Quality characteristics of Tteokbokki (Rice Cake) depending on cultivars and particle sizes of dry-milling rice flour

  • This study was examined to establish a conditions for producing Tteokbokki using dry-milling rice flour which can save manpower and labor time. Since the cost of producing rice flour milled in a wet condition is 500 to 700 won/kg, which is more than twice as much as that of 300 won wheat flour, it is necessary to directly make rice flour from raw rice. The dry-milling rice flour used in the experiment was produced by Air mill (Nara machinary co. ltd., Tokyo, Japan) from 5 rice cultivars (Samkwang, Dasan-1, Boramchan, Seolgaeng, Hanareum-2), which were cultivated in A-san in 2015 year. Their particle sizes were 50, 100 and $150{\mu}m$ for each cultivar, respectively. A control was a wet-milled rice flour milled with a roll mill after the rice was soaked in water for 4 hours. The moisture content of dry-milling rice flour based on cultivars was 11 ~ 12%, and added water up to 50~55% of dry-milling rice flour weight. The RVA characteristic of peak viscosity was the highest in Dasan-1 and Hanareum-2, the lowest in Seolgaeng. The setback value used as an indicator of aging was the highest in Dasan-1, therefore Dasan-1 was expected to be quick solidification, resulting in the low tendency of sensory evaluation. The damaged starch was high in Dasan-1 and Boramchan (p<0.05) compared to others. The Hunter color L were no significant among cultivars and b value increased in all cultivars of dry-milling rice flour compared with control. The hardness of dry-milling rice flour was higher than that of the control, especially Dasan-1 and Hanareum-2 were the highest. Based on the sensory evaluation, the best cultivars were Boramchan, Hanareum-2 and Samkwang. The overall preference of dry-milling rice flour was good in particle size of 50~100um.

무경운 및 유기농 논에서 품종에 따른 벼 생육 및 미질 특성 구명 (Rice Growth and Grain Quality in No-till and Organic Farming Paddy Field as Affected by Different Rice Cultivars)

  • 저 투입 녹색성장이 가능한 무경운 논에서 우리나라 주요 벼 품종 32종과 일본 벼 품종 2종을 대상으로 이현미사질양토에서 유기농업에 적합한 품종을 선발하기 위해 수량, 수량 구성요소와 쌀 품질을 분석하였다. 벼 생육초기 초장은 중생종 품종이 조생종 및 중만생종 품종에 비해 짧은 경향이었다. 벼멸구 발생 밀도는 벼 품종간에 통계적인 유의성이 없었으나 일품벼>동진1호=호진벼>동안벼>소비벼 순으로 벼멸구에 강한 것으로 나타났고 조생종 품종이 벼멸구에 약한 것으로 나타났다. 벼 잎집무늬마름병 발병 진전 비율은 새추청벼>추청벼>칼로스>남원벼>상미벼 순으로 높은 반면 화성벼>주남벼>새상주벼=히또메보레>일품벼>화영벼 순으로 낮았다. 우리나라 벼 품종별 수량은 화신벼가 2.95 Mg $ha^{-1}$, 일품벼 2.91 Mg $ha^{-1}$, 소비벼 2.86 Mg $ha^{-1}$, 내풍벼 2.73 Mg $ha^{-1}$, 새계화벼 2.70 Mg $ha^{-1}$ 순으로 높은 반면, 중생종인 화봉벼는 1.38 Mg $ha^{-1}$, 화영벼가 1.62 Mg $ha^{-1}$, 해평벼는 1.78 Mg $ha^{-1}$로 매우 낮았다. Toyo 식미치는 내풍벼 84.0, 상미벼 83.6, 화성벼 82.4, 새상주벼 82.3, 히또메보레 82.2, 화영벼 82.0, 일품벼 81.0 순으로 높은 반면, 남원벼 69.3, 새계화벼 71.4, 화봉벼 72.3, 동안벼 73.0, 동진1호 73.4의 순으로 낮았으며 중생종이 Toyo 식미치가 높았다. 등숙 비율이 높아질수록 Toyo 식미치가 증가되고 단백질 함량은 유의적으로 낮아졌으며 완전미 비율이 높아졌다. 주성분 분석결과 무경운 논에서 유기농업에 적합한 벼 품종으로 조생종은 상미벼, 상산벼와 오대벼, 중생종은 내풍벼와 소비벼, 중만생종은 화신벼, 추청벼, 신동진벼가 양호하였다.

벼 품종별 오존 피해 저항성 차이 (Varietal Difference of Resistance to Ozone Injury in Rice Plant)

  • 벼 품종의 오존 저항성 판단을 위한 시험에서 오존의 처리농도는 0.3 ppm이 0.1 ppm보다 뚜렷한 결과를 보였고, 처리시간은 2∼4시간이 알맞은 것으로 나타났다. 묘대일수에 따른 저항성 정도는 파종후 3주까지는 생육이 진전될수록 높아지는 경향이었으나 3∼5주간에는 큰 차이가 없었다. 인디카와 통일형 품종들이 자포니카 품종보다 저항성이 높은 경향이었고, 자포니카 품종 중에서 장안벼외 7 품종은 높은 저항성을 나타내었다. 벼의 생육시기에 따른 피해엽율은 간척벼는 유묘기에서 밀양 2003외 4 품종은 최고 분열기에서 가장 높게 나타났고 임실율은 수잉기 처리에서 가장 낮았다.

