This study was performed to investigate the dietary attitudes and nutrient intakes of nurses. A total of 291 nurses working at hospitals in the Kyungnam area participated in the study. The general characteristics and dietary attitudes of the subjects were surveyed using a self-administered questionnaire, and nutrient intakes was examined using one-day 24-hour recall method. The results were as follows : 67.7 percent of the subjects were nurses, 32.3% were nursing assistants. Average age of the subjects was 26.9 years old, average nursing experience was 5.7 years, and 70.7% of the subjects graduated from junior college. The rates of shift work (45.4%) and non-shift work (54.6%) were similar, and 91.5% of subjects worked on a three-shift a day schedule. The average nutrition knowledge score was 14.3 $\pm$ 2.5 out of a possible 20 points. Most of the nurses had experienced dietary problems such as skipping meals and overeating. Sixty-eight point three percent of the nurses had breakfast less than 3 times a week, and the main reason for skipping meals was a lack of time. Most of the nurses (74.1%) didn't exercise regularly. The average score on dietary habits was 55.6 out of 100, and most of the subjects belonged to the‘fair’group in terms of dietary habits. Married nurses, and those over 31 years of age, scored significantly higher on dietary habits than unmarried nurses, and those under 25 years of age (p < 0.001), and the scores significantly increased with increasing age. Mean daily carbohydrate and fat intake was 231.5 $\pm$ 66.1 g, 41.1 $\pm$ 18.8 g, and cholesterol and crude fiber intake was 238.2 $\pm$ 184.6 mg, 5.2 $\pm$ 2.0 g. respectively. Compared with the recommended allowances, the energy (1560.0 $\pm$ 448.5 kcal), calcium (453.8 $\pm$ 222.3 mg) iron (10.6 $\pm$ 7.6 mg), vitamin A (658.5 $\pm$ 538.1 R.E) and vitamin B$_2$ (0.96 $\pm$ 0.5 mg) figures were below the Korean RDA, and the protein (65.9 $\pm$ 31.0 g), vitamin B, (1.14 $\pm$ 0.5 mg), vitamin C (143.2 $\pm$ 119.6 mg), niacin (14.4 $\pm$ 6.3 mg) and phosphorus (958.1 $\pm$ 352.1 mg) figures were above the Korean RDA. The average carbohydrate, protein, fat ratio of energy intake was 60:17:23. The intake ratio of Ca and P showed an unbalance of 1:2. The dietary habits had a positive correlation (p < 0.001) with nutrition intake except vitamin A and vitamin C. Therefore, In order to improve overall dietary behavior and nutritional status, systematic nutrition education programs should be developed.

Currently, metabolic surgery (Laparoscopic Roux-en-Y gastric bypass, LRYGB) has an important role and should be recommended as an intervention in the management of obese patients with type 2 diabetes mellitus (T2DM). A successful outcome of surgery requires medical nutrition therapy. Therefore, we performed a retrospective study on 25 patients with T2DM who underwent LRYGB at Yeouido St. Mary's Hospital from October 2008 to May 2010. The patients were followed up for an average of 6 months after surgery (range: 2~19 months). Diabetes was resolved in 80% of the patients. Percentage of excess weight loss was (%EWL) was 56.2%. After surgery, fasting blood sugar (FBS) and HbA1c were significantly reduced (123 mg/dl, A1c 6.7%, P<0.001) and triglyceride was also significantly reduced to 107.6 mg/dl (P<0.05). As diets of the patients progressed from liquid to soft to regular diet, energy, carbohydrates, and fat intakes increased significantly (P<0.001). But protein intake did not change significantly. Nutrient intake of the patients after the surgery was significantly lower than the recommended diet for the non-surgery group. Patients experienced side-effects related to the diets after surgery, including hair-loss (76%), smelly gas (52%), vomiting (48%), etc. A significantly positive correlation was observed between vomiting and FBS (P<0.001). There was a significant relationship between side effects and the amount of nutrient intakes. Therefore, guide patients to a diet progression with treatment to minimize side effects, especially vomiting. And monitor their dietary life to be healthy and not to regain weight until remission of T2DM.

BACKGROUND/OBJECTIVES: Despite the importance of a low-iodine diet (LID) for thyroid cancer patients preparing for radioactive iodine (RAI) therapy, few studies have evaluated dietary intake during LID. This study evaluated the amount of dietary iodine intake and its major food sources during a typical diet and during LID periods for thyroid cancer patients preparing for RAI therapy, and examined how the type of nutrition education of LID affects iodine intake. SUBJECTS/METHODS: A total of 92 differentiated thyroid cancer patients with total thyroidectomy were enrolled from Seoul National University Hospital. All subjects completed three days of dietary records during usual and low-iodine diets before $^{131}I$ administration. RESULTS: The median iodine intake was $290{\mu}g/day$ on the usual diet and $63.2{\mu}g/day$ on the LID. The major food groups during the usual diet were seaweed, salted vegetables, fish, milk, and dairy products and the consumption of these foods decreased significantly during LID. The mean energy intake on the LID was 1,325 kcal, which was 446 kcal lower than on the usual diet (1,771 kcal). By avoiding iodine, the intake of most other nutrients, including sodium, was significantly reduced during LID (P < 0.005). Regarding nutritional education, intensive education was more effective than a simple education at reducing iodine intake. CONCLUSION: Iodine intake for thyroid cancer patients was significantly reduced during LID and was within the recommended amount. However, the intake of most other nutrients and calories was also reduced. Future studies are needed to develop a practical dietary protocol for a LID in Korean patients.
