대형 외식업소 조리종사자 위생인지도와 수행도 및 고객 위생만족도 (Foodservice Employees' Awareness and Performance in Sanitation and Customers' Satisfaction with Sanitation at Large-Sized Restaurants)

  • The purpose of this study was to investigate the foodservice employees' awareness and performance in sanitation and customers' satisfaction with sanitation in large sized restaurants in Korea. Sanitation inspections were carried out in 200 large Korean, Western, Chinese, and Japanese style restaurants, and in buffet-style restaurants in Daegu and Gyeongbuk province. Foodservice employees' awareness of sanitation and customers' satisfaction with sanitation were investigated by interviewing 317 foodservice employees and 205 customers. Results of the inspection of restaurants showed low performance in food handling, employees' hygiene (hygienic) practices, and in cleaning food processing equipment. Scores of the foodservice employees' awareness in Chinese style restaurants were significantly lower than scores of workers in western restaurants. Foodservice employees had low awareness of sanitation procedures used for food storage and cleaning of equipment in Korean, Chinese, and Japanese style restaurants. Foodservice employees had low awareness of equipment cleaning, inspection and food distribution in western style restaurants and of equipment cleaning and food handling in buffet-style restaurants. Foodservice employees at all restaurants had the lowest performance in terms of HACCP. This shows that HACCP application and recording have not yet been properly carried out at restaurants in Korea. Foodservice employees had low performance scores in food handling, vegetable disinfection and disinfection after hand washing. Research on customers' satisfaction with sanitation revealed a low rating of kitchens and foodservice employees at all restaurants. Customers had low satisfaction with servers and kitchen environments in Korean style restaurants with food, tableware, utensils and servers in western style restaurants; with food and kitchen environments in Chinese style restaurants with servers, tableware, and utensils in Japanese style restaurants and with kitchen environments and servers in buffet-style restaurants. Therefore, cleanliness of kitchen facilities and equipment, and hygienic food handling procedures by workers in restaurants are urgently needed.

  • 본 연구는 레스토랑 환경이 고객의 자발적 행위에 미치는 영향 그러고 이들 관계에 있어서 레스토랑 가치, 품질, 그리고 전반적 만족도의 매개역할을 실증적으로 검증하였다. 723명의 레스토랑 이용고객들을 대상으로 데이터를 수집하여 분석한 결과는 다음과 같다. 첫째, 메뉴특성이 레스토랑 가치와 품질에 유의한 영향을 미치는 것으로 나타났다. 둘째 종업원 서비스 특성이 레스토랑 가치의 매개역할을 통해서 레스토랑 품질에 유의한 영향을 미치는 것으로 나타났다. 셋째, 시설/분위기 특성이 레스토랑 가치와 품질에 유의한 영황을 미치는 것으로 나타났다. 넷째, 레스토랑 내 촉진 특성이 레스토랑 가치와 품질에 유의한 영향을 미치는 것으로 나타났다. 다섯째, 레스토랑 가치는 레스토랑 품질과 전반적 만족도, 그리고 레스토랑 가치는 전반적 만족도에 유의한 영향을 미치는 것으로 나타났다. 마지막으로 전반적 만족도는 충성도, 참여, 그리고 협조 등 고객의 자발적 행위에 유의한 영향을 미치는 것으로 나타났다.

외식업체의 물리적 환경이 고객의 행동에 미치는 영향 -위생관리변수의 조절효과를 중심으로- (The Impacts of Restaurant's Hygiene Environment on Customers' Behaviors)

  • 본연구는 코로나19 확산의 여파로 외식 산업의 심각한 매출 감소를 회복하기 위한 처방안의 하나로서 소비자들이 외식산업의 물리적 환경의 중요성을 어떻게 인식하고 특히 위생변수의 조절효과가 소비자들의 행동에 어떠한 영향을 끼치는지를 조사하였다. 이 목표를 달성하기 위해 본 연구는 자기 기입식 설문조사 방법을 통해 진행하였으며 배포된 설문지 중 627부가 최종 유효한 응답지로 선택되었다. 그리고 다중회귀분석을 통해 외식산업의 물리적 환경변수가 고객의 구전 (Word of Mouth) 행동과 재방문의사에 어떠한 영향을 주었는지 검증하고 위생관리변수가 물리적환경변수와 소비자의 행동사이의 관계에서 조절역할을 하였는지를 검증하였다. 검증결과 외식산업의 물리적환경은 소비자의 긍적적인 구전에 영향을 주었고 재방문 의도에도 긍적적인 영향을 주었다. 외식업체의 물리적 환경과 구전의 관계에 코로나19 대응 위생관리 변수가 조절역활을 하지 않았지만 외식업체의 물리적환경과 재방문의도 관계에서는 조절역활을 하는 것으로 나타났다. 이상의 결과를 통해 코로나19 이후 외식업체의 운영성과를 높이기 위해서는 무엇보다도 매장 내의 청결성을 유지하는 것과 코로나19로 인한 고객 감소에 대응하기 위해 매장 내에서 질병 예방 노력이 중요함이 확인되었다.

