  • This article aims to summarize the development and application of menu engineering technique, 'Menu Engineering Modified by Preference (MEMP)'. The site selected for this project was a foodservice operation in Yonsei University residence hall. Sales and food costs data were collected from the daily sales reports for 1 month, and the survey of food preference was conducted during May, 1999. Statistical data analysis was completed using the SAS/Win 6.12 for descriptive analysis. The calculation for menu analysis were carried out with MS 2000 Excel spreadsheet program. This MEMP technique developed had 6 category criteria and 2 dimensions of the contribution margin (CM) and the menu mix modified% (MMM%) . The MMM% was calculated by the sales volumes and also weighted by food preference. The CM and MMM% for each item were compared with a mean menu CM as well as a 70% rule. Four possible classifications by MEMP were fumed out as 'STAR', 'PLOWHORSE', 'PUZZLE', 'DOG'. 'STAR' items were the most popular and profitable items and required to maintain rigid specifications for quality. The decision actions for 'PLOWHORSE' menu items which were relatively popular, but yield a low menu average CM included combining a plowhorse item with lower cost products and reducing the frequency of serving or serving size. There was a need for 'PUZZLE' items to be changed in the menu combination, improve recipe, and promote menu. The last DOG' items were desired to be deleted. This study demonstrates that menu information can be interpreted more easily with MEMP. The use of MEMP is therefore an effective way to improve management decisions about menu of university residence hall foodservice.

  • In order to study factors affecting the use of the ambulatory physician services. Andersen's model for health utilization was modified by adding the health behavior component and examined with three different approaches. Three different approaches were the multiople regression model, logistic regression model, and LISREL model. For multiple regression, dependent variable was reported illness-related visits to a physician during past one year and independent variables are variaous variables measuring predisposing factor, enabling factor, need factor and health behavior. For the logistic regression, dependent variable was visit or no-visit to a physician during past one year and independent variables were same as the multiple regression analysis. For the LISREL, five endogenous variables of health utiliztion, predisposing factor, enabling factor, need factor, and health behavior and 20 exogeneous variables which measures five endogenous variables were used. According to the multiple regression analysis, chronic illness, health status, perceived health status of the need factor; residence, sex, age, marital status, education of the predisposing factor ; health insurance, usual source for medical care of enabling factor were the siginificant exploratory variables for the health utilization. Out of the logistic regression analysis, health status, chronic illness, residence, marital status, education, drinking, use of health aid were found to be significant exploratory variables. From LISREL, need factor affect utilization most following by predisposing factor, enabling factor and health behavior. For LISREL model, age, education, and residence for predisposing factor; health status, chronic illess, and perceived health status for need factor; medical insurance for enabling factor; and doing any kind of health behavior for the health behavior were found as the significant observed variables for each theoretical variables.

  • University residence halls have become one of the most important issues for students when selecting their academic institutions. However, in South Korea, while universities maintain technologically up-to-date facilities, when it comes to safety or security, the management is unsatisfactory. As a result, the number of violent crime has been increasing. However, there are few researches in terms of practical validity of CPTED Guidelines even though a myriad of researchers study about CPTED Guidelines. Therefore, this study endeavours to investigate the validity of theoretical CPTED Guidelines that to what extent it might be adopted for design process. As a methodology, Space Syntax Convex map and Visibility Graph Analysis (VGA) are chosen. As a result, since the types of space which have a high level of Space Syntax Index are analogous with space treated on CPTED Guidelines, it roughly shows that the theoretical CPTED Guidelines could be adopted in practical architectural design process. Furthermore, it reveals that there is a close relationship between detail design guide stated in CPTED Guidelines and the result of VGA. That is, through the analysis, it is proved that the validity of CPTED Guidelines is quite enough to be adopted in practical design process.