The purpose of this study was to evaluate the meal pattern and the nutritional balance in university foodservices of Seoul. The survey was conducted using a questionnaire with 317 students at five different cafeterias that served 23 meals. We weighed all the meals offered by the university foodservices, separated the foods, and calculated their nutritional content using a computer program $\ulcorner$DS24$\lrcorner$. We also checked the dishes and those amount students consumed from the menu. The results of this study is summarized as follows. : 1) The most prevalent menu patterns included rice, soup, two side dishes, and kimchi. 2) Most nutrient contents per meal in a given menu was lower than one third of the recommended dietary allowance(RDA). 3) The mean energy content for the amount of rice that was served was 399㎉, for the side dish, it was 107㎉, and for the kimchi, it was 9.9㎉. 4) The number of total dishes and side dishes was five and two, respectively. The dietary variety score was 16.7, and the dietary diversity score was 3. 5) The mean energy intake by students at self-operated managements were 545㎉, and at one contracted management, the energy intake were 494㎉. Both of them did not serve enough to meet one third of the RDA. Nutrient adequacy ration(NAR) was 0.4∼0.9, and Index of nutritional quality(INQ) was above 0.9 for most nutrients with the exception of calcium and vitamin B$_2$.
This study was performed to investigate the association between hair mineral levels and nutrient intakes, age, and BMI in female adults who visited a woman's clinic located in Seoul. Dietary intakes were assessed by food frequency questionnaire and mineral levels were measured in collected hairs, and the relationship between these was examined. The average daily nutrient intakes of subjects were compared to those of the KDRIs, and the energy intake status was fair. The average intake of calcium in women of 50 years and over was 91.35% of KDRls and the potassium intake was greatly below the recommended levels in all age groups. In the average hair mineral contents in subjects, calcium and copper exceeded far more than the reference range while selenium was very low with 85.19% of subjects being lower than the reference value. In addition, the concentrations of sodium, potassium, iron, and manganese in the hair were below the reference ranges in over 15% of subjects. The concentrations of sodium, chromium, sulfur, and cadmium in the hair showed positive correlations (P < 0.05) with age, but the hair zinc level showed a negative correlation (P < 0.05) with age. The concentrations of sodium, potassium, chromium, and cadmium in the hair showed positive correlations (P < 0.05) with BMI. Some mineral levels in subjects of this study showed significant correlations with nutrient intakes, but it seems that the hair mineral content is not directly influenced by each mineral intake. As described above, some hair mineral levels in female adults deviated from the normal range, and it is considered that nutritional intervention to control the imbalance of mineral nutrition is required. Also, as some correlations were shown between hair mineral levels and age, BMI, and nutrient intakes, the possibility of utilizing hair mineral analysis for specific purposes in the future is suggested.

This study examines the effects of a low-calorie raw juice diet on the level of serum ferritin in adults and analyzes nutrient intake from the diet. There were significant differences between juices; the highest calorie was provided by pear juice, highest crude protein, vitamin A, and vitamin B2 levels were from green Juice 1; and highest vitamin C and vitamin B1 levels were from fruit juices. The ratio of estimated energy requirements (EER) for the participants was 56.2% from the raw juice diet. The percentages of recommended intake (RI) from the raw juice diet of protein (57.9%), dietary fiber (19.1%), niacin (6.2%), calcium (0.1%), and magnesium (0.2%) were lower than 75%. However, those of RI of vitamin A, vitamin B1, vitamin B2, vitamin B6, and vitamin C were 1796.5%, 7481.7%, 1915.5%, 30858.7%, and 7500%, respectively, exceeding the tolerable upper intake level (UL) for vitamin A, vitamin B6, and vitamin C. There were significant decreases in weight, the body mass index (BMI), body fat mass, and skeletal muscle mass in males and females. After the diet program, serum iron and SOD (superoxide dismutase) showed significant decreases, whereas RBC, hemoglobin, hematocrit, and serum ferritin showed significant increases. There were negative correlations between serum ferritin and weight and between serum ferritin and skeletal muscle mass for all participants. There were negative correlations between serum ferritin and skeletal muscle mass for males and between serum ferritin and body fat mass for females. These results suggest that a raw juice diet can supplement a regular diet to prevent excess or deficient nutrient intake.
