Quality and Acceptability of Meat Nuggets with Fresh Aloe vera Gel

  • Aloe vera has been used worldwide for pharmaceutical, food, and cosmetic industries due to its wide biological activities. However, quality improvement of low fat meat products and their acceptability with added Aloe vera gel (AVG) is scanty. The aim of this study was to explore the feasibility of using fresh AVG on physicochemical, textural, sensory and nutritive qualities of goat meat nuggets. The products were prepared with 0%, 2.5%, and 5% fresh AVG replacing goat meat and were analyzed for proximate composition, physicochemical and textural properties, fatty acid profile and sensory parameters. Changes in lipid oxidation and microbial growth of nuggets were also evaluated over 9 days of refrigerated storage. The results showed that AVG significantly (p<0.05) decreased the pH value and protein content of meat emulsion and nuggets. Product yield was affected at 5% level of gel. Addition of AVG in the formulation significantly affected the values of texture profile analysis. The AVG reduced the lipid oxidation and microbial growth in nuggets during storage. Sensory panelists preferred nuggets with 2.5% AVG over nuggets with 5% AVG. Therefore, AVG up to 2.5% level could be used for quality improvement in goat meat nuggets without affecting its sensorial, textural and nutritive values.

  • 본 연구에서는 인산가용화 균주인 Kluyvera sp. CL2 처리시기가 과실품질에 미치는 영향을 구명하고자 본 연구를 실시하였다. 토양의 화학성 변화는 경핵기 처리구에서 인산이 가장 많이 증가하였고, K, Ca, Mg도 증가됨을 알 수 있었으며, pH의 변화는 토양 완충능에 의하여 적었다. 인산가용화균 처리에 따른 수용성 인산의 변화는 처리 시부터 20일 까지 효과적이었으며, 과립연화기 처리구부터 인산가용화율이 좋았다. 또한 과립연화기 처리구에서 과방중과 당도가 증가됨을 알 수 있었다. 인산가용화 균주 처리구에서 안토시아닌, 명도, 적색도, 황색도가 경핵기와 과립연화기 처리구에서 유의성을 보였으며, 특히 적색도가 향상되어 착색증진 효과가 있었다. 결론적으로 과실특성과 과실품질을 모두 비교하였을 때 과립연화기에 인산가용화 균주를 투입하는 것이 수량성과 품질면에서 가장 효과적이라고 생각된다.

지역거점 공공병원의 폐렴 적정성 평가 지표 개선을 위한 융복합 실행연구 (An Action Convergence Research to Improve Evaluation Index of Pneumonia Adequacy in Regional Public Hospital)

  • 본 연구는 지역거점 공공병원의 폐렴 적정성 평가 지표를 개선하기 위한 전략을 개발하고 그 효과를 확인하기 위한 실행연구이다. 이 연구는 N시에 소재한 지역거점 공공병원에 근무하는 내과의사 1명, 간호사 8명, 전산실 직원 1명, 간호학 교수 1명이 참여하였으며 2021년 3월부터 10월까지 이루어졌다. Zuber-Skerritt & Fletcher의 개념모형을 바탕으로 실행연구를 수행하였다. 계획, 실행, 평가, 성찰의 단계를 2 cycle 로 운영하면서 2분기와 3분기에 효과평가를 하였으며 폐렴 적정성 평가지표를 효과평가의 도구로 사용하였다. 2019년 폐렴 적정성 평가지표와 비교하여 2021년에는 모든 지표가 기준목표에 100% 도달하였다. 따라서 본 연구결과를 바탕으로 향후 보다 질높은 의료서비스를 제공하기 위해 다학제간 참여와 협조 아래 실행연구를 통한 의료 질 개선 활동을 적용하고 임상현장의 적용가능성을 검토해볼 필요가 있다.

노인복지시설의 급식서비스 품질 요소 규명 및 급식서비스 만족도 향상 전략 (Strategies for the Improvement of Customer Satisfaction on Foodservice through Identifying the Foodservice Quality Factors in Senior Care Facilities)

  • This study was designed to develop the strategy plans for the customer satisfaction on foodservice in the senior care facilities. For this, we examined the level of the customer satisfaction and foodservice quality. Additionally, the association between service quality, customer satisfaction, and social, psychological, physical factors of the aged were tested. Data from convenience samples from 3 senior care facilities were collected by using a questionnaire. Exploratory factor analyses were completed on 20 attributes for the food and service quality and 7 items for the social and psychological states of the aged, respectively. Cronbach's a was estimated for reliability, and Pearson correlation and multiple regression analysis were used for statistical analyses. The level of the satisfaction on foodservice was 4.01 of 5.0. The satisfaction on foodservice did not show the significant differences by gender, education level, BMI, and socio-psychological satisfaction. But the foodservice quality and the satisfaction showed significant difference by income and physical problem, and the goal of life of the eldely, respectively. Multiple regression analyses revealed that the determinants of the customer satisfaction on foodservice were the core quality of product, confidence, professionalism of employees and secondary quality of products. Especially, the kindness of employee is the most important attribute of the foodservice. Based on these results, we can set the strategy plans as follow: (1) the introduction of the foodservice evaluation system (2) the deployment of the event activities for offering fun to the customer (3) the continuous training of employees for ensuring the professional and kind service system, and (4) the introduction of selective menu system and take-out service of menu.

