This study was carried out to examine the status of eating out and flour preference of some houses in Yosu, Chonnam area. The survey was conducted using a questionnaire in Yosu. The results are as follows. The majority of monthly income of household was 1∼2 million won with 50.1%. The highest family composition was couple and children with 75.6% and the highest number of family member was 3∼4 with 57%. The highest type of housing was an apartment with 67.1% while its ownership was, the highest in self-own with 69.9%. The highest frequency to dine out with a family was once a month and the lower age and higher education background was, the higher frequency to dine out was resulted. The menu was mainly the Korean food. The highest rate of flour-based meals was 2 or 3 times a week. The most popular kind was Ramen.
This study was conducted to assess the dietary intake of college students in Gyeonggi-do. The dietary survey data were obtained by a semi-quantitative food frequency questionnaire given to 103 students, 56 males and 47 females. The average age the of subjects was 22.5 years old for the male students and 20.9 years old for the female students. Among the subjects, 38 males and 26 females' height, weight and percentage of body fat were measured using Inbody 3.0. The average height, weight, Body Mass Index(BMI) and percentage of body fat of the subjects was 173.1cm, 68.6 kg, 22.9 and 18.9% for males and 162.5 cm, 54.1 kg, 20.5 and 28.1% for females, respectively. The mean daily intake of energy was 2,343.0 kcal for males and 2,062.0 kcal for females. The average intake of protein, carbohydrates, Vitamin B1 in the male students were significantly higher than those of the female students(p<0.05). The average of Nutrient Adequacy Ratio(NAR) was ranged from 0.60(folate) to 0.99(phosphorus). NAR of Vitamin A and calcium was 0.71 and 0.75, respectively. The average of Mean Adequacy Ratio(MAR) was 0.85. The intake of rice and oriental cereals(sum of the parched cereal powder, ramen, noodles, Chajangmyon, buckwheat vermicelli, buckwheat noodles, dumplings and rice cakes) in the males was significantly higher than those of the females. The intake of snacks in the females was significantly higher than that of the males. Appropriate nutritional education for an optimal intake of nutrients may help to improve the quality of diet in college students.

The purpose of this study was to investigate the dietary habits and snack consumption behaviors of middle school students with different obesity indexes in the Chungnam area. The survey was carried out using self-questionnaires and included 385 students(119 underweight, 193 normal weight, 66 overweight). The rate of skipping meals was higher for underweight students than overweight students; however, this difference was not statistically significant. The mean time of meal was 10 to 20 minutes and the criteria for choosing to eat a meal were 'hunger' and 'taste' in all groups. More than half of the subjects ate snacks 1 time a day, which were purchased outside. The typical snack time was 'between lunch and dinner'. The criteria of for consuming a meal were 'taste' and 'price' in all groups. In the underweight group, the snack food scores were ice cream(4.4), fruit(4.3), fried chicken(4.1), sports beverage(4.0), fruit juice(4.0), pizza(4.0) and, tteokbokki(3.9). In the normal weight group, the snack food scores were ice cream(4.3), fried chicken(4.2), pizza(4.0), sports beverage(3.9), fruit juice(3.9) and, tteokbokki(3.9) in the overweight group, the snack food scores were ice cream(4.3), fruit(4.3), fried chicken(4.2), yogurt(4.0), sports beverage(4.0), fruit juice(4.0) and, ramen(4.0). In conclusion, the snaking behaviors of the subjects were not significantly different based on their obesity index. However, this study may provide basic information on the snacking behaviors of middle school students, and the findings suggest that nutrition education or counseling can improve snack intake habits and positive behaviors toward healthy adolescents diets.