벼흰잎마름병 저항성 품종 육성 및 금후 연구 방향 (Breeding for Resistance to Bacterial Blight in Rice)

  • Bacterial blight(BB) caused by Xanthomonas oryzae pv. oryzae(Xoo) is one of the most economically destructive bacterial diseases of rice in worldwide. Utilization of resistant cultivars carrying resistant gene(s) is relatively an effect method to control this disease. About 34 resistant genes for BB resistance have been identified in many countries. Among them, Xa1 and Xa3 genes against bacterial blight have been incorporated into improved korean japonica rice varieties. Now, Ilmi carrying Xa1 gene and severial cultivars carrying Xa3 gene are widely grown in our country. In recent year, xa5, Xa21 and Xa23 genes are using in rice breeding programs for japonica resistant cultivars to bacterial blight. Resistant cultivars incorporated with a diverse single gene and two, three, or the more major gene necessite in the future.

Shifting Planting Dates and Fertilizer Application Rates as Climate Change Adaptation Strategies for Two Rice Cultivars in Cambodia

  • We attempted to assess the impact of climate change on rice yields in Cambodia and to investigate adaptation strategies to climate change including more drastically shifting the planting dates and considering more fertilizer application levels. The potential yields of two wet season rice cultivars (Sen Pidao and Phka Rumduol) under two climate change scenarios in Cambodia were simulated using the CERES-Rice model. Field experiments conducted at the Cambodian Agricultural Research and Development Institute (CARDI), in 2010, 2011, and 2013 and climate variables from the HadGEM3-RA model were collected for this study. Compared with the baseline (1991-2000), yields of Sen Pidao rice will decrease under climate change and yields of Phka Rumduol rice could increase or decrease depending on fertilizer rates and the periods (2040s, 2050s, and 2080s). In general, the variations in the simulated effects of climate change on yields were more sensitive at fertilizer N100-N200 and less sensitive at fertilizer N0-N50. It is likely that forward shifts of planting date from the baseline plating date for the two cultivars in the future can be more benefitted than backward shifts. It is concluded that the CERES-Rice model can be useful to provide efficacious adaptation strategies in Cambodia.

벼멸구 생태형의 교잡종별 발육 및 수도 품종별 피해 (Development of the Brown Planthopper, Nilaparvata lungens Sta$\{aa}$l, Biotypes and Their Hybrid Progenies Fed on Different Cultivars of Rice with Various Resistance Gene and Damage of Different Rice Cultivars)

  • Some attempts were made to investigate the gentic characteristics of the brown planthopper(BPH), Nilaparvata lugens Sta${\aa}$l, biotypes. In terms of egg and nymphal periods, egg hatcgability, emergence ratio, and population change of BPH and plant damage of rice cultivars by the infestation of BPH biotypes and their hybrid progenies in field conditions. The egg and nymphal periods of the three of BPH biotypes and their hybrid progenies on Dongjinbyeo with no resistance gene were shorter than on rice cultivars with resistance gene. But the periods of biotype-2(♀) X 2(♂) (E) on Samgangbyeo with Bph-1 gene and biotype-3(♀) X 3(♂)(I) on Mirying 63 with bph-2 gene were as short as on Dongjinbyeo. The egg hatchability and emergence ratio of the three Bph biotypes and their hybrid progenies on Dongjinbyeo were higher than on the other rice cultivars, and those of E on Samgangbyeo and I on Miryang 63 were as high as on Dongjinbyeo. In rice paddy field, biotype-1(♀) X 1(♂)(A)$\sim$I infested on Dongjinbyeo, E onSamgangbyeo, and I on Miryang 63 were increased their population densities remarkably in next generation. Dongjinbyeo infested by A$\sim$I, and Myryang 63 infested by I were hopperburned at 60 days after infestation and had a damage rating of 0.9. But Samgangbyeo infested by E was no hopperburn(damage rating: 7.3) though it showed high BPH population at 60 days after infestation.

Insertional Mutation of the Rice Blast Resistance Gene, Pi-b, by Long Terminal Repeat of a Retrotransposon

  • The Pi-b is the rice gene conferring race specific resistance to the blast fungus Magnaporthe grisea race having a corresponding avirulence gene, AVR-Pi-b. All resistant cultivars have two copies of the Pi-b gene, but susceptible cultivars have a single copy of the gene. About 1 Kbp insertion sequence was detected in the open reading frame of the Pi-b gene from the susceptible cv. Nipponbare. The nature of insertion sequence was identified as a solo long terminal repeat (LTR) of new rice Tyl-copia-like retrotransposon. LTR was widely distributed in the rice genome. Various types of different patterns of restriction fragment length polymorphism of LTR were detected in indica cultivars, whereas a single type was detected from japonica cultivars. The insertion of LTR sequence in the Pi-b gene in the susceptible cultivar suggested that retrotransposon-mediated insertional mutation might played an important role in the resistance breakdown as well as evolution of resistance genes in rice.