QFD 기반 공공기관 기록관 서비스 품질 비교 및 개선방안 (A QFD-Based Comparison and Improvement of Service Quality for Records Centers of Public Institution)

  • 공공기관 기록관 서비스는 실제 업무를 수행하는 내부이용자의 효율적인 업무활동을 돕고, 나아가 기관 경쟁력 강화의 기반이 된다. 본 연구는 품질관리기법 중 하나인 품질기능전개(QFD) 기법에 기반을 두어 공공기관들의 기록관 서비스 품질을 분석 비교함으로써 기록관 서비스 품질 개선방안을 제안하고자 하였다. 이를 위해 중앙행정기관을 대상으로 수행한 이수진 외(2018)의 후속연구로서 연구대상을 지방자치단체로 확장하여 QFD 기법을 적용하고, 확장된 QFD 적용결과를 토대로 기록관 서비스 품질의 집(HoQ)을 재구성하였다. 나아가 중앙행정기관과 지방자치단체의 기록관 서비스 HoQ를 비교하여 도출된 시사점과 기록관 서비스 기술특성의 우선순위를 종합하여 공공기관 기록관 서비스 품질 개선방안을 제언하였다.

의료서비스 마케팅을 위한 품질지각과 만족에 관한 연구 (A Study on Qulity Perceptions and Satisfaction for Medical Service Marketing)

  • INSTRODUCTION Service quality is, unlike goods quality, an abstract and elusive constuct. Service quality and its requirements are not easily understood by consumers, and also present some critical research problems. However, quality is very important to marketers and consumers in that it has many strategic benefits in contributing to profitability of marketing activities and consumers' problem-solving activities. Moreover, despite the phenomenal growth of medical service sector, few researchers have attempted to define and model medical service quality. Especially, little research has focused on the evaluation of medical service quality and patient satisfaction from the perspectives of both the provider and the patient. As competition intensifies and patients are demanding higher quality of medical service, medical service quality and patient satisfaction has emerged as a critical research topic. The major purpose of this article is to explore the concept of medical service quality and its evaluation from both nurse and patient perspectives. This article attempts to achieve its purpose by (1)classfying critical service attibutes into threecategories(satisfiers, hygiene factors, and performance factors). (2)measuring the relative importance of need criteria, (3)evaluating SERVPERF model and SERVQUAL model in medical service sector, and (4)identifying the relationship between perceived quality and overall patient satisfaction. METHOD Data were gathered from a sample of 217 patients and 179 nurses in Seoul-area general hospitals. From the review of previous literature, 50 survey items representing various facets of the medical service quality were developed to form a questionnaire. A five-point scale ranging from "Strongly Agree"(5) to "Strongly Disagree"(1) accompanied each statement(expectation statements, perception statements, and importance statements). To measure overall satisfaction, a seven-point scale was used, ranging from "Very Satisfied"(7) to "Very Dissatisfied"(1) with no verbal labels for scale points 2 through 6 RESULTS In explaining the relationship between perceived performance and overall satisfaction, only 31 variables out of original 50 survey items were proven to be statistically significant. Hence, a penalty-reward analysis was performed on theses 31 critical attributes to find out 17 satisfiers, 8 hygiene factors, and 4 performance factors in patient perspective. The role(category) of each service quality attribute in relation to patient satisfaction was com pared across two groups, that is, patients and nurses. They were little overlapped, suggesting that two groups had different sets of 'perceived quality' attributes. Principal components factor analyses of the patients' and nurses' responses were performed to identify the underlying dimensions for the set of performance(experience) statements. 28 variables were analyzed by using a varimax rotation after deleting three obscure variables. The number of factors to be extracted was determined by evaluating the eigenvalue scores. Six factors wereextracted, accounting for 57.1% of the total variance. Reliability analysis was performed to refine the factors further. Using coefficient alpha, scores of .84 to .65 were obtained. Individual-item analysis indicated that all statements in each of the factors should remain. On 26 attributes of 31 critical service quality attributes, there were gaps between actual patient's importance of need criteria and nurse perceptions of them. Those critical attributes could be classified into four categories based on the relative importance of need criteria and perceived performance from the perspective of patient. This analysis is useful in developing strategic plans for performance improvement. (1) top priorities(high importance and low performance) (in this study)- more health-related information -accuracy in billing - quality of food - appointments at my convenience - information about tests and treatments - prompt service of business office -adequacy of accommodations(elevators, etc) (2) current strengths(high importance and high performance) (3)unnecessary strengths(low importance and high performance) (4) low priorities(low importance and low performance) While 26 service quality attributes of SERPERF model were significantly related to patient satisfation, only 13 attributes of SERVQUAL model were significantly related. This result suggested that only experience-based norms(SERVPERF model) were more appropriate than expectations to serve as a benchmark against which service experiences were compared(SERVQUAL model). However, it must be noted that the degree of association to overall satisfaction was not consistent. There were some gaps between nurse percetions and patient perception of medical service performance. From the patient's viewpoint, "personal likability", "technical skill/trust", and "cares about me" were most significant positioning factors that contributed patient satisfaction. DISCUSSION This study shows that there are inconsistencies between nurse perceptions and patient perceptions of medical service attributes. Also, for service quality improvement, it is most important for nurses to understand what satisfiers, hygiene factors, and performance factors are through two-way communications. Patient satisfaction should be measured, and problems identified should be resolved for survival in intense competitive market conditions. Hence, patient satisfaction monitoring is now becoming a standard marketing tool for healthcare providers and its role is expected to increase.