BACKGROUND/OBJECTIVES: There are limited studies investigating the eating patterns of children's favorite foods. The present study aimed to evaluate a wide range of children's favorite foods, derive its eating patterns, and identify factors related to the patterns. SUBJECTS/METHODS: A nationwide cross-sectional study included 5,458 students in elementary, middle, and high schools. The survey was conducted at each school to evaluate children's favorite food intake, including the intake frequency of 31 food items or food groups, and its related factors, such as demographic, economic, and environmental characteristics and awareness of policies on children's favorite foods. Factor analysis using varimax rotation method and logistic regression analysis were conducted. RESULTS: Two factors were derived as major eating patterns from data of children's favorite foods: the 'unhealthy eating pattern' which mainly involves confectionery, chocolate, ramen, fried food, etc.; and the 'healthy eating pattern' which mainly involves soybean milk, vegetables, fruit juice, and nuts. A stepwise selection procedure through the regression analysis revealed that allowance, use of screen media, less awareness of policies on children's favorite foods, and less interest in health were positively related to the tendency of unhealthy or less-healthy eating patterns (P < 0.05). CONCLUSIONS: This study examined that the eating patterns of children's favorite foods were associated with certain environmental characteristics and awareness about the related policies. These findings suggest that a nutrition education program regarding children's favorite foods needs to be conducted according to the characteristics of students to develop their healthy eating habits and proper choice of favorite foods.
Purpose: The purposes of this study were to check the obesity of middle and high school students in the nation and identify factors influencing their obesity. Methods: The present study is a secondary analysis research that obtained permission to use the primitive data of 10th (2014) Online Survey on Adolescents' Health Behaviors by the Korea Centers for Disease Control and Prevention and analyzed the primitive data according to the purposes. Results: The findings show that the BMI of middle and high school students in the nation was $20.7kg/m^2$ with the obesity and non-obesity group recording $27.0kg/m^2$ and $19.9kg/m^2$, respectively. Factors influencing the obesity of adolescents include gender, grade, educational background of parent, school grades for the last 12 months, satisfaction with sleep, fast food consumption, ramen consumption, intense and muscle exercise three times a week or more, subjective sense of health, stress, suicidal ideation, and hours of Internet usage per week. Conclusion: For the management of adolescent obesity, there is a need for obesity management programs taking the characteristics of male students into consideration. The possibilities of obesity grow according to the grades, which means that both the teachers and parents should offer more guidance on weight control in upper grades. The adjustment of adolescent obesity requires psychological health management including stress and suicidal ideation as well as diet control and exercise. Dietary habit of excess sodium consumption is formed mainly by excessive salt intake from the younger age and this may lead to hypertension, stroke, and stomach cancer. This study was performed to estimate the salt content in kindergarten meals and provide basic data on meal providers' dietary attitude to sodium intake for nutrition education. We collected data on161 food items from 16 institutions in Gyeonggi-do and salt content was calculated from salinity and weight of individual food items. The average salt content from lunch meals was 2.2 g, which was about daily adequate intake of sodium for children aged 3 to 5 years old. Greatest contributor to the salt content in a meal was soup and stew (47.8%). The most salty dishes were sauces and kimchi followed by stir-fried food, deep-fried food, braised food, and grilled food. The salt content was higher in soup and stew despite of low salinity, due to the large quantity per serving. The salt contents of soups and kimchi were 40.6% and 14.3%, respectively of the total salt content in dish groups. Staff members and caregivers at home who prepared food for the child showed preference for one-dish rice meal, dried fish and salted mackerel, and broth when eating soup, stew, and noodles. Caregivers showed higher sodium index score and had higher preference for processed food such as Ramen, canned food, and ham compared with staff members (p < 0.05). These results suggested that monitoring salt content of kindergarten meals and nutrition education for those prepare meals for children are needed to lower sodium intake in childhood.
In order to observe the Na contents, Korean common foods, especially processed foods were analyzed by Atomic Absorption Spectrophotometer. 1. The Na contents of instant noodle (ramen) was 400-900 mg/100 g and Na contents of their soup powder was 10000-16000 mg/100 g. 2. The Na contents of corns and beans was very low but their processed foods, com Dake and soybean milk, had relatively high Na contents. 3. The Na contents of meats was 40-60 mg/100 g but the Na contents of meats products was 700-900 mg/100 g. 4. The Na contents of Davoring salt was 12000-38000 mg/100 g, those of soybean products was 3000-6OOO mg/100 g, and that of seasoning MSG was 8000-17000 mg/100 g. 5. There was no statistical difference between the results of wet ash method and dry ash method in the Na contents of all food groups.