  • This purpose of this study is to figure out the inter-relationship between the residence stories in high-rise mixed-use apartments and their residents' disease patterns throughout the dweller's medical reports in high-rise mixed-use apartments. Research basic data are obtained from medical fee request of National Health Insurance Corportion. Data are limited a housing complex to 'A' high-rise mixed-use apartment and a medical treatment time to 3 years(2004-2006). Analysis data of total 346,286 medical records, 43,159 disease records, and 8,999 persons are collected. By analyzing those data, findings are as follows: 1) Women is more medical treatments than men, 40-50 age group is more treated, and the residents of 6-25 stories are more received medical treatments. Diseases of the respiratory system and diseases of the eye and adnexa are relatively treated higher than other diseases. 2) The diseases of the respiratory system, the eye and adnexa, the skin and subcutaneous tissue, the ear and mastoid process), and the asthma have not relation to the high-storied residence through the data of disease records and personal records. But the analysis on the data of children, 7 ages and less, is showed a significant relation. And to conclude, there is no relationship between the residence of high-stories in that apartment and dwellers' disease patterns, but there is a little probable to the relationship in the pre-school child.

  • One of the most important thing in studying the form of the interior architecture is to set up the methodology of the morphological of the morphological analysis. This article tries to introduce one of such attempts namely, that of Dr. Hisao Koyama, professor of Tokyo University , by applying it to one of F.L. Wright's works, the Robie residence . Professor Koyama has outlined a new methodology of morphologically analyzing the interior architectures, by shifting his focus of analysis from the external conditions of a form, such as functional personal and social traits and traits of the time, to the internal conditions of the form as itself. The outcome of the analysis clearly shows that the Robie Residence , classically known by its horizontality, does have a coexisting factor of verticality. This implies that such a method is useful in revealing the aesthetic compounds of the interior architectures, this time that of F.L. Wright , in a more concrete way. Such an outcome can hopefully be applied to the practices of designing the interior architectures.

  • This study conducted qualitative research through in-depth interviews on the diffusion process of Korean food in accordance with the length of residence of Chinese students in Korea. As the analysis method, the qualitative analysis method such as NVivo12.0 was used, and the analysis was performed through word frequency, word cloud, and coding matrix. The images of taste of Korean food were revealed as 'Spicy', 'Sweet', and 'Light taste' by both short-term Chinese residents and long-term Chinese residents. The long-term Chinese residents showed their dissatisfaction with the institutional food, and they also pointed out the importance of the matter of cooking for quick adaptation to life in Korea. The long-term Chinese residents also thought of Korean food as 'High-fiber food', and this was influenced by the 'Less-oil' cooking method of Korean food, which is different from the cooking method of Chinese food. The length of residence was used as a main variable of this study, and it was one of the factors having positive effects on the diffusion of Korean food and acculturation. It would be difficult to generalize the results because this study used the convenience sampling method and snowball sampling.

  • To protect the life and property of the residence from diverse disasters, we have collected and analyzed the domestic and foreign residence evacuation plans. The results and proposals from the study can be summarized as in following. First, the contents and items in civil defense emergency evacuation plan guidelines should be stipulated more clearly and its' application should be extended. Second, uniformity must be established in non-coherent contents between cities and counties. Third, disaster-prone people are not considered in the evacuation plans. The disaster-prone people must be accounted by each cities and counties and an evacuation plan for them must be established. Fourth, most of the rooms for residence evacuations are second to third level, and they are defenseless against disasters like CBRNE. Considering these conditions, deploying transportation means that can support large-scale evacuations, quickly and effectively, must also be considered.

  • Objectives: College is an important time for students to establish their identity as an independent subjects and develop a foundation to maintain a healthy adulthood. However, after female students become college students, their eating habits are likely to become more irregular and they may experience various health problems because of excessive weight control. Therefore, this study was conducted to investigate the dietary behaviors and blood clinical indices of female college students by residence types. Methods: A total of 374 subjects were classified as home group, self-boarding group or boarding group according to residence type. Dietary habits, frequency of food intake, and eating attitudes were examined through questionnaires and anthropometric measurements and blood clinical indices were analyzed. Results: The meal most frequently skipped by female college students was breakfast, and the frequency of skipping breakfast was significantly lower in the home group than other groups. Most college students recognized that their eating habits had worsened since becoming college students, with the self-boarding group in particular feeling that their eating habits changed negatively. The consumption frequencies of protein foods, fruits, dairy products, seaweed, and fatty meats were significantly lower in the self-boarding group than other groups. The home group ate food cut into smaller pieces, while the self-boarding group tried new and rich foods. Residence types did not affect blood clinical indices. Conclusions: The self-boarding group had inadequate dietary habits compared to the home group. Although residence type did not affect the blood clinical indices, the students still had poor dietary habits. Therefore, proper nutrition education is needed to improve the nutritional status of college students, especially those that self-board.