Near Miss 사고 예방 활동과 환자안전관리 문화형성이 환자안전에 미치는 영향 (The Effects of Near Miss and Accident Prevention Activities and the Culture of Patient Safety Management for the Patient Safety)

  • 급변하는 의료환경 속에서도 변함없이 의료기관들은 환자 안전관리 부분의 중요성을 인식하여 관리하고 있다. 하지만 현재 환자안전관리는 사후관리와 처벌이 강조된 프로세스들로 조직원들의 참여성이 결여된 문제를 보이고 있다. 본원 핵의학과 에서는 참여형 니어미스 사고예방 활동을 시행하여 환자안전사고에 사전관리를 시작하고 사고보고에 따른 불이익이 없는 시스템을 구축하여 니어미스 감소 와 환자안전사고 제로화를 목적으로 본 연구을 시작하였다. 또한 핵의학과만의 차별화된 환자안전관리System구축도 그 목적으로 하고 있다. 1. 팀원들의 과거 니어미스 및 현재 발생되고 있는 니어미스와 사고 사례수집(1차 자료수집). 2. 설문을 통해 중요도, 긴급도를 파악하고 니어미스 및 사고사례를 정량화(2차 자료수집). 3. 자료 분석을 통한 중요 접점 파악과 사고 사례 정량화. 4. 중요 접점 부분에 대한 매뉴얼 제작과 표준화, 오류방지를 위한 참여형 개선활동 시행. 5. 니어미스 보고체계 구축을 위한 웹 기반 커뮤니티 활동. 6. 설문과 FGI를 통해 활동 전후 평가 시행. 1) 비계량적이었던 핵의학과 내 안전사고 및 니어미스를 계량화(월 50여 회의 니어미스와 년 1건의 안전사고발생) 2) 계량화된 데이터를 통해 개선방안을 수립(0여건의 참여형 개선활동, 프로세스 개선, 표준화를 위한 약속 매뉴얼 제작) 3) 안전문화 시스템을 형성하고 팀원들의 높은 관여도를 형성.(보고체계구축, 체크리스트 제작, 안전문화 슬로건 제작, 평가 인덱스 구축) 4) 니어미스 및 사고 사례를 공유하고 반면교사로 삼기 위한 커뮤니티 개설. 5) 활동 전후 니어미스 발생률은 50% 감소 하였고 안전사고 제로. 핵의학과의 최고의 서비스는 환자안전이 보장된 양질의 검사와 치료를 제공하는 것이다. 참여형 개선활동으로 니어미스사고를 예방하고 안전문화를 형성하여 시스템을 구축함으로써 니어미스 발생 사례는 50% 줄었으며 안전사고는 발생하지 않았다. 이는 환자안전사고의 사전관리란 측면에서도 시사하는 바가 있다. 또한 불이익이 없는 사고보고체계도 마련하여 솔직하게 보고하고 인정하는 문화도 만든 계기가 되었다. 기본에 충실한 뛰어난 시스템은 환자에게 제공되는 최고의 서비스이며 형성된 안전문화 시스템은 결국 고객만족으로 이어질 것이다. 따라서 본원 핵의학과 에서는 마련된 시스템을 정착하고 안정시켜 차별화된 환자안전문화를 형성해 나가고자 한다.