  • This study was undertaken to know the distribution of V. parahaemolyticus in sea fishes feeding at an aquarium and from kitchen environments of restaurants located in Masan, Kyungnam, during May and June, 1979. Results obtained are as follows: The detection rate of V. parahaemolyticus was calculated as 21.1% from 1103 specimens; as 38.1% from 336 sea fishes and as 10.4% from 675 kitchen environments. The detection rate of V. parahaemolyticus were 49.6% from 127 sea fishes feeded at an aquarium contaminated by V. parahaemolyticus and 31.1% from 209 sea fishes feeded at an aquarium not contaminated by V. parahaemolyticus. The detection rate of V. parahaemolyticus were shown as 14.6% from 261 kitchen environments having an V. parahaemolyticus contaminated aquarium but as 7.7% from 414 kitchen environments of restaurants having an aquarium not contaminated by V. parahaemolyticus.

물리적 환경이 레스토랑 종사원의 감정 반응과 집단응집력에 미치는 영향 (The Influence of Physical Environment on Restaurant Employees' Emotional Responses and Group Cohesiveness)

  • This research examines how various dimensions of physical environments influence employees' emotional responses in restaurants, and how these emotional responses, in turn, influence employees' group cohesiveness. The result of empirical research indicates that restaurant physical environments have a significant effect on employees' emotional responses, and that these psychological experiences serve as critical mediators in the physical environment-group cohesiveness relationship in restaurants. However, the effects of physical environ-ments of restaurants on employees' psychological responses varied with the dimensions of physical environ-ments. First, the effect of spatial layout and functionality on pleasure and dominance was significant, not on arousal. Second, ambient factors influence on all dimensions of emotional responses, including the arousal level. In turn, all dimensions of emotional responses have significant effects on employees' group cohesive-ness. Therefore, the result suggests that restaurants should manage(or, improve) their physical environment conditions for inducing employees' positive emotional responses.

Customers' Satisfaction and Loyalty with Motivations to Dine Out and Selected Attributes in Korean Traditional Restaurant

  • Purpose - This research analyzes the impact of motivations to dine out and selected attributes of customers on customer satisfaction and loyalty. Based on collected data, this study aims to suggest effective marketing strategies to help manage traditional Korean food restaurants. Research design, data, and methodology - The data were collected from the customers who visited traditional Korean food restaurants in Jeon-Ju for two months from December, 2015. The available data were 402 from collected 450 customers' data and they were analyzed by using SPSS 19.0. Result - These are the results of data analysis. First, environmental, personal and perceived factors influence on the motivations to dine out at Korean food restaurants which affect customer satisfaction. Next, selected attributes from Korean food restaurants have impacts on customer satisfaction. Third, motivations to dine out Korean food restaurants affect customer loyalty. Moreover, physical environments, curiosity and need satisfactions, which are the selected attributes, have impacts on customer loyalty. Lastly, it has been identified that customer satisfaction in Korean food restaurants influences customer loyalty. Conclusions - Satisfaction and good brand image of Jeon-Ju will increase customers' intention to revisit. This study has found that high customer satisfaction leads to re-visitation.

메뉴 교체의 관리 방안에 관한 연구 -호텔 레스토랑을 중심으로- (A Study on the Menu Management of Betel Restaurants)

  • The rapidly changing environments of today's hospitality industry lays more and more emphasis on the management of food & beverage sector. Hotel restaurants changes their menus 2 times a year. But they tend to modify or complement old items, or imitate other restaurants'menus, rather than try new ones. In addition, the change cycles are determined without any systematic and scientific criteria. Based on the survey, a plan for managing menu change cycles is proposed. The proposed plan is summarized as follows: First, the survey result demonstrates that the appropriate frequency of menu changes is: twice a year for the fixed menu; four times for the seasonal menu; four times for the promotion menu; twice for the business menu; and, three times for the event menu. Second, under the management maintained by consistent monitoring of menu change. Third, menu change should be managed through the menu analyses on its profitability, popularity, and the potential for further growth. Fourth, menu change should be managed through the periodic investigations of the tastes and preferences of the customers. fifth, a unique system for the menu change should be constructed by analyzing of other competitive restaurants or restaurant chain stores.

