were also affected by the period of storage. After 48 hours, the lowest hardness level was 30% Tochukaso rice addition, and the highest hardness level was 10% Sangwhang rice addition case. In 30% Sangwhang rice, and 30% tochukaso rice case gumminess values were decreased after 48 hours. But in 30% Sangwhang rice, and 30% Tochukaso rice case, the chewiness values decreased. This result suggest that the most suitable addition ratio for the rice cooking condition is 10% functional rice addition.

Quality Characteristics of Fermented Rice Beverage Prepared with Green Glutinous Rice (찰녹미 첨가 발효음료 품질 특성)

  • In this study, we aimed to develop a fermented green rice beverage with a unique flavor and physiological function activity. With glutinous green rice and rice nuruk as independent variables, we modeled the antioxidant characteristics and α-glucosidase, α-amylase inhibitory activity of glutinous green rice fermented beverage to verify its significance. The total flavonoid content and α-glucosidase inhibitory activity were selected as Quadratic models, and DPPH radical scavenging ability and α-amylase inhibitory activity were selected as linear models. For the sensory characteristics of glutinous green rice fermented beverage, sweetness, sourness, savory taste, bitterness, throat feel, nuruk scent, and overall preference increased in preference as the amount of glutinous green rice and rice nuruk increased, but significantly decreased after the center point (p<0.01). A blending ratio of 180.00 g of glutinous green rice and 400.00 g of rice nuruk had the highest preference among all the sensory items. Based on these results, we developed a green rice fermented beverage with unique flavor and physiological function activity of rice using glutinous green rice and rice nuruk, and the optimal blending ratio was determined to be 164.04 g of white rice, 195.96 g of glutinous green rice, and 414.61 g of rice nuruk.

An Investigative Stucy on the Farmland Uses in Korea and Hokkaido of Japan (韓國과 日本 北海道에서의 農地利用에 관한 調査硏究)

  • The purpose of the this study was to investigate and analyze the various statistical data on the actual state of farmland uses given in Korea and Hokkaido of Japan. The results of this research are as follows ; 1. The rate of farmland uses was marked 118% and 99% in Korea and Hokkaido of Japan in 1988, respectively. That of Korea was higher than that of Hokkaido of Japan. The tendency of the value for Korea has been decreased since the value was shown peak in 1980, but that of the value for Hokkaido was found gradually the increased value. It was analyzed that the reason why the value was decreased in Korea was referred to avoid the crops culture, and the reason why the value was increased in Hokkaido was dueto increase the area of pasture. 2. The farmland use system according to region were d ue to be the mixing pattern of rice culture and dry-field crops in East region of korea and the type of mainly rice culture in West region. The pattern of farmland use system was used to be performed mainly the rice culture in Central region, the mixing type of rice culture and dry-field crops in South region, and the agriculture of mainly dry-field crops and dairy in East-North region in Hokkaido. 3. In the light of the rate of planting, the rate of rice culture and dry-field crops were 49% and 51% in Korea, respectively. As the values were 13% and 87% in Hokkaido of Japan, respectively, the dry-field crops attained the superiority. The main crop kinds was shown the rice culture in Korea and the feed plant in Hokkaido of Japan, respectively. 4. In considering the above results, there are much differences in agricultural style and industrialization processes in both country Korea and Japan. Especially much more differences were evident from farmland use system of Hokkaido Island where had unique agricultural style in Japan.

Effect of Water Treatment Sludge on Growth of Rice Seedling (수도 유묘생장에 미치는 정수장슬러지 처리효과)

  • To know the effect of water treatment sludge (WTS) as a rice seedling culture soil, rice seeds are sown, germinated and grown on the culture soils mixed with different ratios of WTS to sand (100:0, 50:50, 30:70, respectively), and their growth effects was compared to that of control, commercial culture soil. When WTS is used as a culture soil for rice, the length and weight of the top part of rice seedling somewhat decreased than those of control treatment while their root length and weight in all WTS treatments significantly increased. Although phosphorus and potassium uptake of rice seedling in WTS treatments was slightly decreased, WTS treatment showed to develop root growth which is necessary in the seedling stage of all plane. Such a stimulatory effect on root growth of rice seedling was significant in the mixture ratio of 50% WTS to 50% sand.