Classification of Korean Rice Cultivars based on Reaction Pattern to Japanese Isolates of Blast Pathogen

  • Classification of blast resistance type of 129 Korean rice cultivars was carried out based on reaction pattern to 10 Japanese blast pathogen isolates(Pyricularia oryzae). The cultivars were divided into 11 groups based on the presumed resistance genes as follows; Pia type(19 cultivars), Pita-2 type(4), Pik type(3), Pib type(5), Piz type(11), Pik-s type(8), Pik and Pii type(4), Pia and Pita type(8), Pia and Pik type(6), Pita, Pik and Pii type(4) and no-grouping type(57). These results would provide important information to rice breeding for durable and broad resistance to rice blast.

벼의 품종별 이앙시기가 미질 특성에 미치는 영향 III. 미립의 호화정도와 식미평가 (Characteristics of Grain Quality at Different Transplanting Times among Rice Cultivars)

  • A study was carried our to investigate the characteristics of physico-chemical components palatability of cooked rice accoring to different transplanting time. The treatments were consisted of five transplanting time, from May 5 to July 5 at 15 -day intervals, and six cultivars ; two early-maturing, two mid-maturing and two late-maturing cultivars which are clearly identified by evaluation of cumulative temperature and growth duration from seeding to heading of rice plants. In gelatinization characteristics of rice grain, alkali digestion value was low in the earlier transplanting regardlessof maturing types. Initial pasting temeprature maximum viscosity and breakdown as amylogram charcteristics were high at the transplanting of June 5. The palatability of cookedrice was evaluated that early-maturing cultivars were much better in early transplanting than in late transplanting . The optimum transplanting time for palatibility was the periods from May 5 to 20 in early maturing varieties, May 20 to June 5 in mid-maturing and June 5 to June 20 in late-maturing ones at Honam district in Korea.

유색미의 화학적성분 및 항산화활성 (Chemical Compositions and Antioxidant Activity of the Colored Rice Cultivars)

  • 신품종 갈색미를 이용한 다양한 가공식품을 개발하기 위한 연구의 일환으로 먼저 갈색미의 품질 특성을 평가하기 위해 4가지 쌀 품종(백색미, 갈색메벼, 갈색찰벼 및 흑미)의 화학적성분 및 항산화활성을 측정하고 비교 검토한 결과는 다음과 같다. 새로 육종된 갈색메벼 및 갈색찰벼의 일반성분은 대체적으로 백색미와 흑미의 중간 함량을 나타내는 경향이었다. 지방산 중 palmitic, oleic 및 linoleic acids 함량이 거의 96% 이상 차지하고 있었으며, 백색미, 갈색메벼 및 갈색찰벼는 linoleic acid > oleic acid > palmitic acid 순으로, 반면, 흑미는 oleic acid > linoleic acid > palmitic acid순으로 함량이 낮았다. 백색미의 ${\alpah}$-tocopherol 함량은 51.3mg%(건물 중)이었으나 갈색메벼 및 찰벼는 각각 34.5 및 37.2 mg%, 그리고 흑미는 38.6 mg%로서 백색미보다 유색미의 함량이 낯은 경향을 나타내었다. 다음, 유리아미노산 중 glutamic 및 aspartic acids와 같은 산성아미노산의 함량이 가장 높았으며, 흑미는 백색미보다 그 함량이 훨씬 높은 반면, alanine, proline 및 valine은 백색미보다 낮았으며, GABA 함량은 약간 높았다. 한편, 4가지 쌀 품종중 흑미(2.54 %, 건물중)의 수용성페놀 함량이 가장 높았으며, 그 다음으로 갈색찰벼(1.09%) > 갈색메벼(0.69%) > 백색미(0.49%), 순으로 감소하였다. 그리고 흑미는 가장 강한 $DPPH(IC_{50}=90.04{\mu}g/mL)$, superoxide $(IC_{50}=199.92{\mu}g/mL)$ 및 hydroxyl $(IC_{50}=420.73{\mu}g/mL)$ 라디칼 포착활성을 나타내었으며, 그 다음으로 갈색메벼 > 갈색찰벼 > 백색미, 순으로 감소하는 경향을 나타내었다. 이상의 결과로부터 새로 육종된 신품종 갈색메벼 및 갈색찰벼는 대체적으로 백색미와 흑미의 중간적 화학적 품질 특성 및 항산화활성을 나타내었다. 이러한 결과를 미루어 볼 때 새로 육종된 갈색미는 흑미와 함께 향후 기능성 쌀로 활용할 수 있을 것으로 사료된다.