생선회전문점의 물리적 환경이 이용고객의 지각된 위험에 미치는 영향 - 강원영동지역권역 위주 - (Effects of Physical Environment on Risk Perception in Customers at Raw-fish Restaurants - focused on Northeastern Area of Kangwon Province -)

  • The purpose of this article was to research the effects of physical environment on risk perception in customers at raw-fish restaurants in the Northeastern area of Kangwon province, South Korea. In this research, reliability analysis, factor analysis and path analysis were carried out. Physical environments were divided into four factors and risk perception into three factors. 'Exterior facility' had a negative influence on performance (p<0.001) and financial risk (p<0.001). 'Interior facility' negatively affected performance risk (p<0.001), financial risk (p<0.001) and time risk (p<0.001). 'The others' negatively influenced performance risk (p<0.05). Lastly, 'press copy' negatively influenced performance risk (p<0.001). Based on these results, various physical environments affected the risk perception in customers at raw-fish restaurants, and satisfaction level of customers was based on risk perceptions. As a result, food-service companies need to manage the physical environment as a marketing strategy, as well as reduce risk perception to increase customers loyalty.

도시 지역과 농촌 지역의 음식점 분포와 접근성의 비교 (Comparison of the distribution and accessibility of restaurants in urban area and rural area)

  • 본 연구는 지역사회의 식환경 측정에 대한 시도로, 우리나라 일개 지역의 음식점의 분포와 접근성을 도시지역과 농촌지역으로 나누어 살펴보고, 우리나라 식생활의 특성을 반영하는 한식 음식점과 비한식 음식점의 분포와 접근성에 대해서 살펴보았다. 도농통합시에 해당하는 경기도 일개 시의 도시지역 2개 동과 농촌지역 1개 면을 대상으로, 해당지역에 위치한 음식점의 위치 정보를 수집하였고, 한국표준산업 분류체계에 따라 한식 음식점과 비한식 음식점으로 분류하였다. 조사 대상지역의 일부 거주자를 선정하여 대상자의 거주지를 기준으로 GIS 분석을 통해 단위구역 당 음식점의 밀도와 가장 가까운 음식점까지의 거리를 산출하였다. 그 결과, 도시지역이 농촌지역에 비해 음식점의 밀도가 높고, 음식점의 상권이 거주지를 중심으로 집중적으로 분포하는 것을 확인할 수 있었다. 또한 도시지역은 한식 음식점보다 비한식 음식점의 접근성이 좋았던 반면, 농촌지역은 한식 음식점이 비한식 음식점보다 접근성이 좋았다. 본 연구는 최근 여러 분야에 접목되고 있는 GIS를 식환경 분야에 처음 도입하여 우리나라 지역사회의 외식환경의 현황을 파악한 연구로서 의의가 있으며, 추후 외식환경과 개인의 식생활의 연관성을 파악하기 위한 후속 연구가 필요할 것으로 사료된다.

도시지역 실내환경 유형별 공기질 특성 평가 -가정, 사무실 및 식당을 중심으로- (Characterization of Air Quality in Various Types of Indoor Environments in Urban Areas - Focusing on Homes, Offices, and Restaurants -)

  • In this study, comprehensive air quality monitoring was undertaken with a variety of objectives to collect data on the levels of various indoor and ambient air quality parameters in the urban areas of Seoul and Taegu. The sampling sites were comprised of six offices, six residences and six restaurants in each city. The ambient air adjacent to the indoor sites was also simultaneously sampled for the same constituents. The sampling was conducted in two phases: summer of 1994 and winter of 1994/95. A range of air quality parameters were measured simultaneously, which include RSP, CO, COB, NOB, a range of VOC, airborne microbials, temperature, and relative humidity. The indoor and ambient levels of the pollutants measured in this study varied widely between the three types of environments studied. Comparison of median values for the three groups revealed that restaurants had higher indoor levels of most pollutants than homes or offices. There was also a clear pattern of the indoor levels of target pollutants being higher than those outdoors, particularly in restaurants. Concentrations of CO and most of the VOC were found to be significantly higher in the commercial districts, indicating the influence of vehicle exhaust emissions. A very wide range of VOC levels was documented in this study. Although median indoorloutdoor ratios indicated a generally increasing level of VOC indoors when compared to those outdoors, no statistically significant differences were found between indoor and outdoor VOC levels in homes and offices, implying the importance of ambient air quality in determining the quality of indoor air for homes and offices in urban areas. In addition, there was a general pattern of increasing concentrations from summer to winter, and similarly from outdoor to indoor air for nearly all target compounds. The seasonal differences in median levels were very clearly seen for fuel combustion related pollutants such as RSP, CO and VOC, this being attributed to the effects of increased fuel consumption during the cold season and to meteorological factors.