The purpose of this study was to evaluate nutrient intake and anthropometric parameters related to obesity in Korean female adolescents according to dietary diversity score. We analyzed data from the combined 2007-2009 Korean National Health and Nutrition Examination Survey (KNHANES). The subjects were 770 female adolescents. Nutrient intakes, Dietary Diversity Score (DDS) ) and Dietary Variety Score (DVS) were derived by using the data from the 24-recall method. The DDS was defined as the number of six food groups (cereals, meats, fruits, vegetables, dairy, fats and oils) consumed. The DVS was defined as the number of food items consumed. The average age of the subjects of the study was 15.02 years and the average height, weight, and BMI were 159.50 cm, 52.58 kg, 20.62 kg/$m^2$, respectively. The energy and nutrients intakes, percent of the recommended intake for nutrients in DDS = 5~6 group were significantly higher than those of the other groups. Calcium and vitamin C INQ in DDS = 5~6 group were significantly higher than those of the other groups. The average DVS of the subjects was 29.33. The most frequent style of food pattern was CMDFVO (cereals, meats, dairy, fruits, vegetables, fats and oils) = 111011. In conclusion, in healthy Korean female adolescents, food diversity intake variety did beneficially affect the intakes of calcium and vitamin C. Further studies are needed to confirm these findings.

This study was conducted to measure the effect of a community-based nutritional intervention program on dietary behaviors and nutrient intakes of low-income elderly women in Korea. The subject of the study was a group of 88 elderly women using the free meal service in Dong-gu, Gwangju city in Korea. The study was carried out from April to July 2009, and the pretest, application of nutrition education, and post-test were applied in each stage. This community-based nutrition intervention program consisted of snack supplement and nutrition education provided three times a week and 36 times in total. The nutrition education was led by the nutritionists and professionals using various educational media. Snack supplement included were milk, soymilk, carrot juice, bread, yogurt, and bananas. The result of pretest showed that the nutrient intakes of the subjects were much below the Recommended Nutrient Intake (RNI) level of Dietary Reference Intake for Koreans. Comparison of the dietary behavior score and nutrient intakes before and after the nutritional intervention program indicated that the food behavior score increased from 3.1 to 5.6 (P<0.001) and intake of energy, protein, carbohydrate, thiamin, niacin, vitamin C, iron, and potassium of the subjects all increased significantly (P<0.05). Mean Adequacy Ratio (MAR) of their nutrient intakes was also improved from 0.53 to 0.64 (P<0.01). These results indicated that the nutrition intervention program conducted in this study was effective in improving dietary behavior and nutrient intakes of elderly women in local community.
This study was performed to assess diet quality in the postmenopausal women. The data of dietary intakes were obtained using food frequency questionnaires which were collected from 151 postmenopausal women in urban area. We evaluated nutrient intake and diet quality. Diet quality was assessed by NAR(nutrient adequacy ratio), FGIP(food group intake pattern), DDS(dietary diversity score), DVS(dietary variety score), FGS(food group score), DQI(diet quality index). Nutrient intakes of the subjects were close to Korean RDA. Nutrient composition of the diet(in percentage of total energy) was 64% carbohydrate, 15% protein, and 19% protein, and 19% total fat, that was close to 65 : 15 : 20. NAR of most nutrients, except vitamin A, E, were higher than 0.75 and MAR was 0.88. NAR and MAR of the subjects in theis study were higher than those of the subjects of rural area in other studies. The subjects who consumed the five food groups were 60.9%. The mean of DDS was 4.5. The subjects who consumed more than 61 dish items during a month were 61.5%. The mean of DVS was 62.4 and it was significantly higher in the elder age group. 67.6% of the subjects were below FGS of 12. The mean of FGS was 10.6 and few subjects consumed serving numbers of each food groups which were recommended for Koreans. 55.0% of the subjects were DQI scores of 0, 1, and 2. The mean of DQI was 2.3 and few subjects followed the five dietary guidelines for Korean.
The purpose of this study was to compare with in fatty acid intakes between hypercholesterolemia group and normocholesterolemia group, aged between 30 to 65 years old in women. The subjects were classified as hypercholesterolemia group and normocholesterolemia group based on The Guideline for Korean Hyperlipidemia. Dietary intakes of fatty acids were by means of a 24-hr recall method with food models and measuring tools. We analyzed both data sets together using analysis of variance the chi-square test and student's t-test(SPSS for WINDOWS, version 7.5). Significance was defied as a P value <0.05. The results obtained are summarized as follows. Mean age, BMI and percentage of postmenopausal women in hypercholesterolemia group were significantly higher than those of normocholesterolemia group. Percent of total energy from fat in hypercholesterolemia group tended to be higher than that in normocholesterolemia group. C16:0(Palmitic acid) and saturated fatty acids(SFA) intake of hypercholesterolemia group was significantly higher than that of normocholesterolemia group. Therefore, women who suffered from hypercholesterolemia were recommended to control body weight and consume foods containing low SFA and cholesterol.