The aim of this study is to provide the fundamental information on satisfaction for school food service and dietary habits of middle school students in Sejong Special Self-Governing City. Generally, the subjects had a high satisfaction level for school food service. The boys had comparatively more satisfactory days for school food service than the girls. The most dissatisfactory factors of school food service were the taste and variety of menu for the girls, and the time and place for lunch and the service of employee for the boys. The intersexual differences existed with a significant difference in the irregular intake of meals, the reasons to skip meals, and the eating speed. For the boys, the main reason to skip meals was due to lack of appetite, and for the girls, it was the weight-control. The boys finished each meal within 5~10 min and ate more than the amount the girls eat in general. The main components of breakfast for the subjects were a cooked rice, soup, and side dish in 65.9%, and the frequency of skipping breakfast was high with 32.8%, which was once per week. The favorite snacks for the middle school students were cookies and beverages in 29.4%, instant foods in 24.3%, and hamburger and pizza in 21.4%. The intake frequency of snacks was once or twice per week in 46.5% of the subjects. In addition, the subjects had a very high intake frequency of fastfoods with once or twice per week in 72.7%, and the most favorite fastfood was ramen in 57.7%. The subjects in 45.3% took dairy food every day. In conclusion, the middle school students need nutrition education to improve their eating habit and to increase the frequency of breakfast.
The purpose of this study was to examine the level of concern and the level of knowledge of endocrine disruptors, and the level of dietary behaviors to decrease exposure to endocrine disruptors, to determine the factors affecting the level of knowledge and behaviors, and to assess the causal relationship between them. The data were collected from 579 adults in Seoul, Incheon, Daejeon, Daegu, Busan and Gwangju provinces. Frequencies, t tests, analysis of variance, Cronbach's alpha, Pearson's correlation coefficient analysis, multiple regression analyses, and path analysis were carried out by SPSS for Win V.18.0. The results of this study were as follows: The level of concern about endocrine disruptors was higher than the medium level. The respondents were most concerned about a container of cup ramen among products related to foods. The levels of both knowledge and behaviors in order to decrease exposure to endocrine disruptors in dietary life were not high. The factors affecting the level of knowledge of endocrine disruptors were educational level, attendance in education for endocrine disruptors, and concern about endocrine disruptors. On the other hand, sex, age, concern about endocrine disruptors, and the level of knowledge of endocrine disruptors affected the level of behaviors to decrease exposure toward endocrine disruptors. The results of the path analysis showed that educational level and education of endocrine disruptors had an indirect influence on the level of behaviors in order to decrease exposure to endocrine disruptors in dietary life. The concern about endocrine disruptors had both a direct and an indirect effect on the level of behaviors to decrease exposure to endocrine disruptors in dietary life. In addition, sex, age and the level of knowledge of endocrine disruptors directly affected the level of behaviors to decrease exposure to endocrine disruptors in dietary life.
The purpose of this study were to analyze the staple food consumption trend of Koreans using KNHANES(Korea National Health and Nutrition Examination Survey) data. Nutrient intake of 38,840 participants of 1998~2008 KNHANES, over 6 year old were analyzed. For the analysis of major staple food intakes, twenty four hour recall data was used. The results were analyzed by SAS Program, as follows. Despite westernized diet, ranking in the primary energy source of food showed similar patterns. But total calory intake was reduced over the past 11 years and percentage of carbohydrate intake was increased. Relative proportions of protein and fat intake was reduced. The major carbohydrate and protein source of Koreans was rice and grains. Pork and ramen were the major fat source food. Although intake levels were different by gender, age and areas, carbohydrate of rice was primary source of energy in Korea.