Effect of Plant Growth Regulators on Grain Fill in vitro Culture of Rice Panicle

  • In vitro culture of panicle has been the method to accumulate starch and protein in immature grains by providing nutrients after florets crossed between remote genotypes artificially. Grain filling means embryo development and sucrose translocation from photosynthetic source, and starch manufacture in endosperm. The concentrations of sucrose used to culture immature rice panicle were 5, 10, 15, 20% and glutamine was 20 mM. When immature rice panicles at 5 days after flowering were cultured in distilled water with different concentrations of sucrose, glutamine 20 mM and MS medium with different concentrations of sucrose, glutamine 20 mM for 30 days the later was effective on grain filling. The optimal concentration of sucrose on grain filling in vitro culture of rice panicle was 10% and the weight of grain cultured was 10.14 mg that was corresponded to 57% of intact plant. In the method of treating plant growth regulators, the culture of immature rice panicle adding in MS medium with Kinetin, IAA, $\textrm{GA}_3$ were effective on grain filling than the culturing of immature rice panicle after submerging in solutions of Kinetin, IAA, $\textrm{GA}_3$ for 1day. When immature rice panicle was cultured in MS medium with sucrose 10% and Kinetin 46.47 $\mu$M it was effective on grain filling, respectively. The weight of grain cultured was 13.1mg that was corresponded to 75% of intact and germination rate was 51 %. When immature rice panicles were cultured in medium with different concentrations combined with Kinetin 4.65, 46.47, 464.7 $\mu\textrm{M}$, IAA 5.71, 57.08, 570.80 $\mu\textrm{M}$ for 30 days and in medium with IAA 5.71, 57.08, 570.80 $\mu\textrm{M}$ for 15 days after culturing in medium with Kinetin 4.65, 46.47, 464.70 $\mu\textrm{M}$ for 15 days the effect on grain filling was similar.

Effects of Embryo Development Stage and Gelrite Concentration on Plant Regeneration in Seed Culture of Rice (벼의 종자배양에서 배의 성숙정도와 Celrie 농도가 캘러스 형성 및 식물체 재분화에 미치는 영향)

  • To identify the effects embryo developmental stage and gelrite concentration on plant regeneration in seed culture of rice, mature and immature seeds of rice were cultured on the $N_{6}$ medium supplemented with2 mg/$\ell$ 2.4-D and different levels of gelrite(0.2~1.0%). The calli formed immature embryos were produced more plants than those from mature embryos. The maximum frequency of plant regeneration was achieved in the culture of the calli of immature embryos which was harvested at the 21$^{th}$ day after pollination. The plant regeneration on the medium with gelrite was more accelerate than that on the medium with agar. The highest frequency(55%) of plant regeneration was obtained from the calli transferred to the medium with 6g/$\ell$ gelrite.

Effects of Green Manures on Rice using P32 (P32를 이용한 녹비의 수도에 대한 비효에 관하여)

  • Organic matter in rice-paddy soils exercises two antagonistic effects on the rice plant under water-logged conditions in growing season in the course of its decomposition: It liberates mineral nutrients and promotes soil fertility. On the other hand, however, it demands oxygen for its decay and therefore competes with rice roots for this element, when applied in large quantity of fresh status. For the practical end of rice culture, it is most desirable that these two effects should not contend with each other. To determine the proper content of organic materials to be applied, the influences of varied amounts of a homogeneous mixture of dried green manure, ranging from 0 to 20g/pot (1/20,000 tanbo), upon hte growth of rice was investigated in a sand culture. Labeled phosphorus fertilizer was also used in the form of KH232PO4 to evaluate the availability of this nutrient in the soil. Under the present experimental conditions, green mature seems to have influenced little on the growth of rice, except on number of grains produced and grains/straw ratio. Moreover, no sympton of growth inhibition is obsrvable even by the largest amount of its application. The available phosphorus, as estimated by A-value, appears to have increased, as the amount of organic materials applied increases. In view of the fact that pure sand instead of a paddy soil is used in this culture, the present results would not be directly applicable to practical rice farming. Besides, the estimated A-value is in need of further study, since it varies according to method of application, as suggested by Nishigki et. al. (1958).