Responses of Low-Quality Soil Microbial Community Structure and Activities to Application of a Mixed Material of Humic Acid, Biochar, and Super Absorbent Polymer

  • Low-quality soil for land reuse is a crucial problem in vegetation quality and especially to waste disposal sites in mining areas. It is necessary to find suitable materials to improve the soil quality and especially to increase soil microbial diversity and activity. In this study, pot experiments were conducted to investigate the effect of a mixed material of humic acid, super absorbent polymer and biochar on low-quality soil indexes and the microbial community response. The indexes included soil physicochemical properties and the corresponding plant growth. The results showed that the mixed material could improve chemical properties and physical structure of soil by increasing the bulk density, porosity, macro aggregate, and promote the mineralization of nutrient elements in soil. The best performance was achieved by adding 3 g·kg-1 super absorbent polymer, 3 g·kg-1 humic acid, and 10 g·kg-1 biochar to soil with plant total nitrogen, dry weight and height increased by 85.18%, 266.41% and 74.06%, respectively. Physicochemical properties caused changes in soil microbial diversity. Acidobacteria, Bacteroidetes, Chloroflexi, Cyanobacteria, Firmicutes, Nitrospirae, Planctomycetes, and Proteobacteria were significantly positively correlated with most of the physical, chemical and plant indicators. Actinobacteria and Armatimonadetes were significantly negatively correlated with most measurement factors. Therefore, this study can contribute to improving the understanding of low-quality soil and how it affects soil microbial functions and sustainability.

고혈압 환자의 삶의 질 관련 요인: 제 7기 1차년도(2016년) 국민건강영양조사 (Factors Related to Hypertension Patients' Quality of Life: The 7th Korean National Health and Nutrition Examination(1st Year, 2016))

  • Objectives: This study aims to examine hypertension patients' quality of life by using the data of the 7th Korea National Health and Nutrition Examination Survey (1st year, 2016), identify the factors related to this, and utilize the results as basic data for intervention that can improve hypertension patients' quality of life. Methods: For the research subjects, this study extracted 1,531 patients who were diagnosed with hypertension by a doctor from the total sample of 8,150 participants of the 7th Korea National Health and Nutrition Examination Survey, and selected 1,072 patients with no missing value in the variables to be analyzed as the final research subjects. The SPSS(version25.0) program was used for the analysis of the collected data. Then, this study used a backward elimination multiple regression analysis method that applied complex sample, to examine the factors related with the finally estimated quality of life. Results: The results of this study revealed that hypertension patients' quality of life was related with age, occupation, spouse, household income, weight gain, restriction of activity, subjected health status, perceived stress, and presence of comorbidity. The final model explained 37.0% of the variance (Wald F=30.012 p<.001). Conclusions: When an intervention program is implemented for the improvement of hypertension patients' quality of life in the future, it will be effective to construct the program according to age group, employment, marital status and household income. As for the program operation, patients should get help therefrom to control weight, facilitate activities and relieve their stress, and they should be also motivated to feel healthy. Furthermore, education should be offered so that they appropriately manage their underlying disease at an early stage.

노인의 여가활동에 대한 혈관상태와 스트레스 비교연구 (A Comparative Study on Vascular Conditions and Stress on Leisure Activity in the Elderly)

  • 목적: 본 연구는 노인의 여가활동에 대한 혈관상태와 스트레스를 알아보고 스트레스의 문제가 노인의 혈관상태에 미치는 영향을 알아보고자 하였다. 연구방법: 본 연구는 노인 172명을 대상으로 설문조사를 실시하였고 여가활동 항목의 구성을 위해 타당도와 신뢰도 분석을 실시하였고 여가활동에 대한 혈관상태와 스트레스를 분석하였으며 노인의 혈관상태에 영향을 미치는 스트레스 요인을 분석하기 위해 회귀분석을 실시하였다 결과: 첫째, 노인의 여가활동에 대한 혈관상태의 평균값 비교에서는 유의미한 차이가 있었고(p=.012) 체육활동이 혈관 상태에서 가장 안정성이 높았다. 둘째, 노인의 여가활동에 대한 스트레스의 평균값 비교에서는 유의미한 차이가 있었고(p=.035) 휴식 및 기타활동이 다른 활동보다 높게 나타났다. 셋째, 노인의 스트레스 문제가 혈관상태에 미치는 영향은 경제적어려움과 건강문제에서 영향이 있는 것으로 나타났다 결론: 노인에게서 여가활동은 삶의 질 변화의 요인으로 작용할 수 있다. 노인은 여가활동을 통한 혈관상태의 개선과 스트레스의 감소를 기대할 수 있고 특히 체육활동은 혈관상태와 긍정적 관계가 있고 휴식 및 기타활동은 스트레스와 부정적 관계가 있다. 이로 인해, 본 연구는 노인의 여가활동 선정과 지속적인 참여의 중요성을 확인할 수 있었다.
